Abstract
Η παρούσα εφεύρεση αφορά καραμέλες ζελέ με μία ρευστή γέμιση και τη μέθοδο παραγωγής αυτών. Το κέλυφος περιέχει πηκτίνη και περικλείει πλήρως τη γέμιση. Αμφότερα το κέλυφος και η γέμιση περιέχουν οξέα-πάντως, η τιμή pΗ της γέμισης είναι χαμηλότερη από αυτήν του κελύφους. Οι καραμέλες ζελέ λαμβάνονται δια εναπόθεσης από ρευστές συνθέσεις με μία διαφοροποιημένη τιμή pΗ.
