Abstract
Η σύνθεση καραγενάνης με βελτιωμένα χαρακτηριστικά δημιουργίας γέλης επιδεικνύει συναίρεση ≤ 3,0% κατά βάρος και βελτιωμένη θλιπτική αντοχή τουλάχιστον κατά 20% σε σύγκριση με το αρχικό υλικό με περιεκτικότητα καραγενάνης. Η σύνθεση σύμφωνα με την ευρεσιτεχνία θα πρέπει να περιέχει τουλάχιστον 60% κατά βάρος καραγενάνη, ενώ προτιμάται η κ-καραγενάνη. Επιπρόσθετα, η σύνθεση μπορεί να περιέχει ένα άμυλο, ένα υδροκολλοειδές και μία πρωτεΐνη ή και ένα μείγμα από αυτά. Περιγράφεται επίσης μία διαδικασία για τη βελτίωση των χαρακτηριστικών δημιουργίας γέλης μίας σύνθεσης καραγενάνης, στην οποία το αρχικό υλικό κατά προτίμηση αρχικά εφυγραίνεται με νερό, στη συνέχεια αναμειγνύεται εντατικά σε υψηλές θερμοκρασίες και υπό συνθήκες υψηλής πίεσης και υψηλές διατμητικές τάσεις και τέλος η ληφθείσα μάζα κρυώνει και κονιορτοποιείται. Τέλος, προτείνεται η χρήση μίας σύνθεσης καραγενάνης σε πρόσθετα στον τομέα των τροφίμων και φαρμάκων, κατά προτίμηση ως μέσο ελαστικοποίησης, μέσο βελτίωσης του ιξώδους, ως πηκτικό μέσο, ως προσκολλητική ουσία, ως ρεολογικό βοηθητικό παρασκεύασμα ή σταθεροποιητής. Οι νέες συνθέσεις με περιεκτικότητα καραγενάνης διαθέτουν βελτιωμένη αντοχή γέλης, μειωμένη συναίρεση και επιταχυντική ιδιότητα δημιουργίας γέλης και επιπρόσθετα επιδεικνύουν σε μορφή σκόνης μία εκπληκτική ιδιότητα διασποράς σε διαλύματα.
