Abstract

La invención se refiere a una tableta de caldo dura y a un proceso para la producción de una tableta de caldo dura, caracterizados porque una grasa de carne de res tiene un contenido total de grasa saturada de 54 a 72 % en peso (basado en el peso de grasa total); y en donde la grasa de carne de res comprende al menos 23,5 % en peso (basado en el peso de grasa total) de C18:0 y 25,5 a 33 % en peso (basado en el peso de grasa total) de C16:0.
