鱼类制品包括鱼丸、鱼糕、鱼肠等。制备鱼类制品往往以淡水鱼类为原料,而这种鱼肉往往会伴有“土腥味”。目前去除鱼肉腥味的加工方法主要是加入香料进行掩盖,例如葱姜蒜辣,但这种方法也容易掩盖掉鱼肉本身的鲜美味道。为了达到鱼类制品的软弹口感,往往会加入食用胶,要求既能增强鱼类制品的口感,又要能保留鱼肉的自身鲜美口味和营养成分。除此之外,因为鱼类制品的口感软弹,近些年来喜欢吃鱼类制品的儿童数量逐年增多。但是,儿童经常或过量的食用鱼类制品,容易出现腹胀、胃部不适等消化不良的症状。

(2)本发明的复合食用胶的发酵培养基液中,以葡萄糖、蔗糖、琼脂糖为复合碳源,以NH4Cl、(NH4)2HPO4、NaNO3为复合氮源,且加入β-环糊精和酒糟,可明显提升可得然胶的产量。复合食用胶在碱液提取过程中,加入结冷胶,一次离心后,再加入魔芋葡甘露聚糖,有助于使可得然胶、结冷胶和魔芋葡甘露聚糖形成更加稳定的结构,使后续冻干得到的复合食用胶性能稳定,生物药品口感更加的软弹,且更吸引儿童食用。

步骤(1)制备发酵培养基液,所述发酵培养基液包括复合碳源10%、复合氮源0.5%、MgS04·7H2O0.2%、CaCO30.2%、β-环糊精3%、酒糟2%、玉米浆0.5%,其他为水,调pH为中性。在5L的发酵罐中加入3L的发酵培养基液,加入土壤杆菌菌株,菌株接种量为5%,发酵培养温度为25℃,转速为150r/min,培养周期为72h,得到可得然胶发酵液。其中:复合碳源中,葡萄糖、蔗糖、琼脂糖的质量比为1:1:0.2;复合氮源中,NH4Cl、(NH4)2HPO4、NaNO3的质量比为1:2:1。
步骤(2)将可得然胶发酵液离心后,离心转速5000r/min,收集沉淀,得到可得然胶发酵液沉淀。
步骤(3)将可得然胶发酵液沉淀加0.2M的NaOH碱液提取后,测得每克可得然胶发酵液可提取的可得然胶的预计质量为可得然胶的质量。本实施例1中可得然胶的质量为0.76g。以可得然胶、结冷胶、魔芋葡甘露聚糖的质量比为1:1:1计算。在可得然胶发酵液沉淀中加入结冷胶混合均匀后,在其中加入0.2M的NaOH碱液提取搅拌均匀后,离心除去不溶性菌体,取上清液加入CaCl2、NaCl和魔芋葡甘露聚糖后,再次离心,得到胶体沉淀物,两次离心转速均为5000r/min。CaCl2加入量分别为上清液质量的0.2%、NaCl加入量分别为上清液质量的0.6%。
步骤(4)将胶体沉淀物用去离子水洗涤后,离心脱水,离心转速5000r/min,得到中性胶体。
步骤(5)将中性胶体冷冻干燥粉碎,得到粉末状复合食用胶。
实施例4
生物药品,组分的份数比例为:乳双歧杆菌:10份;发酵乳杆菌:30份;酵母菌:20份;罗伊氏乳杆菌:30份;植物乳杆菌:10份;益生芽孢杆菌:10份;粉末状复合食用胶:80份,纯净水适量。利用实施例2的方法制备成具有促进消化和吸收功能的生物药品。
实施例4中复合食用胶的制备方法,包括以下步骤:
步骤(1)制备发酵培养基液,所述发酵培养基液包括复合碳源10%、复合氮源0.5%、MgS04·7H2O0.2%、CaCO30.2%、β-环糊精3%、酒糟2%、玉米浆0.5%,其他为水,调pH为中性。在5L的发酵罐中加入3L的发酵培养基液,加入土壤杆菌菌株,菌株接种量为5%,发酵培养温度为25℃,转速为150r/min,培养周期为72h,得到可得然胶发酵液。其中:复合碳源中,葡萄糖、蔗糖、琼脂糖的质量比为1:0.3:0.1;复合氮源中,NH4Cl、(NH4)2HPO4、NaNO3的质量比为1:1:0.5。
步骤(2)将可得然胶发酵液离心后,离心转速5000r/min,收集沉淀,得到可得然胶发酵液沉淀。
步骤(3)以可得然胶、结冷胶、魔芋葡甘露聚糖的质量比为1:1:1,计算结冷胶和魔芋葡甘露聚糖的质量。在可得然胶发酵液沉淀中加入结冷胶混合均匀后,在其中加入0.2M的NaOH碱液提取搅拌均匀后,离心除去不溶性菌体,取上清液加入CaCl2、NaCl和魔芋葡甘露聚糖后,再次离心,得到胶体沉淀物,两次离心转速均为5000r/min。CaCl2加入量分别为上清液质量的0.1%、NaCl加入量分别为上清液质量的0.5%。
步骤(4)将胶体沉淀物用去离子水洗涤后,离心脱水,离心转速5000r/min,得到中性胶体。
步骤(5)将中性胶体冷冻干燥粉碎,得到粉末状复合食用胶。
实施例5
生物药品,组分的份数比例为:乳双歧杆菌:8份;发酵乳杆菌:25份;酵母菌:15份;罗伊氏乳杆菌:25份;植物乳杆菌:8份;益生芽孢杆菌:8份;粉末状复合食用胶:60份,纯净水适量。利用实施例2的方法制备成具有促进消化和吸收功能的生物药品。
实施例5中复合食用胶的制备方法,包括以下步骤:
步骤(1)制备发酵培养基液,所述发酵培养基液包括复合碳源10%、复合氮源0.5%、MgS04·7H2O0.2%、CaCO30.2%、β-环糊精3%、酒糟2%、玉米浆0.5%,其他为水,调pH为中性。在5L的发酵罐中加入3L的发酵培养基液,加入土壤杆菌菌株,菌株接种量为5%,发酵培养温度为25℃,转速为150r/min,培养周期为72h,得到可得然胶发酵液。其中:复合碳源中,葡萄糖、蔗糖、琼脂糖的质量比为1:1:0.5;复合氮源中,NH4Cl、(NH4)2HPO4、NaNO3的质量比为1:3:1。
步骤(2)将可得然胶发酵液离心后,离心转速5000r/min,收集沉淀,得到可得然胶发酵液沉淀。
步骤(3)以可得然胶、结冷胶、魔芋葡甘露聚糖的质量比为1:2:2,计算结冷胶和魔芋葡甘露聚糖的质量。在可得然胶发酵液沉淀中加入结冷胶混合均匀后,在其中加入0.2M的NaOH碱液提取搅拌均匀后,离心除去不溶性菌体,取上清液加入CaCl2、NaCl和魔芋葡甘露聚糖后,再次离心,得到胶体沉淀物,两次离心转速均为5000r/min。CaCl2加入量分别为上清液质量的0.3%、NaCl加入量分别为上清液质量的0.8%。
步骤(4)将胶体沉淀物用去离子水洗涤后,离心脱水,离心转速5000r/min,得到中性胶体。
步骤(5)将中性胶体冷冻干燥粉碎,得到粉末状复合食用胶。
实施例3-中实施例5中发酵液的组分不仅仅限定为上述提供的范围,还可以是复合碳源8-12%、复合氮源0.5-1%、MgS04·7H2O0.1-0.3%、CaCO30.1-0.3%、β-环糊精1-3%、酒糟1-3%、玉米浆0.5-0.8%,其他为水,调pH为中性。在发酵罐中加入发酵培养基液,加入土壤杆菌菌株,菌株接种量为5-8%,发酵培养温度为25-35℃,转速为120-150r/min,培养周期为72-96h。通过对发酵液各组分的用量调整发现,复合碳源和复合氮源下,可得然胶的产胶量远远高于常规的单一碳源、单一氮源。尤其是复合碳源中琼脂糖的加入,比不加入琼脂糖的同比例复合碳源,可得然胶的产量高了5-10%。
实施例3-实施例5中:
乳双歧杆菌的作用通常有维持肠道菌群平衡、辅助改善消化不良、辅助改善腹泻、辅助改善便秘、辅助提高免疫力等。
发酵乳杆菌具有一定的调节肠道菌群、增强免疫力和促进消化吸收等作用与功效。
酵母菌可以帮助机体分解二氧化碳和水,可以促进肠道蠕动,有利于食物发酵,有润肠通便的作用,从而缓解消化不良、便秘等不适症状。
罗伊氏乳杆菌是肠道益生菌,罗伊氏乳杆菌可以调节肠道菌群、减少细菌感染,还可以缓解便秘以及促进消化、吸收等。
植物乳酸菌可以调节免疫,抑制病原菌,降低血清胆固醇,预防心脑血管疾病。维持肠道菌群平衡,促进营养吸收,用于因肠道菌群失调引起的急慢性腹泻、便秘、消化不良、腹胀。
益生芽孢杆菌可以促进胃肠道的蠕动,有助于食物的消化与吸收,具有辅助改善消化不良的作用,可以提高身体的免疫力,能够促进胃肠道的蠕动,有利于食物的消化与吸收,具有辅助改善便秘的作用。
复合食用胶的发酵培养基液中,以葡萄糖、蔗糖、琼脂糖为复合碳源,以NH4Cl、(NH4)2HPO4、NaNO3为复合氮源,且加入β-环糊精和酒糟,可明显提升可得然胶的产量。复合食用胶在碱液提取过程中,加入结冷胶,一次离心后,再加入魔芋葡甘露聚糖,有助于使可得然胶、结冷胶和魔芋葡甘露聚糖形成更加稳定的结构,使后续冻干得到的复合食用胶性能稳定,生物药品口感更加的软弹,且更吸引儿童食用。
因此,本发明的实施例1-实施例5的生物药品实现了促进营养吸收保持肠道健康和提高人体消化能力的功能,有助于增强人体消化能力。
对比例1
将实施例3中的复合食用胶替换为芜湖金丰禾生物科技有限公司品牌的食用胶,利用实施例2的方法制备成生物药品,得到对比例1生物药品。
对比例2
将实施例5中的复合食用胶替换为陕西云升生物科技有限公司品牌的可得然胶、利用实施例2的方法制备成生物药品,得到对比例2生物药品。
实施例3、实施例5、对比例1和对比例2的评价试验分析:
通过20个试吃志愿者蒙眼闻气味发现:所有志愿者都表示实施例3、实施例5、对比例1和对比例2制备的生物药品口感差距明显,一致认为实施例3和实施例5的生物药品口感更加的软弹,且更吸引儿童食用。
应用例1
具有促进消化和吸收功能的生物药品的应用,将实施例3的生物药品、淀粉、鲤鱼肉、葱姜蒜盐混合打成肉泥,使用灌肠机将肉泥灌入肠衣,加热煮熟,制备成鱼肠。
应用例2
具有促进消化和吸收功能的生物药品的应用,将实施例4的生物药品、淀粉、鲤鱼肉、葱姜蒜盐混合打成肉泥,使用灌肠机将肉泥灌入肠衣,加热煮熟,制备成鱼肠。
应用例3
具有促进消化和吸收功能的生物药品的应用,将实施例5的生物药品、淀粉、鲤鱼肉、葱姜蒜盐混合打成肉泥,使用灌肠机将肉泥灌入肠衣,加热煮熟,制备成鱼肠。
将应用例1、应用例2和应用例3制备的鱼肠,分别随机抽取1/3,组成应用例鱼肠。
对比例3:将市购芜湖金丰禾生物科技有限公司品牌的食用胶、淀粉、鲤鱼肉、葱姜蒜盐混合打成肉泥,使用灌肠机将肉泥灌入肠衣,加热煮熟,制备成对比例3鱼肠。
对比例4:将市购陕西云升生物科技有限公司品牌的可得然胶、淀粉、鲤鱼肉、葱姜蒜盐混合打成肉泥,使用灌肠机将肉泥灌入肠衣,加热煮熟,制备成对比例4鱼肠。
应用例、对比例3和对比例4的评价试验分析:
通过20个试吃志愿者蒙眼闻气味发现:所有志愿者都表示应用例、对比例3和对比例4制备的鱼肠闻起来腥味差距明显,一致认为应用例在制备的鱼肠腥味明显小。将应用例和对比例3-2制备的鱼肠使用具有PEN3便携电子鼻进行检测,发现应用例制备的鱼肠对5个气味传感器的响应值都比对比例3低,对10个气味传感器的响应值都比对比例4低。
通过20个试吃志愿者随机品尝发现:4个志愿者都表示应用例、对比例3和对比例4制备的鱼肠品尝起来口感差距不大,16个志愿者认为应用例在制备的鱼肠口感更加的软弹。
通过20个试吃志愿者随机品尝发现:2个志愿者都表示应用例、对比例3和对比例4制备的鱼肠同等用量后症状差距不大。18个志愿者都表示对比例3和对比例4制备的鱼肠同等用量后,出现腹胀、胃部不适、打嗝、嗳气、反酸、胃酸过多等消化不良的症状,而应用例制备的鱼肠同等用量后,没有出现消化不良的症状。
综上应用例、对比例3和对比例4的评价试验分析,利用本发明生物药品制备的鱼类制品,能够去除土腥味,保留鱼肉鲜美口味,同时口感软弹,具有促进消化和吸收功能。

Claims (3)

1.一种具有促进消化和吸收功能的生物药品,其特征在于,该生物药品原料为:适量纯净水;乳双歧杆菌:5-10份;发酵乳杆菌:20-30份;酵母菌:10-20份;罗伊氏乳杆菌:20-30份;植物乳杆菌:5-10份;益生芽孢杆菌:5-10份;粉末状复合食用胶:40-80份;
该生物药品的制备方法,包括有以下步骤:
步骤(a):称取要求比例份数的乳双歧杆菌、发酵乳杆菌、酵母菌、罗伊氏乳杆菌、植物乳杆菌、益生芽孢杆菌和粉末状复合食用胶、纯净水,备用;
复合食用胶的制备方法,包括以下步骤:
步骤(1),以土壤杆菌为菌株,以葡萄糖、蔗糖、琼脂糖为复合碳源,以NH4Cl、(NH4)2HPO4、NaNO3为复合氮源,并在发酵培养基液中加入β-环糊精和酒糟,发酵得到可得然胶发酵液;
步骤(1)包括:制备发酵培养基液,所述发酵培养基液包括复合碳源8-12%、复合氮源0.5-1%、MgS04·7H2O0.1-0.3%、CaCO30.1-0.3%、β-环糊精1-3%、酒糟1-3%、玉米浆0.5-0.8%,其他为水,调pH为中性;在发酵罐中加入发酵培养基液,加入土壤杆菌菌株,菌株接种量为5-8%,发酵培养温度为25-35℃,转速为120-150r/min,培养周期为72-96h;
步骤(1)的复合碳源中,所述葡萄糖、蔗糖、琼脂糖的质量比为1:(0.3-1):(0.1-0.5);所述复合氮源中,NH4Cl、(NH4)2HPO4、NaNO3的质量比为1:(1-3):(0.5-1);
步骤(2),将可得然胶发酵液离心后,收集沉淀,得到可得然胶发酵液沉淀;
步骤(3),在可得然胶发酵液沉淀中加入结冷胶混合均匀后,在其中加入碱液,搅拌均匀后,离心除去不溶性菌体,取上清液加入CaCl2、NaCl和魔芋葡甘露聚糖后,再次离心,得到胶体沉淀物;
步骤(3)包括:将可得然胶发酵液沉淀加碱液提取后,测得每克可得然胶发酵液沉淀可提取的可得然胶的预计质量为可得然胶的质量,所述可得然胶、结冷胶、魔芋葡甘露聚糖的质量比为1:(1-2):(1-2);碱液浓度为0.2-0.4mol/L;CaCl2加入量分别为上清液质量的0.1-0.3%、NaCl加入量分别为上清液质量的0.5-0.8%;
步骤(4)将胶体沉淀物用去离子水洗涤后,离心脱水,得到中性胶体;
步骤(5)将中性胶体冷冻干燥粉碎,得到粉末状复合食用胶;
步骤(b):将乳双歧杆菌、发酵乳杆菌、酵母菌、罗伊氏乳杆菌、植物乳杆菌、益生芽孢杆菌和粉末状复合食用胶放入搅拌机中在15-35℃下搅拌均匀,得到匀拌原料,备用;
步骤(c):将匀拌原料中加入纯净水和药用辅料,放入搅拌机中在15-35℃下搅拌均匀,得到凝胶状生物药品,备用;
步骤(d):将凝胶状生物药品按剂量单独进行封装。
2.根据权利要求1所述的具有促进消化和吸收功能的生物药品,其特征在于,步骤(c)中的药用辅料选自淀粉、葡萄糖、蔗糖、阿司帕坦、微晶纤维素、硬脂酸镁的一种或多种。
3.一种基于权利要求1或2所述的具有促进消化和吸收功能的生物药品的应用,其特征在于,将该生物药品加入鱼类制品中,制备成具有促进消化和吸收功能的鱼丸、鱼糕或鱼肠。
