抗氧化剂
本公开的口香糖进一步包括抗氧化剂。口香糖可以采用抗氧化剂的各种释放机制,其包含延迟、立即、定时、受控和可变,单独或组合使用本领域已知的程序。在本公开的一方面,口香糖可以利用封装工艺作为抗氧化剂的释放机制。封装程序的一些实例包含但不限于喷雾干燥、流化床包衣、喷雾冷却、凝聚、附聚、固定、吸收和滞留,单独或以任何组合产生完全或部分封装。抗氧化剂可以在两步工艺或多步工艺中包衣。材料可以用如本文所描述的任何成分包衣,以获得产生改进的紧缩性、感官特性和/或稳定性的包衣的产品。

口香糖组合物
本公开的口香糖组合物可以包含本文所述的任何量的胶原蛋白、维生素C和维生素E。本公开的口香糖组合物可以使用通常在口香糖组合物中使用的各种不同的组合物来制备。合适的物理形式包含棒、药片、糖衣丸、芝兰(chicklets)、棍形等。尽管每种产品形式的确切成分因产品而异,但具体技术将为本领域技术人员所知。一般来说,口香糖组合物通常含有基本上不溶于水的可咀嚼的口香糖基质,以及包含水溶性膨胀剂和其它水溶性组分以及香料和可能的其它活性成分的水溶性本体部分,所述其它活性成分通常是水不溶性的。在咀嚼期间,水溶性部分会随着一部分香料(以及其它水不溶性活性物质,如果存在的话)在一段时间内消散。口香糖基质部分在整个咀嚼过程中被保留在口腔中。
在本公开的一个实施例中,口香糖是包括口香糖中心和包衣的包衣的口香糖。除非另有说明,否则本文所述的口香糖组分的量按口香糖中心的重量计。
本公开的口香糖优选地是含有胶原蛋白、维生素C和维生素E的包衣的无糖口香糖。在一个实施例中,口香糖包括包含维生素E的包衣和包括胶原蛋白和维生素C的口香糖中心。包衣可以部分或完全覆盖口香糖中心的表面。
口香糖中心可以占口香糖基质的约5重量%至约95重量%。通常,不溶性口香糖基质可以占口香糖中心的约10重量%至约50重量%,或占口香糖中心的约20重量%至约40重量%。本公开考虑使用任何商业上可接受的口香糖基质。

天然弹性体可以包含例如天然橡胶,如烟雾或液体乳胶和银胶菊,以及天然胶,如糖胶、节路顿胶(jelutong)、勒其卡斯胶(lechi caspi)、皮洛胶(perillo)、索马胶(sorva)、二齿铁线子胶(massaranduba balata)、巧克力铁线子胶(massarandubachocolate)、重齿铁线木胶(nispero)、罗辛丁胶(rosindinha)、瓜塔杭卡胶(gutta hangkang)以及其混合物。优选的弹性体将取决于,例如,其中使用基质的口香糖是粘性还是常规的、合成的还是天然的、气泡口香糖还是普通口香糖。弹性体提供了口香糖特有的橡胶质地。弹性体通常占口香糖基质的5重量%至25重量%。
有时被称为弹性体增塑剂的弹性体溶剂包含但不限于天然松香酯,如甘油酯或部分氢化的松香、聚合松香的甘油酯、部分二聚化松香的甘油酯、松香的甘油酯、部分氢化的松香的季戊四醇酯、松香的甲酯和部分氢化的甲酯、松香的季戊四醇酯、合成物,如萜烯树脂、聚柠檬烯和其它多萜和/或前述物质的任何合适的组合。弹性体溶剂通常以占口香糖基质的5重量%至30重量%的水平使用。

口香糖基质通常还包含填料组分。填料组分通常是无机粉末,如碳酸钙、磨碎的石灰石、碳酸镁、滑石、硅酸盐类型,如硅酸铝和硅酸镁、磷酸二钙、磷酸三钙、纤维素聚合物,如木材、其组合等。填料可以占口香糖基质的5重量%至约50重量%。偶尔,可以将一部分填料与口香糖基质分开添加到口香糖混合物中。
乳化剂也可能具有增塑性能,有助于使不同的基质组分均匀化和相容化。常用的乳化剂包含甘油单酯和甘油二酯,如单硬脂酸甘油酯、卵磷脂、三乙酸甘油酯、单硬脂酸甘油酯、乙酰化甘油单酯、脂肪酸以及其组合。乳化剂通常以占口香糖基质的1重量%至10重量%的水平使用。
口香糖基质通常含有任选的添加剂,如其它抗氧化剂和色素,所述任选的添加剂发挥其正常功能。不太常见的是,香料和甜味剂可以添加到口香糖基质中。这些添加剂(如果使用的话)通常以占口香糖基质的约1重量%或更低的水平使用。
口香糖中心的水溶性部分可以包括柔软剂、甜味剂、调味剂和其组合以及其它任选的成分。例如,口香糖中心的大部分水溶性部分通常包括用作膨胀剂的水溶性粉末状碳水化合物。在有糖口香糖中,这通常是蔗糖,尽管也可以单独或以任何组合使用其它糖,如果糖、赤藓糖、右旋糖(葡萄糖)、左旋糖、塔格糖、半乳糖、海藻糖、玉米糖浆固体等。
通常,无糖口香糖将使用糖醇(也称为醛醇、多元醇(polyol)或多元醇(polyhydric alcohol))作为膨胀剂,因为其具有低致龋性、降低的热含量和降低的血糖值的优点。此类糖醇包含山梨醇、甘露醇、木糖醇、氢化异麦芽酮糖、麦芽糖醇、赤藓糖醇、氢化淀粉水解产物固体等,单独或在任何组合中。长链糖,如聚葡萄糖和低聚果糖有时由于其降低的热含量特性和其它健康益处被使用。膨胀剂通常占口香糖中心的约5重量%至约95重量%。
为了优化口香糖的咀嚼性和口感,在口香糖中添加了柔软剂。柔软剂在本领域中也称为增塑剂(plasticizer)或增塑剂(plasticizing agent),通常占口香糖中心的约0.5重量%至约15重量%。这些包含甘油、丙二醇和甜味剂水溶液(糖浆)。糖浆的实例包含玉米糖浆和(一般)葡萄糖糖浆,其通常由水解的淀粉制备。对于无糖产品,可以将淀粉水解产物氢化以产生称为氢化淀粉水解产物糖浆或麦芽糖醇糖浆的成分。这些HSH糖浆在很大程度上取代了先前用于无糖口香糖的山梨醇溶液,因为其还可以作为粘合剂来提高口香糖的柔韧性和其它物理特性。柔软剂也经常用于控制产品的保湿性(吸水特性)。
有时会在口香糖中添加乳化剂,以提高口香糖产品的稠度和稳定性。其也可能有助于产品柔软度。卵磷脂是最常用的乳化剂,尽管也可以使用非离子乳化剂,如聚氧乙烯山梨糖醇脂肪酸酯和衍生自山梨醇的常见脂肪酸(月桂酸、棕榈酸、硬脂酸和油酸己糖醇酐(已糖醇酐和己糖二酐))的部分酯。当使用时,乳化剂通常占口香糖中心的0.5重量%至2重量%。
合适的表面活性剂包含可以是钾、铵或钠的盐的表面活性剂。钠盐包含阴离子表面活性剂,如烷基硫酸盐,包含月桂基硫酸钠、月桂醇聚醚硫酸钠等。其它钠盐包含月桂酰肌氨酸钠、黄铜酸钠等。合适的铵盐包含甜菜碱衍生物,如椰油酰胺丙基甜菜碱等。
在无糖口香糖的情况下,通常期望添加高强度甜味剂来补偿由糖醇代替有糖口香糖中的蔗糖而导致的甜味降低。最近,趋势是在有糖口香糖中添加高强度甜味剂,以增强和延长风味和甜味。高强度甜味剂(有时被称为高效甜味剂或人造甜味剂)可以定义为食品可接受的化学物质,其甜度至少是蔗糖的二十倍。常用的高强度甜味剂包含阿斯巴甜、三氯蔗糖和安赛蜜-K。不太常用的有糖精、索马甜、阿力甜、纽甜、甜蜜素、紫苏衍生的甜味剂、甜菊糖衍生的甜味剂,莫那丁、莫内林和查尔酮。
高强度甜味剂的使用水平可能会有很大差异,这取决于甜味剂的效力、当地市场偏好以及可能给口香糖带来苦味的其它成分的性质和水平。典型水平范围可以是约0.01重量%至约2重量%,尽管一些应用可能要求使用该范围之外的量。这些甜味剂可以组合在一起,或者与不同水平的非高强度甜味剂组合,以赋予整个组合物甜味协同作用。

用各种载体和/或稀释剂共同干燥和封装香料是常见的。例如,使用阿拉伯树胶、淀粉、环糊精或其它载体的喷雾干燥香料通常用于口香糖中,用于保护、控制释放、控制产品质地和更容易处理以及其它原因。当香料处于此类形式时,通常需要增加使用水平以补偿载体或稀释剂的存在。
本公开的口香糖可以使用各种增感剂。通常,增感剂可以是对例如口腔或皮肤造成冷却、加热、温热、刺痛或麻木的任何化合物。冷却剂是一种三叉神经兴奋剂,能给口腔、喉咙和鼻腔带来凉爽感觉。最广为人知的冷却剂是薄荷醇,尽管由于其香气特性以及其是薄荷油的天然组分,薄荷醇通常被认为是一种香料。更常见的是,术语冷却剂是指是其它天然或合成化学物质,用于赋予具有最低香气的冷却感。常用的冷却剂包含对薄荷烷甲酰乙胺和其它N-取代的对薄荷烷甲酰胺,N,2,3-三甲基-2-异丙基-丁酰胺和其它无环甲酰胺、戊二酸薄荷酯(香料提取物制造协会(Flavor Extract Manufacturing Association)(FEMA 4006))、3-1-甲氧基丙烷-1,2-二醇、异胡薄荷醇、琥珀酸薄荷酯、乳酸薄荷酯、戊二酸薄荷酯、薄荷酮甘油缩酮、对薄荷-1,8-二醇、薄荷醇甘油醚、N-叔丁基-对薄荷-3-甲酰胺、对薄荷-3-羧酸甘油酯、甲基-2-异丙烯基-双环(2.2.1)、庚烷-2-甲酰胺、薄荷醇甲基醚等以及其组合。
可以使用冷却剂来增强薄荷香料的凉爽味道或为水果和调味香料增加凉爽。冷却剂还提供了呼吸清新的感觉,这是许多口香糖和糖果营销的基础。
在本公开的口香糖中可以使用除冷却剂之外的三叉神经兴奋剂。这些包含温热剂,如辣椒素、辣椒油树脂、红辣椒油树脂,黑辣椒油树脂、胡椒碱、姜油树脂、姜酚、姜辣素、肉桂油树脂、桂皮油树脂、肉桂醛、丁香酚、香草醛的环状缩醛、薄荷醇甘油醚和不饱和酰胺,以及刺痛剂,如阎浮树提取物,香草基烷基醚,如香草基正丁基醚,千日菊素、紫锥菊提取物和北刺桐提取物。这些组分中的一些也被用作调味剂。
口香糖通常能带来口腔护理益处。除了通过咀嚼动作提供的牙齿的机械清洁外,通过咀嚼刺激的唾液、产品的风味和味道在减少口臭、中和酸等方面带来了另外的有益特性。唾液还含有有益的多肽和其它组分,可以改善口腔环境。这些包含:抗微生物蛋白,如溶菌酶、乳铁蛋白、过氧化物酶和富组蛋白;自发结晶抑制剂,如富酪蛋白。

本公开的口香糖可以用于将生物活性剂和其它美容成分向咀嚼者递送。此类成分包含维生素、矿物质、抗氧化剂、营养补充剂、膳食补充剂、功能性食品成分(例如,益生菌、益生元、番茄红素、植物甾醇、甾烷醇/甾醇酯、ω-3脂肪酸、腺苷、叶黄素、玉米黄质、葡萄籽提取物、银杏叶、异硫氰酸盐等)、OTC和处方药、疫苗以及营养补充剂。
可能期望采取某些步骤来增加或降低药剂的释放速率或确保至少释放最小量。为此目的,可以采用如封装、活性物质的分离、增加或减少与口香糖的水不溶性部分的相互作用的措施以及活性物质的肠溶包衣等措施。
通常,口香糖是通过将各种口香糖成分顺序地添加到本领域已知的可商购获得的混合器中来制造的。在成分充分混合后,将口香糖块从混合器中排出,并且成形为期望的形式,如卷片和切成棒、挤出块状或浇铸成颗粒,然后对其进行包衣或抛光。

口香糖基质和口香糖产品通常使用单独的混合器、不同的混合技术制造,并且通常在不同的工厂制造。其中一个原因是,制造口香糖基质的最佳条件,以及由口香糖基质和其它成分(如甜味剂和香料)制造口香糖的最佳条件非常不同,因此将这两项任务结合起来是不切实际的。口香糖基质的制造涉及难以混合的成分的分散(通常是高剪切)混合,如弹性体、填料、弹性体增塑剂、基质柔软剂/乳化剂,有时还有蜡。此过程通常需要较长的混合时间。口香糖产品的制造还涉及使用分配(通常是较低剪切)混合,持续较短的时段将口香糖基质与更精细的成分(如产品柔软剂、散装甜味剂、高强度甜味剂和调味剂)组合。
本发明的口香糖也是包衣的。颗粒或球状口香糖是如传统口香糖一样制备的,但会形成为枕头状的颗粒或形成球。颗粒/球然后可以通过常规抛光技术进行糖包衣或抛光,以制备独特的糖包衣的颗粒口香糖。如本文所讨论的,维生素E被掺入口香糖包衣中。
常规抛光程序通常用蔗糖包衣,但最近的抛光进展允许使用其它碳水化合物材料代替蔗糖。这些组分中的一些包含但不限于右旋糖、麦芽糖、帕拉金糖、木糖醇、乳糖醇、氢化异麦芽酮糖和其它新型醛醇或其组合。这些材料可以与抛光改性剂混合,包含但不限于阿拉伯树胶、麦芽糊精、玉米糖浆、明胶、纤维素类材料,如羧甲基纤维素或羟甲基纤维素、淀粉和改性淀粉、植物胶,如海藻酸盐、角豆胶、瓜尔豆胶和黄蓍胶、不溶性碳酸盐,如碳酸钙或碳酸镁和滑石。也可以添加抗粘剂作为抛光改性剂,所述抛光改性剂允许在开发新的抛光的或包衣的口香糖产品时使用各种碳水化合物和糖醇。精油也可以与糖包衣一起添加,以产生独特的产品特性。
以下实例是本公开的优选的实施例的说明性实例,并且不应被解释为限制性实例。除非另有说明,否则所有百分比均基于组合物的重量百分比,并且所有总计等于100重量%。
实例1:口香糖调配物
如下表1至3所示,制备含有和不含胶原蛋白的口香糖调配物。

实例2:保质期研究
在30℃/70%相对湿度(RH)下,在8周的时段内评估表1的口香糖组合物在各种包装中的稳定性,并且使用以下量表与对照进行比较:
绿色:与对照/参考相同或相似
黄色:可接受,但与对照/参考略有不同
红色:与对照组大为不同,并且具有严重缺陷

实例3:胶原蛋白嚼出率
通过确定新鲜样品嚼出12分钟和20分钟后剩余的氮含量来评估本公开的含胶原蛋白的包衣的口香糖组合物的嚼出率(在本文中也称为释放率)。每100g被咀嚼的样品贡献40.79g口香糖反刍重量。包衣的口香糖包括的胶原蛋白的量占口香糖中心的17重量%。结果汇总在下表4和表5中。

Claims (13)
1.一种包衣的口香糖,其包括:
维生素C;
维生素E;以及
胶原蛋白,所述胶原蛋白的量占所述包衣的口香糖的约6重量%至约20重量%。
2.根据权利要求1所述的包衣的口香糖,其中所述包衣的口香糖包括的胶原蛋白的量占所述包衣的口香糖的约6.1重量%至约18.5重量%。
3.根据权利要求1所述的包衣的口香糖,其中所述包衣的口香糖包括的维生素C的量占所述包衣的口香糖的至少0.2重量%。
4.根据权利要求1所述的包衣的口香糖,其中所述包衣的口香糖包括的维生素C的量占所述包衣的口香糖的约0.296重量%。
5.根据权利要求1所述的包衣的口香糖,其中所述包衣的口香糖包括的维生素E的量占所述包衣的口香糖的至少0.1重量%。
6.根据权利要求1所述的口香糖,其中所述包衣的口香糖包括的维生素E的量占所述口香糖的约0.167重量%。
7.根据权利要求1所述的包衣的口香糖,其中所述包衣的口香糖包括包衣和口香糖中心。
8.根据权利要求7所述的包衣的口香糖,其中所述口香糖中心包括的胶原蛋白的量占所述口香糖中心的约8重量%至约25重量%。
9.根据权利要求8所述的包衣的口香糖,其中所述口香糖中心包括的胶原蛋白的量占所述口香糖中心的约8.33重量%至约25重量%。
10.根据权利要求7所述的包衣的口香糖,其中所述口香糖中心包括的维生素C的量占所述口香糖中心的至少0.1重量%。
11.根据权利要求7所述的包衣的口香糖,其中所述口香糖中心包括的维生素C的量占所述口香糖中心的约0.4重量%。
12.根据权利要求7所述的包衣的口香糖,其中所述包衣包括维生素E。
13.根据权利要求1所述的包衣的口香糖,其中所述包衣的口香糖为无糖口香糖。
