Abstract
一种全脂速溶黑豆粉的加工方法,其特点是以纯黑大豆为原料,取饱满黑色的黑大豆经清洗,在温度70℃—80℃,时间为80—90分钟进行烘干,脱皮;在压力0.05kg/cm2-0.15kg/cm2,碱水温度在60—80℃进行失活处理,将豆粗磨、精磨、甩浆;在温度130—140℃下脱腥去臭处理,加糖后在温度90—95℃,波美度15—16进行二次灭菌、浓缩,在塔内温度80—85℃,压力60—120kg/cm2下进行干燥处理,制成营养丰富,还有理疗效果的多功能保健粉。
Description
本发明是涉及一种豆制品的加工工艺。
大豆可分黑、白、黄、褐、青、斑籽色,其制品种类很多;黑豆制品是属于天然食品,有较高的营养价值;目前人们都想食用到大自然食品。但黑豆的利用很少,有的是利用黑豆为主要原料制成“保健营养长寿粉”及“保健饮料”,而且没有单纯利用黑豆制成食品,更好的利用黑大豆的功用。
本发明的目的是提出一种全脂速溶黑豆粉的加工方法,单纯利用黑大豆为原料制成粉,供人们食用,令人长肌肤,温颜色,填骨髓,增气力,补虚能食,滋润肺腑。
本发明是用纯黑大豆为原料,经加工制成全脂速溶黑豆粉。其特征在于:以纯黑大豆为原料,经过:
(1)取籽粒饱满、色泽黑亮的纯黑大豆进行清洗处理,使原料颗粒均匀而无杂质;
(2)原料烘干,其温度在70℃—80℃,时间为80—90分钟下进行;烘干后脱皮;
(3)失活处理:压力在0.05kg/cm2—0.15kg/cm2,碱水温度60—80℃,热水温度70—90℃;
(4)粗磨,加消泡添加剂再精蘑,甩浆;
(5)脱醒去臭处理:温度在130—140℃;
(6)加糖:蔗糖50—70%,饴糖10—20%,乙基麦芽粉0.1—0.2%;
(7)二次杀菌、浓缩:温度90—95℃,波美度15—16;
(8)干燥处理:压力60—120kg/cm2,塔内温度80—85℃,喷头直径2.4—2.6mm;
(9)出粉、化验、包装制成全脂速溶黑豆粉。
黑大豆含有丰富的蛋白质、脂肪及碳水化合物、胡萝卜素、维生素B1、B2、烟酸,并含有:(1)异黄酮类:大豆黄酮甙和染料甙;(2)皂甙:大豆皂醇A、B、C、0、E等五个甙元;(3)含叶酸、亚叶酸、泛酸、生物素、维生素B12、唾液酸等;(4)黑大豆皮含有矢车菊甙和飞葵草素—3—葡萄糖甙、果胶、乙酰丙酸及多糖类;(5)脂肪:黑豆油的脂肪酸中含饱合脂肪酸10%,其余为不饱合脂肪酸;早在《本草纲目》书上记载:黑色通肾,人肾功多,故能治水,消胀下气,肾虚消渴。《本草汇言》曰:黑豆解百毒、下热气之药也;缪民曰:善解五金,八石百草诸毒及虫毒、宜水浸、生捣作膏、白汤调服;又衬风,利水散热风痹瘫方中用之,黄胆水肿方中用之,烦渴热结方中用之。生捣成水浸食之解毒,敷之肉上散痛肿。
本发明与现有的技术相比,此粉用纯净的黑大豆为原料,经过选料、烘干、失活、粗精蘑、脱醒去臭、浓缩、干燥制成全脂速溶黑豆粉。此粉不但具有活血、利尿、祛风、解毒之功能,而且有丰富的营养成分:脂肪≥7%,蛋白质≥14%、水份4%,总糖71%、溶解度≥90%,是一种多功能保健食品。
本发明的实施例:
全脂速溶黑豆粉,以黑大豆粉为原料,经清洗、烘干、脱皮、失活、粗蘑、精磨(添加消泡剂)、超高温杀菌灭酶、真空脱醒去臭、加糖、二次杀菌、浓缩、压力干燥、出粉、化验制成全脂速溶黑豆粉。其具体方法,取纯黑大豆,经过:
(1)取颗粒均匀无杂质的籽粒满黑亮的黑大豆进行清洗处理;
(2)在75℃温度下,时间为85分钟对黑豆原料烘干,并脱皮;
(3)脱皮后的黑大豆在压力0.1kg/cm2,碱水温度70℃,热水温度80℃下进行失活处理;
(4)失活黑豆进行粗磨,加消泡添加剂再精磨,并甩浆:
(5)将豆浆在温度135℃下进行脱醒去臭处理;
(6)取糖的量:蔗糖60%,饴糖15%,乙基麦芽粉0.2%加入豆浆中;
(7)在90℃温度下二次杀菌,浓缩后的波美度16;
(8)在塔内温度85℃中,喷头直径2.4mm,压力为90kg/cm2下对浓缩后的豆浆进行干燥处理成黑豆粉,将粉进行化验、包装出品成全脂速溶黑豆粉。
当要制出不含糖的全脂速溶黑豆粉时,只要在上述工艺中脱醒去臭工艺后,不加糖即可制出不含糖的全脂速溶黑豆粉。
饮用时,取出全脂速溶黑豆粉,在50—70℃水中冲调,即可饮用。

1、一种全脂速溶黑豆粉的加工方法,以黑大豆为主要原料制成,其特征在于:以纯黑大豆为原料,经过:
(1)取籽粒饱满、色泽黑亮的黑大豆进行清洗处理,使原料颗粒均匀无杂质;
(2)原料烘干,其温度在70℃—80℃,时间为80—90分钟下进行;烘干后脱皮;
(3)失活处理:压力在0.05kg/cm2-0.15kg/cm2,碱水温度60-80℃,热水温度70—90℃;
(4)粗磨,加消泡添加剂精磨,甩浆;
(5)脱醒去臭处理:温度在130-140℃;
(6)加糖:蔗糖50—70%,饴糖10—20%,乙基麦芽粉0.1—0.2%:
(7)二次杀菌、浓缩:温度90-95℃,波美度15—16;
(8)干燥处理:压力60—120kg/cm2,塔内温度30-85℃,喷头直径2.4-2.6mm;
(9)出粉、化验、包装制成全脂速溶黑豆粉。
