技术领域
本发明涉及保健食品技术领域,具体为一种肠炎患者食用的营养食品及制备方法。
背景技术
炎性肠病定义:一组与遗传、环境、免疫相关的肠道疾病。致病性自身抗原与具有交叉反应的外来抗原刺激机体,产生异常免疫应答并导致相关组织损伤。
炎性肠病患者会表现为反复的腹痛、腹泻、粘液血便,甚至出现各种全身并发症如视物模糊、关节疼痛、皮疹等。本病经治疗可好转,也可自行缓解。但多数患者反复发作,迁延不愈,其中相当部分患者因出现并发症而需要手术治疗。
炎性肠病患者肠道不能正常吸收进食的碳水化合物、蛋白质、脂肪、维生素及多种微量元素,加上肠道验证或服用的药物可能造成食欲不佳,因此炎性肠病常伴随着不同程度的营养不良,甚至影响小孩正常的生长发育。营养支持对炎性肠病整装缓解及促进愈合有重要的作用,因此保持自身良好的营养状态是治疗炎性肠病一个重要的部分。
炎症性肠病患者往往存在营养不良,体重过少,甚至出现恶液质。据统计,56%-75%的炎症性肠病患者存在体重不足, 60%-80%的患者有评学。他们缺乏的基本营养成分有氨基酸(蛋白质基本成分)、葡萄糖(碳水化合物)、矿物质和微量元素、维生素和水等,但最为重要的是蛋白质缺乏。营养不良的最为直接的原因是饮食营养成分摄入不足、丢失过多和吸收障碍。而且病情急性活动会带来器官功能应急,营养消耗大大增加,再加之长期服用药物如皮质激素、氨基水杨酸类的影响,营养缺乏的问题日益突出。除了蛋白质、脂肪以外,维生素A、叶酸、锌、钙、钾、镁均出现不同程度的缺乏。患者表现为衰弱、体重降低、免疫机能减低和伤口难以愈合等。反过来,营养不良又直接影响长度损伤部位的修复。一旦陷入这样的恶性循环,患者的病情便迅速加剧,出现全身衰竭。
中医认为,炎性肠病时因为湿邪内蕴、气血壅滞和脾肾亏损所致,脾肾亏虚为其本虚,湿邪内蕴为其标实,二者互为因果,而气滞血瘀贯穿整个病程。
对比文件1(CN101731514A),具体公开了一种营养小米粉复合物包括如下部分:小米粉,营养强化剂,即食又药提取物以及辅料,所述复合物组成部分的重量配比为小米粉300-900 粉,营养强化剂,即食又药提取物以及辅料。如前所述,对比文件1的原料小米为五谷杂粮,而本发明中选用粳米,因粳米含有大量碳水化合物,约占79%,是热量的主要来源。粳米富含蛋白质、脂肪、钙、磷、铁及B族维生素等多种营养成分,具有养阴生津、除烦止渴、健脾胃、补肺气的作用。
本发明正式结合中医治疗慢性病的优势和炎性肠病对饮食的特殊需求,而创造的一种五谷杂粮全营养配方食品。
发明内容
本发明的目的在于提供一种肠炎患者食用的营养食品及制备方法,以解决上述背景技术中提到的问题。
为实现上述目的,本发明以粳米、水解蛋白粉和乳清蛋白粉为基础原料,添加了酪蛋白磷酸肽、葡萄糖、蜂蜜和中链甘油三酯,进一步强化了能量物质、脂肪和微量元素的吸收;并且还添加了结合临床经验。精心配伍的中药组方所提取的有效成分—中药提取液;经反复摸索获得一组配方,在该配方范围内,中药成分;基础营养元素以及强化营养成分发生协同作用,显现出了出人意料的技术成果,完美解决了上述技术问题。
本发明供应性肠病患者食用的五谷杂粮全营养配方食品,由如下重量份的原料制成:粳米18-22份、水解蛋白粉10-14份、乳清蛋白粉7-13份、中药提取液7-9份、酪蛋白磷酸肽5-7份、葡萄糖1.8-2.2份、中链甘油三酯2.5-3.5份、壳寡糖1.5-2.0 份。
最佳配方为:粳米20份、水解蛋白粉12份、乳清蛋白粉 10份、中药提取液8份、酪蛋白磷酸肽6份、葡萄糖2份、蜂蜜2份、中链甘油三酯3份、壳寡糖2份。
该配方中的中药提取液由如下重量肥的原料制成:当归 15-18份、黄芩10-14份、芍药15-18份、党参7-13份、白术 7-13份、茯苓15-18份、苍术12-16份、砂仁7-13份、莲肉10-14份、薏仁18-22份、大枣7-13份、陈皮10-14份、人参7-13份、甘草7-13份、粳米7-13份、扁豆14-18份、山药7-13 份、桔梗7-13份。
其中最佳组方为:当归15份、黄芩12份、芍药15份、党参10份、白术10份、茯苓15份、苍术13份、砂仁10份、莲肉12份、薏仁20份、大枣10份、陈皮12份、人参10份、甘草10、粳米10份、扁豆16份、山药10份、桔梗9份。
本发明供应性肠病患者食用的五谷杂粮全营养配方食品由以下步骤加工而成:
(1)将粳米洗净、烘干、磨碎过100目筛,备用:
(2)将粳米粉与酪蛋白酸酞、水解蛋白粉、乳清蛋白粉、中药提取液、葡萄糖、蜂蜜、中链甘油三酯、壳寡糖混合均匀,加入中药提取液和纯化水混合均匀成糊状,通过均质机均质,再加热到100摄氏度,保持五分钟,冷却;
(3)将(2)所得混合糊状物制成成品。
本发明所述食品可以制成粉状、颗粒状或者糊状。
本发明所述一种供应炎性肠病患者食用的五谷杂粮全营养配方食品的主要原料有以下几种:
粳米:又称粳粟米等,与籼米相对应,含有大量碳水化合物,约占79%,是热量的主要来源。粳米富含蛋白质、脂肪、钙、磷、铁及B族维生素等多种营养成分,具有养阴生津、除烦止渴、健脾胃、补肺气的作用。
酪蛋白磷酸肽:酪蛋白磷酸肽(CPP)是以牛乳酪蛋白为原料,通过生物技术制得的具有生物活性的多胎,可用于各种营养、保健食品中,能有效促进人体对钙、铁、锌等二价矿物营养素的吸收和利用。
水解蛋白粉:为一种高蛋白食品强化物。将水解蛋白粉和谷类食品搭配成营养食品,改变了各种食品中蛋白质的成分,不但能加强食品,而且提高了这类食品氨基酸的吸收与利用率。
除此以外,水解蛋白粉中精氨酸、谷氨酸的含量也很高,这些氨基酸医学上用以治疗昏迷。因此水解蛋白粉对幼儿、青少年、老弱病人均为营养佳品。本发明所用水解蛋白粉是成品的大豆水解蛋白粉。
乳清蛋白粉:乳清蛋白时一种存在于几乎所有哺乳动物乳汁中的蛋白质,由123个氨基酸残基组成,其氨基酸序列和立体结构均与溶菌酶同源,是乳糖合酶的一个亚基。乳清蛋白被称为蛋白质网,是从牛奶中提取的一种蛋白质,具有营养价值高、易消化吸收、含有多种活性成分的特点,是公认的人体优质蛋白质补充剂之一。
壳寡糖:壳寡糖又叫壳聚寡糖、低聚壳聚糖,是将壳聚糖经特殊的生物酶技术(也有使用化学降解、微波降解技术的报道)降解得到的一种聚合度在2~20之间寡糖产品,分子量≤ 3200Da,是水溶性较好、功能作用大、生物活性高的低分子量产品。它具有壳聚糖所没有的较高溶解度,全溶于水,容易被生物体吸收利用等诸多独特的功能,其作用为壳聚糖的14倍。
中药提取液:本发明所添加的中药提取液的中药组方,实在传统经验的基础上,经过多年临床经验,精心调配出来的,该中药组方的各位药材是:
当归:味甘、辛、苦、性温。归肝;心:脾经。补血;活血;调经止痛;润燥滑肠。主治血虚诸症;月经不调;经闭;痛经;崩漏;虚寒腹痛;肌肤麻木;肠燥便难;赤痢厚重;跌补损伤;
黄芩:味苦,性寒。归肺、胆、脾、胃、大肠、小肠经。清热燥湿,泻火解毒,止血,安泰,降血压。用于湿温、暑温胸闷呕恶,泻痢,肺热咳嗽,高热烦渴,胎动不安。
芍药:味苦,性平,无毒。有散瘀、活血、止痛、泻肝火之效,主治月经不调,关节肿痛、胸痛、肋痛等。
党参:甘,平。补中益气,和胃生津,祛痰止咳。用于脾虚食少便溏,四肢无力,心悸,气短,口干,自汗,脱肛,阴挺。
白术:苦、甘,温。健脾益气,燥湿利水,止汗,安胎。用于脾虚食少,消化不良,泄泻,水肿,自汗,胎动不安。
茯苓:甘、淡、平。归心经、肺经、脾经、肾经。利水药:肾湿利尿药。主治小便不利:水肿胀满:心悸不安、遗精白浊。
苍术:味辛、苦,性温,归脾、胃、肝经,燥湿健脾,祛风散寒,明目。
砂仁:味辛,性温;归脾、胃、肾经,行气调中,和胃,醒脾。治腹痛痞胀,胃呆食滞,噎膈呕吐,寒泻冷痢,妊娠胎动。
莲肉:味甘、涩,平。归脾、肾、心经,补脾止泻,益肾涩精,养心安神。用于脾虚久泻,遗精带下,心悸失眠。
薏仁:味甘、淡,凉。归脾、胃、肺经,利水渗湿,健脾止泻,除痹,排脓,解毒散结。用于水肿,脚气,小便不利,脾虚泄泻,湿痹拘挛,肺痈,肠痈,赘疣,癌肿。
大枣:味甘,性温,无毒,用于乏力便溏,妇人脏躁。预防输血反应,降低血清谷丙转氨酶,抗肿瘤,抗氧化,降血压、降胆固醇,保肝护肝,提高免疫力,防治脑供血不足,抗过敏,防治心血管病,防治骨质疏松和贫血。
陈皮:味苦、辛,性温,归肺、脾经,理气健脾,燥湿化痰。
人参:味甘、微苦,性温、平。归脾、肺经、心经。补气,固脱,生津,安神,益智,体虚欲脱,肢冷脉微,脾虚食少,肺虚喘咳,津伤口渴,内热消渴,久病虚羸,惊悸失眠,阳痿宫冷;心力衰竭,心原性休克。
甘草:甘草用于心气虚,心悸怔忡,脉结代,以及脾胃气虚,倦怠乏力等。
粳米:味甘,性平,入肺、脾、胃经,健脾和胃,补中益气,除烦渴,止泻痢。适宜于各类人群,尤宜于脾胃虚弱、食少纳呆、倦怠乏力、心烦口渴、泻下痢疾者食用。
扁豆:味辛甘、性平,可治吐泻转筋、疮毒、跌打创伤。
山药:味甘,温、平,主头面游风,头风眼眩,下气,止腰痛,治虚劳赢瘦,充五脏,除烦热。
桔梗:用于咳嗽痰多,胸闷不畅,咽痛,音哑,肺痈吐脓,疮疡脓成不溃。
葡萄糖:葡萄糖又称玉米葡糖,是自然界分布最广且最为重要的一种单糖,它是一种多羟基醛。纯净的葡萄糖为无色晶体,有甜味,易溶于水,微溶于乙醇,不溶于乙醚。水溶液旋光向右,故又称“右旋糖”。葡萄糖在生物学领域具有重要地位,是活细胞的能量来源和新陈代谢中间产物,生物的主要功能物质,本发明所述食品添加葡萄糖是因为,大剂量放射治疗病人,可使患者体内的糖代谢遭到破坏,糖原急剧下降,血液中乳酸增多,不能再利用;而且胰岛素功能不足加重,补充葡萄糖能迅速解决这些问题,葡萄糖是最容易被身体利用的单糖。
蜂蜜:蜂蜜,是昆虫蜜蜂从开花植物的花中采得的花蜜在蜂巢中酿制的蜜。蜂蜜的作用于功效:
(1)优质蜂蜜在室温下放置数年不会腐败,表明其防腐作用极强。实验证实,蜂蜜对链球菌、葡萄球菌、白喉杆菌等革兰阳性菌有较强的抑制作用。
(2)研究证明,蜂蜜对胃肠功能有调节作用,可使胃酸分泌正常。动物实验证实,蜂蜜有增强肠蠕动的作用,可显著缩短排便时间。
(3)蜂蜜可缓解神经紧张,促进睡眠,并有一定的止痛作用。蜂蜜中的葡萄糖、维生素、镁、磷、钙等能够调节神经系统,促进睡眠。
(4)蜂蜜对肝脏的保护作用,能为肝脏的代谢活动提供能量准备,能刺激肝组织再生,起到修复损伤的作用。
(5)中链甘油三酯:中链甘油三酯即中链脂肪,天然存在于棕榈仁油、椰子油等食品和母乳中,是膳食脂肪的来源之一,主要成分是“辛,癸酸甘油酯,中链甘油三酯(MCT)通常可作为手术后、感染和皮肤烧伤病人的专用食品,还可用于那些患有脂肪吸收不良,艾滋病人和癌症病人、糖尿病人的食品,可用于治疗前列腺增生、消散胆石、降低胆固醇、防治高血脂症等。此外还可以帮助减肥,实践证明,食用中链脂肪酸酯MCT对人体的体重、腹部脂肪面积的减少、腰围的减少,均有明显的效果。
与现有技术相比,本发明公开的一种肠炎患者食用的营养食品及制备方法具有以下特点和显著技术进步:
1、本发明提供的五谷杂粮全营养配方食品,以微小的进食量就能满足炎性肠病患者的特殊营养需求,可以减轻患者胃肠道的负担,同时可以减轻因摄入大量食物造成的胃肠道痛苦。
2、本发明所述食品还添加了经过临床实践精心调配的中药组方,在补充营养的同时,对患者起到消炎止痛、辅助治疗和调理身体的作用;并且在本发明的食品原料配比范围内,中药成分和各种营养元素协同作用,以微小的添加量达到了出人意料的技术成果,具体见实施例9。
3、本发明所述食品,口感好,效果佳,方便食用,适合炎性肠病患者辅助治疗使用。

实施例1本发明营养粉的制备:
(1)将粳米洗净、烘干、磨碎过100目筛,备用:
(2)按前文所述配方配比分别成称取:当归150g、黄芩 120g、芍药150g、党参100g、白术100g、茯苓150g、苍术130g、砂仁100g、莲肉120g、薏仁200g、大枣100g、陈皮120g、人参100g、甘草100g、粳米100g、扁豆160g、山药100g、桔梗 90g分别使用高速珠磨法进行粉碎,混均:
将适度粉碎的药材放置在渗漉筒中,由上部不断添加纯水,纯水渗透药材层向下流动过程中,浸出药材成分,得出中药提取液,备用;
(3)按前文所述配方配比,分别称取粳米18kg、水解蛋白粉10kg、乳清蛋白粉8kg、中药提取液7kg、酪蛋白磷酸肽5kg、葡萄糖1.8kg、蜂蜜1.8kg、中链甘油三酯2.5kg、壳寡糖1.5kg, 加纯化水,混合均匀呈稀糊状,通过均匀及均质,在加热到100 摄氏度,保持4分钟,冷却;
(4)将(3)所得混合糊状物烘干,磨碎过80目筛,50g/ 袋包装,即为成品。
实施例2本发明营养粉的制备:
(1)将粳米洗净、烘干、磨碎过100目筛,备用:(2) 按前文所述配方配比分别成称取:当归180g、黄芩150g、芍药180g、党参130g、白术130g、茯苓180g、苍术150g、
砂仁130g、莲肉150g、薏仁230g、大枣130g、陈皮150g、
人参130g、甘草130g、粳米130g、扁豆190g、山药120g、
桔梗110g分别使用高速珠磨法进行粉碎,混均:
将适度粉碎的药材放置在渗漉筒中,由上部不断添加纯水,纯水渗透药材层向下流动过程中,浸出药材成分,得出中药提取液,备用。
(3)按前文所述配方配比,分别称取粳米22kg、水解蛋白粉14kg、乳清蛋白粉12kg、中药提取液9kg、酪蛋白磷酸肽7kg、葡萄糖2.2kg、蜂蜜2.2kg、中链甘油三酯3.5kg、壳寡糖2.0kg,加纯化水,混合均匀呈稀糊状,通过均匀及均质,在加热到100 摄氏度,保持4分钟,冷却;
(4)将(3)所得混合糊状物烘干,磨碎过80目筛,50g/ 袋包装,即为成品。
1、动物急性毒性试验
药物:本发明实施例1和实施例2所得营养粉。
实验动物:普通级NIH小鼠,体重20kg,雌雄各半。
方法与结果:
(1)将两种营养粉各50kg,分别用150ml温开水调制成糊状;
(2)将实验小鼠随机分成两组雌雄各半,分别喂食两种营养粉糊,溶剂2ml/10g,密切观察8h并做记录,连续观察7天;
(3)7天中,小鼠无死亡,行为活泼,摄食量如常,毛色光亮无疏松,无惊厥嗜睡,眼、口、鼻、耳及肛周无异常分泌物,无断尾烂趾。分别从两组中选择10只处死,肉眼所见:心、肝、肺、胃内及胸腺等重要器官未见异常改变,表明两种该营养粉均无急性毒性。
2、动物长期毒性试验
药物:本发明实施例1和实施例2所得营养粉。
动物:普通级SD大鼠,体重210g,雌雄各半。
方法与结果:
(1)两种营养粉的配置:均分为高、中、低三个剂量组,分别为患者使用量的200、100、50倍,分别用温开水1:1混合成糊状;
(2)将实验鼠随机分成两组,分别连续喂食调制好的营养糊,连续喂食180天,观察动物全身毒性反应及严重程度,处死后按操作规程检查各部位,并进行血液学,ALT、BUN及心、肝、脾、肺、肾、胃等主要脏器的病理学检查;
(3)经过长期喂食,两组大鼠均未出现毒性反应。发育良好。肉眼外观及主要脏器未见异常。外周血象及血清ALT、BUN与对照组比较无病理性改变。病理报告心、肝、脾、肺、肾、胃等均为有意义的改变,因此认为经病理证实,两种营养糊对动物无慢性毒性表现。
通过以上两个毒性试验,证明本发明按实施例1和实施例2制作的营养份时安全的,无毒副作用的,可以被患者使用。

1.一种肠炎患者食用的营养食品及制备方法,其特征在于所述食品由以下原料加工制成:粳米、酪蛋白酸酞、水解蛋白粉、乳清蛋白粉、中药提取液、葡萄糖、蜂蜜、中链甘油三酯、壳寡糖。
2.如权利要求1所述的一种肠炎患者食用的营养食品及制备方法,其特征在于,由如下重量份的原料制成:粳米18-22份、水解蛋白粉10-14份、乳清蛋白粉7-13份、中药提取液7-9份、酪蛋白磷酸肽5-7份、葡萄糖1.8-2.2份、中链甘油三酯2.5-3.5份、壳寡糖1.5-2.0份。
3.如权利要求2所述的一种肠炎患者食用的营养食品及制备方法,其特征在于,由如下重量份的原料制成:粳米20份、水解蛋白粉12份、乳清蛋白粉10份、中药提取液8份、酪蛋白磷酸肽6份、葡萄糖2份、蜂蜜2份、中链甘油三酯3份、壳寡糖2份。
4.如权利要求1所述的一种肠炎患者食用的营养食品及制备方法,其特征在于,所述中药提取液由如下重量肥的原料制成:当归15-18份、黄芩10-14份、芍药15-18份、党参7-13份、白术7-13份、茯苓15-18份、苍术12-16份、砂仁7-13份、莲肉10-14份、薏仁18-22份、大枣7-13份、陈皮10-14份、人参7-13份、甘草7-13份、粳米7-13份、扁豆14-18份、山药7-13份、桔梗7-13份。
5.如权利要求4所述的一种肠炎患者食用的营养食品及制备方法,其特征在于,所述中药提取液由如下重量肥的原料制成:当归15份、黄芩12份、芍药15份、党参10份、白术10份、茯苓15份、苍术13份、砂仁10份、莲肉12份、薏仁20份、大枣10份、陈皮12份、人参10份、甘草10份、粳米10份、扁豆16份、山药10份、桔梗9份。
6.如权利要求1所述的一种肠炎患者食用的营养食品及制备方法,其特征在于:所述中药提取液的制备方法包括如下工艺步骤:
(1)准确提取:当归、黄芩、芍药、党参、白术、茯苓、苍术、砂仁、莲肉、薏仁、大枣、陈皮、人参、甘草、粳米、扁豆、山药、桔梗,分别使用高速珠磨法进行粉碎,混均:
(2)将适度粉碎的药材放置在渗漉筒中,由上部不断添加纯水,纯水渗透药材层向下流动过程中,浸出药材成分,得出中药提取液。
7.如权利要求1所述的一种肠炎患者食用的营养食品及制备方法,其特征在于包括如下工艺步骤:
(1)将粳米洗净、烘干、磨碎过100目筛,备用:
(2)将粳米粉与酪蛋白酸酞、水解蛋白粉、乳清蛋白粉、中药提取液、葡萄糖、蜂蜜、中链甘油三酯、壳寡糖混合均匀,加入中药提取液和纯化水混合均匀成糊状,通过均质机均质,再加热到100摄氏度,保持五分钟,冷却;
(3)将(2)所得混合糊状物制成成品。
8.如权利要求1所述的一种肠炎患者食用的营养食品及制备方法,其特征在于:所述配方食品可以制成粉状、颗粒状或糊状。
9.如权利要求1所述的一种肠炎患者食用的营养食品及制备方法,其特征在于:所述配方食品适合炎性肠病症患者辅助治疗使用。
