本发明涉及一种冷冻甜食制品,当它被食用时,有泡腾现象,还涉及一种用于制备该制品的方法。
制备当其食用时在口中与水接触产生泡腾现象,且得到的嘶嘶发泡感觉与碳酸饮料感觉差不多的冷冻制品时,存在一个问题,在碳酸饮料中,嘶嘶发泡感觉来自于压入的二氧化碳。在冰冻甜食中,这种气体溶解,且蒸发而没有让人获得所需的感觉。
解决这一问题的一种方法被提出来,例如在FR-A-1573397中,介绍将粉状起泡剂混入冷冻甜食中,该起泡剂密封于不透水的物质中,这是一种脂肪物料在口中能变成液体,并能将试剂释放出来,该试剂一旦放入溶液中与水接触,就起反应释放出二氧化碳气。该起泡剂优选通过分散剂一起分散进上述脂肪物料中,且该混合料通过喷雾进液氮中雾化成微珠。这种方法相当复杂,且在口中获得的泡腾感觉是微弱的,这是因为必须用脂肪来包覆,该脂肪具有相对高的熔点,由于它不能在口中以足够快的速度熔化,使之只能缓慢地释放起泡剂。
在专利申请EP-A-0674841中,通过将彼此分离的起泡剂放置于纵向并列排列的冷冻层中,使该问题在雪糕制造中已得到了解决。但这种解决办法具有局限性,因为它需要首先在第一系列模具中,通过所谓的产品中产品技术,在几个成形阶段由各个纵向层形成芯,接着通过在第二系列模具中插入上述芯,进行包覆或添加物的形成。
由此本发明涉及一种含起泡剂的冷冻甜食制品,能够通过快速释放二氧化碳气在口中产生嘶嘶发泡的感觉,其特征在于通过密封在冷冻粒化物中使该起泡剂彼此分离而不包含不渗水物质。
在以下描述中,冷冻粒化物将被称为“粗粒雪糕”。
粗粒雪糕的成份是含糖的冰水或加有果汁的冰水,其中带有颜色和有风味,且原则上不充气或充少量的气。
本发明范围内的冷冻甜食制品可以包括冰棒、雪糕、小夹心冰淇淋、蛋卷冰淇淋或小甜筒。含试剂的粗粒雪糕按一定比例混合是非常重要的,当该制品吸入,咀嚼或用匙食用时,马上就在口中熔化,从而使试剂与口腔接触。
本发明优选雪糕固定于棍子或小筒上便于吸食或咀嚼,且外包一层壳,使之可以被压力逐渐挤出。
上述制品具有由无明显差异的粗粒雪糕构成的均匀外观,或可以由基于不同色彩,大小和风味的对比并列层组成,以提供装饰性的或有层次的效果。
上述制品,例如雪糕,可以是一种组合结构,例如可以由一外壳组成,其制造是通过在模具中冷冻外层,并取出仍保持液态的芯这一常用方法来完成的,这样就构成了可以定量装入粗粒雪糕的空腔。该外层可以有惰性的组份。
作为一种变化,该制品可含有粉状的干试剂,优选在无水情况下稀释于赋形剂中,例如葡萄糖浆,在低温下,例如大约-30℃,与是惰性的和可构成载体的粗粒雪糕混合。粗粒雪糕块中也可以含有夹杂物,特别是菲滋糖块诸如,例如PETA ZETA,当它们与粗粒雪糕混合时仍能保持其性质。

为了实施该方法,考虑到粗粒雪糕所要求的试剂的各自的特性和体积,混合物由两种类型的粗粒雪糕组成,通过按一定适当比例构成制品,使之在口中熔化,能够发生最彻底的反应。因此,可以通过选择试剂的浓度对泡腾程度进行调整。
作为起泡剂,可以使用由任何可食用的化合物,以在水溶液中互相反应产生二氧化碳气。一方面优选使用合适的水可溶碳酸盐,例如碳酸氢钠或碳酸氢钾,而另一方面是酸,例如苹果酸,酒石酸、乳酸或优选柠檬酸。粗粒雪糕其制备采用传统方法,是通过在水相中溶解起泡剂,接着将其冷冻成一个薄层,在低温下,猛烈地将其破裂成碎屑而完成的。
为了遮盖通过起泡剂混入的异样的成味和酸味,优选,可以增加例如含酸组份固形物含量,例如可以通过以果酱的形式添加碳水化合物。
本发明的一个变形是起泡剂以粉末形式与粗粒雪糕在低温下干混,例如在约-30℃,而粉末不溶解。由于该纯试剂浓度太高以致于不能按原样混入,所以它们优选通过与赋形剂例如葡萄糖浆干混而得到稀释。在这种情况下,只有一种惰性粗粒雪糕,它构成该试剂的载体。各种碎块可以加入该粗粒雪糕中,特别是菲滋糖碎块,例如PETA ZETA,当它们与粗粒雪糕混合时,能保持它们的性质。

接下来的操作是通过装置19将棍子插入,然后从模具中排出,打包并封装(这后面的操作未显示出来)采用常用方法。提供的补充包覆操作也是常用的(未显示),例如通过在从模具中排出之后浸入含水组分的方法,以保护粗粒雪糕不受热和机械振动。
在图2中,除了冷冻液体组份20首先被定量注入模具10中,在表面冷冻之后接着取出芯以形成壳21之外,操作类似于图1中所示的操作。这之后,图1中所示的操作被实施,开始将壳21作为模具。插棒式组合雪糕通过此方法制造。
在图3中,夯实装置12包括一个作为活塞以压迫模具中粗粒雪糕的平坦的上表面14和一个钉子形式的下面部分15。图4中显示出钉状物的十字形横截面,它具有在粗粒雪糕中产生出一个空隙的优点,一旦在其中添加进液体组份,且一旦该组份被冷冻,就具有伸近制品表面的刚性加固结构。
图5和图6显示适宜不同类型模具的夯实机的详细结构。
如图7中所示,夯实机的上面部分是圆顶结构23,具有冲压粗粒雪糕上部的功能。事实上,该粗粒雪糕具有可成形的性质。这种性质能够塑造出诸如24(图8)的三维制品,而不必使用反模具,这样可以显著简化设备。
前述的方法能够使大直径制品冻结成模具棒的宽度。事实上,因为粗粒雪糕块在计量时已经冻结,所以没有必要降低机器速度用以提供时间使该制品冻结成芯,对于给定的温度,这个时间随制品的直径而变。并且,加入到空隙中的液体成份,在与粗粒雪糕接触情况下,冻结非常快,以形成该制品的内部加固。
Claims (10)
1.一种含起泡剂的冷冻甜食制品,能够通过快速释放二氧化碳气在口中产生嘶嘶发泡的感觉,其特征在于通过密封在冷冻粒化物或粗粒雪糕中使该起泡剂彼此分离且不加入不渗水试剂。
2.根据权利要求1的制品,制成冰棒、雪糕、小夹心冰淇淋、蛋卷冰淇淋或小甜筒。
3.根据权利要求1的制品,其特征在于它具有由无明显差异的粗粒雪糕构成的均匀外观,或可以由基于具有不同色彩、大小和风味的粗粒雪糕的对比并列层组成,以提供装饰性的或有层次的效果。
4.根据权利要求1的制品,特别是组合雪糕,由连续的外壳和由粗粒雪糕制得的中央芯组成。
5.根据权利要求1的制品,其特征在于它含有夹杂物,特别是菲滋糖块,当它们与粗粒雪糕混合时仍能保持其性能。
6.一种用于制备菲滋冷冻甜食制品的方法,其特征在于是分别冷冻,一方面是其成份含有第一种起泡剂的第一种类型粗粒雪糕,而另一方面是其成份含有第二种起泡剂能够与第一种在口中反应产生泡腾感觉的第二种类型粗粒雪糕,两类型粗粒雪糕被混合,它们被定量装入模具中,且在模具中被夯实。
7.一种用于制备菲滋冷冻甜食制品的方法,其特征在于起泡剂以粉末形式与粗粒雪糕在低温下干混而粉末不溶解,该起泡剂通过与赋形剂,特别是葡萄糖浆干混而被稀释,该混合料被定量装入模具中,且在模具中被夯实。
8.根据权利要求6或7的方法,用作制备组合制品,其特征在于通过定量将组份注入模具中实施冷冻,吸掉仍处于液态的芯,得到一个壳,接着将粗粒雪糕混合物注入由此形成的空腔。
9.根据权利要求6或7的方法,对于插棒式雪糕的制备,其特征在于它提供在雪糕中央部分,以钉形物方式产生空隙,接着往其中定量注入液体组份,通过渗入到空隙中被冷冻,作为一种用于加固粗粒雪糕的加固件,也用作棍子的固定器。
10.根据权利要求6或7的方法,其特征在于在夯实粗粒雪糕之后,选择性地,插入一根棍,将该制品浸入水涂料组份中,以形成一个外层保护粗粒雪糕不受热和机械振动。
