Abstract

本发明的目的在于提供对水的亲和性得到大幅改善的车前子种皮造粒物及其制造方法。另外,目的在于提供使用了该车前子种皮造粒物的粉末饮料。所述车前子种皮造粒物的特征在于,其是使用通过了120~280目的泰勒筛的粉糖进行造粒而得到的。另外,所述车前子种皮造粒物的制造方法的特征在于,使包含车前子种皮和通过了120~280目的泰勒筛的粉糖的混合物成为流动状态,接下来以雾状喷水,最后使其干燥,由此进行颗粒化。

Description

车前子种皮造粒物及其制造方法、以及包含车前子种皮造粒 物的粉末饮料
技术领域
本发明涉及车前子种皮造粒物及其制造方法。更详细而言,涉及对水的亲和性得到改善的含有车前子种皮的组合物。
背景技术
近年来,随着饮食生活的变化,膳食纤维的摄取量逐渐减少。日本人的膳食摄取基准(2015年版)中的膳食纤维的摄取目标量设定为成年男性19g以上、成年女性17g以上。但是,在平成29年国民健康·营养调查中,报告显示成人每天的膳食纤维摄取量为男性15.2g、女性14.8g,达不到摄取目标量。
之所以设定膳食纤维的摄取目标量,是因为膳食纤维的摄取不足与生活习惯病的发病相关的报告较多。另外,已知膳食纤维具有肠道调节作用等效果,并且还已知肠道调节作用和保水性呈正相关。因此,认为将强化了膳食纤维的食品引入到日常的饮食生活中对于伴随着饮食生活的紊乱、饮食生活的欧美化、以及压力的增加等而因便秘、腹泻而烦恼的人来说是有益的。
作为用于摄取膳食纤维的供给源之一,可举出车前子种皮。为了摄取车前子种皮,通常使其溶解于水中来摄取。但是,如果将车前子种皮加入到水中,则容易形成团块(结块)。另外,由于团块的表面发生水合而凝胶化,因此一旦发生了团块,则难以破坏团块。因此,为了使车前子种皮分散于水溶液中,需要在带盖的容器中放入水和车前子种皮并剧烈振荡、或者用搅拌器等对容器内进行搅拌,很难说容易简单地进行摄取。
发明内容
发明要解决的课题
另一方面,为了使含有车前子种皮的组合物即便是少量也容易分散于水中,也出现了实施造粒等各种措施而宣传分散性得到改善的商品。然而,这些商品与传统产品相比得到了一些改善,但没有得到显著改善。因此,期待在水中的分散性进一步得到改善的车前子种皮造粒物。
本申请发明的目的在于提供对水的亲和性得到大幅改善的车前子种皮造粒物。
用于解决课题的手段
为了解决上述课题,本发明提供一种车前子种皮造粒物,其是使用通过了120~280目的泰勒筛的粉糖进行造粒而得到的。另外,优选制成使用了该造粒物的粉末饮料。在此,所谓120~280目的泰勒筛,在换算成JIS标准时,相当于筛的网眼为53~125μm的筛。因此,通过了120~280目的泰勒筛的粉糖的粒径相当于53~125μm。以下也相同。
根据该构成,通过使用粒径细的粉糖进行造粒,能够显著改善对水的亲和性。另外,由于对水的亲和性良好,所以作为结果分散性优异,能够轻松地用作粉末饮料。
为了解决上述课题,本发明提供一种车前子种皮造粒物的制造方法,其使包含车前子种皮和通过了120~280目的泰勒筛的粉糖的混合物成为流动状态,接下来以雾状喷水,最后使其干燥,由此进行颗粒化。
根据该构成,仅通过改变粉糖的粒径就能够使用现有的设备简单地制造亲水性得到改善的车前子种皮造粒物。
发明效果
根据本发明,通过使用粒径细的粉糖进行造粒,能够得到对水的亲和性得到显著改善的车前子种皮造粒物。另外,通过改善对水的亲和性,能够在不使用振荡器的情况下使其分散于水溶液中。由此,只要有水就能够轻松地摄取车前子种皮。
具体实施方式
以下,对用于实施本发明的优选方式进行说明。
<车前子种皮>
车前子种皮是以具有高度分支的结构的多糖类作为其主成分的膳食纤维原材料。作为本发明中使用的车前子种皮,可举出由车前科的植物Plantago ovata(日文:プランタゴオバタ)的种子得到的种皮(外壳)或其粉碎物。在此,作为车前子种皮或其粉碎物,可举出车前子、车前子壳、车前子种皮末、车前子胶、伊莎糕璐(日文:イサゴール)等(以下,称为“车前子种皮末”。)作为市售的产品。在本发明中,车前子种皮末可以使用任何粒度、等级的物质,优选杂质少、纯度高的物质。
上述车前子种皮的安全性高,无味无臭,因此容易长期持续摄取。在本发明中,优选作为颗粒剂、粉末饮料来摄取。另外,造粒时,可以根据需要进一步配合各种营养素、各种维生素、矿物质、膳食纤维、各种添加剂。
实施例
以下,基于实施例具体地说明本发明。需要说明的是,本实施例中使用的玻璃器具类使用满足日本工业标准的器具类。
<车前子种皮造粒物>
(实施例)
在本实施方式中,将车前子种皮42kg与通过了120~280目的泰勒筛的粉糖1.5kg混合。接下来,将混合物加入到流化床造粒机中并用水进行造粒。由此得到车前子种皮造粒物。
(比较例)
除了使用小于120目、即通过了筛的砂糖的粒径大于125μm的砂糖以外,与实施例相同。
<对水的亲和性确认试验>
对水的亲和性的确认试验如下进行。
首先,准备0.01重量%浓度的蓝色1号色素水。接下来,在300ml烧杯中放入之前准备好的蓝色色素水180mL和长度3cm的搅拌子(日文:スタ一ラ一バ一)之后,将烧杯设置在磁力搅拌器上。接下来,使用不锈钢制支架和夹具设置50mL管,使得开口部位于距水面高度8cm的位置。使管的开口部朝上,将车前子种皮造粒物放入到管内。此时,放入到管内的车前子种皮造粒物量加入了来自于车前子种皮的膳食纤维含量为3.6g的量。用铝箔封闭开口,并以100rpm使搅拌子旋转。使管旋转180度,在铝盖的一端固定于管的状态下,将车前子种皮造粒物投入到烧杯内。投入后搅拌30秒,然后停止搅拌子的旋转,用照相机拍摄俯视时的烧杯表面。使用图像分析软件ImageJ将拍摄到的图像转换为灰度,求出烧杯表面的面积值和非沉降粉末部分的面积值,算出非沉降粉末部分在烧杯表面中所占的比例。
在此,在本实施方式中使用了蓝色1号色素,但色素只不过是为了在进行图像分析时使与车前子种皮的识别变得容易而使用的。因此,只要是容易与车前子种皮识别的颜色,则可以是红色也可以是绿色,没有特别限定。另外,色素水的温度使用常温(23±2度)。
对于实施例和比较例,使用上述试验方法进行测定。试验进行5次,算出平均值。将结果示于表1。

根据表1可以明确,关于各样品,由于各次为相似的数值,所以认为几乎没有由试验方法引起的偏差。因此,实施例和比较例的数值之差可以说是表示即便使用相同的车前子种皮,也通过改良而亲水性改善了何种程度的数值。即,暗示了通过减少粉糖的粒径,能够改善对水的亲和性。
如上所说明,根据本发明,通过使用通过了120~280目的泰勒筛的粉糖,能够显著改善对水的亲和性。由此,在水中的分散性变好,因此能够轻松地摄取。

1.一种车前子种皮造粒物,其是使用通过了120目~280目的泰勒筛的粉糖进行造粒而得到的。
2.一种粉末饮料,其含有权利要求1所述的车前子种皮造粒物。
3.一种车前子种皮造粒物的制造方法,其中,使包含车前子种皮和通过了120目~280目的泰勒筛的粉糖的混合物成为流动状态,接下来以雾状喷水,最后使其干燥,由此进行颗粒化。
