Abstract
本发明公开了一种富硒水功能饮品及其制备方法,包括以下步骤:将山泉水依次进行天然椰壳活性炭过滤、微滤和超滤,得到初滤水;将初滤水进行超高温充分杀菌,得到高温杀菌水;将高温杀菌水再次升温,加入硒化卡拉胶、富硒酵母、抗坏血酸钠、植物提取物I,采用均质机均质处理,再进行气动搅拌,得到富硒水;将富硒水进行反渗透膜过滤,进一步除去产生的沉淀,再经紫外线消毒,得到富硒水功能饮品。本发明制备的富硒水功能饮品中含有植物源硒,更有利于人体吸收,并且还具有保健养生功能,适合长期饮用,消费范围广,经济效益高,适合大规模生产。

本发明涉及饮品加工技术领域,具体涉及一种富硒水功能饮品及其制备方法。
背景技术
硒是人体必需的微量元素,中国营养学会也将硒列为人体必需的15种营养素之一。人体缺硒可引起某些重要器官的功能失调,甚至导致许多严重疾病的发生。研究表明,低硒或者缺硒人群通过适量补硒不但能够预防肿瘤、肝病等的发生,还可以提高机体免疫能力,维护心、肝、肺、胃等重要器官的正常功能。硒在自然界中以无机硒和植物活性硒的形式存在,无机硒为亚硒酸钠、硒酸钠,而植物活性硒通过生物转化与氨基酸结合而成,一般以硒蛋氨酸的形式存在,植物活性硒是人类和动物允许使用的硒源。
卡拉胶是一种硫酸酯多糖,在酸性条件下可以与单体硒或亚硒酸钠发生硒化反应,卡拉胶中的硫酸根能较容易地被亚硒酸根取代而形成硒化卡拉胶。硒化卡拉胶具有以下作用:增强免疫功能,减少肝病的反复;提高抗氧化能力,预防肝纤维化;阻断病毒突变,加速病体康复;解毒除害,保护肝脏;人体重金属的清洁剂;抗癌活性等。
中国专利CN111955627A公开了一种纳米硒小分子水功能饮品,包括主料和添加剂,主料由鱼肽酶解液、黄精、山药和茯苓组成,添加剂由烟酸、维生素B12组成,其制备方法包括以下步骤:将纯净水通过富硒矿化装置制成富硒水,加入提取液后放入破壁机中匀浆,将黄精、山药、茯苓按照上述配比混合并加入原材料重量6倍量的小分子富硒水煎煮,加入烟酸、维生素B12,然后加纯净水灌封100~120℃,灭菌,灯检包装。但该专利制备的功能饮品的保健性不佳。
发明内容
针对上述问题,本发明提供一种富硒水功能饮品及其制备方法。
本发明解决上述问题所采用的技术方案是:一种富硒水功能饮品的制备方法,包括以下步骤:
步骤S10,将山泉水依次进行天然椰壳活性炭过滤、微滤和超滤,得到初滤水;
步骤S20,将初滤水进行110℃~125℃超高温充分杀菌,得到高温杀菌水;采用超高温杀菌可以更有效杀菌,作为熟水可减少生水对人体肠胃的刺激,更安全健康;
步骤S30,将高温杀菌水再次升温至92℃~95℃,加入硒化卡拉胶、富硒酵母、抗坏血酸钠、植物提取物I,采用均质机均质处理5分钟~15分钟,再进行气动搅拌,搅拌20分钟~35分钟,得到富硒水;
步骤S40,将步骤S30得到的富硒水进行反渗透膜过滤,进一步除去产生的沉淀,再经紫外线消毒,得到富硒水功能饮品。
进一步地,步骤S30中,所说富硒水中的原料包括:高温杀菌水100份、0.08份~0.15份硒化卡拉胶、0.05份~0.12份富硒酵母、0.01份~0.02份抗坏血酸钠、0.02份~0.12份植物提取物I。
进一步地,步骤S30中,所述植物提取物I的制备方法包括:将羊栖菜、龙须菜干燥处理后按重量比10:4~8进行混合,粉碎至50~100目后加水升温至95℃后保持10~20分钟,再经破壁处理、固液分离,得到滤液;将滤液进行除杂、除色处理,再进行减压蒸馏浓缩,喷雾干燥,得到植物提取物I。
进一步地,所述人参颗粒的制备方法包括:将人参粉碎,过40目-100目筛,得到人参细粉,向人参细粉中加入20wt%~30wt%的水,造粒,再50℃~55℃低温干燥,得到人参颗粒。苦水玫瑰来自甘肃省永登县的苦水玫瑰,是世界上稀有的高原富硒玫瑰品种,不仅硒含量高,还具有较强的抗氧化功能;灵芝和人参是中国传统的扶正固本、滋补强壮的名贵药材,可以提高机体免疫力,抵抗病毒入侵;南瓜子、黑芝麻均为硒含量较高的食品,并且价格较为低廉,将其与灵芝、人参进行配合使用,在保证富硒、抗氧化、抗肿瘤作用的同时,对生产成本进行调控,提高产品的适用性。

进一步地,所述植物提取物II的制备方法包括:将10份~20份南瓜子、10份~15份人参颗粒、3.5份~8.5份灵芝、5份~12份黑芝麻、1.5份~5份苦水玫瑰花干燥后粉碎,再放到超微粉碎机内粉碎至100目-200目,得到混合微粉;将混合微粉进行二氧化碳超临界萃取,得到萃取液,即为植物提取物II;所述二氧化碳超临界萃取的工艺参数包括:控制萃取温度为40~43℃,萃取釜的压力为35~37MPa,萃取时间为2~3.5小时。

(1)本发明制备的富硒水功能饮品将山泉水进行过滤后采用超高温杀菌,作为熟水可减少生水对人体肠胃的刺激,更安全健康;
(2)本发明制备的富硒水功能饮品在熟水中添加特定重量份的硒化卡拉胶、富硒酵母、抗坏血酸钠、植物提取物,可以提高水源中硒的含量,并且还添加有具有保健功能的植物提取物,可以进一步提高产品附加值;
(3)本发明制备的富硒水功能饮品中含有植物源硒,更有利于人体吸收,并且还具有保健养生功能,适合长期饮用,消费范围广,经济效益高,适合大规模生产。

步骤S10,将山泉水依次进行天然椰壳活性炭过滤、微滤和超滤,得到初滤水;
步骤S20,将初滤水进行110℃超高温充分杀菌,得到高温杀菌水;
步骤S30,植物提取物I的制备:将羊栖菜、龙须菜干燥处理后按重量比10:4进行混合,粉碎至50~100目后加水升温至95℃后保持10分钟,再经破壁处理、固液分离,得到滤液;将滤液进行除杂、除色处理,再进行减压蒸馏浓缩,喷雾干燥,得到植物提取物I;

步骤S30,植物提取物I的制备:将羊栖菜、龙须菜干燥处理后按重量比10:8进行混合,粉碎至50~100目后加水升温至95℃后保持20分钟,再经破壁处理、固液分离,得到滤液;将滤液进行除杂、除色处理,再进行减压蒸馏浓缩,喷雾干燥,得到植物提取物I;
步骤S40,植物提取物II的制备:将20份南瓜子、15份人参颗粒、8.5份灵芝、12份黑芝麻、5份苦水玫瑰花干燥后粉碎,再放到超微粉碎机内粉碎至100目-200目,得到混合微粉;将混合微粉进行二氧化碳超临界萃取,得到萃取液,即为植物提取物II;所述二氧化碳超临界萃取的工艺参数包括:控制萃取温度为43℃,萃取釜的压力为37MPa,萃取时间为3.5小时;所述人参颗粒的制备方法包括:将人参粉碎,过40目-100目筛,得到人参细粉,向人参细粉中加入30wt%的水,造粒,再55℃低温干燥,得到人参颗粒;

步骤S50,将高温杀菌水再次升温至93℃,加入0.10份步骤S40得到的复合硒化卡拉胶、0.10份富硒酵母、0.01份抗坏血酸钠,采用均质机均质处理5分钟,再进行气动搅拌,搅拌20分钟,得到富硒水;
步骤S60,将步骤S50得到的富硒水进行反渗透膜过滤,反渗透膜过滤的粒径为1.0nm,进一步除去产生的沉淀,再经紫外线消毒,得到富硒水功能饮品。

Claims (10)
1.一种富硒水功能饮品的制备方法,其特征在于,包括以下步骤:
步骤S10,将山泉水依次进行天然椰壳活性炭过滤、微滤和超滤,得到初滤水;
步骤S20,将初滤水进行110℃~125℃超高温充分杀菌,得到高温杀菌水;采用超高温杀菌可以更有效杀菌,作为熟水可减少生水对人体肠胃的刺激,更安全健康;
步骤S30,将高温杀菌水再次升温至92℃~95℃,加入硒化卡拉胶、富硒酵母、抗坏血酸钠、植物提取物I,采用均质机均质处理5分钟~15分钟,再进行气动搅拌,搅拌20分钟~35分钟,得到富硒水;
步骤S40,将步骤S30得到的富硒水进行反渗透膜过滤,进一步除去产生的沉淀,再经紫外线消毒,得到富硒水功能饮品。
2.根据权利要求1所述的制备方法,其特征在于,步骤S30中,所说富硒水中的原料包括:高温杀菌水100份、0.08份~0.15份硒化卡拉胶、0.05份~0.12份富硒酵母、0.01份~0.02份抗坏血酸钠、0.02份~0.12份植物提取物I。
3.根据权利要求1所述的制备方法,其特征在于,步骤S30中,所述植物提取物I的制备方法包括:将羊栖菜、龙须菜干燥处理后按重量比10:4~8进行混合,粉碎至50~100目后加水升温至95℃后保持10~20分钟,再经破壁处理、固液分离,得到滤液;将滤液进行除杂、除色处理,再进行减压蒸馏浓缩,喷雾干燥,得到植物提取物I。
4.根据权利要求1所述的制备方法,其特征在于,步骤S30中,所述硒化卡拉胶为有机硒含量在20μg/mg~50μg/mg的市售硒化卡拉胶。
5.根据权利要求1所述的制备方法,其特征在于,步骤S30中,所述硒化卡拉胶为复合硒化卡拉胶;所说复合硒化卡拉胶的制备方法包括:将硒化卡拉胶配制成浓度为1.2wt%~1.8wt%的硒化卡拉胶溶液10份,加入1.2份~10份浓度为5wt%的硫酸,40~55℃超声震荡30分钟,再放到65℃的恒温水中搅拌混合3~3.5小时,冷却至室温后调节pH值为中性,减压浓缩后透析60小时,经冷冻干燥,得到硒化卡拉胶寡糖;将硒化卡拉胶寡糖配制成浓度为0.4wt%~0.8wt%的溶液,加入植物提取物II后,搅拌混合均匀,并放到均质机内进行均质,再将喷雾干燥,得到复合硒化卡拉胶。
6.根据权利要求5所述的制备方法,其特征在于,所述提取物II的制备方法包括:将10份~20份南瓜子、10份~15份人参颗粒、3.5份~8.5份灵芝、5份~12份黑芝麻、1.5份~5份苦水玫瑰花干燥后粉碎,再放到超微粉碎机内粉碎至100目-200目,得到混合微粉;将混合微粉进行二氧化碳超临界萃取,得到萃取液,即为植物提取物II。
7.根据权利要求6所述的制备方法,其特征在于,所述人参颗粒的制备方法包括:将人参粉碎,过40目-100目筛,得到人参细粉,向人参细粉中加入20wt%~30wt%的水,造粒,再50℃~55℃低温干燥,得到人参颗粒。
8.根据权利要求5所述的制备方法,其特征在于,所述植物提取物II与卡拉胶寡糖的添加重量比为0.2~3.5:10。
9.根据权利要求1所述的制备方法,其特征在于,步骤S40中,所述反渗透膜过滤的粒径为0.5nm~1.5nm。
10.一种富硒水功能饮品,其特征在于,根据权利要求1~9中任一项所说的制备方法制备而成。
