Description
Technical Field
The invention belongs to the technical field of food, and particularly relates to a formula of a composite whey protein solid beverage and a preparation process thereof.
Background
The solid beverage is mainly classified into a protein type solid beverage (including an amino acid beverage) and a general type solid beverage. The protein type solid beverage is a product which is prepared by taking milk and dairy products, eggs and egg products, other animal and vegetable proteins, amino acids and the like as main raw materials and adding or not adding auxiliary materials, wherein the protein content is more than or equal to 4 percent, and the common products comprise soybean milk powder, walnut powder, malted milk essence, amino acid in an ammonia recovery source and the like; the common solid beverage is prepared from fruit powder or roasted coffee, tea, chrysanthemum, lalang grass rhizome and other plant extracts as main raw materials, with or without other adjuvants, and has protein content of less than 4%. Common plum powder, chrysanthemum crystal, instant tea powder, couchgrass root essence, amino acid beverage and the like.
Solid beverages have been popular with consumers because of their variety, unique flavor, and ease of storage; particularly, the solid beverage rich in nutrient components such as vitamins, minerals, amino acids and the like can supplement nutrition required by human metabolism in time, and becomes a good partner which can not be separated from the life of many people.
With the change of consumption concepts of people and fine cultivation of domestic solid beverage enterprises, solid beverages are pursued by more and more consumers due to the characteristics of convenience, rapidness and various varieties of solid beverages, the solid beverage industry steps into a rapid development channel, and the quantity of enterprises in the industry and the production and marketing scale of the industry are continuously expanded.
However, the existing protein solid beverage has the problems of agglomeration and poor dispersion when dissolved.
Disclosure of Invention
In view of the above, the technical problem to be solved by the present invention is to provide a formula and a process of a composite whey protein solid beverage, wherein the formula of the composite whey protein solid beverage provided by the present invention has good dispersibility and stability, and balanced nutrition, and can comprehensively increase the physical quality of people drinking the composite whey protein solid beverage.

A) respectively sieving the concentrated whey protein powder and the vegetable fat powder;
B) mixing sucralose, strong milk powder essence, yeast for food processing and maltodextrin with a first weight to obtain a first mixture;
adding linseed oil powder, HMB-Ca, a compound nutrition enhancer and a second weight of maltodextrin to the first mixture and mixing to obtain a second mixture;
adding a third weight of maltodextrin to the second mixture and mixing to obtain a third mixture;
and mixing the third mixture with inulin, fructo-oligosaccharide, MCT powder, soybean peptide powder, maltodextrin in the rest weight, and sieved concentrated whey protein powder and vegetable fat powder to obtain the composite whey protein solid beverage.
Preferably, the mass ratio of the total weight of the sucralose, the concentrated milk powder essence, the essence and the food processing yeast to the first weight of the maltodextrin is 1: 1;

The vegetable fat powder is selected from one or more of corn oil, rapeseed oil and coconut oil.

Specifically, the preparation process of the composite whey protein solid beverage comprises the following steps:
A) respectively sieving the concentrated whey protein powder and the vegetable fat powder, wherein the sieving is preferably a 20-mesh sieve;
B) mixing sucralose, strong milk powder essence, yeast for food processing and maltodextrin with a first weight to obtain a first mixture;
adding linseed oil powder, HMB-Ca, a compound nutrition enhancer and a second weight of maltodextrin to the first mixture and mixing to obtain a second mixture;
adding a third weight of maltodextrin to the second mixture and mixing to obtain a third mixture;
and mixing the third mixture with inulin, fructo-oligosaccharide, MCT powder, soybean peptide powder, maltodextrin in the rest weight, and sieved concentrated whey protein powder and vegetable fat powder to obtain the composite whey protein solid beverage.
Wherein the mass ratio of the total weight of the sucralose, the strong milk powder essence, the essence and the food processing yeast to the first weight of the maltodextrin is 1: 1;
the mass ratio of the total weight of the first mixture, the linseed oil powder, the HMB-Ca and the compound nutrition enhancer to the second weight of maltodextrin is 1: 1;
the mass ratio of the second mixture to the third weight of maltodextrin is 1: 1.
According to the invention, maltodextrin is mixed in batches, so that the composite whey protein solid beverage has good dispersing performance and stability under the conditions of the adding sequence and the adding proportion of the raw materials.
The composite whey protein solid beverage has good dispersibility and stability, is balanced in nutrition and can comprehensively increase the physical quality of people drinking the composite whey protein solid beverage by using the raw materials in a specific ratio and a specific mixing mode.
For further understanding of the present invention, the following examples are provided to illustrate the formulation of the composite whey protein solid beverage and the preparation process thereof, and the scope of the present invention is not limited by the following examples.
Among the following raw materials, the compound nutrition enhancer was purchased from Beijing Jinkangpu food science and technology Co.
The vegetable fat powder is purchased from Qingdao Haiziyuan Life technologies, Inc.

2.1, primary mixing 1: mixing sucralose, strong milk powder essence, taro powder essence, VD yeast and maltodextrin (equal weight to the total weight of the materials) in a sterile bag, and uniformly observing by eyes;
2.2, primary mixing 2: adding linseed oil powder, HMB-Ca, a compound nutrition enhancer and maltodextrin (equal weight to the total amount of the materials) into the material of the primary mixing step 1, adding into a sterile bag, and uniformly mixing by visual inspection;
2.3, primary mixing 3: to the first mixture 2, maltodextrin (equal weight to the total amount of the first mixture 2) was added, and the mixture was mixed in a sterile bag and visually observed to be uniform.
2.4, total mixing: adding the primary mixed material 3 and other materials into a mixer together for total mixing, and uniformly observing by eyes; and (6) discharging.

Comparative example 1
A composite whey protein solid beverage and a preparation process thereof, wherein the weight number of each component is the same as that of example 1. Except that the whey protein powder was replaced with milk protein powder. The carbohydrate composition was selected from the same as in example 1. The other compositions are selected from the same as in example 1.
The preparation method comprises the following steps: same as in example 1.
Comparative example 2
(1) A composite whey protein solid beverage and a preparation process thereof, wherein the types and the weight numbers of the components are the same as those of example 2.
The preparation method comprises the following steps:

1. sieving and weighing
1.1 sieving: respectively sieving concentrated whey protein powder and vegetable fat powder with 40 mesh sieve;
1.2 weighing: weighing the materials one by one according to the prescription amount;
2. mixing
2.1, primary mixing 1: mixing sucralose, strong milk powder essence, taro powder essence, VD yeast and maltodextrin (equal weight to the total weight of the materials) in a sterile bag, and uniformly observing by eyes;
2.2, primary mixing 2: adding linseed oil powder, HMB-Ca, a compound nutrition enhancer and maltodextrin (equal weight to the total amount of the materials plus the total amount of the materials of the primary mixing step 2) into the materials of the primary mixing step 1, adding the materials into a sterile bag, and uniformly mixing the materials by visual inspection;
2.3, total mixing: adding the primary mixed material 3 and other materials into a mixer together for total mixing, and uniformly observing by eyes; and (6) discharging.
3. And (6) packaging.
Comparative study was conducted on the composite whey protein solid beverages of the above examples and comparative examples, and the results of the product test are shown in Table 4

As can be seen from Table 4, the products obtained in examples l, 2 and 3 are milky white, free from precipitates and lumps. The products prepared in comparative examples l and 2 have precipitation, agglomeration and layering by changing the new formula and parameters.
Through comparison of examples, the reasonable formula and the improvement of process parameters of the invention are found, and the product obtained by the invention greatly improves the quality and stability of the product.
The foregoing is only a preferred embodiment of the present invention, and it should be noted that, for those skilled in the art, various modifications and decorations can be made without departing from the principle of the present invention, and these modifications and decorations should also be regarded as the protection scope of the present invention.

1. The formula of the composite whey protein solid beverage is characterized by comprising main materials and auxiliary materials, wherein the main materials comprise, by mass, 1000 parts of the composite whey protein solid beverage:
270.056-405.084 parts by mass of concentrated whey protein powder;
256.82-262.06 parts by mass of maltodextrin;
149.216-223.824 parts by mass of vegetable fat powder;
46.92-70.38 parts by mass of inulin;
42.48-63.72 parts by mass of fructo-oligosaccharide;
35.608-53.412 parts by mass of MCT powder;
26.008-39.013 parts by mass of soybean peptide powder;
8.072-12.108 parts by mass of a compound nutrition enhancer;
8.072-12.108 parts by mass of HMB-Ca;
3.232-4.848 parts by mass of linseed oil powder;
0.504 to 0.756 parts by mass of a yeast for food processing;
the auxiliary materials comprise:
0.17-2 parts by mass of sucralose;
0-4 parts by mass of essence;
0-1.3 parts by mass of strong-fragrance milk powder.
2. The composite whey protein solid beverage formulation of claim 1, wherein the compounded nutritional fortifier comprises one or more of sodium L-ascorbate, taurine, dl-alpha-tocopheryl acetate, zinc sulfate, retinyl palmitate, vitamin D, and leucine.
3. The composite whey protein solid beverage formulation of claim 1, wherein the vegetable fat powder comprises one or more of corn oil, canola oil, and coconut oil.
4. The composite whey protein solid beverage formulation of claim 1, wherein the flavor is selected from taro flavor.
5. The formula of the composite whey protein solid beverage according to claim 1, wherein the main material comprises, based on 1000 parts by mass of the composite whey protein solid beverage:
337.57 parts by mass of concentrated whey protein powder;
256.82 parts by mass of maltodextrin;
186.52 parts by mass of vegetable fat powder;
58.65 parts by mass of inulin;
53.1 parts by mass of fructooligosaccharide;
44.51 parts by mass of MCT powder;
32.51 parts by mass of soybean peptide powder;
10.09 parts by mass of a compound nutrition enhancer;
10.09 parts by mass of HMB-Ca;
4.04 parts by mass of linseed oil powder;
0.63 parts by mass of yeast for food processing;
the auxiliary materials comprise:
0.17 parts by mass of sucralose;
4 parts by mass of essence;
1.3 parts by mass of strong-flavor milk powder.
6. The formula of the composite whey protein solid beverage according to claim 1, wherein the main material comprises, based on 1000 parts by mass of the composite whey protein solid beverage:

8. A preparation process of the composite whey protein solid beverage as claimed in any one of claims 1 to 7, characterized in that the main material and the auxiliary material are mixed to obtain the composite whey protein solid beverage.
9. The process according to claim 8, comprising the steps of:
A) respectively sieving the concentrated whey protein powder and the vegetable fat powder;
B) mixing sucralose, strong milk powder essence, yeast for food processing and maltodextrin with a first weight to obtain a first mixture;
adding linseed oil powder, HMB-Ca, a compound nutrition enhancer and a second weight of maltodextrin to the first mixture and mixing to obtain a second mixture;
adding a third weight of maltodextrin to the second mixture and mixing to obtain a third mixture;
and mixing the third mixture with inulin, fructo-oligosaccharide, MCT powder, soybean peptide powder, maltodextrin in the rest weight, and sieved concentrated whey protein powder and vegetable fat powder to obtain the composite whey protein solid beverage.
10. The preparation process according to claim 9, wherein the mass ratio of the total weight of the sucralose, the concentrated milk powder essence, the essence and the food processing yeast to the first weight of the maltodextrin is 1: 1;
the mass ratio of the total weight of the first mixture, the linseed oil powder, the HMB-Ca and the compound nutrition enhancer to the second weight of maltodextrin is 1: 1;
the mass ratio of the second mixture to the third weight of maltodextrin is 1: 1.
