背景技术
儿童时期是身体发育最为迅速的时期,这个时期往往需要更高的营养水平来维持儿童身体发育的需求,促使儿童的细胞、器官以及组织能够得到更好的完善。儿童生长发育正常情况下有一定的规律性,但在儿童在生长发育的期间也会受到其他因素的影响,比如遗传、饮食以及消化能力等等,这也是导致儿童体质的差异性的重要原因。随着我国社会经济的不断发展,人们的生活水平也在不断的提高,父母对儿童的生长发育情况也逐渐重视。由于儿童阶段的人们自身的免疫力比较低下,为了让儿童能够在生长发育的过程中保证机体的健康状态,实施保健措施很有必要,科学的保健方法可以帮助儿童补充自身需要的营养物质,从而更好的保证儿童健康的发育。
乳铁蛋白是转铁蛋白家族中的一种铁结合蛋白,存在于人体的乳汁和各种分泌物中,以母乳中的含量最高。人乳铁蛋白和牛乳铁蛋白的氨基酸序列具有69%的同源性,因此它们具有相似的生物活性。乳铁蛋白具有抗微生物和免疫调节的作用。乳铁蛋白能够与铁结合,从而竞争病原微生物的铁源,抵御病原微生物的侵染,保护机体免受损伤;乳铁蛋白主要作用于免疫细胞和免疫因子,发挥免疫调节作用。
维生素K2是一类含有2-甲基-1,4-奈醌环的脂溶性维生素,通过显著地促进Ca2+在骨骼上的矿化及抑制骨钙流失全面调控骨骼代谢过程。维生素K是谷氨酸γ-羧化酶的辅酶,将谷氨酸残基羧化为γ-羧基谷氨酸(骨钙素),其水平直接决定羧化骨钙素浓度。骨钙素是骨钙化的关键因子,与羟磷灰石有特殊亲和性,其结合牢固性受羧化程度的影响,只有羧化过的骨钙素才能与Ca2+结合实现骨的矿化,没有维生素K,钙调节将被中断。
磷酯酰丝氨酸可由人体利用丝氨酸合成产生,它可影响脑内化学信息的传递,并帮助脑细胞储存和读取资料,是维持大脑正常记忆力、反应和健康情绪的重要营养元素。大脑中乙酰胆碱含量增加时,大脑神经细胞间信息传递速度加快,在生理功能上表现为提高大脑记忆力、增强智力、促进大脑发育。
酵母β-葡聚糖具有免疫调节作用,能够与体内的巨噬细胞结合而激活巨噬细胞;能激活淋巴细胞发挥免疫增强剂的作用;可分泌一些激活免疫细胞的免疫因子,从而增强免疫系统的功能,因此被用作免疫刺激剂。
玉米黄质和叶黄素是重要的类胡萝卜素成分,它特异性地高度聚集于特定眼部组织中,可以吸收进入眼镜的短波长可见光线,保护视觉感受器免受损害性蓝光的危害。
N-乙酰神经氨酸又叫唾液酸,在哺乳动物的中枢神经系统中含量很高,在大脑发育的关键时期,进行干预可以对大脑造成远期的不可逆的影响。在大脑内唾液酸主要存在于神经节苷脂上,神经节苷脂参与神经元的生长、突触的可塑性以及神经递质传递的调控,因此唾液酸对大脑的发育起着至关重要的作用。
低聚半乳糖和低聚果糖是一种功能性低聚糖,不会被人体中的消化酶所吸收,它可以选择性地促进肠道内益生菌增殖,抑制病原菌增殖,维持肠道菌群的平衡。

作为另一种限定,所述复合维生素以重量份数计包括:8.28-11.04份的维生素A,5.76-7.68份的维生素B1,8.316-11.088份的维生素B6,0.03273-0.04727份的维生素B12,957.8772-1277.1696份的维生素C,52.416-75.712份的泛酸,2.204-3.18356份的叶酸,55.7568-74.3424份的维生素E,48.928-73.392份的烟酸,0.08399-0.12132份的生物素,0.13428-0.17904份的维生素D。
作为第三种限定,所述矿物质以重量份数计包括:铜0.36-0.44份,铁8.1-9.9份,硒0.00855-0.0114份,锌8.37-10.23份。
本发明也提供了一种上述富含全面营养的儿童调制乳粉的制备方法,包括依次进行的以下步骤:
S1.生牛乳进行巴氏杀菌,得液料A1;
S2.将液料A1与脱脂乳粉,脱盐乳清粉,乳清蛋白粉,复合维生素,复合矿物质,碳酸钙,低聚半乳糖,低聚果糖,磷酯酰丝氨酸,N-乙酰神经氨酸,酵母β葡聚糖,维生素K2,玉米黄质,叶黄素混合、溶解,制得液料B1;
S3.将液料B1进行均质、杀菌、闪蒸、过滤、浓缩蒸发、干燥,得物料C1;。
S4.将乳铁蛋白与物料C1混合均匀,充氮、灌装,即得所述的一种富含全面营养的儿童调制乳粉。
本发明还提供了另一种制备上述富含全面营养的儿童调制乳粉的方法,包括依次进行的以下步骤:
S1.生牛乳进行巴氏杀菌,得液料A2;
S2.将液料A2与脱脂乳粉,加糖炼乳,脱盐乳清粉,乳清蛋白粉,浓缩乳清蛋白粉,大豆油,磷脂,氯化胆碱,复合维生素,复合矿物质,碳酸钙,低聚半乳糖,低聚果糖,异构化乳糖液,磷酯酰丝氨酸,N-乙酰神经氨酸,酵母β葡聚糖,维生素K2,玉米黄质,叶黄素和牛磺酸混合、溶解,制得液料B2;
S3.将液料B2进行均质、杀菌、闪蒸、过滤、浓缩蒸发、干燥,得物料C2;
S4.将乳铁蛋白、二十二碳六烯酸、花生四烯酸与物料C2混合均匀,充氮、灌装,即得所述的一种富含全面营养的儿童调制乳粉。
作为一种限定,S1中所述巴氏杀菌的杀菌温度为70-80℃,杀菌时间为15-30s。
作为另一种限定,S3中所述均质的压强为150-160bar,杀菌是在DSI杀菌器中进行,杀菌温度为88-92℃,杀菌时间大于等于24s。
作为第三种限定,S4中所述充氮、灌装之前进行了金属杂质的检测和去除。
由于采用了上述技术方案,本发明与现有技术相比,所取得的技术进步在于:
①本发明提供的儿童调制乳粉通过添加合理比例的生牛乳、脱脂乳粉、脱盐乳清粉、乳清蛋白粉能够为乳粉添加配比合理的蛋白质和脂肪,保证乳粉的能量物质充足;
②本发明提供的儿童调制乳粉添加了合理比例的低聚半乳糖、异构化乳糖液,经试验研究异构化乳糖能支持15株乳酸菌株的良好生长,能被39株双歧杆菌很好的利用;低聚半乳糖能支持23株乳酸菌株的良好生长。两者共同使用对益生菌的促生长能力比单一益生元更好,具有协同增效的有益效果,在调节肠道健康的过程中优于任何一种单独使用时的效果;
③本发明提供的儿童调制乳粉添加了合理比例的玉米黄质和叶黄素,视网膜和晶状体中有叶黄素和玉米黄质2种类胡萝卜素,两者是眼睛中防止脂质过氧化和氧化的最有效的抗氧化剂,两者之间也具有协同增效的有益效果,共同使用能使氧从单线态回到基态,从而保护视网膜,并且这个过程是可以重复的。两者共同使用在保护视力的过程中优于任何一种单独使用时的效果;
④本发明的提供的儿童调制乳粉不仅能帮助儿童增进智力、提高免疫力、保护视力、促进骨骼发育、促进肠道健康,还能保证它的口感被广大儿童接受;
⑤本发明提供的富含全面营养的儿童调制乳粉的制备方法中乳铁蛋白、二十二碳六烯酸、二十碳四烯酸在干混阶段加入,可避免乳铁蛋白变性、降低二十二碳六烯酸和二十碳四烯酸氧化问题。
乳铁蛋白是热敏性物质,乳制品加工中的各种常规热处理都会或多或少造成乳铁蛋白结构或生物活性的改变,乳铁蛋白所遭受的热处理强度越高,则变性和失活的程度也越高,特别是乳铁蛋白在遭受UHT等强热处理后(乳铁蛋白的热稳定性研究)。
DHA和ARA在很大程度上受到氧气等其他强化性物质的影响,如氧气、铁离子、锌离子等。干法添加ARA、DHA可避免湿法加工工艺中导致的损失情况)(DHA、AA在婴儿配方奶粉中稳定性的研究)。
本发明适用于制备富含全面营养的调制乳粉。
具体实施方式
下面通过具体实施例对本发明做进一步详细说明,应当理解所描述的实施例仅用于解释本发明,并不限定本发明。
实施例1一种富含全面营养的儿童调制乳粉的制备方法
本实施例包括依次进行的以下步骤:
S1.分别称取生牛乳32kg,脱脂乳粉2.2kg,脱盐乳清粉1.5kg,乳清蛋白粉92g,维生素A 42mg,维生素B130mg,维生素B642mg,维生素B12180ug,维生素C 4.9g,泛酸290mg,叶酸12mg,维生素E 280mg,烟酸280mg,生物素460ug,维生素D680ug,铜66.9g,铁1.52g,硒1.75mg,锌1.52g,碳酸钙50g,低聚半乳糖244g,低聚果糖92g,磷酯酰丝氨酸1.8g,N-乙酰神经氨酸2.2g,酵母β葡聚糖2.4g,乳铁蛋白5.8g,维生素K26.8g,玉米黄质1.2g,叶黄素16mg,备用;
S2.生牛乳进行巴氏杀菌,杀菌温度为70℃,杀菌时间为15s,得液料A1;
S3.将液料A1与脱脂乳粉,脱盐乳清粉,乳清蛋白粉,复合维生素,复合矿物质,碳酸钙,低聚半乳糖,低聚果糖,磷酯酰丝氨酸,N-乙酰神经氨酸,酵母β葡聚糖,维生素K2,玉米黄质,叶黄素进行混合、在50℃的温度下溶解,制得液料B1;
S4.将液料B1依次进行以下步骤的操作:
1)在150bar的压强下均质;
2)在DSI杀菌器中杀菌,杀菌温度为90℃,杀菌时间为24s;
3)进入闪蒸器进行闪蒸,闪蒸后经双联过滤器过滤,进入降膜式蒸发器;
4)经过滤器过滤,由高压泵泵入干燥塔进行喷雾干燥,进风温度为160℃,排风温度为80℃,得物料C1;
S5.将乳铁蛋白与物料C1混合均匀,干混均匀的粉体经真空密相输送系统输送至待装粉仓,粉体经金属检测仪检测无金属杂质后进入灌装机,进行充氮、灌装,得富含全面营养的儿童调制乳粉。
实施例2一种富含全面营养的儿童调制乳粉的制备方法
本实施例包括依次进行的以下步骤:
S1.分别称取生牛乳32kg,加糖炼乳1.8kg,脱脂乳粉2.2kg,脱盐乳清粉1.5kg,乳清蛋白粉92g,浓缩乳清蛋白粉150g,大豆油300g,磷脂30g,氯化胆碱7.4g,维生素A 42mg,维生素B130mg,维生素B642mg,维生素B12180ug,维生素C 4.9g,泛酸290mg,叶酸12mg,维生素E280mg,烟酸280mg,牛磺酸3.1g,生物素460ug,维生素D680ug,铜66.9g,铁1.52g,硒1.75mg,锌1.52g,碳酸钙50g,低聚半乳糖244g,低聚果糖92g,异构化乳糖液30g,二十二碳六烯酸18g,花生四烯酸4g,磷酯酰丝氨酸1.8g,N-乙酰神经氨酸2.2g,酵母β葡聚糖2.4g,乳铁蛋白5.8g,维生素K26.8g,玉米黄质1.2g,叶黄素16mg,备用;
S2.生牛乳进行巴氏杀菌,杀菌温度为70℃,杀菌时间为15s,得液料A2;
S3.将液料A2与脱脂乳粉,加糖炼乳,脱盐乳清粉,乳清蛋白粉,浓缩乳清蛋白粉,大豆油,磷脂,氯化胆碱,复合维生素,复合矿物质,碳酸钙,低聚半乳糖,低聚果糖,异构化乳糖液,磷酯酰丝氨酸,N-乙酰神经氨酸,酵母β葡聚糖,维生素K2,玉米黄质,叶黄素进行混合、在50℃的温度下溶解,制得液料B2;
S4.将液料B2依次进行以下步骤的操作:
1)在150bar的压强下均质;
2)在DSI杀菌器中杀菌,杀菌温度为90℃,杀菌时间为24s;
3)进入闪蒸器进行闪蒸,闪蒸后经双联过滤器过滤,进入降膜式蒸发器;
4)经过滤器过滤,由高压泵泵入干燥塔进行喷雾干燥,进风温度为160℃,排风温度为80℃,得物料C2;
S5.将乳铁蛋白、二十二碳六烯酸和花生四烯酸与物料C2混合均匀,干混均匀的粉体经真空密相输送系统输送至待装粉仓,粉体经金属检测仪检测无金属杂质后进入灌装机,进行充氮、灌装,得富含全面营养的儿童调制乳粉。
实施例3~7富含全面营养的儿童调制乳粉的制备方法
实施例3~7分别为一种富含全面营养的儿童调制乳粉的制备方法,它们的步骤与实施例2基本相同,不同之处仅在于原料用量及工艺参数的不同,具体详见表1:

其中,所述复合维生素以重量份数计包括:100mg的维生素A,60mg的维生素B1,100mg的维生素B6,400μg的维生素B12,10g的维生素C,700mg的泛酸,30mg的叶酸,600mg的维生素E,500mg的烟酸,1mg的生物素,1.5mg的维生素D;
其中,所述复合矿物质以重量份数计包括:铜400mg,铁9g,硒10mg,锌10g;
实施例3~7其它部分的内容,与实施例2相同。
实施例8富含全面营养的儿童调制乳粉影响钙吸收的测定结果
对实施例1~7制备的富含全面营养的儿童调制乳粉和普通市售的奶粉进行钙表现吸收的测定实验,具体检测方法如下:
实验动物:4周龄BALB/c小鼠16只,雌雄兼备,18-22g,随机分为对照组、市售奶粉组、实验组1及实验组2,每组4只。对照组喂食正常饲料(钙含量50mg/100g),实验组1喂食实施案例1所得组合物,实验组2喂食实施案例7所得组合物;
实验方法:将儿童配方奶粉分散于1mL生理盐水中,每日灌胃给药1次,连续5周,第5周周末将小鼠进行钙代谢试验。记录3天进食量,收集72h粪便,测定饲料及粪便中含钙量,计算钙表观吸收率;
钙表观吸收率%=(饲料中含钙量+灌胃钙量-粪钙量)÷(饲料中含钙量+灌胃钙量)×100%;
实验结果:钙表观吸收率检测结果如下表2所示,实验组1和实验组2钙表观吸收率显著高于对照组,说明实验组1和实验组2的钙吸收情况优于对照组和市售奶粉组。

通过上述表2可知,本实施案例1和7的配方奶粉有助于儿童对钙的吸收,吸收率百分之65%以上。证明一种富含全面营养的儿童调制乳粉能够有效提高儿童对钙的吸收利用率。
实施例8富含全面营养的儿童调制乳粉便秘改善率的测定结果
对实施例1~7制备的富含全面营养的儿童调制乳粉和普通市售的奶粉进行便秘改善实验,具体检测方法如下:
实验人群:具有便秘症状的5-7周岁儿童共64名,其中男生34名,女生30名。本次试饮结果以调查问卷形式展开,实验人群自试饮前7天至试饮后14天,记录排便情况。
试饮方法:将参加试饮的儿童随机分成8组,其中1-7组分别试饮实施案例1-7制备的富含全面营养的儿童调制乳粉,对照组试饮市售奶粉。试饮方式为:在200mL温水中加入35g奶粉,充分搅拌均匀后即可饮用,每日早晚各一次。
实验结果:便秘改善情况如下表3所示,实验组便秘有效改善率显著高于市售奶粉组,说明实验组对便秘的改善情况优于市售奶粉组。

1.一种富含全面营养的儿童调制乳粉,其特征在于,制成它的有效成分的原料,以重量份数计包括:生牛乳250-370份,脱脂乳粉20-27.5份,脱盐乳清粉10-15份,乳清蛋白粉0.92-3.0份,复合维生素0.088-0.25份,复合矿物质0.07-0.1份,碳酸钙0.8-1.2份,低聚半乳糖1.8-4.1份,低聚果糖0.8-1.6份,磷酯酰丝氨酸0.018-0.03份,N-乙酰神经氨酸0.022-0.15份,酵母β葡聚糖0.024-0.065份,乳铁蛋白0.058-0.1份,维生素K20.065-0.075份,玉米黄质0.01-0.012份,叶黄素0.000162-0.00027份。
2.根据权利要求1所述的一种富含全面营养的儿童调制乳粉,其特征在于,以重量份数计,所述原料还包括加糖炼乳12-22份,浓缩乳清蛋白粉1.5-3份,大豆油1.5-3份,磷脂0.3-0.5份,氯化胆碱0.074-0.12份,异构化乳糖液0.2-1.5份,二十二碳六烯酸0.18-0.5份,花生四烯酸0.08-0.3份,牛磺酸0.03-0.05份。

5.一种权利要求1中所述的富含全面营养的儿童调制乳粉的制备方法,其特征在于,该制备方法包括依次进行的以下步骤:

S2.将液料A1与脱脂乳粉,脱盐乳清粉,乳清蛋白粉,复合维生素,复合矿物质,碳酸钙,低聚半乳糖,低聚果糖,磷酯酰丝氨酸,N-乙酰神经氨酸,酵母β葡聚糖,维生素K2,玉米黄质,叶黄素混合、溶解,制得液料B1;
S3.将液料B1进行均质、杀菌、闪蒸、过滤、浓缩蒸发、干燥,得物料C1;
S4.将乳铁蛋白与物料C1混合均匀,充氮、灌装,即得所述的一种富含全面营养的儿童调制乳粉。
6.权利要求2-4中任一项所述的一种富含全面营养的儿童调制乳粉的制备方法,其特征在于,该制备方法包括依次进行的以下步骤:
S1.生牛乳进行巴氏杀菌,得液料A2;
S2.将液料A2与脱脂乳粉,加糖炼乳,脱盐乳清粉,乳清蛋白粉,浓缩乳清蛋白粉,大豆油,磷脂,氯化胆碱,复合维生素,复合矿物质,碳酸钙,低聚半乳糖,低聚果糖,异构化乳糖液,磷酯酰丝氨酸,N-乙酰神经氨酸,酵母β葡聚糖,维生素K2,玉米黄质,叶黄素和牛磺酸混合、溶解,制得液料B2;
S3.将液料B2进行均质、杀菌、闪蒸、过滤、浓缩蒸发、干燥,得物料C2;
S4.将乳铁蛋白、二十二碳六烯酸、花生四烯酸与物料C2混合均匀,充氮、灌装,即得所述的一种富含全面营养的儿童调制乳粉。
7.根据权利要求5或6所述的一种富含全面营养的儿童调制乳粉的制备方法,其特征在于,步骤S1中,所述巴氏杀菌的温度为70-80℃,时间为15-30s。
8.根据权利要求5或6所述的一种富含全面营养的儿童调制乳粉的制备方法,其特征在于,步骤S3中,所述均质的压强为150-160bar,杀菌是在DSI杀菌器中进行,杀菌温度为88-92℃,杀菌时间大于等于24s。
9.根据权利要求5或6所述的一种富含全面营养的儿童调制乳粉的制备方法,其特征在于,步骤S4中,所述充氮、灌装之前进行了金属杂质的检测和去除。
