Abstract
本发明公开了一种专用于三周岁以上儿童的全营养奶粉,该奶粉营养全面、调配均衡,控制所述奶粉中的蛋白质含量≥17.5%w/w;控制所述奶粉中的总脂肪含量为16.5%‑23.7%w/w,脂肪中必需包含亚油酸和α‑亚麻酸;控制所述奶粉中的碳水化合物含量为40%‑57%w/w;控制所述奶粉中的膳食纤维含量≥3%w/w,所述膳食纤维由低聚半乳糖和/或低聚果糖和/或异构化乳糖组成。本发明研究开发一种适用于学龄前和中小学生的儿童专用奶粉,能够满足3岁以上儿童日常营养所需的同时帮助其在骨骼成长、智力发育、视力健康、肠道健康和抵抗力等方面起到行之有效的作用。

技术领域
本发明涉及营养制品-乳制品相关技术领域,尤其涉及一种儿童配方奶粉制品及其制备方法。
背景技术
目前,营养不良仍是困扰着全球儿童的公共卫生问题。世界卫生组织2014年发布的数据显示,2012年全球发育迟缓的5岁以下儿童有1.62亿,其中56%为亚洲儿童。全球消瘦的5岁以下儿童达5100万人,还有1700万严重消瘦。所有严重消瘦的儿童中约有71%在亚洲。在我国,2018年5岁以下儿童贫血患病率、生长迟缓率及低体重率分别为5.44%、1.11%和1.43%,比上年分别提高0.02、0.02和0.03个百分点。营养在儿童的生长发育过程中起着至关重要的作用,尤其对儿童的骨骼发育、智力发育、视觉发育以及免疫力等方面均有不可替代的作用,深深的影响着成年后的身体状况。与此同时,我国学生的近视率位居全球第二,中小学生近视率已达34.6%,青少年因近视致盲的人数已达30万。保护视力健康,预防近视必须引起重视。
因此,急需研究开发一种适用于学龄前和中小学生的儿童专用奶粉,能够满足3岁以上儿童日常营养所需的同时帮助其在骨骼成长、智力发育、视力健康、肠道健康和抵抗力等方面起到行之有效的作用。
发明内容
本发明要解决的技术问题是提供一种专用于三周岁以上儿童的全营养奶粉及其制备方法。
为解决上述技术问题,本发明所采取的技术方案如下。
一种专用于三周岁以上儿童的全营养奶粉,该奶粉包含如下配方原料:生牛乳、脱盐乳清粉、脱脂乳粉/浓缩乳清蛋白粉、混合植物油、乳糖、低聚半乳糖、低聚果糖、复合维生素、复合矿物质、二十二碳六烯酸、酵母β-葡聚糖、牛磺酸、叶黄素、玉米黄质;控制所述奶粉中的蛋白质含量≥17.5%w/w,所述蛋白质为必需氨基酸种类齐全的优质蛋白质;控制所述奶粉中的总脂肪含量为16.5%-23.7%w/w,脂肪中必需包含亚油酸和α-亚麻酸,且二者的重量比为(5-15):1;控制所述奶粉中的碳水化合物含量为40%-57%w/w,所述碳水化合物由乳糖、蔗糖中的一种或多种组成;控制所述奶粉中的膳食纤维含量≥3%w/w,所述膳食纤维由低聚半乳糖和/或低聚果糖和/或异构化乳糖组成。
作为本发明的一种优选技术方案,所述奶粉的配方原料中还包含如下成分当中的一种或多种组合:炼乳、蔗糖、异构化乳糖、乳铁蛋白、花生四烯酸、磷脂酰丝氨酸、磷脂、N-乙酰神经氨酸、益生菌。
作为本发明的一种优选技术方案,所述奶粉的配方原料中对钙、维生素D、七烯甲萘醌进行强化。
作为本发明的一种优选技术方案,所述奶粉的配方原料中,蛋白质由如下重量份的原料组合提供:生牛乳2500-4000、脱盐乳清粉100-250、脱脂乳粉0-300、浓缩乳清蛋白粉0-300、炼乳0-180。
作为本发明的一种优选技术方案,所述奶粉的配方原料中,脂肪由如下重量份的原料组合提供:生牛乳2500-4000、混合植物油30-100、炼乳0-180;其中,混合植物油由玉米油和大豆油组成,且二者的重量比为1:6-6:1。
作为本发明的一种优选技术方案,所述奶粉的配方原料中,乳糖由如下重量份的原料组合提供:生牛乳2500-4000、脱盐乳清粉100-250、脱脂乳粉0-300、浓缩乳清蛋白粉0-300、乳糖0-160、炼乳0-180;所述奶粉的配方原料中,蔗糖由如下重量份的原料组合提供:蔗糖0-160、炼乳0-180。
作为本发明的一种优选技术方案,所述奶粉的配方原料中,复合维生素由如下重量份的原料组合提供:醋酸视黄酯45-68、胆钙化醇20-43、dl-α-醋酸生育酚70-170、七烯甲萘醌240-370、盐酸硫胺素6-16、盐酸吡哆醇3-8、氰钴胺0.01-0.03、L-抗坏血酸200-800、烟酰胺26-46、叶酸0.6-2.6、D-泛酸钙10-60、D-生物素0.04-0.07、氯化胆碱1000-1700。
作为本发明的一种优选技术方案,所述奶粉的配方原料中,复合矿物质由如下重量份的原料组合提供:碳酸钙8000-15000、乳酸亚铁200-650、乳酸锌260-760、富硒酵母30-65。
作为本发明的一种优选技术方案,所述奶粉的配方原料中,益生菌包含双歧杆菌、嗜酸乳杆菌和鼠李糖乳杆菌中的一种或多种,且控制活菌数含量≥106CFU/g。
采用上述技术方案所产生的有益效果在于:本发明开发的因适用于学龄前和中小学生的儿童专用奶粉,能够满足3岁以上儿童日常营养所需,作为一种四段儿童专用配方奶粉,本发明研发组配的专用奶粉基于中国儿童的生理特点,通过蛋白质、脂肪、碳水化合物等宏量营养素的合理搭配,为儿童的基础代谢和生长发育提供必要的能量和营养支持。在此基础上,配以多种维生素、多种矿物质、低聚半乳糖、低聚果糖、异构化乳糖、DHA、牛磺酸、叶黄素、玉米黄质、酵母β-葡聚糖、磷脂酰丝氨酸、磷脂、乳铁蛋白、N-乙酰神经氨酸、益生菌中的部分或全部营养素来实现儿童骨骼成长、智力发育、视力健康、肠道健康和免疫力等方面的诉求。

该实例中,蛋白质含量17.8%,脂肪含量20.0%,碳水化合物含量49.5%,膳食纤维含量3.3%。添加有脱脂乳粉,不添加浓缩乳清蛋白粉,碳水化合物主要为乳糖,不含蔗糖,适合不喜欢吃蔗糖、不需要补充太多蛋白质的儿童。含有多种维生素、多种矿物质、二十二碳六烯酸(DHA)、花生四烯酸(ARA)、牛磺酸、叶黄素、玉米黄质、酵母β-葡聚糖等多种对儿童有益的营养成分。

实施例7、脂肪的配制
在本实施例中,脂肪的含量在16.5%-23.7%,由牛乳脂肪和植物脂肪共同组成,含有丰富的必需脂肪酸亚油酸和α-亚麻酸,这两种必需脂肪酸的比值为5:1-15:1。牛乳脂肪和植物脂肪同时使用相对于只使用牛乳脂肪,含有更丰富的必需脂肪酸。提供牛乳脂肪的原料主要为生牛乳,提供植物脂肪的原料主要为混合植物油。其中混合植物油主要由玉米油和大豆油组成,其组成比例为1:6-6:1。脂肪是人体内主要的供能物质,能够促进人体内脂溶性维生素的吸收,为儿童提供必需脂肪酸亚油酸和α-亚麻酸。
实施例8、碳水化合的配制
本实施例中,碳水化合物的含量在40%-57%,主要为乳糖,含或者不含蔗糖。乳糖由生牛乳、脱盐乳清粉、浓缩乳清蛋白粉、脱脂乳粉等原料提供。蔗糖由白砂糖提供。碳水化合物是人体内主要的供能物质,参与机体细胞的组成和各种代谢活动,经过体内转化还能消除或减轻细菌毒素、砷等物质的毒性。
实施例9、膳食纤维的配制
本实施例中,膳食纤维的含量在3%以上,主要由低聚半乳糖和低聚果糖组成,其比值>5或<0.2。膳食纤维能够调节肠道功能,缓解便秘,提高免疫力,促进钙等矿物质的吸收。本实施例所选用的低聚半乳糖和低聚果糖还是益生元,能够促进肠道内双歧杆菌和乳酸菌的增殖。
实施例10、维生素的配制
本实施例中,含有较全种类的维生素:维生素A、维生素D、维生素E、维生素K2、维生素B1、维生素B6、维生素B12、维生素C、烟酸(烟酰胺)、叶酸、泛酸、生物素、胆碱等。维生素或其代谢产物参与机体内的代谢或细胞调节过程,一般不能在人体内合成,需要通过食物补充。而儿童食物相对单一,或者很多儿童存在挑食厌食现象,使得个别维生素摄入不足,因此补充多种类的维生素很有必要。
本实施例所选用的维生素A,是具有视黄醇生物活性的化合物,对儿童的视力发育、皮肤和粘膜健康、促进免疫功能都有着重要作用。缺乏容易引起夜盲症、干眼症、免疫异常等问题。本实施例所选用的维生素D,为胆钙化醇,能够在儿童体内帮助维持血钙和磷水平,促进钙的吸收和骨的吸收,帮助肌肉收缩和神经传导。缺乏容易导致儿童钙吸收和利用不良,乃至患佝偻病。维生素D和维生素K2同时强化更能促进钙的吸收,促进骨骼成长。本实施例所选用的维生素E,具有强大的抗氧化性,能清除体内自由基,保护细胞膜,维持儿童的免疫调节功能。儿童缺乏容易导致神经系统异常,影响认知和运动发育。本实施例所选用的维生素K2,为七烯甲萘醌,能够促进血液中的钙转化为骨钙,增加骨密度,防止血管钙化。维生素K2和维生素D具有协同作用,两者同时使用,会使补钙的效益最大化。与传统的单纯补充钙和维生素D相比,更能预防骨质疏松,使骨骼更强壮,减小骨折发生的风险。本实施例所选用的维生素B1,在维持正常的能量代谢、神经和肌肉的正常功能、正常的食欲等方面均有重要作用,缺乏容易患脚气病。本实施例含乳原料本底中含有维生素B2,不需要额外补充。维生素B2参与体内的氧化与能量生成,改善机体抗氧化防御能力,维持肠粘膜健康,促进铁吸收。缺乏容易引起口腔炎等各类皮肤炎症,以及缺铁性贫血。本实施例所选用的维生素B6,参与机体氨基酸、糖原以及脂肪代谢,参与色氨酸转化烟酸的过程,影响神经系统的生理功能,促进体内抗体合成。缺乏时可导致皮肤炎症、免疫下降。本实施例所选用的维生素B12,参与蛋白质和核酸合成,是造血功能必需的,缺乏可引起恶性贫血、记忆力下降。本实施例所选用的维生素C,参与胶原蛋白合成,参与体内羟化反应,具有很强的还原性,能够促进铁吸收、提高机体免疫力。缺乏容易导致坏血病,从而出现牙龈出血、骨质疏松等症状。本实施例所选用的烟酰胺,参与能量和氨基酸代谢,调节葡萄糖代谢,为葡萄糖耐量因子。缺乏容易导致癞皮病,引起儿童食欲减退、消化不良,体重减轻、注意力不集中等。本实施例所选用的叶酸,参与蛋白质和核酸的合成,对细胞分裂和组织生长具有重要作用,与维生素B6和B12共同参与同型半胱氨酸代谢。缺乏可导致贫血、食欲下降。本实施例所选用的泛酸,参与体内蛋白质、碳水化合物、脂肪的代谢,其缺乏会引起足部麻木和灼热、全身乏力、胃肠不适等症状。本实施例所选用的生物素,在脂类、氨基酸、糖代谢中起着重要作用,具有基因调节作用。缺乏会引起皮肤和中枢神经系统症状,出现毛发变细、皮疹等症状,会引起脂肪代谢异常。本实施例所选用的胆碱,是保证大脑和神经系统发育的重要物质,也是构成生物膜的重要成分,还能促进肝脏脂肪代谢。缺乏会影响大脑和神经系统的发育。
实施例11、矿物质的配制
本实施例含有钙、铁、锌、硒、钠、磷、钾、镁等矿物元素。这些矿物元素都是人体必需元素,有些是构成机体的重要组分,有些能够调节细胞渗透压,在人体的正常生理代谢过程中发挥着重要作用。
本实施例所选用的钙,主要来源于碳酸钙。钙占人体骨骼重量的25%,儿童每年的更新速率大概为10%,是骨骼和牙齿的主要成分,人体要维持电解质平衡、调节生物膜完整性等多种生理功能也需要钙的参与。儿童在成长期需要较多的钙,长期缺乏容易导致生长迟缓、骨质疏松,乃至骨骼变形患佝偻病。补充钙源后,还要有维生素D和维生素K2的帮助,钙才能够更有效的被人体所利用,转化为骨钙。本实施例所选用的铁,主要来源于乳酸亚铁。铁是构成血红蛋白的组分,是体内氧气输送活动的关键物质。铁有2/3存在于红细胞中,是维持造血功能必需的元素。缺乏会影响血红蛋白合成,乃至贫血,还会导致儿童抵抗力下降。本实施例所选用的锌,主要来源于乳酸锌。锌在身体成长、智力发育、创伤愈合、免疫调节等功能上有着重要作用。缺乏会导致儿童食欲下降、发育迟缓、认知能力下降、免疫力降低。本实施例所选用的硒,主要来源于富硒酵母。硒参与谷胱甘肽过氧化酶的构成,降低机体内的脂质过氧化反应,保护多个脏器免受自由基损伤,从而发挥抗氧化作用。硒存在于几乎所有的免疫细胞中,具有免疫调节作用。而本实施例所选用的富硒酵母中,有机硒占总硒的含量在99%左右,主要以硒代蛋氨酸形式存在,相对于无机硒,其生物利用率更高,更加天然、安全、稳定性更好。本实施例含乳原料本底中含有钠,不需要额外补充。钠占细胞外液阳离子含量的90%左右,对于维持细胞外液渗透压、维持血压有重要作用。其缺乏会出现疲倦、呕吐、血压降低等症状,严重时可导致急性肾衰竭。其过量会引起高血压、高钠血症。一般情况下,机体很少缺钠,所以本实施例中不额外补充钠。本实施例含乳原料本底中含有磷,不需要额外补充。人体磷含量占体重的1%,其中85%存在于骨骼和牙齿中,是骨骼和牙齿的主要成分,参与机体多种代谢,维持生物膜的正常结构。缺乏会引起低磷血症,出现厌食、乏力、佝偻病等症状。本实施例中,钙磷比值约为2:1,更加有利于钙和磷的吸收。本实施例含乳原料本底中含有钾,不需要额外补充。钾主要存在于细胞内,约占总量的98%,钾参与蛋白质和糖代谢,维持细胞内渗透压,起到调节酸碱平衡、维持神经肌肉应激性和维持心肌正常功能的作用。缺乏可出现肌肉无力、心率失常、肾功能失常等症状。本实施例含乳原料本底中含有镁,不需要额外补充。人体中镁含量的60%-65%存在于骨骼中,是组成骨的主要成分之一,具有促进骨骼成长的作用。镁是体内多种酶的激活剂,参与人体酶促反应。缺乏时可影响骨骼成长,出现肌肉震颤、手足抽搐、甚至出现幻觉。
实施例12、骨骼成长组件的配制
本实施例为帮助儿童骨骼成长,在补充钙的同时,还要帮助机体更好的吸收钙,提高钙的利用率。因此同时强化了钙、维生素D和维生素K2,三种物质一起协同作用,帮助儿童骨骼成长。
实施例13、增加抵抗力组件的配制
本实施例为帮助儿童提高抵抗力,在强化维生素C、维生素E、铁、锌、硒等具有免疫调节功能的维生素和矿物质外,还添加了酵母β-葡聚糖、乳铁蛋白中的部分或全部。硒特别选用的是富硒酵母这种安全、生物利用率高的有机硒。本实施例选用的酵母β-葡聚糖,β-葡聚糖含量在85%以上。β-葡聚糖在体内能与肠道巨噬细胞特异性结合,使免疫系统分泌细胞因子,以强化免疫系统。酵母β-葡聚糖还有膳食纤维的功能。本实施例所选用的乳铁蛋白,是一种铁结合糖蛋白,在母乳以及牛乳中均含有乳铁蛋白。乳铁蛋白以及它的蛋白降解产物均具有广泛的生物学活性,如广谱抗菌、消炎、调节机体免疫等。
实施例14、益智组件的配制
本实施例为帮助儿童智力发育,在强化胆碱等维生素的同时,还添加了DHA、ARA、牛磺酸、N-乙酰神经氨酸、磷脂酰丝氨酸、磷脂中的部分或全部。DHA为n-3脂肪酸,ARA是n-6脂肪酸,是脑、神经组织和视网膜中含量最高的脂肪酸,有助于脑和视觉的发育。牛磺酸在中枢系统和视觉系统发育中均有重要作用。本实施例所选用的N-乙酰神经氨酸,又称唾液酸,广泛分布于人体组织,以细胞膜糖蛋白、糖脂等形式存在,具有多种不同的生物学活性,如促进脑部发育、提高记忆力、抗炎等。本实施例所选用的磷脂酰丝氨酸,可影响脑内神经信号的传递,促进神经递质的释放和受体的反应,是维持大脑正常记忆力、反应和健康情绪的重要营养素。磷脂除可以作为乳化剂帮助分解血脂和过高的胆固醇外,还是人体生物膜的主要组分,具有提高记忆力的作用。
实施例15、视力组件的配制
本实施例为保护儿童视力,在强化维生素A的同时,还添加了叶黄素和玉米黄质。叶黄素和玉米黄质存在于人眼中,一起形成黄斑色素。现在社会,平板电脑、手机等电子产品越来越多,导致人眼在蓝光下的暴露几率越来越高。本实施例同时使用叶黄素和玉米黄质,叶黄素吸收短波蓝光,玉米黄质吸收长波蓝光,二者相互补充,更好的保护了儿童减小蓝光对视觉的侵害。
实施例16、益生菌组件的配制
本实施例不添加或者添加活性益生菌。如果添加活性益生菌,则添加的益生菌主要由双歧杆菌、嗜酸乳杆菌和鼠李糖乳杆菌中的一种或多种组成,其总活菌数含量≥106CFU/g。益生菌对于调节肠道菌群平衡、预防便秘和腹泻、提高机体抵抗力等方面均有良好的作用。
综上实施例可见,本发明是为满足儿童骨骼成长、智力提高、保护视力、提高抵抗力、肠道健康等方面的需求而特别设计。本发明的特征在于为儿童提供了优质蛋白、脂肪、碳水化合物等营养及供能物质,含有较全面的维生素、矿物质和多种功能性成分。同时添加了钙、维生素D、维生素K2用以补充钙,并帮助钙的吸收和在骨骼中沉积;同时添加叶黄素和玉米黄质,保护视力健康,减小蓝光侵害;同时添加酵母β-葡聚糖、富硒酵母、乳铁蛋白中的两种或全部,用以提高抵抗力;同时添加DHA、ARA、牛磺酸、N-乙酰神经氨酸、磷脂酰丝氨酸、磷脂中的部分或全部,用以改善智力发育;同时添加低聚半乳糖、低聚果糖、异构化乳糖中的两种或者多种益生元,用以改善肠道健康;不添加或者添加双歧杆菌、嗜酸乳杆菌和鼠李糖乳杆菌中的一种或多种益生菌,用以调节肠道菌群平衡、预防便秘和腹泻、提高机体抵抗力。

1.一种专用于三周岁以上儿童的全营养奶粉,该奶粉包含如下配方原料:生牛乳、脱盐乳清粉、脱脂乳粉/浓缩乳清蛋白粉、混合植物油、乳糖、低聚半乳糖、低聚果糖、复合维生素、复合矿物质、二十二碳六烯酸、酵母β-葡聚糖、牛磺酸、叶黄素、玉米黄质;其特征在于:控制所述奶粉中的蛋白质含量≥17.5%w/w,所述蛋白质为必需氨基酸种类齐全的优质蛋白质;控制所述奶粉中的总脂肪含量为16.5%-23.7%w/w,脂肪中必需包含亚油酸和α-亚麻酸,且二者的重量比为(5-15):1;控制所述奶粉中的碳水化合物含量为40%-57%w/w,所述碳水化合物由乳糖、蔗糖中的一种或多种组成;控制所述奶粉中的膳食纤维含量≥3%w/w,所述膳食纤维由低聚半乳糖和/或低聚果糖和/或异构化乳糖组成。
2.根据权利要求1所述的一种专用于三周岁以上儿童的全营养奶粉,其特征在于:所述奶粉的配方原料中还包含如下成分当中的一种或多种组合:炼乳、蔗糖、异构化乳糖、乳铁蛋白、花生四烯酸、磷脂酰丝氨酸、磷脂、N-乙酰神经氨酸、益生菌。
3.根据权利要求2所述的一种专用于三周岁以上儿童的全营养奶粉,其特征在于:所述奶粉的配方原料中对钙、维生素D、七烯甲萘醌进行强化。
4.根据权利要求3所述的一种专用于三周岁以上儿童的全营养奶粉,其特征在于:所述奶粉的配方原料中,蛋白质由如下重量份的原料组合提供:生牛乳2500-4000、脱盐乳清粉100-250、脱脂乳粉0-300、浓缩乳清蛋白粉0-300、炼乳0-180。
5.根据权利要求4所述的一种专用于三周岁以上儿童的全营养奶粉,其特征在于:所述奶粉的配方原料中,脂肪由如下重量份的原料组合提供:生牛乳2500-4000、混合植物油30-100、炼乳0-180;其中,混合植物油由玉米油和大豆油组成,且二者的重量比为1:6-6:1。
6.根据权利要求5所述的一种专用于三周岁以上儿童的全营养奶粉,其特征在于:所述奶粉的配方原料中,乳糖由如下重量份的原料组合提供:生牛乳2500-4000、脱盐乳清粉100-250、脱脂乳粉0-300、浓缩乳清蛋白粉0-300、乳糖0-160、炼乳0-180;所述奶粉的配方原料中,蔗糖由如下重量份的原料组合提供:蔗糖0-160、炼乳0-180。
