背景技术
随着国内经济的快速发展,以及空巢青年等社会结构的改变,人们对宠物的关注度不断提升,而且养宠人数也不断增加,这成为推动宠物行业发展的重要动力之一。以80后、90后为主的养宠群体逐渐开始重视爱宠的饮食习惯及健康问题,对宠物食品的营养及原料配方的要求与日俱增。
专业的宠物粮是为宠物提供营养的食品,其主要作用是给宠物提供所需的营养物质,具有促进机体成长发育、提高机体免疫力、润肤美毛、保护肾脏及尿路健康等作用。然而,宠物个体间在饮食习惯上存在很大差异,不同个体还存在对某种食物的偏好,而这种偏好可能是1)因为宠物喜好某种形态的食物,2)有可能是因为喜欢某种质地的食物,3)也有可能是因为喜好某种特殊风味的食品。这一饮食上的习惯行为,容易使宠物主混淆宠物习惯上对某种日粮的偏爱与营养需要,最终会发生由营养不均衡导致的疾病。
目前,市场上很多宠物粮是基于传统畜牧饲料的配方上加以修改而制,基本可以满足宠物生长所需的营养物质。但受制于多种因素,大部分宠物粮仅能为宠物提供维持生命活动所必需的基本营养物质,无法保证宠物对其是否喜爱,因为很难改变宠物的饮食行为。即使为爱宠提供的新食品为营养均衡且满足需要的食物,但一旦适口性差,也很难提高其采食量。
为了满足目前庞大的宠物食品需求,寻求一种“科学创新、绿色安全、营养均衡、适口性佳”的宠物犬猫粮势在必得。
发明内容
针对上述问题,本发明的目的在于提供一种用于宠物食品的复合型酶解物及其制备工艺,通过酶解技术结合超声波使得蛋白质、脂肪、淀粉等大分子进行全面酶解,得到小分子为主的复合型酶解物,用于宠物食品可减少过敏原,提高营养消化率,增强宠物机体免疫力。
本发明的技术内容如下:
本发明提供了一种用于宠物食品的复合型酶解物,所述复合型酶解物的组成包括蛋白质酶解物、淀粉酶解物以及脂肪酶解物;
所述复合型酶解物为将蛋白质、淀粉以及脂肪原料中添加生物酶结合超声反应进行全面酶解得到;
所述复合型酶解物中的成分均为小分子物质
所述蛋白质酶解物为将蛋白质原料通过蛋白酶制剂酶解得到,所述蛋白酶制剂包括胃蛋白酶、胰蛋白酶、风味酶、木瓜蛋白酶和复合动物蛋白水解酶的一种或以上;
所述淀粉酶解物为将淀粉原料通过淀粉酶制剂酶解得到,所述淀粉酶制剂包括α-淀粉酶、β-淀粉酶、糖化酶、异淀粉酶的一种或以上;
所述脂肪酶解物为将脂肪原料通过脂肪酶制剂酶解得到,所述脂肪酶制剂包括磷酸酯酶、固醇酶和羧酸酯酶的一种或以上。
本发明还提供了一种用于宠物食品的复合型酶解物的制备方法,包括如下步骤:将蛋白质原料、淀粉原料、脂肪原料分别进行全面酶解,分别将得到蛋白质酶解物、淀粉酶解物以及脂肪酶解物混合即得到复合型酶解物;
所述全面酶解包括一级酶解和二级酶解;
所述一级酶解为在原料中加入酶制剂,调节酸碱值,加热进行酶解反应;
所述二级酶解为将一级酶解的酶解物进行超声反应,之后加入酶制剂,加热进行酶解反应,反应结束之后进行灭酶,筛除杂物即得到酶解物;
所述一级酶解中,蛋白质原料的酶解条件为50~60℃反应15~30min,pH为1.5~5;
淀粉原料的酶解条件为40~50℃反应15~30min,pH为6~7;
脂肪原料的酶解条件为45~60℃反应15~30min,pH为5~7;
所述二级酶解中,蛋白质酶解物的超声条件为200~300超声2~3min,酶解条件为50~60℃反应15~30min;
淀粉酶解物的超声条件为100~200W超声1~3min,酶解条件为40~50℃反应15~30min;
脂肪酶解物的超声条件为200~300200~300超声2~4min,酶解条件为45~60℃反应15~30min。

所述宠物食品的类型包括宠物膨化食品、低温烘焙食品、罐头湿粮;
所述复合调味剂包括调味膏和调味粉;
所述草本植物类包括苜蓿草颗粒、车前子、茜草、丝兰、黄芪、当归、迷迭香中的一种或以上;

本发明的用于宠物食品的复合型酶解物,对蛋白质、淀粉、脂肪等大分子物质进行逐一酶解,制得含有丰富的活性肽、氨基酸、脂肪酸、甘油、葡萄糖和麦芽糖为主的小分子营养物质,而这些小分子有助于机体充分吸收这些物质,用于宠物食品,有助于机体充分吸收这些物质,减轻肠道消化负担,提高营养消化率,尤其是对肠道敏感的宠物犬猫以及幼犬猫和老年犬猫;
本发明的复合型酶解物的制备方法,利用生物酶解技术结合超声波的作用,使得蛋白质、淀粉和脂肪等大分子物质全面分解成小分子物质,做到消除过敏原,增强宠物机体免疫力的功效;使原料释放自然风味,可制备出一种营养价均衡、适口性佳、消化率高的宠物食品,可进一步促进宠物消化吸收,可有效提高机体营养物质的吸收率,使宠物犬猫更加健康的成长发育。

实施例1
一种复合型酶解物及其制备:
1)蛋白质酶解物的制备
调质:取肉类、肉粉等蛋白质原料进行粉碎,倒进蛋白质反应釜中,升温至85℃进行调质,持续15min,此步骤可以使得蛋白质大分子结构舒展开,让蛋白酶更好的接触蛋白质结构反应点,使蛋白质水解反应更全面进行;
一级酶解:添加胃蛋白酶至反应釜,50℃反应30min,pH为3;
二级酶解:将以上酶解物进行300W超声2min,酶解条件为60℃反应15min,之后再加入风味酶至反应釜继续酶解反应。
2)淀粉酶解物的制备
一级酶解:添加α-淀粉酶至反应釜,40℃反应30min,pH为6;
二级酶解:将以上酶解物进行200W超声1min,酶解条件为50℃反应15min,之后再加入β-淀粉酶至反应釜继续酶解反应。
3)脂肪酶解物的制备
一级酶解:添加磷酸酯酶至反应釜,45℃反应30min,pH为5;
二级酶解:将以上酶解物进行300W超声2min,酶解条件为45℃反应30min,之后再加入固醇酶至反应釜继续酶解反应。
灭酶:以上酶解反应结束之后,将反应釜升温至85℃,持续30min进行灭酶,将酶解液过筛即得到蛋白质酶解物、淀粉酶解物和脂肪酶解物,混合即得到复合型酶解物。
实施例2
一种复合型酶解物及其制备:
1)蛋白质酶解物的制备
调质:取肉类、肉粉等蛋白质原料进行粉碎,倒进蛋白质反应釜中,升温至80℃进行调质,持续30min,此步骤可以使得蛋白质大分子结构舒展开,让蛋白酶更好的接触蛋白质结构反应点,使蛋白质水解反应更全面进行;
一级酶解:添加胰蛋白酶至反应釜,53℃反应18min,pH为2;
二级酶解:将以上酶解物进行250W超声2min,酶解条件为58℃反应16min,之后再加入木瓜蛋白酶至反应釜继续酶解反应。
2)淀粉酶解物的制备
一级酶解:添加β-淀粉酶至反应釜45℃反应17min,pH为7;
二级酶解:将以上酶解物进行100W超声3min,酶解条件为50℃反应15min,之后再加入糖化酶至反应釜继续酶解反应。
3)脂肪酶解物的制备
一级酶解:添加羧酸酯酶至反应釜,60℃反应15min,pH为5;
二级酶解:将以上酶解物进行200W超声4min,酶解条件为50℃反应20min,之后再加入固醇酶至反应釜继续酶解反应;
灭酶:以上酶解反应结束之后,将反应釜升温至90℃,持续25min进行灭酶,将酶解液过筛即得到蛋白质酶解物、淀粉酶解物和脂肪酶解物,混合即得到复合型酶解物。
实施例3
一种复合型酶解物及其制备:
1)蛋白质酶解物的制备
调质:取肉类、肉粉等蛋白质原料进行粉碎,倒进蛋白质反应釜中,升温至80℃进行调质,持续30min,此步骤可以使得蛋白质大分子结构舒展开,让蛋白酶更好的接触蛋白质结构反应点,使蛋白质水解反应更全面进行;
一级酶解:添加胃蛋白酶、胰蛋白酶至反应釜,60℃反应15min,pH为5;
二级酶解:将以上酶解物进行300W超声2min,酶解条件为50℃反应30min,之后再加入复合动物蛋白水解酶至反应釜继续酶解反应。
2)淀粉酶解物的制备
一级酶解:添加异淀粉酶至反应釜,45℃反应20min,pH为6;
二级酶解:将以上酶解物进行150W超声2min,酶解条件为45℃反应20min,之后再加入糖化酶至反应釜继续酶解反应。
3)脂肪酶解物的制备
一级酶解:添加磷酸酯酶至反应釜,50℃反应20min,pH为6;
二级酶解:将以上酶解物进行250W超声3min,酶解条件为55℃反应25min,之后再加入固醇酶和羧酸酯酶至反应釜继续酶解反应;
灭酶:以上酶解反应结束之后,将反应釜升温至90℃,持续20min进行灭酶,将酶解液过筛即得到蛋白质酶解物、淀粉酶解物和脂肪酶解物,混合即得到复合型酶解物。
实施例4
一种复合型酶解物及其制备:
1)蛋白质酶解物的制备
调质:取肉类、肉粉等蛋白质原料进行粉碎,倒进蛋白质反应釜中,升温至85℃进行调质,持续20min,此步骤可以使得蛋白质大分子结构舒展开,让蛋白酶更好的接触蛋白质结构反应点,使蛋白质水解反应更全面进行;
一级酶解:添加复合动物蛋白水解酶至反应釜55℃反应23min,pH为1.5;
二级酶解:将以上酶解物进行200W超声3min,酶解条件为60℃反应15min,之后再加入木瓜蛋白酶至反应釜继续酶解反应。
2)淀粉酶解物的制备
一级酶解:添加淀粉酶制剂α-淀粉酶、β-淀粉酶至反应釜,50℃反应15min,pH为7;
二级酶解:将以上酶解物进行200W超声1min,酶解条件为40℃反应30min,之后再加入异淀粉酶至反应釜继续酶解反应。
3)脂肪酶解物的制备
一级酶解:添加磷酸酯酶至反应釜,50℃反应20min,pH为5;
二级酶解:将以上酶解物进行200W超声4min,酶解条件为55℃反应20min,之后再加入羧酸酯酶至反应釜继续酶解反应;
灭酶:以上酶解反应结束之后,将反应釜升温至95℃,持续15min进行灭酶,将酶解液过筛即得到蛋白质酶解物、淀粉酶解物和脂肪酶解物,混合即得到复合型酶解物。
对比例1
一种复合型酶解物及其制备:
1)蛋白质酶解物的制备
调质:取肉类、肉粉等蛋白质原料进行粉碎,倒进蛋白质反应釜中,升温至85℃进行调质,持续15~30min,此步骤可以使得蛋白质大分子结构舒展开,让蛋白酶更好的接触蛋白质结构反应点,使蛋白质水解反应更全面进行;

灭酶:以上酶解反应结束之后,将反应釜升温至90℃,持续25min进行灭酶,将酶解液过筛即得到蛋白质酶解物、淀粉酶解物和脂肪酶解物,混合即得到复合型酶解物。
对比例2
一种复合型酶解物及其制备:
1)蛋白质酶解物的制备
酶解:取肉类、肉粉等蛋白质原料进行粉碎,添加胃蛋白酶、胰蛋白酶至反应釜,53℃反应18min,pH为2,进行250W超声2min;
2)淀粉酶解物的制备
酶解:添加α-淀粉酶、β-淀粉酶至反应釜,53℃反应18min,pH为2,进行250W超声2min;
3)脂肪酶解物的制备
酶解:添加磷酸酯酶、固醇酶至反应釜,60℃反应15min,pH为5,进行200W超声4min;
灭酶:以上酶解反应结束之后,将反应釜升温至85~95℃,持续15~30min进行灭酶,将酶解液过筛即得到蛋白质酶解物、淀粉酶解物和脂肪酶解物,混合即得到复合型酶解物。
采用高效液相色谱法对以上实施例以及对比例所得到的酶解物中大分子以及小分子物质的含量,结果如下表所示:

所述蛋白质酶解之后的小分子包括活性肽、氨基酸,淀粉酶解之后的小分子包括葡萄糖和麦芽糖,脂肪酶解之后的小分子包括脂肪酸、甘油。
实施例5
一种膨化宠物食品:
1)称取实施例1的蛋白质酶解物20份,淀粉酶解物10份,脂肪酶解物5份,复合调味剂4份,草本植物类(苜蓿草颗粒、车前子、茜草=1:1:1)5份,奶酪粉0.5份,小球藻粉3份,全蛋粉1份,鸡肝粉酶解物3份,进行混合得到混合物A;
2)在混合物A中加入核心预混料类5份,乳酸杆菌1份,得到混合物B;
3)将混合物B在调质机中103℃下调质至水分含量在25-30%范围内,此时得到混合物C;
4)将混合物C送到膨化机,在110℃高温下进行高温膨化造粒得到颗粒粮D,将颗粒粮D在102℃下烘干直至水分降至3-4%得到颗粒粮E;
5)将颗粒粮E在调味混合仓中依次真空高压喷涂剩余的油脂、复合调味料、益生菌类后送入冷却塔进行冷却至室温,制得蛋白质、脂肪、淀粉全酶解宠物膨化宠物犬猫粮。
实施例6
一种宠物烘焙食品:
1)取实施例2的蛋白质酶解物65份,淀粉酶解物8份,脂肪酶解物3份,复合调味剂8份,苜蓿草颗粒0.1份,羊初乳3份,螺旋藻粉1份,全蛋粉3份,鸡肝粉酶解物1份,进行混合得到混合物A;
2)在混合物A中加入核心预混料类8份,产阮假丝酵母1份,得到混合物B;
3)将混合物B挤压切段成型后,置于100℃的低温状态下在烤箱进行烘烤,随后利用烘干机干燥脱水至10%,得到烘焙物C;
4)将烘焙物C进行冷却,制得蛋白质、脂肪、淀粉全酶解宠物低温烘焙宠物犬猫粮。
实施例7
一种宠物罐装食品:
1)取实施例3的蛋白质酶解物50份,淀粉酶解物0份,脂肪酶解物8份,复合调味剂6份,草本植物类(丝兰、黄芪、当归、迷迭香1:1:1:1)3份,羊奶粉2份,小球藻粉2份,全蛋粉2份,鸡肝粉酶解物2份,进行混合得到混合物A;
2)在混合物A中加入核心预混料类0.1份,乳酸杆菌4份,得到混合物B;
3)将混合物B填充到罐头中,用双封盖子密封,得到罐装物C;
4)将罐装物加热至120℃下进行干馏,使得罐装物在加热加压环境下蒸煮15min,有效进行杀菌的作用;
5)之后将罐装物进行冷却、干燥、即得到宠物犬猫罐装食品。
对比例3
作为实施例5的对照组,对比例3的宠物食品为不添加蛋白质酶解物、淀粉酶解物以及脂肪酶解物:
称取鸡肉20份,淀粉10份,鸭油5份,复合调味剂4份,草本植物类(苜蓿草颗粒、车前子、茜草=1:1:1)5份,奶酪粉0.5份,小球藻粉3份,全蛋粉1份,鸡肝粉酶解物3份,进行混合得到混合物A;
其它步骤同实施例5,得到无酶解物的宠物食品。
对比例4
作为实施例7的对照组,对比例4的宠物食品为不添加蛋白质酶解物以及脂肪酶解物:
取鸡肉50份,鱼油8份,复合调味剂6份,草本植物类(丝兰、黄芪、当归、迷迭香1:1:1:1)3份,羊奶粉2份,小球藻粉2份,全蛋粉2份,鸡肝粉酶解物2份,进行混合得到混合物A;
其它步骤同实施例7,得到无酶解物的宠物食品。
选取15只宠物猫,分成5组,每组3只猫,采用以上实施例和对比例制备的宠物食品喂养45天,期间每隔3天查看宠物猫的食用状况以及粪便状况,其中选取第15天、第30天以及第45天的观察结果,记录如下表所示。

由上可见,本发明的复合型酶解物的酶解方法使得蛋白质、淀粉、脂肪等大分子物质基本酶解成小分子物质,如表1可见,所得复合型酶解物的活性小分子含量高以及营养流失少,将其用于宠物食品,可以制得鲜香风味浓、具有促进消化吸收、增强机体免疫力的宠物犬猫粮,同时能够提高适口性,增加采食量,减少浪费,促进宠物的肠道消化,如表2可见,采用本发明复合酶解物的宠物食品,用于喂食宠物之后,宠物采食量明显增加,肠道消化率增加,粪便无软便等现象。
Claims (10)
1.一种用于宠物食品的复合型酶解物,其特征在于,所述复合型酶解物的组成包括蛋白质酶解物、淀粉酶解物以及脂肪酶解物;
所述复合型酶解物为将蛋白质、淀粉以及脂肪原料中添加生物酶结合超声反应进行全面酶解得到;
所述复合型酶解物中的成分均为小分子物质。
2.由权利要求1所述的复合型酶解物,其特征在于,所述蛋白质酶解物为将蛋白质原料通过蛋白酶制剂酶解得到,所述蛋白酶制剂包括胃蛋白酶、胰蛋白酶、风味酶、木瓜蛋白酶和复合动物蛋白水解酶的一种或以上。
3.由权利要求1所述的复合型酶解物,其特征在于,所述淀粉酶解物为将淀粉原料通过淀粉酶制剂酶解得到,所述淀粉酶制剂包括α-淀粉酶、β-淀粉酶、糖化酶、异淀粉酶的一种或以上。
4.由权利要求1所述的复合型酶解物,其特征在于,所述脂肪酶解物为将脂肪原料通过脂肪酶制剂酶解得到,所述脂肪酶制剂包括磷酸酯酶、固醇酶和羧酸酯酶的一种或以上。
5.一种权利要求1~4任一项所述的复合型酶解物的制备方法,其特征在于,包括如下步骤:将蛋白质原料、淀粉原料、脂肪原料分别进行全面酶解,分别将得到蛋白质酶解物、淀粉酶解物以及脂肪酶解物混合即得到复合型酶解物;
所述全面酶解包括一级酶解和二级酶解。
6.由权利要求5所述的复合型酶解物的制备方法,其特征在于,所述一级酶解为在原料中加入酶制剂,调节酸碱值,加热进行酶解反应。
7.由权利要求5所述的复合型酶解物的制备方法,其特征在于,所述二级酶解为将一级酶解的酶解物进行超声反应,之后加入酶制剂,加热进行酶解反应;反应结束之后进行灭酶,筛除杂物即得到酶解物。
8.由权利要求5所述的复合型酶解物的制备方法,其特征在于,所述一级酶解中,蛋白质原料的酶解条件为50~60℃反应15~30min,pH为1.5~5;
淀粉原料的酶解条件为40~50℃反应15~30min,pH为6~7;
脂肪原料的酶解条件为45~60℃反应15~30min,pH为5~7。
9.由权利要求5所述的复合型酶解物的制备方法,其特征在于,所述二级酶解中,蛋白质酶解物的超声条件为200~300超声2~3min,酶解条件为50~60℃反应15~30min;
淀粉酶解物的超声条件为100~200W超声1~3min,酶解条件为40~50℃反应15~30min;
脂肪酶解物的超声条件为200~300200~300超声2~4min,酶解条件为45~60℃反应15~30min。
10.一种含有权利要求1所述的复合型酶解物的宠物食品,其特征在于,所述宠物食品的组成包括蛋白质酶解物、淀粉酶解物、脂肪酶解物、复合调味剂、草本植物类、乳制品、藻粉类、全蛋粉、益生菌、鸡肝粉酶解物;
所述宠物食品的类型包括宠物膨化食品、低温烘焙食品、罐头湿粮。
