The preparation of the airborne coffee particles of this example uses the apparatus shown in figure 3, with the following steps:
firstly, putting original coffee particles into a pressurizing container 1, and pressurizing to 1.5MPa at normal temperature; the original coffee particles are shown in fig. 1;
secondly, heating the pressurized container to 140 ℃ and keeping the temperature for one hour;
thirdly, cooling the pressurized container obtained in the second step to 20 ℃ under the pressure;
fourthly, slowly releasing the pressure of the pressurized container in the third step, and taking out coffee particles;
fifthly, screening the coffee particles obtained in the step (iv) according to the requirement to obtain the coffee gas-containing particles, as shown in figure 2. The obtained gas-containing coffee granules have a bulk density of 0.10g/cm3And contained 0.15ml/g of closed pores. The particles can produce a foam volume of 10cm3/g。
The principle and the steps for testing the bulk density and the leak tightness of the pores are the prior art and are as follows:
the weight and volume of the particles were measured by helium pycnometer (AccuPyc 1330Micromeritics), and the bulk density (g/cm) was obtained by dividing the weight by the volume3). The particle volume includes any air-tight void volume present in the particles, not including the interstitial spaces between particlesThe volume and any void volume present in the particles that is open to the atmosphere. The volume of the closed pores in the particles is obtained by measuring the skeleton density of the particles after removing all internal gaps of the particles or opening the particles to the atmosphere, wherein the skeleton density is also the real density of the single solid density of the particles, and is called the real density g/cm for short3. Pore volume of pore3The/g) is determined by subtracting the reciprocal true density from the reciprocal skeleton density. The closed pore volume can also be characterized by the volume percentage of closed pores contained in the particles.
Corrected according to the room temperature and the pressure, the gas amount released by the gas-containing granules of the coffee is 10cm per gram of the granules3Left and right.
