Abstract

The invention provides a preparation method of ganoderma lucidum Lushan mist tea, and by utilizing the health-care effects of ganoderma lucidum and Lushan mist tea, the prepared product has the effects of enhancing immunity, tonifying qi and soothing the nerves. The pretreatment before the granulation of the lucid ganoderma not only improves the granule yield and the finished product yield after the granulation, but also is beneficial to the dissolution of the active substances of the lucid ganoderma. The granulated ganoderma lucidum cottage mountain mist tea is wrapped by the edible hot-melt film, so that the bacteriostatic effect can be effectively enhanced, and the edible hot-melt film is slowly dissolved when the ganoderma lucidum cottage mountain mist tea is soaked in hot water, so that the effect can be prevented from being influenced by the damage of ganoderma lucidum polysaccharide and triterpenes serving as active ingredients of ganoderma lucidum due to high temperature. In addition, the dissolution of effective components of Ganoderma and Lushan mist tea can be promoted.

Description

Preparation method of ganoderma Lushan mist tea
Technical Field
The invention belongs to the technical field of food processing, and particularly relates to a preparation method of ganoderma lucidum Lushan mist tea.
Background
Lushan Yunwu tea is one of the famous Chinese tea series and belongs to green tea. The first is a wild tea, and the posterior Donglin Temple named monk Huiyuan transformed the wild tea into a home tea. Starting from Han dynasty, Song Dynasty is listed as tribute tea. It is named after Lushan produced in Jiujiang City of Jiangxi province in China. The tea bud is green, moist and rich, the tea bud is compact and beautiful, the fragrance is fresh and lasting, the taste is mellow and sweet, the liquor color is clear and bright, and the leaf bottom is light green and uniform. "Liu Ju" is usually used to form Lushan mist tea, i.e. "thick and strong strip, green and more hair, bright liquor color, tender and uniform leaves, long-lasting fragrance, mellow and sweet taste". The Yunwu tea has unique flavor, and is affected by cool and foggy cottonshan climate, short direct sunlight irradiation time and other conditions, so that the Yunwu tea has thick leaves, more water and mellow taste and is resistant to soaking.
Ganoderma is umbrella-shaped, pileus kidney-shaped, semicircular or nearly circular, and is fruiting body of Ganoderma of Polyporaceae. Has effects of invigorating qi, tranquilizing mind, relieving cough and asthma, and can be used for treating vertigo, insomnia, palpitation, short breath, and cough and asthma due to asthenia.
Through a large number of clinical researches, the ganoderma lucidum has different degrees of curative effects on neurasthenia, hyperlipidemia, coronary heart disease, angina pectoris, arrhythmia, keshan disease, altitude sickness, hepatitis, hemorrhagic fever, dyspepsia, tracheitis and the like. Pharmacological research proves that the ganoderma lucidum has various biological activities. Mainly contains amino acids, polypeptide, protein, fungal lysozyme, saccharides, ergosterol, triterpenes, coumarins, volatile oil, stearic acid, benzoic acid, alkaloid, vitamin B2 and C, etc.; the spore also contains mannitol and trehalose.
Along with the improvement of living standard of people, people pay more and more attention to body health, the attention of the health care product industry is also increased with the rising of water, Chinese people have tea drinking habits since ancient times, and tea culture is deeply fixed in China nationality. Therefore, in response to market demands, the invention provides a preparation method of ganoderma lucidum Lushan mist tea, which is a health food prepared by taking ganoderma lucidum and Lushan mist tea as main raw materials, and animal function tests prove that the ganoderma lucidum Lushan mist tea has a health-care function of enhancing immunity, and the quality of the ganoderma lucidum Lushan mist tea can be effectively controlled by taking crude polysaccharide and tea polyphenol as the marker components of the product.

Test of
According to the glossy ganoderma cottage mountain mist tea prepared by the method in the embodiment, corresponding tests are carried out to compare the difference of each index parameter among groups, and the optimal scheme is optimized, specifically the following tests 1 and 2 are carried out:
test 1
The baseline characteristic project tests are summarized in table 1 below, wherein: the testing method of the crude polysaccharide is from the detection method of functional components of health food; the test method of tea polyphenol is tested according to the method specified in GB/T8313 detection method of tea polyphenol and catechin content in tea method II determination of tea polyphenol in tea, and other components are tested according to corresponding national standards.
TABLE 1 basic situation table of glossy ganoderma Lushan mist tea
Figure 289861DEST_PATH_IMAGE001
By comparing Table 1 above, it can be seen that:
(1) the ganoderma lucidum Lushan mist tea prepared by the methods of the embodiments has no peculiar smell or foreign matter impurities, and the total number of colonies and the physical and chemical properties meet the requirements;
(2) the effect is better when the embodiments 1, 2 and 3 are used for comprehensively comparing various indexes, and the effect is optimal when the embodiment 1 is used; the crude polysaccharide and the tea polyphenol are used as important reference indexes, and the products prepared in each embodiment meet the requirements;
(3) comparing example 1 with examples 4 and 5, the products of examples 4 and 5 have non-uniform color and luster, and the selection of the preparation process is very important to the product quality.
Test 2
In order to compare the lucid ganoderma cottage mountain mist tea prepared by the method of each embodiment more effectively, 5 groups of samples are randomly selected from each embodiment respectively, the brewing is carried out by the same method and under the same conditions, the dissolution rate of the effective components is tested, the dissolution rate is calculated, the dissolution rate = (the content of the effective components-the content of the effective components after brewing)/the content of the effective components is 100 percent, the difference before and after brewing is compared, the maximum value and the minimum value are removed, and the average value is taken and recorded and summarized to the following table 2:
TABLE 2 comparison of dissolution rates of effective ingredients
Figure 373486DEST_PATH_IMAGE003
Based on the comparison of the data of the above test 2, we can find that the dissolution rates of the effective components of the products prepared by the methods of different embodiments are obviously different, and the data are better in the embodiments 1, 2 and 3, especially the best in the embodiment 1; compared with the comparative examples 1, 4 and 5, the preparation processes of the examples 4 and 5 are out of the range required by the invention, and the dissolution rate of the effective components is obviously lagged behind that of the example 1; examples 6, 7 and 8 are inferior to example 1 in the dissolution effect of the effective component in comparison with the pretreatment of Ganoderma before mixing; after granulation and before encapsulation, an edible thermosol coating step is necessary for the granules, which can be fed back from a comparison of the results of examples 1, 9, 10, 11.
