Description

Automatic/semi-automatic cooking equipment with double shovels
Technical Field
The invention relates to a cooking method and equipment thereof, in particular to a cooking method and equipment for cooking Chinese dishes.
Background
In automatic or semi-automatic cooking processes, many cooking techniques require turning over the cooked ingredients, i.e., turning over the ingredients. Several techniques for automatic upending have been provided in the prior art.
For example, chinese patent applications 201680036543.6, 201680036544.0, etc. disclose a cooking system that includes a pan body support; the barrel-shaped pot body is rotatably arranged on the pot body bracket and is used for containing cooking materials; the rotary driving device is connected with the pot body and is used for driving the pot body to rotate around the rotating axis of the pot body; the angle adjusting device is connected with the pot body and/or the pot body bracket and is used for adjusting the inclination angle of the pot body rotation axis; the heating device is used for heating the pot body and/or materials in the pot body; and an arithmetic processor and an instruction input device. The cooking system further comprises a control device, wherein the control device controls the pot body to rotate at a first rotating speed which is less than the critical rotating speed and enables the cooking materials to fall down along with the pot body in a range from 90 degrees to 180 degrees in a first mode according to a rotating speed control instruction, and controls the pot body to rotate at a second rotating speed which is greater than or equal to the critical rotating speed in a second mode according to the rotating speed control instruction, so that the cooking materials are attached to the pot body and rotate along with the pot body.
In the invention, the automatic turning of the cooking materials in the automatic cooking process is realized by utilizing the horizontal inclination angle and the rotation speed of the cylindrical pot body. The automatic material turning mode is suitable for occasions with large cooking quantity and difficult breakage of materials in the cooking process, such as the cooking of restaurants and canteens.
For another example, chinese patent 200910105771.6 discloses an automatic or semi-automatic pot-turning device and a cooking apparatus using the same, wherein the pot-turning device includes a base (1), a first swing link (21) and a swing mechanism (3), the end of the first swing link (21) is hinged to the base (1), the top end of the first swing link (21) is connected to a pot (4), the swing mechanism (3) is installed on the base (1), and the swing mechanism (3) is driven by a driving device (51) to drive the first swing link (21) to make reciprocating swing motion, thereby driving the pot (4) to make reciprocating swing motion. The invention imitates the pan turning operation of human hands, drives the pan to do reciprocating swing motion, and generates a rapid acceleration/rapid deceleration action in the pan swing process so as to throw the material from the pan and accurately drop the material back into the pan, thereby enabling the material to be heated uniformly, having good pan turning effect and higher consistency of the pan turning action. The device simulating the cooker-jolting action of the cook has higher requirements on the performance of the motor.
Chinese patent 200510125266.X discloses an intelligent cooking method, especially a frying cooking method, which comprises the following steps: adding heat transfer medium, adding cooking materials, scattering and/or stirring the cooking materials, removing the cooking materials from a pot, draining oil, returning the drained cooking materials to the pot, frying and stirring and/or stirring the cooking materials, and the like. The invention discloses a pan discharging-oil draining-pan returning device which is adopted in the invention and comprises a double-folding-arm connecting rod mechanism 21 and a shovel-shaped tool 25 with an oil draining hole, the whole mechanism is fixed on a main machine frame or a moving device through an upper positioning support 15 and a lower positioning support 18, a motor 17 drives a screw rod 19 to rotate and drives a sliding block 20 to move up and down, the double-folding-arm mechanism 21 is respectively connected with the lower positioning support 15 and the sliding block 20 through pin shafts 14 and 16, and when the sliding block 20 moves up and down, the double-folding-arm connecting rod mechanism 21 is driven to move to fold and unfold the two shovel-shaped tools 25. When the lubricating oil material needs to be taken out of the pot, the whole device moves to the upper part of the pot body 1 and descends to a proper position under the control of the control system, the motor 17 drives the screw rod 19 to rotate and drive the slide block 20 to move upwards, the two shovel bodies 25 are folded to shovel the material in the pot into the device, the whole device ascends to enable the material to be taken out of the pot and drip oil, the oil return pump 22 sucks the oil in the pot back to the oil storage tank 23 through the oil return pipe 24, at the moment, the whole device can be moved out of the pot to make other systems perform other operations, when the material needs to be taken back, the whole device moves to the upper part of the pot body 1 and descends to a proper position under the control of the control system, the motor 17 rotates reversely to enable the two shovel bodies 25 to be opened, and the shoveled material falls back. This device for taking out, draining and returning is a spatula which is closed and opened by two spade-shaped tools 25 to remove and return the material into the cooking container, but is in itself different from a spatula which is normally used to turn over the material.
During the manual cooking process of a cook, the hand-held slice slides along the inner wall of the pot body and turns over at a certain position, so that the turning over of materials is realized. In view of this, in the field of automatic cooking, technicians have always tried to make a slice that simulates the movement of a human hand. For example, chinese patent application 201810055569.6 discloses a stir-frying device and a stir-frying cooking method for a stirrer of an intelligent cooking machine, the stir-frying device comprising: the stirring shovel system comprises a stirring shovel auxiliary module and a stirring shovel, and the stirring shovel auxiliary module assists the stirring shovel to stir and fry food in the pot body of the intelligent cooking machine. However, the control system in the automatic cooking device is not comparable to the human mind, and it is difficult to achieve the accuracy of human hands by simply simulating the motions of human hands, and it is difficult for the ordinary human in fact to simulate the motions of a professional chef.
In order to overcome the problem of simply simulating human hands, chinese patent 201922500594.3 discloses a cooking apparatus provided with a stirring auxiliary member so that a material stirring portion of the stirring member is as close as possible to an inner wall of a pot and an inner wall of the stirring auxiliary member during rotation. The equipment can well stir the materials and can effectively solve the problem that the cooking materials fall out of the pot; however, the stirring auxiliary member is arranged on the pot cover or the pot body, which increases the complexity of the pot cover or the pot body and brings about the problems of equipment cleaning and the like.
Therefore, there is a need for a new cooking device that achieves better material turnover through the improvement of a slice system without substantially changing the pan itself.
Disclosure of Invention
The main object of the present invention is to provide a cooking device which, through the improvement of the system of the slice, is able to turn the material well.
In order to achieve the purpose, the invention provides automatic or semi-automatic cooking equipment which comprises a rack, a pot and a slice system, wherein the pot is arranged on the rack, and the slice system is arranged above or at the side of the pot through a slice system support; the pancake turner system comprises a main turner component driven by a motor and an auxiliary turner component driven by the motor, wherein the main turner component comprises a main turner head, a main turner handle and a main turner track changing mechanism, and the auxiliary turner component comprises an auxiliary turner head, an auxiliary turner handle and an auxiliary turner track changing mechanism; when cooking, the main shovel head and the auxiliary shovel head respectively move towards the central part of the cooker from opposite directions along the inner wall of the cooker under the action of the motor drive, the main shovel track changing mechanism and the auxiliary shovel track changing mechanism, and when the main shovel head and the auxiliary shovel head meet with each other, the main shovel head can slide on the upper surface, far away from the cooker, of the auxiliary shovel head.
Thus, in the technical scheme of the invention, the phenomenon that the turner can only slide along the inner wall of the pot and the stirring or turning of the materials is realized under the assistance of the inner wall of the pot is avoided, because in the technical scheme, although the main turner head and the auxiliary turner head both slide along the inner wall of the pot for a certain distance when the main turner head and the auxiliary turner head contact the pot on duty, the main turner head and the auxiliary turner head mutually assist to prevent the materials between the main turner head and the auxiliary turner head from continuously sliding on the inner wall of the pot due to the fact that the main turner head and the auxiliary turner head move in. The turner has the advantages that the turner can turn over and mix or turn over materials without the assistance of the inner wall of a pan, so that the requirements on the shape of the inner wall of the pan can be reduced, the materials can be easily turned over in pans with any shapes, and a so-called stirring auxiliary component in the prior art is not needed.
In the cooking equipment, the auxiliary shovel track conversion mechanism is any mechanism capable of converting the motion track of the auxiliary shovel head, so that the auxiliary shovel head rotates like an ellipse in a vertical plane perpendicular to a pan opening plane and on one side of a pan. As a specific implementation mode, the auxiliary shovel track transformation mechanism is a crank-rocker mechanism which comprises a crank and a rocker which are respectively hinged on the base, and a connecting rod respectively hinged with the crank and the rocker; the crank, the connecting rod, the swing rod and the base form a four-bar mechanism, one end of the auxiliary shovel handle is installed at the hinged position of the crank and the connecting rod, and the other end of the auxiliary shovel handle is connected with the auxiliary shovel head. The crank rocker mechanism is simple in structure and reliable in operation.
In the cooking equipment of the invention, the main shovel track changing mechanism can also be any mechanism capable of changing the motion track of the main shovel head, so that the main shovel head rotates like an ellipse in a vertical plane vertical to the pan opening plane on the other side of the pan. As a specific implementation mode, main shovel orbit conversion mechanism is a cam groove mechanism, and this cam groove mechanism is including setting up cam groove on the base, the slide rail seat that is located the cam groove center, setting up the slide rail on the slide rail seat, and slide rail one end is the free end, is provided with the roller with cam groove matched with on the other end, and main shovel handle one end sets firmly on the slide rail, and main shovel head is connected to the other end. The cam groove mechanism can better control the running track of the main shovel head, for example, the main shovel head can slide for a certain distance on the upper surface of the auxiliary shovel head far away from the cooker.
Preferably, in the cooking apparatus, the motor drives the slide rail seat to perform circular motion, and the slide rail performs circular motion along with the slide rail seat, and simultaneously performs reciprocating sliding motion in the slide rail groove under the matching action of the roller and the cam groove, so as to drive the main shovel head to perform ellipse-like motion on one side of the cookware. Like this, under the effect of main shovel orbit conversion mechanism, when making main shovel head and pan contact, can press close to pan inner wall curvilinear motion, when guaranteeing that better material turns over, also make main shovel head not take place to interfere with the pan.
In one embodiment of the present invention, the main blade path changing mechanism in the main blade assembly is a cam groove mechanism, and the sub blade path changing mechanism in the sub blade assembly is a crank and rocker mechanism. In this combination, the slice system is preferably located to the side of the pot, e.g. laterally above. The combined mode has the advantages that the combined mode is particularly suitable for the turnover operation of materials, the cam groove mechanism in the main shovel component can better control the running track of the main shovel head, so that the cam groove mechanism can slide along the upper surface of the auxiliary shovel head, which is far away from a cooker, to complete the turnover operation, and the crank-rocker mechanism in the auxiliary shovel component is lighter and simpler.
In the technical scheme of the cooking equipment, the auxiliary shovel head can be formed into a shape of a turning curved surface, so that when the main shovel head slides on the turning curved surface of the auxiliary shovel head, the main shovel head drives the material to move along the turning curved surface of the auxiliary shovel head, and the material falls back into the pot after turning under the action of the turning curved surface. In this embodiment, the main shovel head and the auxiliary shovel head must meet to achieve the technical effect of turning over.
The auxiliary shovel head rotates like an ellipse in a vertical plane which is perpendicular to the plane of the pot opening and on one side of the pot, and the main shovel head rotates like an ellipse in a vertical plane which is perpendicular to the plane of the pot opening and on the other side of the pot, so that all materials in the pot can be turned over by the main shovel head and the auxiliary shovel head, the pot and/or the shovel system can rotate in a horizontal plane, and the turning of the materials without dead angles is achieved.
For example, when the main blade track changing mechanism selected by the main blade assembly in the cooking apparatus is a cam-groove mechanism, it is preferable to adopt a technical solution of making the pot perform a rotational motion in a horizontal plane. For example, in the above cooking apparatus, the cooking apparatus may further include a pot ring, the pot ring is disposed on the frame, the pot is mounted on the pot ring, and the pot ring can drive the pot to rotate in the horizontal plane.
In order to realize that the pan ring drives the pan to rotate, a linkage structure which can enable the pan to rotate along with the pan ring can be arranged between the pan ring and the pan. For example, a ring gear is provided in the pot rim along its circumferential direction, and the ring gear is engaged with a gear driven by the pot rotation driving device.
As another specific implementation mode of the linkage structure between the cooker and the cooker ring, a cooker limiting mechanism for preventing the cooker from shaking is arranged between the cooker and the cooker ring; preferably, the pot ring is provided with a first step part arranged along the circumferential direction of the pot ring on the radial inner side of the pot ring, the pot is provided with a second step part along the circumferential direction of the pot, the second step part is supported on the first step part, and the first step part and the second step part form a pot limiting mechanism; more preferably, the first step portion and the second step portion are provided obliquely with respect to a horizontal plane.
In the cooking apparatus of the present invention, the main shovel trajectory transformation mechanism in the main shovel assembly may also be a crank and rocker mechanism including a crank and a rocker hinged to the base, respectively, and a connecting rod hinged to the crank and the rocker, respectively; the crank, the connecting rod, the swing rod and the base form a four-bar mechanism, one end of the main shovel handle is installed at the hinged position of the crank and the connecting rod, and the other end of the main shovel handle is connected with the main shovel head.
In the technical scheme that the main shovel track changing mechanism is also a crank rocker mechanism, the main shovel head can slide on the upper surface, far away from a cooker, of the auxiliary shovel head, but the preferred sliding distance is short, and therefore the main shovel component and the auxiliary shovel component can form a mechanism similar to a grabbing shovel.
In the technical scheme that the main shovel track changing mechanism and the auxiliary shovel track changing mechanism are crank rocker mechanisms, the turner system can be positioned above a cooker and is installed on a rack through a support, and under the driving of a stir-frying rotating motor, the turner system can do rotary motion in a horizontal plane above the cooker, so that all materials in the cooker can be turned by the main shovel head and the auxiliary shovel head, and the purpose of turning the materials without dead angles is achieved.
In the above technical solution, the cooking apparatus may further include a fixed shield and a movable shield. On one hand, the stir-frying motor is respectively connected with the main shovel head and the auxiliary shovel head through a crank rocker structure, and the main shovel head and the auxiliary shovel head move oppositely along an ellipse-like track above the cooker; on the other hand, the stir-frying motor is connected with the movable protective cover through a worm structure to drive the movable protective cover to do up-and-down reciprocating motion together with the main shovel head and the auxiliary shovel head. Under the superposition action of opposite movement and up-and-down movement of the main shovel head and the auxiliary shovel head in the ellipse-like tracks, the materials in the pot are grabbed and moved to the pot and then released back to the pot, so that the materials are turned. In this embodiment, vice shovel orbit conversion mechanism and main shovel orbit conversion mechanism are crank rocker mechanism, and main shovel head and vice shovel head can intersect (become the turn-over), also can not intersect, for example leave the space a little, utilize material self physical dimension, realize the technological effect of grabbing.
In addition, in the above technical solution, in order to realize the material scattering, teeth for scattering the material may be combined with one of the main shovel head and the auxiliary shovel head.
With the help of the pancake turner system, the pancake turner of the automatic/semi-automatic cooking equipment can turn over and stir materials without the assistance of the inner wall of a pot, so that the shape requirement on the inner wall of the pot can be reduced, the material turning can be easily realized in the pot with any shape, and the pancake turner system does not simply simulate a human hand from the fully mechanical angle, surpasses the function of the human hand, and does not need a stirring auxiliary component in the prior art.
