Abstract
本发明公开了一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料及制作方法,所述运动饮料每250mL包括虾青素8‑12mg、烟酰胺单核苷酸8‑10mg、牛磺酸50‑125mg、维生素C25‑75mg、维生素B6 0.1‑0.3mg、维生素B12 0.1‑0.45mg、葡萄糖5‑10g、香精适量、悬浮剂适量、氯化钠2.0g、氯化钾0.1g、碳酸氢钠0.09g、磷酸二氢钾0.02g、磷酸氢二钠0.04g。本发明的含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料既能清除运动产生的自由基,缓解运动疲劳和肌肉酸痛,修复肌肉损伤,又能提供能量,补充电解质,增加机体耐力,是一款抗氧化、缓解体力疲劳的饮料。

技术领域
本发明涉及食品加工技术领域,具体来说,涉及一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料及制作方法。
背景技术
虾青素(astaxanthin)即3,3′-二羟基-4,4′-二酮基-β,β′-胡萝卜素,不溶于水,易溶于有机溶剂。天然虾青素为目前发现最强的天然抗氧化剂之一,其不饱和酮基和羟基具有比较活泼的电子效应,能吸引自由基未配对电子或向自由基提供电子,有效清除细胞内的氧自由基,虾青素还能增强免疫、抗炎、改善视力、抗高血压、预防心血管疾病、抗癌、抗衰老、预防神经退行性病变等多种生理功能。虾青素还具有穿透体内多种屏障(如血脑屏障、血眼屏障、血睾屏障)的能力。雨生红球藻为目前自然界中发现的天然虾青素含量最高生物,含量1~5%,所含的天然虾青素几乎全为左旋形式,活性最佳。继美国和欧盟以后,雨生红球藻于2010年11月被我国卫生部批准为新资源食品,食用安全可靠。
虾青素可以改善运动疲劳损伤及引起的炎症反应。虾青素抗氧化作用能抵抗自由基氧化损伤所致的关节疼痛和关节炎。运动性损伤后产生的大量炎性因子会导致病情加重,虾青素具有抗炎症作用,能够抵抗炎性因子产生的炎症作用,改善运动损伤的程度及防止诱发其他症状,并促进运动损伤的恢复。虾青素增强肌肉细胞代谢能力增强肌肉耐力。虾青素的强抗氧化性可以降低脂质过氧化水平来改善脂质代谢,保证细胞内平衡及线粒体正常供能,降低血乳酸堆积,增进肌肉耐受力,提高运动过程中耐力水平,减少肌肉质量的降低,防止运动性疲劳的产生,对运动性肌肉损伤具有治疗作用,同时增强了运动能力(苏铁柱.虾青素的生理功能及其在运动中的应用.商洛学院学报,2014,28(02):87-91.)。
牛磺酸(Taurine)即2-氨基乙磺酸,含硫氨基酸,在人和动物胆汁中与胆酸以结合形式存在;而在脑、松果体、垂体、视网膜、等组织中,以游离形式大量存在,不参与蛋白质的合成。牛磺酸是人体的条件必需氨基酸,对胎儿、婴儿神经系统的发育有重要作用。牛磺酸也是调节机体正常生理活动的活性物质,具有消炎、镇痛、维持机体渗透压平衡、维持正常视觉功能、调节细胞钙平衡、降血糖、调节神经传导、参与内分泌活动、调节脂类消化与吸收、增加心脏收缩能力、提高机体免疫能力、增强细胞膜抗氧化能力、保护心肌细胞等广泛的生物学功能。我国于1990年开始允许牛磺酸作为营养食品添加剂加入乳制品、饮料和复合调味品中,允许加入量为30~40mg/kg。
牛磺酸可以减少运动损伤,延缓疲劳。通过抑制脂质过氧化、抑制运动过程中所产生的自由基以及对心肌细胞Ca2+的调节,从而对心肌细胞膜以及线粒体膜或脑细胞膜均有保护作用,促进细胞膜结构和功能的恢复延缓疲劳的出现。通过调节神经递质而使中枢神经系统保持良好的应激状态。牛磺酸还可以影响甲状腺素的分泌,从而使心肌免受运动应激性损伤。通过调节人体内支链氨基酸浓度来保持中枢兴奋状态, 延迟运动性疲劳的出现或减轻疲劳程度(柯杰兵.牛磺酸代谢及其抗疲劳机理.解放军体育学院学报,1999(03):3-5.)。
烟酰胺单核苷酸(NMN)是人体内固有的物质,也富含在一些水果和蔬菜中。NMN在人体细胞能量生成中扮演重要角色,在人体中NMN是烟酰胺腺嘌呤二核苷酸(NAD+)最直接的前体,参与细胞内NAD+的合成,其功能是多是通过NAD+体现的。在多种细胞代谢反应中,NAD+都扮演着重要角色,是细胞保持活力的重要支撑。
NAD+是脱氢酶的辅酶,它在糖酵解,糖异生,三羧酸循环和呼吸链中发挥着不可替代的作用。中间产物会将脱下的氢递给NAD+,使之成为NADH。而NADH则会作为氢的载体,在呼吸链中通过化学渗透偶联的方式,合成ATP。NAD+分子比较大,是NMN的两倍。口服的NAD+会被分解掉,而注射虽然可以进入血液循环,无法直接穿过细胞膜的,无法进入细胞内部,也就不能对人体产生效果。因此NMN还是最好的NAD+补充剂。
运动过程中往往容易产生大量损伤机体的自由基及代谢产物,出现运动性疲劳甚至运动性损伤等,影响正常运动或降低运动能力。中国饮料协会对运动饮料定义为“营养成分及其含量能适应运动或体力活动人群的生理特点,能为机体补充水分、电解质、能量和(或)有助于运动后机体恢复,可被迅速吸收的预包装液体制品”,目前市面上的商品其通常含有碳水化合物、矿物质、电解质、维生素和其他类营养物质,多为营养补充剂,少有机体修复剂。
发明内容
针对相关技术中的上述技术问题,本发明提出一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料及制作方法,能够克服现有技术的上述不足。
为实现上述技术目的,本发明的技术方案是这样实现的:
一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料,按每250mL含量计,包括虾青素8-12mg、烟酰胺单核苷酸8-10mg、牛磺酸50-125mg、维生素C 25-75mg、维生素B60.1-0.3mg、维生素B12 0.1-0.45mg、葡萄糖5-10g、香精适量、悬浮剂适量、氯化钠2.0g、氯化钾0.1g、碳酸氢钠0.09g、磷酸二氢钾0.02g、磷酸氢二钠0.04g。
根据本发明的另一方面,提供了所述运动饮料的制作方法,包括以下步骤:
S1取12mg虾青素,采用100mg包合性壁材进行包埋得到混合物,或者溶于适量有机溶剂中,无氧罐装至饮料瓶内的贮存室,充氮、密封,备用;

S3杀菌、灌装:将步骤S2处理后得到的料液,经温度125℃、时间5秒高温瞬时灭菌,然后进行无菌灌装至所述饮料瓶内,得到产品。
优选地,所述贮存室位于所述饮料瓶的瓶盖中。
优选地,步骤S3高温瞬时灭菌的温度为125℃。
优选地,步骤S3高温瞬时灭菌的时间为5秒。
优选地,包合性壁材选自以下一种或多种:环糊精及各类衍生物、改性淀粉衍生物、改性纤维素衍生物、壳聚糖酯化及其衍生物、酯化蛋白、酯化氨基酸、酯化多糖、酯化胶类物质、酯化海藻酸、酯化糊精。
优选地,所述有机溶剂选自砜类、醇类、酯类、酮类、醚类、烷类无毒或低毒溶剂,6号轻汽油、四氢呋喃、三氟代乙酸可混溶于前述溶剂的溶剂或助剂;其中砜类溶剂包括二甲基亚砜、二乙基亚砜、苄苯亚砜;醇类溶剂包括分子中含有跟烃基或苯环侧链上的碳结合的羟基的化合物,或烃分子中一个或几个氢被羟基取代而生成的一类有机化合物,其官能团为-OH,包括但不限于乙醇、苯甲醇、丙二醇、丙三醇、乙二醇、戊醇、己醇、正己醇、正丁醇、异丙醇、异丁醇、1-丁醇、1,2-丙二醇、二甘醇;酯类溶剂包括甲酸乙酯、乙酸乙酯等(甲~癸)酸(甲~癸)酯及其衍生物、乙二醇碳酸酯聚、氧乙烯 (20)山梨醇酐单月桂酸酯,聚氧乙烯(20)山梨醇酐单棕榈酸酯,聚氧乙烯(20)山梨醇酐单硬脂酸酯,聚氧乙烯(20)山梨醇酐单油酸酯;烷类溶剂包括丙烷、1,2-二氯乙烷、丁烷、戊烷、环戊烷;酮类溶剂包括丙酮、乙酰丙酮、丁酮、环己酮;醚类溶剂包括乙醚、石油醚、乙二醇一甲醚。
本发明的有益效果:本发明的含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料通过添加虾青素、牛磺酸、烟酰胺单核苷酸(NMN)及电解质,从而既能清除运动产生的自由基,缓解运动疲劳和酸痛,修复肌肉损伤,又能提供能量,补充电解质,增加机体耐力,是一款新颖的抗氧化、缓解体力疲劳的运动饮料。
具体实施方式
下面将对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员所获得的所有其他实施例,都属于本发明保护的范围。
实施例1
一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料,所含成分(250mL运动饮料)为:虾青素12mg,烟酰胺单核苷酸(NMN)10mg,牛磺酸125mg,维生素C 75mg,维生素B6 0.3mg,维生素B12 0.45mg,葡萄糖5g,香精适量,悬浮剂适量及电解质;电解质为:氯化钠2.0g,氯化钾 0.1g,碳酸氢钠0.09g,磷酸二氢钾0.02g,磷酸氢二钠0.04g。
所述运动饮料的制备方法为:
S1取虾青素12mg,采用羟丙基-β-环糊精100mg进行包埋得到混合物,无氧罐装至贮存室(如瓶盖中),充氮、密封,备用;
S2取去离子水200mL,依次加入烟酰胺单核苷酸(NMN)10mg,牛磺酸125mg,维生素C75mg,维生素B6 0.3mg,维生素B12 0.45mg,葡萄糖5g,氯化钠2.0g,氯化钾 0.1g,碳酸氢钠0.09g,磷酸二氢钾 0.02g,磷酸氢二钠 0.04g,香精0.6g,悬浮剂0.5g,充分搅拌至完全溶解水化,用去离子水定容至250mL;
S3杀菌、灌装:处理后的料液,经温度125℃、时间5秒高温瞬时灭菌,然后进行无菌灌装,得到产品。
实施例2
一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料,所含成分(250mL运动饮料)为:虾青素12mg,烟酰胺单核苷酸(NMN)10mg,牛磺酸125mg,维生素C 75mg,维生素B6 0.3mg,维生素B12 0.45mg,葡萄糖10g, 香精适量,悬浮剂适量及电解质;电解质为:氯化钠2.0g,氯化钾 0.1g,碳酸氢钠0.09g,磷酸二氢钾0.02g,磷酸氢二钠0.04g。
所述运动饮料的制备方法为:
S1 虾青素(净含12mg)微乳剂,溶于溶剂中,无氧罐装至贮存室(如瓶盖中),充氮、密封,备用;
S2 去离子水200mL,依次加入烟酰胺单核苷酸(NMN)10mg,牛磺酸125mg,维生素C75mg,维生素B6 0.3mg,维生素B12 0.45mg,葡萄糖10g,电解质(如下):氯化钠2.0g,氯化钾0.1g,碳酸氢钠0.09g,磷酸二氢钾 0.02g,磷酸氢二钠 0.04g,香精0.8g,悬浮剂1.2g,充分搅拌至完全溶解水化,用去离子水定容至250mL;
S3 杀菌、灌装:处理后的料液,经温度125℃、时间5秒高温瞬时灭菌,然后进行无菌灌装,得到产品。
由于虾青素的不稳定性,且因为电解质的缘故,必须将虾青素和其他溶液分开。具体操作为,将虾青素采用环糊精进行包被后溶于相关溶剂后,贮存在饮料瓶内特殊贮存室中(如盖子),使用时通过旋动盖子,压破贮存室,虾青素流入饮料中,混匀即可饮用。
实施例3
一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料,所含成分(250mL运动饮料)为:虾青素12mg,烟酰胺单核苷酸(NMN)10mg,牛磺酸125mg,维生素C 75mg,维生素B6 0.3mg,维生素B12 0.45mg,葡萄糖5g,香精适量,悬浮剂适量及电解质;电解质为:氯化钠2.0g,氯化钾 0.1g,碳酸氢钠0.09g,磷酸二氢钾0.02g,磷酸氢二钠0.04g。
所述运动饮料的制备方法为:
S1取虾青素12mg,采用适量乙酸乙酯溶解,罐装至贮存室(如瓶盖中),隔氧、避光密封,备用;
S2取去离子水200mL,依次加入烟酰胺单核苷酸(NMN)10mg,牛磺酸125mg,维生素C75mg,维生素B6 0.3mg,维生素B12 0.45mg,葡萄糖5g,氯化钠2.0g,氯化钾 0.1g,碳酸氢钠0.09g,磷酸二氢钾 0.02g,磷酸氢二钠 0.04g,香精0.6g,悬浮剂0.5g,充分搅拌至完全溶解水化,用去离子水定容至250mL;
S3杀菌、灌装:处理后的料液,经温度125℃、时间5秒高温瞬时灭菌,然后进行无菌灌装,得到产品。
使用时,储存室打开,将虾青素液倒入下层饮料,混合使用即可。
综上所述,借助于本发明的上述技术方案,通过添加虾青素、牛磺酸、烟酰胺单核苷酸(NMN)及电解质,从而既能清除运动产生的自由基,缓解运动疲劳和酸痛,修复肌肉损伤,又能提供能量,补充电解质,增加机体耐力,是一款新颖的抗氧化、缓解体力疲劳的运动饮料。

Claims (7)
1. 一种含虾青素、牛磺酸、烟酰胺单核苷酸及电解质的运动饮料,其特征在于,按每250mL含量计,包括虾青素8-12mg、烟酰胺单核苷酸8-10mg、牛磺酸50-125mg、维生素C 25-75mg、维生素B6 0.1-0.3mg、维生素B12 0.1-0.45mg、葡萄糖5-10g、香精适量、悬浮剂适量、氯化钠2.0g、氯化钾0.1g、碳酸氢钠0.09g、磷酸二氢钾0.02g、磷酸氢二钠0.04g。
2.一种如权利要求1所述的运动饮料的制作方法,其特征在于,包括以下步骤:
S1取12mg虾青素,采用100mg包合性壁材进行包埋得到混合物,或者溶于适量有机溶剂中,无氧罐装至饮料瓶内的贮存室,充氮、密封,备用;
S2取去离子水200 mL,依次加入烟酰胺单核苷酸8-10mg、牛磺酸50-125mg、维生素C25-75mg、维生素B6 0.1-0.3mg、维生素B12 0.1-0.45mg、葡萄糖5-10g、香精适量、悬浮剂适量、氯化钠2.0g、氯化钾0.1g、碳酸氢钠0.09g、磷酸二氢钾0.02g、磷酸氢二钠0.04g,香精适量,悬浮剂适量,充分搅拌至完全溶解水化,用去离子水定容至250mL;
S3杀菌、灌装:将步骤S2处理后得到的料液,经温度125℃、时间5秒高温瞬时灭菌,然后进行无菌灌装至所述饮料瓶内,得到产品。
3.根据权利要求2所述的运动饮料的制作方法,其特征在于,所述贮存室位于所述饮料瓶的瓶盖中。
4.根据权利要求2所述的运动饮料的制作方法,其特征在于,步骤S3高温瞬时灭菌的温度为125℃。
5.根据权利要求2所述的运动饮料的制作方法,其特征在于,步骤S3高温瞬时灭菌的时间为5秒。
6.根据权利要求2所述的运动饮料的制作方法,其特征在于,所述包合性壁材选自以下一种或多种:环糊精及其各类衍生物、改性淀粉衍生物、改性纤维素衍生物、壳聚糖酯化及其衍生物、酯化蛋白、酯化氨基酸、酯化多糖、酯化胶类物质、酯化海藻酸、酯化糊精。
7.根据权利要求2所述的运动饮料的制作方法,其特征在于,所述有机溶剂选自砜类、醇类、酯类、酮类、醚类、烷类无毒或低毒溶剂,6号轻汽油、四氢呋喃、三氟代乙酸可混溶于前述溶剂的溶剂或助剂;其中,砜类溶剂包括二甲基亚砜、二乙基亚砜、苄苯亚砜;醇类溶剂包括分子中含有跟烃基或苯环侧链上的碳结合的羟基的化合物,或烃分子中一个或几个氢被羟基取代而生成的一类有机化合物,其官能团为-OH,包括但不限于乙醇、苯甲醇、丙二醇、丙三醇、乙二醇、戊醇、己醇、正己醇、正丁醇、异丙醇、异丁醇、1-丁醇、1,2-丙二醇、二甘醇;酯类溶剂包括甲酸乙酯、乙酸乙酯及其衍生物、乙二醇碳酸酯聚、氧乙烯(20)山梨醇酐单月桂酸酯、聚氧乙烯(20)山梨醇酐单棕榈酸酯、聚氧乙烯(20)山梨醇酐单硬脂酸酯、聚氧乙烯(20)山梨醇酐单油酸酯;烷类溶剂包括丙烷、1,2-二氯乙烷、丁烷、戊烷、环戊烷;酮类溶剂包括丙酮、乙酰丙酮、丁酮、环己酮;醚类溶剂包括乙醚、石油醚、乙二醇一甲醚。
