背景技术
羊奶被视为乳品中的精品,富含蛋白质、脂肪、矿物质及多种维生素,不仅具有很高的营养价值,而且不容易引发过敏,其乳清蛋白含量高,有利于吸收,比牛奶更适合食用。目前市场上的配方奶粉主要为婴幼儿配方牛奶粉和婴幼儿配方羊奶粉,婴幼儿配方牛奶粉的数量比婴幼儿配方羊奶粉多,且绝大部分婴幼儿配方羊奶粉的配方为同时添加牛乳蛋白和羊乳蛋白。此类配方牛乳蛋白和羊乳蛋白混杂,且目前市场上的绝大部分婴幼儿配方奶粉的溯源系统功能单一。并没有针对3岁以上的儿童食用的配方羊奶粉。目前市面上仅有的几种针对儿童的羊奶粉,成分较为单一,并不能很好的促进儿童的智力和骨骼发育。
发明内容
为了解决现有技术存在的上述问题,本发明目的在于提供一种有利于儿童身高和智力发育的羊奶粉。
本发明所采用的技术方案为:
一种有利于儿童身高和智力发育的羊奶粉,原料包括以重量份计的全脂羊奶粉150-200份、脱脂乳粉300-400份、高油乳清粉200-300份、固体玉米糖浆100-170份、低聚异麦芽糖50-80份、乳清蛋白粉2-10份、复配营养强化剂3-7份、二十二碳六烯酸油脂粉0.5-3份、花生四烯酸油脂粉0.5-3份、水解蛋黄粉0.5-3份、乳矿物盐7-15份和乳铁蛋白0.05-0.2份。所述水解蛋黄粉由蛋黄经酶水解得到。
水解蛋黄粉是提取自鸡蛋黄的一种的功能性物质,鸡蛋黄中含有促进骨骼成长的成分,水解蛋黄粉是以鸡蛋蛋黄为原料,经蛋白酶处理、加热、离心分离、喷雾干燥等步骤生产而成,易与牛奶融合。水解蛋黄粉可以增加成骨细胞数量并促进骨骼和牙齿的生成;激活骨骼自身的原动力、促进骨骼的伸长;促进骨骼的钙质沉结,强化骨骼的韧性;抑制破骨细胞的生长,维持骨骼成分的平衡。水解蛋黄粉通过刺激骨芽细胞,促进骨骼增长因子(IGF1、TGFβ1)的产生,其结果就是促进骨骼的成长。水解蛋黄粉通过抑制破骨细胞的细胞分裂因子的分泌(如:IL-1、IL-6、TNFα),维持骨骼成分的平衡。水解蛋黄粉能够促进钙的吸收,同时抑制钙的过度流失,从而促进骨骼的成长和健康。
乳矿物盐是指以乳清为原料,经去除蛋白质、乳糖等成分牛奶碱性蛋白而制成的利于人体吸收的营养补充剂,但婴幼儿食品禁止添加.复合维生素等均属于乳矿物盐。乳矿物盐具有钙强化功能,不仅可增加骨密度,而且在补充乳钙几年后,骨密度仍然持续增长。
乳铁蛋白是乳汁中一种重要的非血红素铁结合糖蛋白,中性粒细胞颗粒中具有杀菌活性的单体糖蛋白。乳铁蛋白及其蛋白降解产物—乳铁蛋白肽具有广泛的生物学活性,包括广谱抗菌作用、消炎、抑制肿瘤细胞生长及调节机体免疫反应等。乳铁蛋白通过促进胃肠道,特别是黏膜免疫系统的正常发育,在机体免疫防疫系统方面起着重要作用,奶粉中添加了乳铁蛋白更接近母乳,从而强化这些免疫因子能增加其免疫功能。
高油乳清粉即配方奶粉基粉,是尚未添加非牛奶营养素、或已添加部分营养素但后续还需继续添加其他成分的半成品奶粉。目前用于生产奶粉的高油乳清粉,通常只含有普通植物油,例如葵花籽油、大豆油、玉米油等。
二十二碳六烯酸即DHA,是大脑皮质、中枢神经系统和视网膜的重要构成成分。DHA在体内水平的高低会直接影响脑细胞的增殖、神经传导、突触的生长和发育。DHA和EPA具有较好的抗氧化作用且能有效地降低精神疾病的发病率。DHA通过减少ZNT3的表达和锌离子的吸收来减少神经细胞的死亡,通过减弱细胞内锌离子的剂量水平抑制细胞的凋亡并达到神经保护作用。
花生四烯酸即ARA,属Omega6族长链多元不饱和脂肪酸。在幼儿时期ARA属于必需脂肪酸,ARA的缺乏对于人体组织器官的发育,尤其是大脑和神经系统发育可能产生严重不良影响。

动物双歧杆菌(Bifidobacterium),是人和许多哺乳动物肠道中的优势菌之一。在微生态学上属于菌群。对乳儿的营养和预防肠道疾病具有重要作用。该菌是人和动物肠道中重要的生理性细菌。参与免疫、营养、消化和保护等一系列的生理过程,发挥着重要的功能。
动物双歧杆菌在人体肠道内能够合成维生素B1、B2、B6和K等,由人体缓慢地吸收,B族维生素的生成量可达120.3μg/ml.双歧杆菌。双歧杆菌可以合成丙氨酸、天冬氨酸和苏氨酸等人体必需的营养物质,使人体通过合理的膳食即可摄取足量的多种营养,对于人体具有不容忽视的营养作用,尤其对加强孕产妇、哺乳妇女、儿童、老年人的营养有重要的意义。动物双歧杆菌可分泌多种酶类,促进食品的降解与吸收。动物双歧杆菌维持肠道酸性环境有利于Ca\Fe和维生素D的吸收,有助于防止缺铁性贫血和软骨病。动物双歧杆菌发酵乳糖产生半乳糖,是构成脑神经系统中脑脊脂的成分,与婴儿出生后脑的讯速生长有密切关系。可提高“乳糖不耐症”患者对乳制品的利用率。动物双歧杆菌还具有抑制腐败菌生长、抗癌、保护肝脏、调理胃肠功能、降低胆固醇等作用。

本发明的羊奶粉的制备方法,包括如下步骤:
S1.备料:根据生产需要准备所需物料;
S2.除尘、杀菌、脱包:去除包装表面灰尘并进行杀菌、脱去外包装;
S3.配料:按照产品配方称量所需物料;
S4.预混:将原料加入到混合机充分混合;
S5.灭菌:对混合后的原料进行高温灭菌;
S6.浓缩:对灭菌后的原料进行真空浓缩后进入干燥塔喷雾干燥,得到羊奶粉;
S7.包装:将羊奶粉冷却后分装,得到成品羊奶粉。
本发明的羊奶粉的使用方法:将所述羊奶粉用50摄氏度左右的温开水进行冲调,搅拌至羊奶粉完全溶解后食用。所述羊奶粉与温开水的重量比为1:6。
本发明的有益效果为:
本发明的羊奶粉适用于3-15岁的儿童食用,所述羊奶粉配方中添加了水解蛋黄粉和乳矿物盐,可激活骨骼自身原动力,促进骨骼生长。同时在配方中添加二十二碳六烯酸油脂粉和花生四烯酸油脂粉,可促进儿童智力发育。

本实施例的羊奶粉的制备方法,包括如下步骤:
S1.备料:根据生产需要准备所需物料;
S2.除尘、杀菌、脱包:去除包装表面灰尘并进行杀菌、脱去外包装;
S3.配料:按照产品配方称量所需物料;
S4.预混:将原料加入到混合机充分混合;
S5.灭菌:对混合后的原料进行高温灭菌;
S6.浓缩:对灭菌后的原料进行真空浓缩后进入干燥塔喷雾干燥,得到羊奶粉;
S7.包装:将羊奶粉冷却后分装,得到成品羊奶粉。
本实施例的羊奶粉的使用方法:将所述羊奶粉用50摄氏度左右的温开水进行冲调,搅拌至羊奶粉完全溶解后食用。所述羊奶粉与温开水的重量比为1:6。

S1.备料:根据生产需要准备所需物料;

本实施例的羊奶粉的制备方法,包括如下步骤:
S1.备料:根据生产需要准备所需物料;
S2.除尘、杀菌、脱包:去除包装表面灰尘并进行杀菌、脱去外包装;
S3.配料:按照产品配方称量所需物料;
S4.预混:将原料加入到混合机充分混合;

本实施例是在上述实施例3的基础上进行优化的限定,本实施例提供一种有利于儿童身高和智力发育的羊奶粉,其中,复配营养强化剂包括维生素和矿物质,所述维生素和矿物质的重量比为1:1。
所述乳清蛋白粉包括以重量份计的水解型乳清蛋白粉2份、含α-乳白蛋白的乳清蛋白粉2份和含脂肪球膜蛋白的乳清蛋白粉2份。所述高油乳清粉原料包括脱盐乳清、植物油和磷脂。所述动物双歧杆菌为动物双歧杆菌Bb-12。所述矿物质包括焦磷酸铁、氧化锌、硫酸铜、亚硒酸钠和硫酸锰;所述维生素包括醋酸视黄酯、胆钙化醇、dl-α-醋酸生育酚、植物甲萘醌、盐酸硫胺素、核黄素、盐酸吡多醇、清钴胺、L-抗坏血酸钠、烟酰胺、叶酸、D-维生素和D-泛酸钙。所述二十二碳六烯酸油脂粉中二十二碳六烯酸的含量为7%,所述花生四烯酸油脂粉中花生四烯酸的含量为10%。
本实施例的羊奶粉的制备方法,包括如下步骤:
S1.备料:根据生产需要准备所需物料;
S2.除尘、杀菌、脱包:去除包装表面灰尘并进行杀菌、脱去外包装;
S3.配料:按照产品配方称量所需物料;
S4.预混:将原料加入到混合机充分混合;
S5.灭菌:对混合后的原料进行高温灭菌;
S6.浓缩:对灭菌后的原料进行真空浓缩后进入干燥塔喷雾干燥,得到羊奶粉;
S7.包装:将羊奶粉冷却后分装,得到成品羊奶粉。
本实施例的羊奶粉的使用方法:将所述羊奶粉用50摄氏度左右的温开水进行冲调,搅拌至羊奶粉完全溶解后食用。所述羊奶粉与温开水的重量比为1:6。
对上述实施例6所制得的羊奶粉进行营养成分检测,检测结果如表1所示:

表中,NRV表示营养素参考值。营养标签中营养成分标示应当以每100克(毫升)和/或每份食品中的含量数值标示,并同时标示所含营养成分占营养素参考值(NRV)的百分比。从表1中可以看出,本发明实施6的羊奶粉具有丰富的营养的物质,最基本的钙含量也是符合国家3倍高钙标准。同时含有DHA、ARA,促进儿童智力发育,有利于儿童的成长发育。需要说明的是,本发明的羊奶粉不适用于3岁以下的婴幼儿食用。
本发明不局限于上述可选的实施方式,任何人在本发明的启示下都可得出其他各种形式的产品。上述具体实施方式不应理解成对本发明的保护范围的限制,本发明的保护范围应当以权利要求书中界定的为准,并且说明书可以用于解释权利要求书。
Claims (10)
1.一种有利于儿童身高和智力发育的羊奶粉,其特征在于:原料包括以重量份计的全脂羊奶粉150-200份、脱脂乳粉300-400份、高油乳清粉200-300份、固体玉米糖浆100-170份、低聚异麦芽糖50-80份、乳清蛋白粉2-10份、复配营养强化剂3-7份、二十二碳六烯酸油脂粉0.5-3份、花生四烯酸油脂粉0.5-3份、水解蛋黄粉0.5-3份、乳矿物盐7-15份和乳铁蛋白0.05-0.2份。
2.根据权利要求1所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:还包括以重量份计的动物双歧杆菌0.1-0.5份。
3.根据权利要求2所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:原料包括以重量份计的全脂羊奶粉170份、脱脂乳粉350份、高油乳清粉250份、固体玉米糖浆140份、低聚异麦芽糖65份、乳清蛋白粉6份、复配营养强化剂6份、二十二碳六烯酸油脂粉1.5份、花生四烯酸油脂粉1.5份、水解蛋黄粉1份、乳矿物盐9份、动物双歧杆菌0.25份和乳铁蛋白0.1份。
4.根据权利要求1-3任一项所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述复配营养强化剂包括维生素和矿物质,所述维生素和矿物质的重量比为1:1。
5.根据权利要求1-3任一项所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述二十二碳六烯酸油脂粉中二十二碳六烯酸的含量为7%,所述花生四烯酸油脂粉中花生四烯酸的含量为10%。
6.根据权利要求1-3任一项所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述乳清蛋白粉包括以重量份计的水解型乳清蛋白粉1-3份、含α-乳白蛋白的乳清蛋白粉1-3份和含脂肪球膜蛋白的乳清蛋白粉1-3份。
7.根据权利要求6所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述乳清蛋白粉包括以重量份计的水解型乳清蛋白粉2份、含α-乳白蛋白的乳清蛋白粉2份和含脂肪球膜蛋白的乳清蛋白粉2份。
8.根据权利要求1-3任一项所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述高油乳清粉原料包括脱盐乳清、植物油和磷脂。
9.根据权利要求4所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述矿物质包括焦磷酸铁、氧化锌、硫酸铜、亚硒酸钠和硫酸锰;所述维生素包括醋酸视黄酯、胆钙化醇、dl-α-醋酸生育酚、植物甲萘醌、盐酸硫胺素、核黄素、盐酸吡多醇、清钴胺、L-抗坏血酸钠、烟酰胺、叶酸、D-维生素和D-泛酸钙。
10.根据权利要求2所述的一种有利于儿童身高和智力发育的羊奶粉,其特征在于:所述动物双歧杆菌为动物双歧杆菌Bb-12。
