Abstract

Background

The invention aims to overcome the defects of the prior art and provide a combined fermentation container for solid state brewing as well as a use method and application thereof, so as to reduce labor intensity, control temperature and improve the quality of brewed products.
The aim of the invention is realized by the following technical scheme: the combined fermentation container for solid brewing comprises a plurality of box bodies which are vertically arranged in sequence, wherein the top of each box body is provided with an opening, the outer walls of the periphery of each box body are provided with temperature control devices, and adjacent box bodies are connected through sealing fixing pieces; the temperature control device can be set as temperature control equipment or heat preservation equipment for adjusting temperature, and can be specifically determined according to the fermentation condition of the solid brewing product. The volume of the box body is determined according to the requirements of the front and back process links.

Further, the temperature control device comprises a heat insulation plate and a temperature control interlayer, and the temperature control interlayer is embedded between the heat insulation plate and the inner wall of the box body. Further, the combined fermentation vessel for solid state brewing can be used for preparing white spirit, soy sauce and vinegar.
The beneficial effects of the invention are as follows:
1. the combined fermentation container is convenient for mechanically transferring the fermentation container singly or integrally to the next process, so that the high-intensity labor of manually discharging and entering a cellar at present is reduced;

4. according to the invention, a temperature control interlayer (heat insulation material, refrigerant, heating medium and the like) can be additionally arranged in each heat insulation plate as required, and compared with the traditional non-controllable temperature fermentation of a pit (ground cylinder), the fermentation efficiency can be improved.

The tests are respectively carried out according to the method, and after the pit is distilled, the efficiency of manual pit discharging and the quality of the obtained brewed product are respectively carried out sensory evaluation measurement, meanwhile, the occupied area required by the unit fermentation volume is calculated, and under the condition of stacking 4 boxes, the results are shown in the following table:
the table shows that the combined fermentation container subtracts the labor intensity of manually discharging and entering the cellar at present and improves the working efficiency; the number of superimposed layers does not affect fermentation, and the occupied area of unit fermentation volume can be reduced, so that the building cost of a factory building is reduced.
