本发明涉及食品加工技术领域,具体涉及一种添加水解蛋白的婴幼儿配方食物及其制备方法。
背景技术
婴幼儿辅食是根据婴幼儿生长发育的营养需要,以谷物或牛乳等为主要原料的食品,但未经处理的牛乳和谷物中含有部分蛋白过敏源,容易使婴幼儿出现呕吐、腹泻、咳嗽、皮疹、水肿等牛奶蛋白过敏症状。婴幼儿6-36个月期间,是逐步调整婴幼儿膳食的时期,其膳食应逐渐自液状食品向带颗粒的半固态食品(如婴幼儿米糊、蛋白糊等食品)逐渐转化,以锻炼婴幼儿咀嚼能力、激活消化道酶的分泌能力,提升婴幼儿对各类食品的消化能力。目前,婴幼儿配方食物会通过添加谷物、乳原料、脂肪粉等来尽可能迎合婴幼儿生长发育期间对营养物质的需要,并通过添加维生素、矿物质等提高婴幼儿配方食物的质量。虽然现有的婴幼儿配方会将致敏原大分子蛋白质水解成小分子肽和氨基酸,以缓解过敏症状,但大分子蛋白质水解质量较低,制得的婴幼儿辅食容易产生沉淀、口感较差。
发明内容
本发明的目的之一在于提供一种添加水解蛋白的婴幼儿配方食物,通过提供水解程度更高的蛋白质水解物、丰富配方食物中的营养物质,满足婴幼儿在成长发育过程中各种营养物质的需求,避免出现口感较差、营养不均衡的情况。
为实现上述目的,本发明采用以下技术手段加以实施:
一种添加水解蛋白的婴幼儿配方食物,由下述重量百分比的原料制成:水解蛋白:15-31%;植物脂肪:10-30%;固体玉米糖浆:15-30%;酶解谷粉:20-30%;DHA藻油:0.5-1.0%;花生四烯酸油脂:0.5-1.0%;复合维生素:0.2-1.5%;复合矿物质:0.5-3.5%;复合酶:0.3-1.2%;乳化剂:0.1-0.5%。
优选的,适用于6-12个月的婴儿配方食物,按重量份计包括以下原料:水解蛋白205份;植物脂肪230份;固体玉米糖浆158份;酶解谷物245份; DHA藻油5.3份;花生四烯酸油脂8.5份;复合维生素2.3份;复合矿物质5.6份;复合酶3.5份;乳化剂3份。

为实现上述目的,本发明采用以下技术手段加以实施:
制备上述添加水解蛋白的婴幼儿配方食物的方法,包括以下步骤:
步骤一:将水解蛋白加入软水中,维持温度40-65℃,在2000-3500r/min的转速下充分搅拌10min,以配制成水解蛋白浓度为50-60%的蛋白溶液;
步骤二:将所述蛋白溶液的温度维持在50-55℃,加入复合酶,以获取酶解液;
步骤三:对所述酶解液进行超滤处理,滤液经反渗透浓缩、喷雾干燥后得到第一物料;
步骤四:在所述植物脂肪加入乳化剂,乳化、均质、喷雾干燥后得到第二物料;
步骤五:按各组分质量百分比称取固体玉米糖浆、酶解谷粉、DHA藻油、花生四烯酸油脂、复合维生素、复合矿物质,混合均匀后进行杀菌处理,以获取第三物料;
步骤六:将所述第一物料、第二物料、第三物料混合,采用氮气进行无菌罐装,以获取所述添加水解蛋白的婴幼儿配方食物的罐装成品。
优选的,所述步骤三的超滤处理具体包括以下步骤,采用截留分子量为5000-8000道尔顿的超滤膜进行一级超滤;采用截留分子量为3000-4000道尔顿的超滤膜进行二级超滤;控制温度在85-100℃,对二级超滤得到的滤液进行灭酶处理5-10min后室温冷却,并采用截留分子量为1000-2000道尔顿的超滤膜进行三级超滤。
优选的,所述步骤五中的杀菌采用紫外灯进行杀菌处理8-15min。

2.本发明提供的添加水解蛋白的婴幼儿配方食物中,通过提供酶解谷物,减少婴幼儿对谷物中过敏性蛋白的摄入,用酶解谷物替换谷物浆液,改善口感,使产品口感更细腻,通过加入软水,减少配方食物中的杂质,提升产品品质;
3.本发明提供的添加水解蛋白的婴幼儿配方食物的制备方法,通过杀菌处理及无菌包装,便于储存运输。

较佳地,一种添加水解蛋白的婴幼儿配方食物,按重量份计包括以下原料:水解蛋白160-210份;植物脂肪200-250份;固体玉米糖浆150-180份;酶解谷粉200-280份;DHA藻油5-6份;花生四烯酸油脂7-9份;复合维生素2-4份;复合矿物质5-9份;复合酶3-5份;乳化剂1-3份。
制备该添加水解蛋白的婴幼儿配方食物的方法包括以下步骤:
步骤一:将水解蛋白加入软水中,维持温度40-65℃,在2000-3500r/min的转速下充分搅拌10min,以配制成水解蛋白浓度为50-60%的蛋白溶液,具体可将水解蛋白加入65-70℃的软水中,通过加热保温装置维持温度在40-65℃进行充分搅拌,或是直接把水解蛋白加入常温状态的软水中,通过加热保温装置将搅拌温度控制在40-65℃。
步骤二:将所述蛋白溶液的温度控制在50-55℃,按比例加入复合酶,进行酶解,以获取酶解液,具体可将复合酶混合在软水中,并把混有复合酶的水分多次逐渐加入蛋白溶液中,均匀搅拌后,静置酶解,控制酶解温度在60-70℃,酶解时间为0.8-1.5h。
步骤三:将温度冷却至50-60℃后,对所述酶解液进行超滤处理,滤液经反渗透浓缩、喷雾干燥后得到第一物料,具体采用截留分子量为5000-8000道尔顿的超滤膜对所述酶解液进行一级超滤;采用截留分子量为3000-4000道尔顿的超滤膜对一级超滤得到的滤液进行二级超滤,收集滤液;控制温度在85-100℃,对二级超滤得到的滤液进行灭酶处理5-10min后,室温冷却,再采用截留分子量为1000-2000道尔顿的超滤膜对灭酶处理后的滤液进行三级超滤,收集三级超滤后得到的滤液。滤液经反渗透浓缩,得到浓缩液,对浓缩液进行喷雾干燥后,得到第一物料,此处控制喷雾干燥的进风温度为180-200℃,排风温度为80-90℃。
步骤四:在所述植物脂肪加入乳化剂,乳化、均质、喷雾干燥后得到第二物料。
具体可将植物脂肪各组分按比例混合,搅拌均匀,将乳化剂混入50℃的软水中,再把混有乳化剂的软水加入植物脂肪中,控制温度在75℃,持续搅拌15-25min后,进行均质处理,控制均质压力在20-25Mpa,再进行喷雾干燥后得到第二物料,此处控制喷雾干燥的进风温度为180-200℃,排风温度为80-90℃。
步骤五:按各组分质量百分比称取固体玉米糖浆、酶解谷粉、DHA藻油、花生四烯酸油脂、复合维生素、复合矿物质,混合均匀后,进行喷雾干燥,再采用紫外灯进行杀菌处理8-15min,以获取第三物料。
此处步骤四、步骤五和步骤一至三可同步进行。
步骤六:将所述第一物料、第二物料、第三物料混合,采用氮气进行无菌罐装,以获取所述添加水解蛋白的婴幼儿配方食物的罐装成品。
实施例一:
一种添加水解蛋白的婴幼儿配方食物,适用于6-12个月的婴儿配方食物,按重量份计包括以下原料:水解蛋白205份;植物脂肪230份;固体玉米糖浆158份;酶解谷物245份; DHA藻油5.3份;花生四烯酸油脂8.5份;复合维生素2.3份;复合矿物质5.6份;复合酶3.5份;乳化剂3份。所述复合维生素由2.25%的维生素A、0.27%的维生素B1、0.364%的维生素B2、0.35%的维生素B6、0.00028%的维生素B12、62%的维生素C、0.02%的维生素D、10.5%的维生素E、0.00022%的维生素H、0.0027%的烟酸、0.0002%的叶酸、0.0026%的泛酸、15%的酒石酸氢胆碱、9%的肌醇、0.24%的维生素K1组成。
制备该添加水解蛋白的婴幼儿配方食物的方法包括以下步骤:
步骤一:将水解蛋白加入软水中,维持温度50℃,在3000-3500r/min的转速下充分搅拌10min,以配制成水解蛋白浓度为60%的蛋白溶液,具体可将水解蛋白加入65℃的软水中,通过加热保温装置维持温度在55℃进行充分搅拌,或是直接把水解蛋白加入常温状态的软水中,通过加热保温装置将搅拌温度控制在55℃。
步骤二:将所述蛋白溶液的温度控制在50-55℃,按比例加入复合酶,进行酶解,以获取酶解液,具体可将复合酶混合在软水中,并把混有复合酶的水分多次逐渐加入蛋白溶液中,均匀搅拌后,静置酶解,控制酶解温度在70℃,酶解时间为1h。
步骤三:将温度冷却至60℃后,对所述酶解液进行超滤处理,滤液经反渗透浓缩、喷雾干燥后得到第一物料,具体采用截留分子量为5000-8000道尔顿的超滤膜对所述酶解液进行一级超滤;采用截留分子量为3000-4000道尔顿的超滤膜对一级超滤得到的滤液进行二级超滤,收集滤液;控制温度在85-100℃,对二级超滤得到的滤液进行灭酶处理5-10min后,室温冷却,再采用截留分子量为1000-2000道尔顿的超滤膜对灭酶处理后的滤液进行三级超滤,收集滤液。滤液经反渗透浓缩,得到浓缩液,对浓缩液进行喷雾干燥后,得到第一物料,此处控制喷雾干燥的进风温度为195℃,排风温度为85℃。
步骤四:在所述植物脂肪加入乳化剂,乳化、均质、喷雾干燥后得到第二物料。
具体可将植物脂肪各组分按比例混合,搅拌均匀,将乳化剂混入50℃的软水中,再把混有乳化剂的软水加入植物脂肪中,控制温度在75℃,持续搅拌20min后,进行均质处理,控制均质压力在20Mpa,再进行喷雾干燥后得到第二物料,此处控制喷雾干燥的进风温度为185℃,排风温度为80℃。
步骤五:按各组分质量百分比称取固体玉米糖浆、酶解谷粉、DHA藻油、花生四烯酸油脂、复合维生素、复合矿物质,混合均匀后,进行喷雾干燥,再采用紫外灯进行杀菌处理10min,以获取第三物料。
此处步骤四、步骤五和步骤一至三可同步进行。
步骤六:将所述第一物料、第二物料、第三物料混合,采用氮气进行无菌罐装,以获取所述添加水解蛋白的婴幼儿配方食物的罐装成品。
实施例二:
一种添加水解蛋白的婴幼儿配方食物,适用于1-3周岁的幼儿配方食物,按重量份计包括以下原料:水解蛋白190份;植物脂肪215份;固体玉米糖浆173份;酶解谷物260份;DHA藻油5.1份;花生四烯酸油脂7.6份;复合维生素3.6份;复合矿物质8.2份;复合酶4.6份;乳化剂2.5份。所述复合维生素由2.21%的维生素A、0.26%的维生素B1、0.384%的维生素B2、0.33%的维生素B6、0.00028%的维生素B12、62.6%的维生素C、0.02%的维生素D、9.82%的维生素E、0.00022%的维生素H、0.0026%的烟酸、0.0002%的叶酸、0.0027%的泛酸、14.5%的酒石酸氢胆碱、9.6%的肌醇、0.27%的维生素K1组成。
制备该添加水解蛋白的婴幼儿配方食物的方法包括以下步骤:
步骤一:将水解蛋白加入软水中,维持温度50℃,在2700-3200r/min的转速下充分搅拌10min,以配制成水解蛋白浓度为55%的蛋白溶液,具体可将水解蛋白加入70℃的软水中,通过加热保温装置维持温度在60℃进行充分搅拌,或是直接把水解蛋白加入常温状态的软水中,通过加热保温装置将搅拌温度控制在60℃。
步骤二:将所述蛋白溶液的温度控制在50-55℃,按比例加入复合酶,进行酶解,以获取酶解液,具体可将复合酶混合在软水中,并把混有复合酶的水分多次逐渐加入蛋白溶液中,均匀搅拌后,静置酶解,控制酶解温度在65℃,酶解时间为0.8h。
步骤三:将温度冷却至55℃后,对所述酶解液进行超滤处理,滤液经反渗透浓缩、喷雾干燥后得到第一物料,具体采用截留分子量为5000-8000道尔顿的超滤膜对所述酶解液进行一级超滤;采用截留分子量为3000-4000道尔顿的超滤膜对一级超滤得到的滤液进行二级超滤,收集滤液;控制温度在85-100℃,对二级超滤得到的滤液进行灭酶处理5-10min后,室温冷却,再采用截留分子量为1000-2000道尔顿的超滤膜对灭酶处理后的滤液进行三级超滤,收集滤液。滤液经反渗透浓缩,得到浓缩液,对浓缩液进行喷雾干燥后,得到第一物料,此处控制喷雾干燥的进风温度为180-200℃,排风温度为80-90℃。
步骤四:将所述植物脂肪加入乳化剂,乳化、均质、喷雾干燥后得到第二物料。
具体可将植物脂肪各组分按比例混合,搅拌均匀,将乳化剂混入50℃的软水中,再把混有乳化剂的软水加入植物脂肪中,控制温度在75℃,持续搅拌15-25min后,进行均质处理,控制均质压力在20-25Mpa,再进行喷雾干燥后得到第二物料,此处控制喷雾干燥的进风温度为190℃,排风温度为85℃。
步骤五:按各组分质量百分比称取固体玉米糖浆、酶解谷粉、DHA藻油、花生四烯酸油脂、复合维生素、复合矿物质,混合均匀后,进行喷雾干燥,再采用紫外灯进行杀菌处理8min,以获取第三物料。
此处步骤四、步骤五和步骤一至三可同步进行。
步骤六:将所述第一物料、第二物料、第三物料混合,采用氮气进行无菌罐装,以获取所述添加水解蛋白的婴幼儿配方食物的罐装成品。
以上所述,仅为本发明较佳的具体实施方式,但本发明的保护范围并不局限于此,任何熟悉本技术领域的技术人员在本发明揭露的技术范围内,可轻易想到的变化或替换,都应涵盖在本发明的保护范围之内。因此,本发明的保护范围应该以权利要求的保护范围为准。
Claims (10)
1.一种添加水解蛋白的婴幼儿配方食物,其特征在于,由下述重量百分比的原料制成:
水解蛋白:15-31%;
植物脂肪:10-30%;
固体玉米糖浆:15-30%;
酶解谷粉:20-30%;
DHA藻油:0.5-1.0%;
花生四烯酸油脂:0.5-1.0%;
复合维生素:0.2-1.5%;
复合矿物质:0.5-3.5%;
复合酶:0.3-1.2%;
乳化剂:0.1-0.5%。
2.根据权利要求1所述的添加水解蛋白的婴幼儿配方食物,其特征在于,适用于6-12个月的婴儿配方食物,按重量份计包括以下原料:水解蛋白205份;植物脂肪230份;固体玉米糖浆158份;酶解谷物245份; DHA藻油5.3份;花生四烯酸油脂8.5份;复合维生素2.3份;复合矿物质5.6份;复合酶3.5份;乳化剂3份。
3.根据权利要求1所述的添加水解蛋白的婴幼儿配方食物,其特征在于,适用于1-3周岁的幼儿配方食物,按重量份计包括以下原料:水解蛋白190份;植物脂肪215份;固体玉米糖浆173份;酶解谷物260份;DHA藻油5.1份;花生四烯酸油脂7.6份;复合维生素3.6份;复合矿物质8.2份;复合酶4.6份;乳化剂2.5份。
4.根据权利要求1-3中任一项所述的添加水解蛋白的婴幼儿配方食物,其特征在于,所述复合维生素由1.2-3.2%维生素A、0.25-0.43%维生素B1、0.26-0.45%维生素B2、0.27-0.41%维生素B6、0.00021-0.00041%维生素B12、57-72%维生素C、0.015-0.021%维生素D、9-11%维生素E、0.00017-0.00028%维生素H、0.0025-0.0033%烟酸、0.00017-0.00032%叶酸、0.0025-0.0032%泛酸、11-18%酒石酸氢胆碱、7-15%肌醇、0.23-0.33%维生素K1组成。
5.根据权利要求1-3中任一项所述的添加水解蛋白的婴幼儿配方食物,其特征在于,所述复合矿物质中钙元素:锌元素:铁元素:铜元素:锰元素按350:8.7:12:1:0.28的比例混合而成。
6.根据权利要求1-3中任一项所述的添加水解蛋白的婴幼儿配方食物,其特征在于,所述植物脂肪由玉米油、椰子油、核桃油、棕榈油按90:35:42:85的比例混合而成。
7.根据权利要求1-3中任一项所述的添加水解蛋白的婴幼儿配方食物,其特征在于,所述复合酶由胰蛋白酶:木瓜蛋白酶:米曲霉乳糖酶:巴斯德毕赤酵母乳糖酶按30:300:18:10的比例混合而成。
8.制备如权利要求1所述添加水解蛋白的婴幼儿配方食物的方法,其特征在于,包括以下步骤:
步骤一:将水解蛋白加入软水中,维持温度40-65℃,在2000-3500r/min的转速下充分搅拌10min,以配制成水解蛋白浓度为50-60%的蛋白溶液;
步骤二:将所述蛋白溶液的温度维持在50-55℃,加入复合酶,以获取酶解液;
步骤三:对所述酶解液进行超滤处理,滤液经反渗透浓缩、喷雾干燥后得到第一物料;
步骤四:在所述植物脂肪加入乳化剂,乳化、均质、喷雾干燥后得到第二物料;
步骤五:按各组分质量百分比称取固体玉米糖浆、酶解谷粉、DHA藻油、花生四烯酸油脂、复合维生素、复合矿物质,混合均匀后进行杀菌处理,以获取第三物料;
步骤六:将所述第一物料、第二物料、第三物料混合,采用氮气进行无菌罐装,以获取所述添加水解蛋白的婴幼儿配方食物的罐装成品。
9.根据权利要求8所述的方法,其特征在于,所述步骤三的超滤处理具体包括以下步骤,采用截留分子量为5000-8000道尔顿的超滤膜进行一级超滤;采用截留分子量为3000-4000道尔顿的超滤膜进行二级超滤;控制温度在85-100℃,对二级超滤得到的滤液进行灭酶处理5-10min后室温冷却,并采用截留分子量为1000-2000道尔顿的超滤膜进行三级超滤。
10.根据权利要求8所述的方法,其特征在于,所述步骤五中的杀菌采用紫外灯进行杀菌处理8-15min。
