(2)将步骤(1)得到的固体残渣干燥后,加入相当于固体残渣重量8-10倍的体积浓度为85-90%的乙醇水溶液,在30-40℃条件下提取30-40min,浓缩去除乙醇,得到浓缩浸膏;
(3)将步骤(1)得到的精油和步骤(2)得到的浓缩浸膏混合均匀,即得。

本发明的有益效果:
本发明的原料中,降龙涎醚具有龙涎干香香气,并有松木、柏木样的木香,以及青香和茶叶香韵;二氢茉莉酮酸甲酯呈绿茶、茉莉似香气,其化学性能较稳定,能使香精产生幽雅、逼真的天然香感;叶醇呈嫩叶碾碎时独有的新鲜叶青香,具有清新的清香香气;佛手柑油具有天然的香柠檬香味,能增强香精的绿茶天然感;绿茶提取物是由绿茶干叶经水蒸气馏法萃取结合乙醇浸提精制而得,能够与其他香料融合,产生更为天然、逼真的绿茶香气,提高绿茶香精的香气品质。本发明通过对绿茶提取物的原料绿茶干叶进行加工,其中对新鲜绿茶叶片通入空气,可以去除叶片中低沸点、刺激性强的杂香,使茶香更加醇柔,提高茶叶的香气品质;通过第一步在空气中在一定的湿度、温度下处理,以及第二步选择适当的温度梯度进行烘干处理相结合,可以使叶片中形成大量香味化合物,其气味清醇持久,能更好地中和合成香料的不自然感。上述处理得到的绿茶干叶,其精制形成的萃取物,可以与香精原料中的其他成分具有最佳的配合作用,使香气清香而又柔和不过分强烈,具有淡而远的特点。本发明的绿茶香精能够很好地保留天然绿茶香气的清高、嫩爽的特点,其香气天然、纯正、逼真,受到消费者的认可。
具体实施方式
实施例1
一种绿茶香精,其原料按重量百分比由以下组分组成:
降龙涎醚0.10%、薄荷脑1.30%、佳乐麝香2.25%、苯乙酸苯乙酯0.50%,甲位己基桂醛6.60%、香叶醇1.60%、香茅醇0.20%、苯乙醇6.40%,芳樟醇5.40%、叶醇0.10%、甲位松油醇0.60%、二氢茉莉酮酸甲酯14.40%、女贞醛0.15%、乙位紫罗兰酮0.60%、丙位十一内酯0.20%、绿茶提取物1.00%、氧化芳樟醇0.10%、佛手柑油1.60%、巴西甜橙油0.30%、巴西甜橙油萜7.60%、一缩二丙二醇49.00%。
其中,绿茶提取物的具体制备方法为:
(1)向新鲜绿茶叶片中通入温度为65℃、相对湿度为30%、流速为1.2m/s的空气,处理65min;
(2)将步骤(1)处理后的绿茶叶片先在75℃烘干5min,然后在65℃烘干15min,最后在50℃烘干45min,即得绿茶干叶;

其中,绿茶提取物的具体制备方法为:
(1)向新鲜绿茶叶片中通入温度为68℃、相对湿度为32%、流速为1.4m/s的空气,处理55min;
(2)将步骤(1)处理后的绿茶叶片先在77℃烘干4min,然后在68℃烘干12min,最后在53℃烘干40min,即得绿茶干叶;
(3)将所述绿茶干叶粉碎后,加入相当于绿茶干叶重量4.5倍的水,进行水蒸气蒸馏提取,提取时间为75min,分离得到固体残渣和精油备用;
(4)将步骤(3)得到的固体残渣干燥后,加入相当于固体残渣重量9倍的体积浓度为88%的乙醇水溶液,在35℃条件下提取35min,浓缩去除乙醇,得到浓缩浸膏;
(5)将步骤(3)得到的精油和步骤(4)得到的浓缩浸膏混合均匀,即得绿茶提取物。
一种绿茶香精的制备方法,包括以下步骤:
(1)将降龙涎醚、薄荷脑、佳乐麝香、苯乙酸苯乙酯、绿茶提取物、一缩二丙二醇混合、溶解后搅拌均匀;
(2)加入其余原料,搅拌均匀后进行高压均质处理,静置过滤,即得绿茶香精。

其中,绿茶提取物的具体制备方法为:
(1)向新鲜绿茶叶片中通入温度为70℃、相对湿度为35%、流速为1.6m/s的空气,处理45min;
(2)将步骤(1)处理后的绿茶叶片先在80℃烘干3min,然后在70℃烘干10min,最后在55℃烘干35min,即得绿茶干叶;
(3)将所述绿茶干叶粉碎后,加入相当于绿茶干叶重量5倍的水,进行水蒸气蒸馏提取,提取时间为80min,分离得到固体残渣和精油备用;
(4)将步骤(3)得到的固体残渣干燥后,加入相当于固体残渣重量10倍的体积浓度为90%的乙醇水溶液,在40℃条件下提取40min,浓缩去除乙醇,得到浓缩浸膏;
(5)将步骤(3)得到的精油和步骤(4)得到的浓缩浸膏混合均匀,即得绿茶提取物。
一种绿茶香精的制备方法,包括以下步骤:
(1)将降龙涎醚、薄荷脑、佳乐麝香、苯乙酸苯乙酯、绿茶提取物、一缩二丙二醇混合、溶解后搅拌均匀;
(2)加入其余原料,搅拌均匀后进行高压均质处理,静置过滤,即得绿茶香精。

将实施例1-3以及对比例1-4的绿茶香精进行感官香气评价,评价其与天然绿茶香气的接近程度,评香人员为50人,满分为100分。
评价结果如下表所示:
从表中可以看出,本发明的绿茶香精具有十分接近天然绿茶的香气。

1.一种绿茶香精,其特征在于,其原料按重量百分比由以下组分组成:
降龙涎醚0.10%-0.30%、薄荷脑1.30%-2.50%、佳乐麝香2.25%-2.75%、苯乙酸苯乙酯0.50%-0.60%、甲位己基桂醛6.60%-8.80%、香叶醇1.60%-1.80%、香茅醇0.20%-0.60%、苯乙醇6.40%-6.80%、芳樟醇5.40%-5.60%、叶醇0.10%-0.20%、甲位松油醇0.60%-0.80%、二氢茉莉酮酸甲酯14.40%-15.60%、女贞醛0.15%-0.35%、乙位紫罗兰酮0.60%-1.20%、丙位十一内酯0.20%-0.40%、绿茶提取物1.00%-1.50%、氧化芳樟醇0.10%-0.20%、佛手柑油1.60%-2.20%、巴西甜橙油0.30%-0.60%、巴西甜橙油萜7.60%-8.20%、一缩二丙二醇39.00%-49.00%,以上组分的重量百分比总和为100%。

6.根据权利要求5所述的一种绿茶香精,其特征在于,所述绿茶干叶的具体制备方法为:

(2)将步骤(1)得到的固体残渣干燥后,加入相当于固体残渣重量8-10倍的体积浓度为85-90%的乙醇水溶液,在30-40℃条件下提取30-40min,浓缩去除乙醇,得到浓缩浸膏;
(3)将步骤(1)得到的精油和步骤(2)得到的浓缩浸膏混合均匀,即得。
8.一种如权利要求1-7任一项所述的绿茶香精的制备方法,其特征在于,包括以下步骤:
(1)将降龙涎醚、薄荷脑、佳乐麝香、苯乙酸苯乙酯、绿茶提取物、一缩二丙二醇混合、溶解后搅拌均匀;
(2)加入其余原料,搅拌均匀后进行高压均质处理,静置过滤,即得绿茶香精。
