本发明公开了银耳燕窝复合悬浮饮料及其制备方法,制备方法是:将新鲜银耳采摘后削根去杂,然后清洗,精选,切碎,放到混合器中,精选燕窝也切碎后一起放到混合器中,木糖醇与冰糖加水熔化,也投入到混合器中,另外,将红枣煮开以后,用慢火煮熬,得到红枣汁,投入到混合器中;枸杞也是煮开以后,用慢火煮熬,得到枸杞汁,也投入到混合器中,调节浓度和适宜温度,在搅拌情况下装瓶,对瓶内物料适当加压,压盖,然后在120‑122℃的温度下灭菌3‑5分钟,最后贴上标识,得到银耳复合悬浮饮料产品,本发明的特点是:不加任何悬浮剂、防腐剂和添加剂,银耳悬浮性能非常好,保存期可以保证18个月不变质,银耳在瓶中不聚合,不沉淀,保持悬浮,营养丰富,口感好。

银耳,别称:白木耳、雪耳、银耳子;拉丁学名:Tremella fuciformis Berk.;是担子菌门、银耳纲、银耳目、银耳科、银耳属真菌的子实体,有“菌中之冠”的美称。银耳一般呈菊花状或鸡冠状,直径5-10厘米,柔软洁白,半透明,富有弹性。
银耳为担子菌门真菌银耳的子实体,由10余片薄而多皱褶的扁平形瓣片组成,其实体纯白至乳白色,一般呈菊花状或鸡冠状,柔软洁白,半透明,富有弹性;干后收缩,角质,硬而脆,白色或米黄色。在子实体上下两面,均覆盖子实层,由无数担子组成,担子近球形,纵分隔,大小介于10×9(微米)-13×10(微米)之间,担子上生微细孢子,无色,光滑,近球形,大小介于6×4(微米)-8.5×7(微米)之间。银耳菌丝体由担孢子萌发生成,是多细胞,呈灰白色,极细,起着吸收和运送养分的作用。菌丝体在条件适宜时,形成子实体,子实体是人们食用部分,由薄而多皱褶的瓣片组成,白色、表面光滑、有弹性、半透明,干后微黄呈硬角质,体积剧烈收缩变小、脆硬,为湿重的1/3~1/8,遇水浸泡又可恢复原状。
野生银耳主要分布于亚热带,也分布于寒带、温带和热带。我国国内野生银耳主要分布于四川、云南、福建、贵州、安徽、湖南、广西、台湾等省市的山林地区。目前多为人工栽培。
银耳是一种极其名贵的营养滋补佳品,历代皇家贵族均把银耳看作延年益寿之品。现代医学证明,银耳主要的药理有效成分是多糖,银耳多糖是银耳最重要的组成成分,占其干重 60%~70%,同时银耳多糖还是一种重要的生物活性物质,能够增强人体免疫功能,起到扶正固本作用。并且银耳多糖对呼吸系统、中枢神经系统、血液循环系统以及心、肝、肾等都没有毒性,对小鼠的生殖能力和幼仔的成活率也没有影响,同时未见其引起小鼠急性和慢性中毒,无致突变、致畸和致癌作用,属于无毒害物质。

银耳营养价值:银耳所含化学成分较为复杂,初步分析证明,银耳含有17种氨基酸,如脯氨酸、谷氨酸、天冬氨酸等,是很多食品中稀缺的,还富含人体所需的无机元素,如S、P、Ca、Fe、Mg 和 Na 等;银耳中也含有多种维生素,即 VB1、VB2、VC和 VD等,此外银耳还含有一定量的纤维素,营养全面,且有一定的药用价值,历来与人参、鹿茸同具显赫声誉,被人们称为“山珍”、“菌中明珠”。它不仅是有山珍美名之称,我国历代的医学家都认为它有强精、补肾、润肺、生津、止咳、清热、养胃、补气、和血、强心、壮身、补脑、提神之功。作为营养滋补品,它适用于一切老弱妇孺和病后体虚者,还具有扶正强壮作用,并常用于治疗老年慢性气管炎等病症,对高血压、血管硬化患者,尤为适宜。医学研究还证明,从银耳中分离出来的多种糖类物质,对恶性肿瘤也有明显的抑制作用,常服银耳汤,还可起到嫩肤美容的效果。
目前银耳的食用方法一般是凉拌银耳、做汤或做羹,做汤是将银耳煲鸡汤、鸭汤、猪肉汤、排骨汤等,做羹比较常见的是银耳莲子百合羹(婚礼宴会上的一道重要饮品)。

从上述公开文献可以看到,银耳饮料加工方法较多,但是大多数都添加了稳定剂、食品防腐剂和其它添加剂,有的加工过程损失了很多营养成分,没有能够保持新鲜和达到天然的要求,更主要的是大多数银耳饮料悬浮性能不好,还有沉淀情况,品质达不到要求。
发明内容
本发明的目的是提供一种银耳燕窝复合悬浮饮料的制备方法,采用特殊的工艺条件,使得银耳燕窝在瓶中不聚合,不沉淀,保持悬浮,饮料的口感好,营养丰富。
本发明是这样实现的:
一种银耳燕窝复合悬浮饮料的制备方法,其步骤如下:
(1)将新鲜银耳采摘后削根去杂,然后清洗,精选,切碎,在搅拌的情况下放到混合器中;
(2)将精选的燕窝切碎,在搅拌的情况下放到混合器中;
(3)木糖醇与冰糖加水熔化,投入到混合器中;木糖醇与冰糖的质量比为1:1;
(4)将红枣煮开以后,用慢火熬煮2-3小时,去渣,得到红枣汁,投入到混合器中;每公斤红枣加水3-8公斤;
(5)枸杞煮开以后,用慢火煮熬2-3小时,得到枸杞汁,也投入到混合器中;每公斤枸杞加水5-10公斤;
所述混合器中物料新鲜银耳重量比为20-30%;燕窝重量比为,3-8%,木糖醇与冰糖为8-10%;干红枣为5-8%;干枸杞为3-5%,其余为水;
(5)开动混合器中的搅拌器,调节浓度和适宜温度,在物料翻滚的情况下装瓶,对瓶内物料适当加压,压力为0.3-0.5Mpa,封盖,然后在120-122 ℃的温度下灭菌3-5分钟,最后贴上标识,得到银耳的复合悬浮饮料产品。
物料翻滚的情况是灌瓶的过程中,瓶子安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中不聚合,不沉淀,保持悬浮。
混合器内的物料混合温度为90-98℃。
当新鲜银耳削根去杂后2小时不能使用制作饮料时,必须置于-10至-5的冷库中保存;
以上所述的银耳复合悬浮饮料的制备方法,物料翻滚的情况是灌瓶的过程中,瓶子可以安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中保持有一定压力和适宜浓度糖液的情况下不聚合,不沉淀,保持悬浮。
上述的混合器内的物料混合温度为90-98℃。
当新鲜银耳削根去杂后2小时不能使用制作饮料时,必须置于-10至-5的冷库中保存,多糖成分不会损失。
加入红枣汁的理由:
红枣,又名大枣,属于被子植物门,双子叶植物纲、鼠李目、鼠李科、枣属的植物。它的维生素含量非常高,有“天然维生素丸”的美誉,具有滋阴补阳的功效;中国的草药书籍「本经」中记载到,红枣味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能;而现代的药理学则发现,红枣含有蛋白质、糖类、有机酸、维生素A、维生素C 、多种微量钙以及氨基酸等丰富的营养成分。还具有以下好处:(1)枣能提高人体免疫力,并可抑制癌细胞:药理研究发现,红枣能促进白细胞的生成,降低血清胆固醇,提高血清白蛋白,保护肝脏,红枣中还含有抑制癌细胞,甚至可使癌细胞向正常细胞转化的物质。(2)经常食用鲜枣的人很少患胆结石,这是因为鲜枣中丰富的维生素C,使体内多余的胆固醇转变为胆汁酸,胆固醇少了,结石形成的概率也就随之减少。(3)对病后体虚 的人也有良好的滋补作用。(4)枣所含的芦丁,能使血管软化,从而降低血压,对高血压病有防治功效。(5)抗过敏、除腥臭、怪味、宁心安神、益智健脑、增强食欲。(6)有很好的增强肌力、消除疲劳、扩张血管、增加心肌收缩力、改善心肌营养。(6)大枣含有大量的糖类物质,主要为葡萄糖,还含有果糖、蔗糖及由葡萄糖和果糖组成的低聚糖、阿拉伯聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、胡萝卜素、尼克酸等多种维生素。具有较强的补养作用,能提高人体免疫功能,增强抗病能力。(7)有实验证实,对四氯化碳肝损伤的家兔,每日喂给大枣煎剂共1周,结果血清总蛋白与白蛋白较对照组明显增加,表明大枣有保肝作用。(8)大枣乙醇提取物对特异反应性疾病,能抑制抗体的产生,对小鼠反应性抗体也有抑制作用,提示大枣具有抗变态反应作用。(9)大枣中所含有黄酮--双- 葡萄糖甙A有镇静、催眠和降压作用,其中被分离出的柚配质C糖甙类有中枢抑制作用,即降低自发运动及刺激反射作用、强直木僵作用,故大枣具有安神、镇静之功。(10)大枣含多种三该类化合物,其中烨木酸、山植酸均发现有抗癌活性,对肉瘤S-180有抑制作用。枣中所含的营养素,能够增强人体免疫功能,对于防癌抗癌和维持人体脏腑功能都有一定效果。(11)红枣富含的环磷酸腺苷,是人体能量代谢的必需物质,能增强肌力、消除疲劳、扩张血管、增加心肌收缩力、改善心肌营养,对防治心血管疾病有良好的作用。(12)红枣具有补虚益气、养血安神、健脾和胃等功效,是脾胃虚弱、气血不足、倦怠无力、失眠等患者良好的保健营养品。(13)红枣对急慢性肝炎、肝硬化、贫血、过敏性紫癜等症有较好疗效。(14)红枣含有三萜类化合物及环磷酸腺苷,有较强的抑癌、抗过敏作用。

加入枸杞汁的理由:
枸杞,是茄科、枸杞属植物。枸杞是商品枸杞子、植物宁夏枸杞、中华枸杞等枸杞属物种的统称。人们日常食用和药用的枸杞子多为宁夏枸杞的果实“枸杞子”,宁夏枸杞(LyciumbarbarumL.)主要成份:枸杞子含甜菜碱(betane),阿托品(atropine),天仙子胺(gyoscyamine)。枸杞多糖:枸杞多糖是一种水溶性多糖,是枸杞中最主要的活性成分,相对分子质量为68-200,成为国内外研究热点。其中又以枸杞多糖的免疫调节和抗肿瘤作用的研究最多。现已有很多研究表明枸杞多糖具有促进免疫、抗衰老、抗肿瘤、清除自由基、抗疲劳、抗辐射、保肝、生殖功能保护和改善等作用。甜菜碱:化学名称为1-羧基-N,N,N-三甲氨基乙内酯,在化学结构上与氨基酸相似,属于季胺碱类物质。甜菜碱是枸杞果、叶、柄中主要的生物碱之一。枸杞对脂质代谢或抗脂肪肝的作用主要是由于所含的甜菜碱引起的,它在体内起甲基供应体的作用。关于枸杞甜菜碱的研究仅限于国内在含量的测定、提取工艺和对枸杞植物的生理作用(增强耐盐性)研究方面,关于枸杞甜菜碱的药理药效研究很少。枸杞色素:枸杞色素是存在于枸杞浆果中的各类呈色物质,是枸杞籽的重要生理活性成分。主要包括-胡萝卜素、叶黄素和其他有色物质。枸杞所含有的类胡萝卜素则具有非常重要的药用价值。很多研究已经证明枸杞籽色素具有提高人体免疫功能、预防和抑制肿瘤及预防动脉粥样硬化等作用。胡萝卜素是枸杞色素的主要活性成分,具有抗氧化和作为维生素A的合成前体等重要的生理功能。药理作用:对免疫功能有影响作用。性味:枸杞子:甘,平。枸杞叶:苦、甘;性凉。功能:枸杞子:养肝,滋肾,润肺。枸杞叶:补虚益精,清热明目。

1、本发明人对新鲜银耳采摘后2小时立即加工为饮料,不经过干燥回水浸泡阶段,保持其银耳的新鲜度和营养成分,多糖成分不会损失。
2、本发明在物料中加入燕窝,燕窝中的氨基酸种类丰富,富含苯丙氨酸、缬氨酸、亮氨酸、酪氨酸和精氨酸等.燕窝中的水解氨基酸含量达42.272%,且必需氨基酸含量占氨基酸总量的42%;同时,呈鲜味特征的氨基酸(天门冬氨酸和谷氨酸)和呈芳香味特征的氨基酸(酪氨酸和苯丙氨酸)含量较高,表明燕窝的味道鲜美,食物营养价值的优劣主要取决于所含氨基酸的种类、数量和比例。
3、本发明木糖醇与冰糖的质量比为1:1,保证甜度合适。木糖醇甜度与蔗糖相当,溶于水时可吸收大量热量,是所有糖醇甜味剂中吸热值最大的一种,会在口中产生愉快的清凉感。木糖醇不致龋且有防龋齿的作用,代谢不受胰岛素调节,在人体内代谢完全,热值为16.72kJ/g,可作为糖尿病人的热能源。
4、由于在灌装入瓶的过程中,采用了开动混合器中的搅拌器,调节浓度和适宜温度,在物料翻滚的情况下装瓶,对瓶内物料适当加压,压力为0.3-0.5Mpa,封盖,然后在120-122 ℃的温度下灭菌3-5分钟,最后贴上标识,得到银耳的复合悬浮饮料产品;
5、本发明的实施装置,物料翻滚的情况是灌瓶的过程中,瓶子安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中保持有一定压力和适当浓度糖液的情况下不聚合,不沉淀,保持悬浮。当然,也可以采用其他装置,使得物料翻滚过程流入瓶子就可以了。
6、混合器中新鲜银耳重量比为20-30%;燕窝重量比为,3-8%,木糖醇与冰糖为8-10%;干红枣为5-8%;干枸杞为3-5%,其余为水,这种糖的浓度与银耳浓度刚好使得银耳和燕窝在瓶中不聚合,不沉淀,保持悬浮,饮用的时候不需要摇动,饮料均质性能很好,对人体吸收很有利。为了使得达到这种效果,本发明人试验了很长一段时间,浪费了很多批次的物料,才找到这个银耳燕窝在瓶中不聚合,不沉淀,保持悬浮的平衡点,如果不经过反复试验,实在是不可能的事情,纵观目前很多果肉颗粒饮料,很多即使加入大量的稳定剂、悬浮剂,还是克服不了难以保持悬浮的状况,这是本发明人最重要的生产要点。
产品检验数据:
上述本发明产品经过广西省级食品检验中心检测,银耳燕窝饮料中,含蛋白质8.8%-11%、碳水化合物61%-69.1%、脂肪1.0%-11.2%、粗纤维2.5%-2.75%、无机盐4.3%-5.4%、水分及少量维生素B类。银耳的蛋白质中含有亮氨酸、异亮氨酸、苯丙氨酸、丝氨酸、谷氨酸、撷氨酸、脯氨酸、精氨酸、赖氨酸、丙氨酸、苏氨酸、天门冬氨酸、酪氨酸、胱氨酸、组氨酸、甲硫氨酸等十几种氨基酸,其中含量最大的是脯氨酸。

具体实施方式
实施例1
一种银耳燕窝复合悬浮饮料的制备方法,其步骤如下:
(1)将新鲜银耳采摘后削根去杂,然后清洗,精选,切碎,2小时内放到混合器中;
(2)将精选的燕窝切碎,在搅拌的情况下放到混合器中;
(3)木糖醇与冰糖加水熔化,投入到混合器中;木糖醇与冰糖的质量比为1:1;
(4)将红枣煮开以后,用慢火熬煮2小时,去渣,得到红枣汁,投入到混合器中;每公斤红枣加水3公斤;
(5)枸杞煮开以后,用慢火煮熬2小时,得到枸杞汁,也投入到混合器中;每公斤枸杞加水5公斤;
所述混合器中物料新鲜银耳重量比为20%;燕窝为3%,木糖醇与冰糖为8%;干红枣为5;干枸杞为3,其余为水;
(6)开动混合器中的搅拌器,调节浓度和适宜温度,装入玻璃瓶,对瓶内物料适当加压,压力为0.3Mpa,封盖,然后在120 ℃的温度下灭菌3分钟,最后贴上标识,得到银耳的复合悬浮饮料产品;银耳在瓶中不聚合,不沉淀,保持悬浮。上述的混合器内的物料混合温度为90℃。该灌装实施装置,物料翻滚的情况是灌瓶的过程中,瓶子安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中保持有一定压力和适当浓度糖液的情况下不聚合,不沉淀,保持悬浮,饮用的时候不需要摇动,饮料均质性能很好。
实施例2
一种银耳燕窝复合悬浮饮料的制备方法,其步骤如下:
(1)将新鲜银耳采摘后削根去杂,然后清洗,精选,切碎,2小时内放到混合器中;

(3)木糖醇与冰糖加水熔化,投入到混合器中;木糖醇与冰糖的质量比为1:1;
(4)将红枣煮开以后,用慢火熬煮2小时,去渣,得到红枣汁,投入到混合器中;每公斤红枣加水3公斤;
(5)枸杞煮开以后,用慢火煮熬2.5小时,得到枸杞汁,也投入到混合器中;每公斤枸杞加水8公斤;
所述混合器中物料新鲜银耳重量比为25%;燕窝为5%,木糖醇与冰糖为9%;干红枣为6;干枸杞为4,其余为水;
(6)开动混合器中的搅拌器,调节浓度和适宜温度,装入玻璃瓶,对瓶内物料适当加压,压力为0.4Mpa,封盖,然后在121 ℃的温度下灭菌4分钟,最后贴上标识,得到银耳的复合悬浮饮料产品;银耳在瓶中不聚合,不沉淀,保持悬浮。上述的混合器内的物料混合温度为95℃。该灌装实施装置,物料翻滚的情况是灌瓶的过程中,瓶子安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中保持有一定压力和适当浓度糖液的情况下不聚合,不沉淀,保持悬浮,饮用的时候不需要摇动,饮料均质性能很好。
实施例3
一种银耳燕窝复合悬浮饮料的制备方法,其步骤如下:
(1)将新鲜银耳采摘后削根去杂,然后清洗,精选,切碎,2小时内放到混合器中;

(5)枸杞煮开以后,用慢火煮熬2-3小时,得到枸杞汁,也投入到混合器中;每公斤枸杞加水10公斤;
所述混合器中物料新鲜银耳重量比为30%;燕窝为8%,木糖醇与冰糖为10%;干红枣为8;干枸杞为5,其余为水;
(6)开动混合器中的搅拌器,调节浓度和适宜温度,装入玻璃瓶,对瓶内物料适当加压,压力为0.5Mpa,封盖,然后在122 ℃的温度下灭菌5分钟,最后贴上标识,得到银耳的复合悬浮饮料产品;银耳在瓶中不聚合,不沉淀,保持悬浮。上述的混合器内的物料混合温度为98℃。该灌装实施装置,物料翻滚的情况是灌瓶的过程中,瓶子安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中保持有一定压力和适当浓度糖液的情况下不聚合,不沉淀,保持悬浮,饮用的时候不需要摇动,饮料均质性能很好。
Claims (4)
1.一种银耳燕窝复合悬浮饮料的制备方法,其特征在于,其步骤如下:
(1)将新鲜银耳采摘后削根去杂,然后清洗,精选,切碎,在搅拌的情况下放到混合器中;
(2)将精选的燕窝切碎,在搅拌的情况下放到混合器中;
(3)木糖醇与冰糖加水熔化,投入到混合器中;木糖醇与冰糖的质量比为1:1;
(4)将红枣煮开以后,用慢火熬煮2-3小时,去渣,得到红枣汁,投入到混合器中;每公斤红枣加水3-8公斤;
(5)枸杞煮开以后,用慢火煮熬2-3小时,得到枸杞汁,也投入到混合器中;每公斤枸杞加水5-10公斤;
所述混合器中物料新鲜银耳重量比为20-30%;燕窝重量比为,3-8%,木糖醇与冰糖为8-10%;干红枣为5-8%;干枸杞为3-5%,其余为水;
(5)开动混合器中的搅拌器,调节浓度和适宜温度,在物料翻滚的情况下装瓶,对瓶内物料适当加压,压力为0.3-0.5Mpa,封盖,然后在120-122 ℃的温度下灭菌3-5分钟,最后贴上标识,得到银耳的复合悬浮饮料产品。
2.根据权利要求1所述的银耳燕窝复合悬浮饮料的制备方法,其特征在于:物料翻滚的情况是灌瓶的过程中,瓶子安装在振动装置上,物料也是滚动流入瓶子中的,这样使得银耳在瓶中不聚合,不沉淀,保持悬浮。
3.根据权利要求1所述的银耳燕窝复合悬浮饮料的制备方法,其特征在于:混合器内的物料混合温度为90-98℃。
4.根据权利要求1所述的银耳燕窝复合悬浮饮料的制备方法,其特征在于:当新鲜银耳削根去杂后2小时不能使用制作饮料时,必须置于-10至-5的冷库中保存。
