Abstract
本发明提供一种术后康复配方粉,制备原料包括如下质量百分比组分,果葡糖浆干粉30‑40%、大豆水解肽10‑20%、浓缩乳清蛋白粉F700 10‑20%、中链甘油三酯5‑15%、植物脂肪粉5‑15%、海洋鱼低聚肽1‑10%、抗性糊精3‑8%、食用香精1‑3%、食用色素0.02‑0.3%、营养强化剂3‑5%、柠檬酸0.03‑0.07%。本发明通过上述配方设计,组成设置合理,营养配比均衡,有利于术后人群消化吸收、提高免疫力,加快伤口愈合、维持体内氮平衡,缩短住院时间、加速康复。

技术领域
本发明涉及一种配方乳粉,尤其是涉及一种术后康复配方乳粉,同时涉及其制备方法。
背景技术
创伤、手术等应激状态下机体分解代谢旺盛,脂肪、蛋白质分解增加,摄取与利用葡萄糖的能力受到抑制,代谢功能紊乱、消化吸收能力降低,因此手术后不仅需要补充术中营养损失,加速伤口愈合,还要促进胃肠功能恢复,维持机体正常生理代谢,提高机体免疫力。目前市面上用于术后康复的营养品多为蛋白质粉或肽类,存在消化吸收率低下或营养成分单一的问题。因此,特别需要一种适用于术后康复的配方粉,以解决上述现有存在的问题。
发明内容
为解决上述技术问题,本发明提供一种适用于术后康复的配方粉,针对现有技术的不足,合理提供营养物质,加快伤口愈合,改善氮平衡,促进胃肠功能恢复,提高机体免疫力。
本发明的技术方案是提供一种术后康复配方粉,制备原料包括如下质量百分比组分,果葡糖浆干粉30-40%、大豆水解肽10-20%、浓缩乳清蛋白粉F700 10-20%、中链甘油三酯5-15%、植物脂肪粉5-15%、海洋鱼低聚肽1-10%、抗性糊精3-8%、食用香精1-3%、食用色素0.02-0.3%、营养强化剂3-5%、柠檬酸0.03-0.07%。

本发明的另一目的是提供配方粉的制备方法,步骤包括:
(1)原料进行脱皮处理,经大包杀菌机除尘杀菌后进行称量;
(2)按顺序依次将硫酸亚铁、硫酸锌、硫酸镁、硫酸铜、硫酸锰、碘酸钾、亚硒酸钠加入混料罐进行充分混合过筛,得到矿物质强化剂;
(3)按顺序依次将维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、生物素、烟酰胺、叶酸、D-泛酸钙、维生素C加入混料罐进行充分混合过筛,得到维生素强化剂;
(4)根据配方各组分质量百分比准确称量原辅料,过筛,经复核准确后备用;
(5)将已称量好的原辅料经投料站输送至三维混合机中;投料时注意将维生素、矿物质等质量比较小的原料放在大宗原料的中间投送,防止小料粘附在设备表面影响均匀性;
(6)待所有的原辅料投送完毕,开启混合机搅拌,搅拌速度为15转/分钟,搅拌时间为8-12分钟,混合均匀后出料,出料时转筒转速降为5-10转/分钟,并不断敲打罐体底部及侧面确定出料完全,出料后过筛,得产品。

本发明的优点和有益效果:
本发明中大豆水解肽为低分子肽产品,富含支链氨基酸(34%),具有调整白血球数量、提高免疫力的作用;
浓缩乳清蛋白F700又称浓缩磷脂乳清蛋白,是由甜乳清液经过冷微滤及超滤膜技术加工制成,富含牛奶磷脂(磷脂酰胆碱,磷脂酰乙醇胺,磷脂酰肌醇,磷脂酰丝氨酸,鞘磷脂和脑苷酯)、IGG和乳铁因子等多种生化成分,如乳脂肪球膜(MFGM)、免疫球蛋白、乳铁蛋白和生长因子等。高含量免疫球蛋白(IGG)成分具有免疫活性,能够完整地进入近端小肠,起到保护小肠粘膜的作用,提高人体的免疫功能;乳铁蛋白也是人体所需的重要成分,可以促进铁的吸收,调节机体免疫反应;
中链甘油三酯是指由8~12个碳原子构成的脂肪酸,可以不经过消化直接被小肠上皮细胞吸收,到达肝脏后,不需要肉毒碱作为载体,就能迅速通过线粒体的双层膜进入线粒体被氧化分解,提供能量,在体内消化代谢的速度与葡萄糖相当,且产生的能量高于葡萄糖产生的能量2倍;
海洋鱼低聚肽是由胶原或明胶经蛋白酶降解处理后制成的,分子量大约在3000道尔顿,可以被人体主动且无障碍吸收,无需消化,有助于降低高代谢,改善氮平衡,降低感染率,提高免疫力;另外胶原蛋白还具有独特的修复功能,胶原蛋白和周围组织的亲合性好,具有修复组织的作用,促进术后伤口的愈合。增强免疫力;
抗性糊精是一种水溶性膳食纤维,具有改善人体肠道菌群,促进矿物质吸收等生理功能。抗性糊精在小肠内不被吸收,可直接进入大肠,能促进肠道有益菌群的生长、繁殖,是一种双歧杆菌增殖因子,可提高人体机能,包括免疫系统和肠道功能,同时抑制肠道有害微生物的生长繁殖;抗性糊精的吸水膨胀能增加粪便体积,促进肠道蠕动,对于便秘等有良好的预防效果。
本发明通过上述配方设计,组成设置合理,营养配比均衡,有利于术后人群消化吸收、提高免疫力,加快伤口愈合、维持体内氮平衡,缩短住院时间、加速康复。

上述实施例使用的原辅料均符合国家食品原料、添加剂标准。
伤口愈合试验
小鼠90只,每组30只,随机分为3组,包括对照组(蒸馏水)、乳清蛋白组(0.5g/kg·BW)、术后康复配方粉组(0.5g/kg·BW),小鼠经过4%水合氯醛麻醉后,进行背部脱毛。常规皮肤消毒,于背部两侧分别切一个长1.5cm的纵向切口。切口切开肌肉,深达腹腔。然后模拟临床手术过程逐层缝合肌肉与皮肤。术后涂抹2%碘伏消毒,并注射青霉素G钠(1000IU/g·BW)防止感染。术后禁食6h,保持正常饮水。手术当天记为第0d。
于手术当天开始灌胃进行干预,术后康复配方粉组每天灌胃给予术后康复配方粉溶液,乳清蛋白组给予乳清蛋白水溶液,对照组给予蒸馏水。灌胃量为0.1ml/10g,每日1次。分别于术后第4、7、14d分批处死小鼠,每组每次处死10只。
各组小鼠于第4、7、14d处死时取左侧全层皮肤组织,组织切口距伤口边缘0.5cm,用甲醛固定用于做石蜡切片进行HE染色,观察愈合组织。术后第7d,对照组伤口表面完整性较差,瘢痕组织较多,炎性细胞浸润明显,毛细血管形成较少,乳清蛋白组伤口创面毛细血管较少且有大量炎性细胞浸润,术后康复配方粉干预后可见毛细血管形成增多,瘢痕组织明显减少,成纤维细胞聚集且炎性细胞明显低于对照组。术后第14d,对照组伤口仍有大量瘢痕组织,伴随大量炎性细胞浸润,毛细血管和成纤维细胞均较少,乳清蛋白组瘢痕组织较多,毛细血管少,术后康复配方粉干预组瘢痕组织明显减少,皮肤表面完整性较好,毛细血管较多,炎性细胞浸润明显较少且伴有较多的成纤维细胞。上述结果说明采用本发明术后康复配方粉能够明显改善伤口愈合速度,从而缩短病患住院、康复时间。
本发明实施例涉及到的材料、试剂和实验设备,如无特别说明,均为符合食品生产制备领域的市售产品。

2.如权利要求1所述的术后康复配方粉,其特征在于,营养强化剂包括如下质量百分比组分:维生素A 0.0001-0.001%、维生素D 0.000001-0.00001%、维生素E 0.001-0.01%、维生素K1 0.00001-0.0001%、维生素B1 0.0001-0.001%、维生素B2 0.0001-0.001%、维生素B6 0.0001-0.001%、维生素B12 0.000001-0.00001%、维生素C 0.02-0.2%、烟酸0.01-0.05%、叶酸0.0001-0.0003%、泛酸0.001-0.005%、生物素0.00001-0.0001%、钠0.3-0.8%、钾0.3-0.8%、铜0.1-0.5%、镁0.1-0.5%、铁0.005-0.01%、钙0.2-0.8%、锌0.001-0.005%、锰0.0001-0.001%、磷0.1-0.5%、碘0.00001-0.00005%、氯0.1-0.9%、硒0.00001-0.00005%、铬0.00001-0.00005%、钼0.00001-0.00005%、胆碱0.1-0.5%、牛磺酸0.01-0.05%、左旋肉碱0.005-0.02%,余量为麦芽糊精。
3.如权利要求1所述的术后康复配方粉,其特征在于,所述果葡糖浆干粉为F42无水果葡糖浆干粉。
4.如权利要求1所述的术后康复配方粉,其特征在于,所述植物脂肪粉由菜籽油、玉米油、棕榈油、椰子油组成,质量比为10.5:9.0:8.5:3.5。
5.如权利要求1所述的术后康复配方粉,其特征在于,所述食用香精为黑豆、热带水果、芒果、橙香精中的一种或几种的混合物;所述食用色素为柠檬黄、日落黄、墨鱼汁粉、黑豆色素中的一种或几种的混合物。
6.权利要求1所述的术后康复配方粉的制备方法,其特征在于,步骤包括:
(1)原料进行脱皮处理,经大包杀菌机除尘杀菌后进行称量;
(2)按顺序依次将硫酸亚铁、硫酸锌、硫酸镁、硫酸铜、硫酸锰、碘酸钾、亚硒酸钠加入混料罐进行充分混合过筛,得到矿物质强化剂;
(3)按顺序依次将维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、生物素、烟酰胺、叶酸、D-泛酸钙、维生素C加入混料罐进行充分混合过筛,得到维生素强化剂;
(4)根据配方各组分质量百分比准确称量原辅料,过筛,经复核准确后备用;
(5)将已称量好的原辅料经投料站输送至三维混合机中;投料时注意将维生素、矿物质等质量比较小的原料放在大宗原料的中间投送,防止小料粘附在设备表面影响均匀性;
(6)待所有的原辅料投送完毕,开启混合机搅拌,搅拌速度为15转/分钟,搅拌时间为8-12分钟,混合均匀后出料,出料时转筒转速降为5-10转/分钟,并不断敲打罐体底部及侧面确定出料完全,出料后过筛,得产品。
7.如权利要求6所述的术后康复配方粉的制备方法,其特征在于,所述步骤(1)中杀菌时间为≥60s。
8.如权利要求6所述的术后康复配方粉的制备方法,其特征在于,所述步骤(2)中过筛为60目筛,所述步骤(3)中过筛为50目筛。
9.如权利要求6所述的术后康复配方粉的制备方法,其特征在于,所述步骤(4)中过筛为40目筛,所述步骤(6)中过筛为18目筛。
