本发明涉及一种海带粉丝。
背景技术
粉丝、粉条历史悠久,在我国有千余年的历史,全国各地均有生产。由于粉条富含碳水化合物、膳食纤维、蛋白质、烟酸和钙、镁、铁、钾、磷、钠等矿物质,有良好的附味性,它能吸收各种鲜美汤料的味道,再加上粉条本身的柔润嫩滑,爽口宜人,可煮、炒、拌、也可制馅包膜,荤素皆宜搭配,深受人们的喜爱。
自2005年1月1日起,国家质量监督检验检疫总局将淀粉制品纳入食品质量安全市场准入制度管理,淘汰了一批生产工艺落后、卫生条件差、管理水平低的小作坊,行业整体产品质量得到稳步提高。
然而行业整顿并没有完全改变由于工艺落后造成的粉丝产业发展的瓶颈,压榨型粉丝生产始终占据粉丝产业链的主导地位,受原料成本、粉丝断条率的制约,业内添加明矾、明胶等添加剂的情况根本无法杜绝,而且品种单一,相比面条生产的发展落后一大步,满足不了人们对饮食多元化的需求。
发明内容

一种海带粉丝,按重量份数计,由以下原料组成:余赤米80份、金优207米20份、马铃薯10份,木薯10份、海带12份、鸡蛋6份、葛根4份。将上述原料进行糊化,对生成的糊浆进行切割成型即可。
制造出的海带粉丝,其峰值黏度为254.4RVU,保持黏度为183.0CP,破损值为71.4RVU,最终黏度为366.4CP,回升值为112.0RVU,糊化温度为86.2度。
本实施例采用多种原料,合理配比、无明矾、无明胶、零添加,粉丝营养丰富;改为糊浆切割成型,并通过精准的原料配比,使之在糊化打浆生产过程中发生物理化游离子变性,实现产品在整个生产过程中营养不流失且更丰富,并且耐煮耐泡,口感细腻,更加筋韧爽滑,海带能提升营养价值和口感。
