Abstract
本发明公开一种苦荞红曲枸杞养生醋及其生产工艺,该养生醋是以苦荞为原料,红曲、特制吊挂药曲为发酵剂,经传统风味老醋酿造工艺酿制成苦荞红曲醋,再将酿制成的苦荞红曲醋与枸杞醋复配制得成品。本发明生产工艺是以苦荞、枸杞原料为基础,以红曲、药曲为发酵剂,并应用传统风味老醋生产工艺集于一体技术,其中活醅中含有醋酸发酵多种微生物及活性的菌种,制曲过程网罗了多种天然菌种微生物,制作成含有多种营养成分及功能成分的苦荞红曲枸杞养生醋。本发明苦荞红曲枸杞养生醋不仅营养丰富、色泽红褐,口味酸而鲜甜,具有独特的风味,并且检测出含有150‑200%的枸杞多糖,长期饮用有降血压、降血脂等保健功能,是有益身体健康的养生佳品。

本发明属于食醋酿造技术领域,具体涉及一种苦荞红曲枸杞养生醋及其生产工艺。
背景技术:
枸杞是名贵的药材和滋补品,中医很早就有“枸杞养生”的说法,其产区主要集中在西北地区,宁夏的枸杞最为著名。枸杞果实含有丰富的维生素B1、B2、C以及钙、磷、铁等元素和多种氨基酸成分,在药理上有降低血糖、胆固醇的作用,并可扩张血管,降低血压。同时,枸杞子性味甘平,归肺、肝、肾三经,以滋补肝肾、益精明目功效著称。枸杞还含有丰富的杞多糖、氨基酸和多种微量元素,因此,枸杞作为保健食品,也已得到广泛地应用。成为抗疲劳、抗衰老、营养保健、可持久服用的家庭必备的药食两用佳品。
苦荞是一种独特的食药兼用作物,具有营养和保健双重功效。苦荞是食用作物中唯一集七大营养素于一身的作物,含有多种具有保健功能的营养成分,如生物类黄铜、高活性蛋白、高活性膳食纤维、淀粉及脂肪酸。苦荞中还含有丰富的维生素C和维生素E皆为有效的抗氧化物质,能维持人体内分泌平衡、促进细胞再生,具有防止衰老的作用。
红曲可以药食两用,古代就被广泛应用于食品着色、酿酒、发酵、中医药等方面,红曲含有蛋白质、脂肪、糖类、维生素及钙、磷、铁等营养元素。红曲还含有丰富的生物活性酶和多种生理活性物质、洛伐他汀、γ-氨基丁酸、麦角固醇、天然植物色素等红曲霉菌的代谢产物,具有极高的营养保健、药用价值,无任何毒副作用,天然、安全、有效的保健食品、药品原料。
目前,用红曲来进行醋的酿造以实现降血、脂降血的保健功能,若能将枸杞与苦荞和传统的药曲相结合,将会大大增强其功效。因此,申请人在传统老醋酿造工艺基础上,研发提供一种苦荞红曲枸杞养生醋及其生产工艺。
发明内容:
本发明的目的是旨在采用传统风味老醋酿造工艺基础上,生产出一种能降血压、降血脂具有功能成分的苦荞红曲枸杞养生醋及其生产工艺。
为了实现以上目的,本发明采取以下技术方案:
一种苦荞红曲枸杞养生醋,以苦荞为原料,红曲、特制吊挂药曲为发酵剂,经传统风味老醋酿造工艺酿制成苦荞红曲醋,再将酿制成的苦荞红曲醋与枸杞醋复配制得苦荞红曲枸杞养生醋。
本发明苦荞红曲枸杞养生醋的生产工艺,包括如下步骤:
A.特制吊挂药曲
a.配料:按一定比例分别称取原料醋渣、茵陈、蒲黄、菟丝子、麸皮并粉碎成粉,混合均匀得吊曲原料;
上述配料过程中称取的原料按重量百分比计:醋渣40%-45%、茵陈2%-4%、蒲黄2%-3%、菟丝子3%-4%、麸皮50%。
b.拌料、压实:将上述吊曲原料中按15%-30%的重量加入纯水,搅拌均匀后随即装入袋中,吊曲原料在袋中压紧实后得曲坯,再将曲坯压制成块状;
c.吊挂:将块状的曲坯吊挂至室外自然发酵7-8个月,即从8-9月份到来年的3-4月;
d.出曲:当吊挂的曲坯发酵成黑灰的疏松、干状时,出曲得吊曲,糖化力达到了500-600μ/g,备用;
B.苦荞红曲醋的发酵
a.配料:将大米、苦荞、豆类按一定比例混合筛选去铁去杂后粉碎,粉碎成40~60目的料粉;所述配料过程中各原料按一定重量百分比计:大米55%、苦荞35%、豆类10%。
b.调浆:在调浆罐内加入3.8~4.0倍于料粉重量的清水,加水调浆16~18°Be′,使淀粉含量调节为15%,然后加热使水温升到50℃;再加入Na2CO3调节pH值至6.2~6.4后,添加大米用量0.2%的2万μ/g耐高温α-淀粉酶和0.2%的CaCl2,使之在92℃时仍保持活性,增强淀粉酶的热稳定性;
c.液化:混合均匀后控制升温至95℃,保持温度进行液化,液化时间为40~60min,通过液化醪碘反应呈棕黄色即为液化完全;
d.糖化:当液化温度降至60℃时,加入上述料粉用量30%的特制吊挂药曲,进行保温糖化2h;当糖化液降温至35℃时,加入上述总量35%的红曲,继续降温至24~28℃,即得糖醪;
e.酒精发酵:将上述糖醪进行发酵,使醪液逐渐升温,品温控制在32~34℃,当品温升至34℃时开始冷却降温至32℃,得发酵醪,每天搅拌发酵醪两次,发酵8天后醋母成熟;
f.制醅发酵:
①制醅:将麸皮、稻壳、醋母、麸曲按一定重量比充分混合后入发酵池制成醋醅,醋醅的水分控制在60%~63%;
上述制醅的原料以主料计,按重量百分比配料为:麸皮115%~125%、稻壳55%~60%、醋母60%、麸曲5%。
②接种醅:接入发酵旺盛的优良醋醅,并按照10~15%的醋醅量埋入新醅中;
③醋酸发酵:上述入发酵池的醋醅发酵2~3天,当上层温度达40℃时,开始倒池翻醅,使上中下层的醋醅疏松均匀,温度一致;
④加盐压醅:当醋醅发酵10~11天接近成熟时,品温自然下降,及时加入8~10%的食盐进行压醅,将醋醅压实盖池放置1~2天即得成熟醋醅;总发酵周期为12天;
g.焙醅:
取15%的成熟醋醅入焙烤池,用蒸汽间接加热焙烤醋醅,每天倒池翻醅一次,焙烤醅温度控制在85℃,焙制5天;
h.淋醋:
将上述焙烤后成熟醋醅装入带有筛底的淋醋池中,用上次淋醋后所得的二淋醋浸泡成熟白醋醅,淋出的淋水加热至85℃以上,浸泡新鲜焙烤醅,淋取的醋液为头醋即得半成品;
i.煎醋:
将上述头醋加入灭菌罐内进行加热煎醋,保持沸腾30min后,入贮存容器内,并静置澄清;陈酿3个月备用;
C.枸杞醋的制作
a.酒精发酵:将枸杞汁糖度调至14~15%,pH为4.0,将果酒干酵母液接入枸杞汁中,接种量为0.15%~0.25%,进行酒精发酵,发酵温度24~32℃,发酵时间为8天,至残糖降至0.2%以下时结束发酵;
b.液态醋酸发酵:取传统风味老醋固态醋酸发酵中的醋酸菌进行提取分离,接种于上述酒精发酵液中,接种量为0.2%~0.4%,进行液态醋酸发酵,发酵温度为30~33℃,发酵时间为2~3天,发酵期间每天检查发酵液的温度、酒精及醋酸含量等,至醋酸含量不再上升时为止;
c.液态醋酸发酵后获得成熟枸杞醋,加入陈酿罐中陈酿3个月,澄清过滤备用;
D.复配
将上述发酵而成的苦荞红曲醋与制作而成的枸杞醋按照重量百分比:60%~70%:30%~40%混合后过滤,然后置于地窖中进行后熟陈酿10个月以上,杀菌后包装即得成品。
本发明传统风味老醋的生产工艺中,吊曲原料的制备采用了中药材作为原料,其中各中药材的功效与作用如下:
茵陈,为菊科植物茵陈蒿的幼苗。其性苦、辛,味微寒,归脾、胃、肝、胆经。有清热利湿,退黄。主治黄疸、小便不利、湿疮瘙痒、传染性黄疸型肝炎等。药理学研究有利胆,保护肝功能,解热,抗炎,降血脂,降压,扩冠等作用。
蒲黄,为香蒲科植物水烛香蒲、东方香蒲或同属植物的干燥花粉。性甘,味平,无毒,归肝、心包经。蒲黄有止血,化瘀,通淋等功效。用于吐血,衄血,咯血,崩漏,外伤出血,经闭痛经,脘腹刺痛,跌扑肿痛,血淋涩痛等。现代医学研究蒲黄有对心血管系统的作用,降低血脂和防治动脉粥样硬化的作用,对平滑肌的作用,促凝血作用,抗炎作用等。
菟丝子,药用部位为双子叶植物旋花科植物菟丝子、南方菟丝子、金灯藤等植物的种子。其性温,味甘,可补肝肾,益精髓,养肌强阴,坚筋骨,益气力,肥健人。主要成分含糖甙、β-胡萝卜素、γ-胡萝卜素、维生素A类物质等。对于下元不足所致的须发早白,腰膝酸软,齿牙动摇等各种病症有较好的疗效,是美容方广泛使用的药品。
本发明的有益效果在于:
(1)本发明苦荞红曲枸杞养生醋的生产工艺中采用了传统风味老醋酿造工艺,该老醋工艺技术关键在于制曲工艺、制醋母工艺和老醋的传统多边发酵工艺。其中,制曲工艺采用了特制吊挂药曲技术,采用麸皮、醋渣和中药为原料,利用天然吊曲生长的多种微生物及活性的特点,促使黑曲霉等微生物菌群迅速生长繁殖;制醋母工艺采用高温液化、糖化工艺,选用苦荞、大米和杂粮培养醋母,选用性能优良红曲和特制吊挂药曲为发酵剂,醋母在发酵的同时,多种微生物发生系列生化反应,生成老醋特有的风味物质,高温液化明显提高了淀粉利用率;老醋的多边发酵工艺应用高温协同发酵,使糖化、醋化同时进行,同时三个反应不分阶段,在适宜的温度条件下,适合酵母菌,醋酸菌及有益微生物的生长代谢,有利醋酸含量的积累提高,形成独特芳香物质。
(2)本发明的生产工艺枸杞醋液态醋酸发酵中醋酸菌是采用风味传统老醋固态醋酸发酵旺盛期的活性菌种进行提取分离,分离得到的菌种菌体强壮,产酸率高,生长适应性强,可耐高温、耐酸、耐酒精。
(3)本发明生产的苦荞红曲枸杞养生醋以苦荞、红曲、枸杞为原料,采用特制吊挂药曲技术经传统风味老醋酿造工艺酿制成苦荞红曲醋,再与液态醋酸发酵制成的枸杞醋复配酿造而成,独特的工艺使成品苦荞红曲枸杞养生醋,不仅营养丰富、色泽红褐,口味酸而鲜甜,具有独特的风味,并且检测出含有功能成分:川芎嗪、总黄酮和枸杞多糖,长期饮用有降血压、降血脂等保健功能,是有益身体健康的养生佳品。
(4)本发明生产苦荞红曲枸杞养生醋中特制的吊挂药曲采用的原料中茵陈、蒲黄、菟丝子均具有抑菌的作用,在生产工艺中所起的作用是抑制不益微生物,有利于有益微生物的生长,从而可以提高产品的出品率,稳定产品的质量。
(5)本发明生产工艺中发酵苦荞红曲醋中红曲在发酵过程中起到酯化作用,对产品可形成香型成分,提高了产品的香气,同时,红曲中含有洛伐他汀成分,使产品具有一定降脂作用。

实施例1
一种苦荞红曲枸杞养生醋的生产工艺,包括如下步骤:
A.特制吊挂药曲
a.配料:分别称取原料醋渣41%、茵陈3%、蒲黄2.5%、菟丝子3.5%、麸皮50%,并粉碎成粉,混合均匀得吊曲原料;
b.拌料、压实:将上述吊曲原料中按15%-30%的重量加入纯水,搅拌均匀后随即装入袋中,吊曲原料在袋中压紧实后得曲坯,再将曲坯压制成块状;
c.吊挂:将块状的曲坯吊挂至室外自然发酵7-8个月,即从8-9月份到来年的3-4月;
d.出曲:当吊挂的曲坯发酵成黑灰的疏松、干状时,出曲得吊曲,备用;
B.苦荞红曲醋的发酵
a.配料:按重量百分比计,称取55%的大米、35%的苦荞、10%的豆类混合筛选去铁去杂后粉碎,粉碎成40~60目的料粉;
b.调浆:在调浆罐内加入3.8~4.0倍于料粉重量的清水,加水调浆16~18°Be′,使淀粉含量调节为15%,然后加热使水温升到50℃;再加入Na2CO3调节pH值至6.2~6.4后,添加大米用量0.2%的2万μ/g耐高温α-淀粉酶和0.2%的CaCl2,使之在92℃时仍保持活性,增强淀粉酶的热稳定性;
c.液化:混合均匀后控制升温至95℃,保持温度进行液化,液化时间为40~60min,通过液化醪碘反应呈棕黄色即为液化完全;
d.糖化:当液化温度降至60℃时,加入上述料粉用量30%的特制吊挂药曲,进行保温糖化2h;当糖化液降温至35℃时,加入上述总量35%的红曲,继续降温至24~28℃,即得糖醪;
e.酒精发酵:将上述糖醪进行发酵,使醪液逐渐升温,品温控制在32~34℃,当品温升至34℃时开始冷却降温至32℃,得发酵醪,每天搅拌发酵醪两次,发酵8天后醋母成熟;
f.制醅发酵:

③醋酸发酵:上述入发酵池的醋醅发酵2~3天,当上层温度达40℃时,开始倒池翻醅,使上中下层的醋醅疏松均匀,温度一致;
④加盐压醅:当醋醅发酵10~11天接近成熟时,品温自然下降,及时加入8~10%的食盐进行压醅,将醋醅压实盖池放置1~2天即得成熟醋醅;总发酵周期为12天;
g.焙醅:
取15%的成熟醋醅入焙烤池,用蒸汽间接加热焙烤醋醅,每天倒池翻醅一次,焙烤醅温度控制在85℃,焙制5天;

一种苦荞红曲枸杞养生醋的生产工艺,包括如下步骤:
A.特制吊挂药曲
a.配料:分别称取原料醋渣43%、茵陈2%、蒲黄2%、菟丝子3%、麸皮50%,并粉碎成粉,混合均匀得吊曲原料;
b.拌料、压实:将上述吊曲原料中按15%-30%的重量加入纯水,搅拌均匀后随即装入袋中,吊曲原料在袋中压紧实后得曲坯,再将曲坯压制成块状;
c.吊挂:将块状的曲坯吊挂至室外自然发酵7-8个月,即从8-9月份到来年的3-4月;

④加盐压醅:当醋醅发酵10~11天接近成熟时,品温自然下降,及时加入8~10%的食盐进行压醅,将醋醅压实盖池放置1~2天即得成熟醋醅;总发酵周期为12天;

C.枸杞醋的制作
a.酒精发酵:将枸杞汁糖度调至14~15%,pH为4.0,将果酒干酵母液接入枸杞汁中,接种量为0.15%~0.25%,进行酒精发酵,发酵温度24~32℃,发酵时间为8天,至残糖降至0.2%以下时结束发酵;
b.液态醋酸发酵:取传统风味老醋固态醋酸发酵中的醋酸菌进行提取分离,接种于上述酒精发酵液中,接种量为0.2%~0.4%,进行液态醋酸发酵,发酵温度为30~33℃,发酵时间为2~3天,发酵期间每天检查发酵液的温度、酒精及醋酸含量等,至醋酸含量不再上升时为止;
c.液态醋酸发酵后获得成熟枸杞醋,加入陈酿罐中陈酿3个月,澄清过滤备用;
D.复配
将上述发酵而成的苦荞红曲醋与制作而成的枸杞醋按照重量百分比:70%:30%混合后过滤,然后置于地窖中进行后熟陈酿10个月以上,杀菌后包装即得成品。
将实施例1~2生产的苦荞红曲枸杞养生醋进行分析测定,其产品卫生指标优于GB2719-2003《食醋卫生指标要求》,各种理化指标和特征物质含量均达到GB/T19777-2013要求。经检测,结果如下表1:
Claims (5)
1.一种苦荞红曲枸杞养生醋,其特征在于:所述苦荞红曲枸杞养生醋是以苦荞为原料,红曲、特制吊挂药曲为发酵剂,经传统风味老醋酿造工艺酿制成苦荞红曲醋,再将酿制成的苦荞红曲醋与枸杞醋复配制得苦荞红曲枸杞养生醋。
2.根据权利要求1所述的苦荞红曲枸杞养生醋的生产工艺,其特征在于:包括如下步骤:
A.特制吊挂药曲
a.配料:按一定比例分别称取原料醋渣、茵陈、蒲黄、菟丝子、麸皮并粉碎成粉,混合均匀得吊曲原料;
b.拌料、压实:将上述吊曲原料中按15%-30%的重量加入纯水,搅拌均匀后随即装入袋中,吊曲原料在袋中压紧实后得曲坯,再将曲坯压制成块状;
c.吊挂:将块状的曲坯吊挂至室外自然发酵7-8个月,即从8-9月份到来年的3-4月;
d.出曲:当吊挂的曲坯发酵成黑灰的疏松、干状时,出曲得吊曲,备用;
B.苦荞红曲醋的发酵
a.配料:将大米、苦荞、豆类按一定比例混合筛选去铁去杂后粉碎,粉碎成40~60目的料粉;
b.调浆:在调浆罐内加入3.8~4.0倍于料粉重量的清水,加水调浆16~18°Be′,使淀粉含量调节为15%,然后加热使水温升到50℃;再加入Na2CO3调节pH值至6.2~6.4后,添加大米用量0.2%的2万μ/g耐高温α-淀粉酶和0.2%的CaCl2,使之在92℃时仍保持活性,增强淀粉酶的热稳定性;
c.液化:混合均匀后控制升温至95℃,保持温度进行液化,液化时间为40~60min,通过液化醪碘反应呈棕黄色即为液化完全;
d.糖化:当液化温度降至60℃时,加入上述料粉用量30%的特制吊挂药曲,进行保温糖化2h;当糖化液降温至35℃时,加入上述总量35%的红曲,继续降温至24~28℃,即得糖醪;
e.酒精发酵:将上述糖醪进行发酵,使醪液逐渐升温,品温控制在32~34℃,当品温升至34℃时开始冷却降温至32℃,得发酵醪,每天搅拌发酵醪两次,发酵8天后醋母成熟;
f.制醅发酵:
①制醅:将麸皮、稻壳、醋母、麸曲按一定重量比充分混合后入发酵池制成醋醅,醋醅的水分控制在60%~63%;
②接种醅:接入发酵旺盛的优良醋醅,并按照10~15%的醋醅量埋入新醅中;
③醋酸发酵:上述入发酵池的醋醅发酵2~3天,当上层温度达40℃时,开始倒池翻醅,使上中下层的醋醅疏松均匀,温度一致;
④加盐压醅:当醋醅发酵10~11天接近成熟时,品温自然下降,及时加入8~10%的食盐进行压醅,将醋醅压实盖池放置1~2天即得成熟醋醅;总发酵周期为12天;
g.焙醅:
取15%的成熟醋醅入焙烤池,用蒸汽间接加热焙烤醋醅,每天倒池翻醅一次,焙烤醅温度控制在85℃,焙制5天;
h.淋醋:
将上述焙烤后成熟醋醅装入带有筛底的淋醋池中,用上次淋醋后所得的二淋醋浸泡成熟白醋醅,淋出的淋水加热至85℃以上,浸泡新鲜焙烤醅,淋取的醋液为头醋即得半成品;
i.煎醋:
将上述头醋加入灭菌罐内进行加热煎醋,保持沸腾30min后,入贮存容器内,并静置澄清;陈酿3个月备用;
C.枸杞醋的制作
a.酒精发酵:将枸杞汁糖度调至14~15%,pH为4.0,将果酒干酵母液接入枸杞汁中,接种量为0.15%~0.25%,进行酒精发酵,发酵温度24~32℃,发酵时间为8天,至残糖降至0.2%以下时结束发酵;
b.液态醋酸发酵:取传统风味老醋固态醋酸发酵中的醋酸菌进行提取分离,接种于上述酒精发酵液中,接种量为0.2%~0.4%,进行液态醋酸发酵,发酵温度为30~33℃,发酵时间为2~3天,发酵期间每天检查发酵液的温度、酒精及醋酸含量等,至醋酸含量不再上升时为止;
c.液态醋酸发酵后获得成熟枸杞醋,加入陈酿罐中陈酿3个月,澄清过滤备用;
D.复配
将上述发酵而成的苦荞红曲醋与制作而成的枸杞醋按照重量百分比:60%~70%:30%~40%混合后过滤,然后置于地窖中进行后熟陈酿10个月以上,杀菌后包装即得成品。
3.根据权利要求2所述的苦荞红曲枸杞养生醋的生产工艺,其特征在于:步骤A特制吊挂药曲所述配料过程中称取的原料按重量百分比计:醋渣40%-45%、茵陈2%-4%、蒲黄2%-3%、菟丝子3%-4%、麸皮50%。
4.根据权利要求2所述的苦荞红曲枸杞养生醋的生产工艺,其特征在于:步骤B苦荞红曲醋的发酵所述配料过程中各原料按一定重量百分比计:大米55%、苦荞35%、豆类10%。
5.根据权利要求2所述的苦荞红曲枸杞养生醋的生产工艺,其特征在于:步骤B制醅发酵所述制醅的原料以主料计,按重量百分比配料为:麸皮115%~125%、稻壳55%~60%、醋母60%、麸曲5%。
