本发明涉及一种口服全营养组合物及其制备方法,所述组合物含有非脂溶性成分、脂溶性成分和纯化水,其中每1000mL含有的非脂溶性成分为蛋白质30‑80g、碳水化合物80‑180g、膳食纤维6‑30g、钠0.5‑2g、氯0.4‑2.0g、镁0.01‑0.6g、磷0.5‑1.5g、钾1‑4g、钙0.3‑2g、铁0.005‑0.05g、锌0.001‑0.05g、铜0‑0.01g、锰0‑0.01g、硒0.01‑0.5mg、碘0‑1.5mg、水溶性维生素0.1‑2g、甜味剂0‑0.5g、复配乳化增稠剂0‑3g;含有的脂溶性成分为脂肪40‑120g、脂溶性维生素0.02‑1g、乳化剂0‑4g。主要用来为糖尿病人及其他对营养素没有特殊要求的患者提供全面而均衡的营养支持。

技术领域
本发明属于医用食品领域,涉及一种口服全营养组合物及其制备方法,主要用于为糖尿病人及其他对营养素没有特殊要求的患者提供全面而均衡的营养支持。
背景技术
糖尿病便是其中的一种具有代表性的终身疾病,据世界卫生组织(WHO)国际糖尿病联盟(IDF)权威统计,目前全球约有2.4亿人患有糖尿病,其发病率达3-5%,对糖尿病人进行营养治疗是2型糖尿病综合治疗的基本组成部分。根据病人病情选用饮食营养,场内或肠外营养支持,或营养补充剂等方法,使病人获得适宜的营养,是减少并发症和患者死亡的有效办法。肠内营养品在欧美等发达国家很受重视,有非常可观的市场份额,但我国的肠内营养品市场份额还处于较低水平。目前随着对营养知识的不断认识以及政策性的引导,我国肠内营养食品的消费额也在逐年上升,从现有的糖尿病肠内营养食品的品种和数量来看,有全营养型的,要素型,组件型的等几种类型,品种和数量少,且多靠进口。因此,我国糖尿病场内营养食品有着很大的市场潜力。
目前,市场上可供选择的适合糖尿病人食用的肠内营养食品还比较缺乏,因此,开发一种稳定的,便于携带和使用,制备方法相对简单的口服糖尿病人用全营养配方组合物,用来为糖尿病人及其他对营养素没有特殊要求的患者提供全面而均衡的营养支持尤为重要。
发明内容
本发明主要涉及一种口服全营养组合物及其制备方法,具体如下:
一种口服全营养组合物,其特征在于所述组合物含有非脂溶性成分、脂溶性成分和纯化水,其中每1000mL含有的非脂溶性成分为蛋白质30-80g、碳水化合物80-180g、膳食纤维6-30g、钠0.5-2g、氯0.4-2.0g、镁0.01-0.6g、磷0.5-1.5g、钾1-4g、钙0.3-2g、铁0.005-0.05g、锌0.001-0.05g、铜0-0.01g、锰0-0.01g、硒0.01-0.5mg、碘0-1.5mg、水溶性维生素0.1-2g、甜味剂0-0.5g、复配乳化增稠剂0-3g;含有的脂溶性成分为脂肪40-120g、脂溶性维生素0.02-1g、乳化剂0-4g。
进一步地,所述蛋白质选自牛奶蛋白、酪蛋白或其混合;碳水化合物选自麦芽糊精、果糖、淀粉或其混合;膳食纤维选自食用胶、菊粉、低聚果糖、可溶性大豆多糖、抗性糊精或其混合;水溶性维生素选自泛酸、生物素、维生素K1、叶酸、维生素C、维生素B1、维生素B2、烟酸、维生素B6、维生素B12或其混合;甜味剂选自三氯蔗糖、甜菊糖苷、赤藓糖醇、木糖醇或其混合;复配乳化增稠剂为食品用乳化剂和增稠剂的混合,优选微晶纤维素、单/双甘油脂肪酸酯、结冷胶、硬酯酰乳酸钠、双乙酰酒石酸单双甘油酯、羧甲基纤维素钠的混合,进一步优选丹尼斯克公司复配乳化增稠剂9566-C;脂肪选自葵花籽油、大豆油、红花籽油、中链甘油三酯或其混合,优选葵花籽油;脂溶性维生素选自维生素E、维生素A、维生素D或其混合;乳化剂为单双酸甘油酯。

同时,本发明还提供了如上所述组合物的制备方法,包含以下步骤:
步骤1:配料
a)按配方分别称量非脂溶性成分、复配乳化增稠剂及甜味剂,待用;
b)按配方分别称量脂溶性成分及乳化剂,待用;
步骤2:溶解
c)将称得的脂溶性成分及乳化剂加热搅拌至全溶,得到油相溶液;
d)将称得的非脂溶性成分蛋白质及碳水化合物干混,用配制总量60%的水50-80℃水温剪切搅拌至全溶;加入复配乳化增稠剂,剪切搅拌至全溶;
e)向步骤d)溶液中加入称得的除水溶性维生素外的剩余非脂溶性成分,搅匀;
步骤3:以高剪切转速向步骤e)溶液中缓慢加入步骤c)溶液,继续循环剪切30min,剪切结束前5min加入用水溶解的水溶性维生素,剪切均匀;
步骤4:磷酸氢二钾调节产品pH为6.0-6.9,定容至配制总体积,制得初乳;
步骤5:将步骤4制得的初乳自循环;定容至总体积,冷却到20℃以下;
步骤6:灌装,灭菌,温度≥100℃,灭菌时间≥8分钟,或UHT 130~135℃灭菌10~30秒,灌装。
另外,本发明还涉及上述组合物用于为糖尿病人及其他对营养素没有特殊要求的患者提供全面而均衡的营养支持的应用。
本发明在研发过程中发现,各成分如乳化剂等的选择对产品稳定性影响很大,乳化剂选择不当则会产生大量沉淀和或浮油,出现分层现象,严重则导致产品变性凝固。
1)乳化剂的选择:
将筛选出的乳化剂单双酸甘油酯和复配的乳化增稠剂一起使用,结果显示单双酸甘油酯使用时产品状态稳定,加速(温度40℃,湿度:70%)放置6个月产品呈均一液体,底部有少量沉淀,但摇晃即消失。
2)钙的选择
钙的来源对产品的稳定性影响也很大,除部分来源于蛋白之外,必要时还需添加其他钙源,本发明对钙源氯化钙、碳酸钙、磷酸氢钙、乳酸钙进行制样筛选:
结果显示筛选出的乳酸钙和磷酸氢钙效果优于其他两种,使用其制备样品,加速(温度40℃,湿度:70%)放置6个月,结果显示选择乳酸钙的产品状态均一,包装瓶底部仅有少量沉淀,稍一晃动即消失,比加入磷酸氢钙的产品更稳定,因此选择乳酸钙作为钙源。
3)蛋白选择
蛋白的种类也直接影响产品的稳定性,本发明对酪蛋白、牛奶蛋白、酪蛋白酸钙、酪蛋白酸钠进行制样筛选:
将筛选出的牛奶蛋白和酪蛋白,制备样品,加速(温度40℃,湿度:70%)放置4个月,其中选择酪蛋白的产品状态均一,包装瓶底部仅有少量沉淀,稍一晃动即消失,比加牛奶蛋白的产品更稳定。
4)配方中磷酸二氢钾的含量选择较为重要,既要保证磷及钾的含量,同时要使产品pH在规定范围6.0-7.0以内。
5)本发明在研发期发现,产品灭菌后包装瓶底部有少量黑色碳粉状沉淀物,影响产品质量,经对矿物盐筛查,发现该沉淀物是由铁盐造成的,利用包埋的乳化焦磷酸铁代替焦磷酸铁纯粉,制备的样品灭菌后则不再有黑色碳粉状沉淀物产生。
本发明所涉及的口服全营养组合物是一款适用于糖尿病和应激性高血糖病人的肠内营养支持的食品,特别添加了六种膳食纤维(菊粉,食用胶,低聚果糖,可溶性大豆多糖,纤维素粉,抗性糊精),可全面维护肠道功能,在对糖尿病人的治疗中提供病人营养支持的同时有效帮助控制血糖,增加胰岛素敏感性,减少糖尿病并发症的发生。
本发明中组合物中各成分含量符合规定,通过实验研究选用适合的乳化剂、蛋白质、钙源等,同时通过控制各个离子含量,既能达到离子平衡,又同时保证产品pH在规定范围6.0-7.0以内,具有稳定性高,便于携带和使用等优点;另外其制备方法简单,成本低,更便于工业化大生产。

a)按配方分别称量非脂溶性成分酪蛋白、菊粉、食用胶、低聚果糖、可溶性大豆多糖、抗性糊精、复配乳化增稠剂9566-C、麦芽糊精、磷酸氢二钾、柠檬酸钠、乳酸钙、氯化镁、乳化焦磷酸铁、硫酸锌、亚硒酸酸钠、维生素C、维生素B1、维生素B2、烟酸、维生素B6、维生素B12、三氯蔗糖,待用;
b)按配方分别称量脂溶性成分葵花籽油、维生素E、维生素A、维生素D、单双酸甘油酯,待用;
步骤2:溶解
c)将称得的脂溶性成分及乳化剂加热搅拌至全溶,得到油相溶液;
d)将称得的非脂溶性成分蛋白质及碳水化合物干混,用配制总量60%的水50-80℃水温剪切搅拌至全溶;加入复配乳化增稠剂,剪切搅拌至全溶;
e)向步骤d)溶液中加入称得的除水溶性维生素外的剩余非脂溶性成分,搅匀;
步骤3:以高剪切转速向步骤e)溶液中缓慢加入步骤c)溶液,继续循环剪切30min,剪切结束前5min加入用水溶解的水溶性维生素,剪切均匀;
步骤4:磷酸氢二钾调节产品pH为6.0-6.9,定容至配制总体积,制得初乳;
步骤5:将步骤4制得的初乳自循环;定容至总体积,冷却到20℃以下;
步骤6:灌装,灭菌,温度≥100℃,灭菌时间≥8分钟,或UHT 130~135℃灭菌10~30秒,灌装。

c)将称得的脂溶性成分加热搅拌至全溶,得到油相溶液;
d)将称得的非脂溶性成分蛋白质及碳水化合物干混,用配制总量60%的水50-80℃水温剪切搅拌至全溶;加入复配乳化增稠剂,剪切搅拌至全溶;
e)向步骤d)溶液中加入称得的除水溶性维生素外的剩余非脂溶性成分,搅匀;

步骤2:溶解
c)将称得的脂溶性成分及乳化剂加热搅拌至全溶,得到油相溶液;
d)将称得的非脂溶性成分蛋白质及碳水化合物干混,用配制总量60%的水50-80℃水温剪切搅拌至全溶;加入复配乳化增稠剂,剪切搅拌至全溶;

Claims (11)
1.一种口服全营养组合物,其特征在于所述组合物含有非脂溶性成分、脂溶性成分和纯化水,其中每1000mL含有的非脂溶性成分为蛋白质30-80g、碳水化合物80-180g、膳食纤维6-30g、钠0.5-2g、氯0.4-2.0g、镁0.01-0.6g、磷0.5-1.5g、钾1-4g、钙0.3-2g、铁0.005-0.05g、锌0.001-0.05g、铜0-0.01g、锰0-0.01g、硒0.01-0.5mg、碘0-1.5mg、水溶性维生素0.1-2g、甜味剂0-0.5g、复配乳化增稠剂0-3g;含有的脂溶性成分为脂肪40-120g、脂溶性维生素0.02-1g、乳化剂0-4g。
2.根据权利要求1所述的组合物,其特征在于所述蛋白质选自牛奶蛋白、酪蛋白或其混合;碳水化合物选自麦芽糊精、果糖、淀粉或其混合;膳食纤维选自食用胶、菊粉、低聚果糖、可溶性大豆多糖、抗性糊精或其混合;水溶性维生素选自泛酸、生物素、维生素K1、叶酸、维生素C、维生素B1、维生素B2、烟酸、维生素B6、维生素B12或其混合;甜味剂选自三氯蔗糖、甜菊糖苷、赤藓糖醇、木糖醇或其混合;复配乳化增稠剂为食品用乳化剂和增稠剂的混合;脂肪选自葵花籽油、大豆油、红花籽油、中链甘油三酯或其混合;脂溶性维生素选自维生素E、维生素A、维生素D或其混合;乳化剂为单双酸甘油酯。
3.一种口服全营养组合物,其特征在于所述组合物含有非脂溶性成分、脂溶性成分和纯化水,其中每1000mL所述组合物含有的非脂溶性成分为酪蛋白30-80g、麦芽糊精80-180g、菊粉1-4g、食用胶1-4g、可溶性大豆多糖1-4g、低聚果糖1-4g、抗性糊精1-4g、磷酸氢二钾3-8g、柠檬酸钠2-7g、乳酸钙0-5g、氯化镁0.3-5g、焦磷酸铁20-80mg、硫酸锌20-100mg、亚硒酸钠200-750μg、碘化钾0-2mg、硫酸锰0-5mg、硫酸铜5-20mg、泛酸0-30mg、生物素0-20mg、叶酸0-20mg、维生素K1 0-2mg、维生素C 100-300mg、维生素B11-5mg、维生素B21-5mg,烟酸10-20mg、维生素B61-6mg,维生素B120.001-0.3mg、甜味剂0-0.5g、复配乳化增稠剂0-3g;脂溶性成分为葵花籽油20-60g、维生素E 20-800mg、维生素A 0.1-4mg、维生素D 20-60μg、乳化剂0-4g。
4.根据权利要求3所述的组合物,其特征在于每1000mL所述组合物含有的非脂溶性成分为酪蛋白30g、麦芽糊精92g、菊粉1.5g、食用胶1.5g、可溶性大豆多糖1.5g、低聚果糖1.5g、抗性糊精1.5g、磷酸氢二钾4.5g、柠檬酸钠3.622g、乳酸钙3.6g、氯化镁2.3g、焦磷酸铁50mg、硫酸锌60mg、亚硒酸钠400μg、碘化钾1.3mg、硫酸锰2.4mg、硫酸铜10mg、泛酸20mg、生物素10mg、叶酸10mg、维生素K1 0.5mg、维生素C 240mg、维生素B12mg、维生素B22mg、烟酸18mg、维生素B6 1.6g、维生素B120.0018mg、甜味剂0.2g、复配乳化增稠剂1g;含有的脂溶性成分为葵花籽油29.2g、维生素E 40mg、维生素A 2mg、维生素D 40μg、乳化剂2g。
5.根据权利要求3所述的组合物,其特征在于每1000mL所述组合物含有的非脂溶性成分为酪蛋白40g、麦芽糊精123g、菊粉2g、食用胶2g、可溶性大豆多糖2g、低聚果糖2g、抗性糊精2g、磷酸氢二钾4.5g、柠檬酸钠3.622g、乳酸钙3.6g、氯化镁2.3g、焦磷酸铁50mg、硫酸锌60mg、亚硒酸钠400μg、碘化钾1.3mg、硫酸锰2.4mg、硫酸铜10mg、泛酸20mg、生物素10mg、叶酸10mg、维生素K1 0.5mg、维生素C 240mg、维生素B12mg、维生素B22mg、烟酸18mg、维生素B61.6mg、维生素B120.0018mg、甜味剂0.2、复配乳化增稠剂1g;含有的脂溶性成分为葵花籽油29.2g、维生素E 40mg、维生素A 2mg、维生素D 40μg、乳化剂2g。
6.根据权利要求3所述的组合物,其特征在于每1000mL所述组合物含有的非脂溶性成分为酪蛋白60g、麦芽糊精172g、菊粉3g、食用胶3g、可溶性大豆多糖3g、低聚果糖3g、抗性糊精3g、磷酸氢二钾6.75g、柠檬酸钠5.43g、氯化镁2.3g、焦磷酸铁50mg、硫酸锌60mg、亚硒酸钠400μg、碘化钾1.3mg、硫酸锰2.4mg、硫酸铜10mg、泛酸10mg、生物素10mg、叶酸10mg、维生素K1 0.5mg、维生素C 240mg、维生素B12mg、维生素B22mg、烟酸18mg、维生素B61.6mg,维生素B120.0018mg、甜味剂0.2g、复配乳化增稠剂1g;脂溶性成分为葵花籽油58.4g、维生素E40mg、维生素A 2mg、维生素D 40μg、乳化剂3g。
7.根据权利要求3所述的组合物,其特征在于每1000mL所述组合物含有的非脂溶性成分为酪蛋白30g、麦芽糊精92g、菊粉1.5g、食用胶1.5g、可溶性大豆多糖1.5g、低聚果糖1.5g、抗性糊精1.5g、磷酸氢二钾4.5g、柠檬酸钠3.622g、乳酸钙3.6g、氯化镁0.34g、焦磷酸铁50mg、硫酸锌60mg、亚硒酸钠400μg、维生素C 240mg、维生素B12mg、维生素B22mg、烟酸18mg、维生素B6 1.6mg、维生素B120.0018mg、甜味剂0.2g、复配乳化增稠剂1g;脂溶性成分为葵花籽油29.2g、维生素E40mg、维生素A 1mg、维生素D 40μg、乳化剂2g。
8.根据权利要求3所述的组合物,其特征在于每1000mL含有的非脂溶性成分为酪蛋白40g、麦芽糊精123g、菊粉2g、食用胶2g、可溶性大豆多糖2g、低聚果糖2g、抗性糊精2g、磷酸氢二钾4.5g、柠檬酸钠3.622g、乳酸钙3.6g、氯化镁0.34g、焦磷酸铁50mg、硫酸锌60mg、亚硒酸钠400μg、维生素C 240mg、维生素B12mg、维生素B22mg、烟酸18mg、维生素B6 1.6mg、维生素B120.0018mg、甜味剂0.2g、复配乳化增稠剂1g;脂溶性成分为葵花籽油39g,维生素E40mg、维生素A 1mg、维生素D 40μg、乳化剂2g。
9.根据权利要求3-8任一项所述的组合物,其特征在于所述焦磷酸铁为乳化焦磷酸铁。
10.一种权利要求1-9任一项所述组合物的制备方法,其特征在于包含以下步骤:
步骤1:配料
a)按配方分别称量非脂溶性成分、复配乳化增稠剂及甜味剂,待用;
b)按配方分别称量脂溶性成分及乳化剂,待用;
步骤2:溶解
c)将称得的脂溶性成分及乳化剂加热搅拌至全溶,得到油相溶液;
d)将称得的非脂溶性成分蛋白质及碳水化合物干混,用配制总量60%的水50-80℃水温剪切搅拌至全溶;加入复配乳化增稠剂,剪切搅拌至全溶;
e)向步骤d)溶液中加入称得的除水溶性维生素外的剩余非脂溶性成分,搅匀;
步骤3:以高剪切转速向步骤e)溶液中缓慢加入步骤c)溶液,继续循环剪切30min,剪切结束前5min加入用水溶解的水溶性维生素,剪切均匀;
步骤4:磷酸氢二钾调节产品pH为6.0-6.9,定容至配制总体积,制得初乳;

11.权利要求1-9任一项所述组合物用于为糖尿病人及其他对营养素没有特殊要求的患者提供全面而均衡的营养支持的应用。
