Abstract

本发明涉及一种适合广大消费者,特别是缺硒地区糖尿病患者,高血脂、肿瘤患者食用的一种保健蔬菜食品。为了我国广大缺硒地区的糖尿病患者、高血脂患者、肿瘤患者能吃上富含硒元素、锌元素的新鲜、营养、食用方便的蜜饯苦瓜,本发明采用一种新型富硒锌苦瓜无糖密饯的生产技术,添加微量元素硒,用甜菊甙替代白沙糖,使糖尿病人不但不会因食用而增加糖量,而且还能促进新陈代谢,且不加防腐剂,采用真空煮制方法,保持苦瓜原有的营养和风味。本发明专为缺硒地区糖尿病患者、高血脂患者、肿瘤患者制作的一种蜜饯食品,可以自己制作,也可由企业、公司、农户一体化规模生产。

技术领域
本发明涉及一种适合广大消费者,特别是糖尿病患者,高血脂、肿瘤患者食用的食疗保健食品,同时,本发明还涉及其栽培、加工方法,属于食品技术领域。
技术背景
苦瓜是人们喜爱的保健食品,因有明显的降低血糖、调节血脂、提高免疫力的作用,因而营养学家、医生都推荐苦瓜为治疗糖尿病的良药,但因保存时间不长,易腐烂,故缺硒地区因运输时间长很难吃到新鲜营养的苦瓜,而蜜饯苦瓜因含有糖液,糖尿病患者不能多食。
发明内容
本发明就是为解决我国广大缺硒地区的人们能吃到新鲜、放心、营养的富硒锌苦瓜及无糖蜜饯苦瓜,能就地栽培富含硒、锌元素的苦瓜及亲手将富硒锌苦瓜蜜饯,解决糖尿病人缺少零食消遣的困难,使缺硒地区的糖尿病人、高血脂病人、肿瘤病人既将苦瓜蜜饯作零食食用,同时又能增强身体免疫功能,提高对糖尿病的防治功效。

具体实施方式
第一步 制作富硒锌有机底肥:将豆饼、鸡粪(杀菌、消毒)、动物油渣(动物油榨油后的渣)、硒(每蔸苦瓜1-5毫克)、锌(每蔸0.03-3克),粉碎、成堆、充分发酵,发酵完成后,摊开充分搅拌,施入事先挖好的土穴内,盖上一层土,栽上苦瓜秧,泼定根水,定植完成。
第二步 制作富硒锌叶面肥
将磷酸二氢钾加硒(每蔸1-5毫克)、锌(每蔸0.03-3克)充分搅拌均匀,再加水稀释,在苦瓜秧成活后至开花前的生长期内连喷施2次,每次间隔5-7天,在上午9点前,下午4点后,将叶片的正反面仔细反复喷施;在苦瓜开花结果后,在可能连续天晴3-5天的情况下,在上午9点前,下午4点后,避开露水及烈日,将苦瓜叶片及小瓜正反面仔细喷施,每隔3-5天喷一次,直至采收。
第三步 制作富硒锌无糖蜜饯苦瓜
将备用苦瓜洗净杂质,纵向切成两半,去瓤、去籽,去两端,切成5毫米左右厚的薄片,用清水冲一遍,将瓜坯放入0.5%氯化钙溶液中浸6-8小时,再用清水漂洗,再放入0.008%醋酸铜和0.2%碳酸钠护液中,90℃温度下加热2分钟,缓慢搅拌,以苦瓜坯煮至半生不熟组织较透明为宜,清水冷却,再沥干水分,放入配好的0.5%海藻酸钠水溶液中,浸渍10-15小时,用甜菊甙配制甜度适量的40%的糖溶液,并加入0.5%柠檬酸和亚硫酸钠,浸渍20小时,将瓜坯从糖液中捞出,在50℃-60℃低温下真空煮糖,然后从糖液中分离瓜坯,沥干糖液送烘干机内,用80℃-85℃烘烤5-6小时,当蜜饯呈半透明状,不粘手时即可定量装入食品塑料袋中,用真空包装机封口,成品检验、入库,即为富硒锌无糖蜜饯苦瓜。

Claims (3)

1.一种富硒锌苦瓜在缺硒地区的栽培方法和富硒锌苦瓜的无糖蜜饯技术,使苦瓜不但含有维生素C、多肽类苦瓜皂苷,含有微量元素硒、锌,甜菊甙,使其对糖尿病患者、高血脂患者、肿瘤患者增强免疫功能,更具保健治疗作用。
2.根据权利要求1所述,一种富硒锌苦瓜在缺硒地区的栽培方法:
①制作富硒锌有机肥:
将豆饼、鸡粪(杀菌、消毒)、动物油渣(动物油榨油后的渣)、硒(每蔸苦瓜1-5毫克)、锌(每蔸0.03-3克),粉碎、成堆、充分发酵,发酵完成后,摊开充分搅拌,施入事先挖好的土穴内,盖上一层土,栽上苦瓜秧,泼定根水,定植完成。
②制作富硒锌叶面肥
将磷酸二氢钾加硒(每蔸1-5毫克),锌(每蔸0.03-3克)充分搅拌均匀,再加水稀释,在苦瓜秧成活后至开花前的生长期内连喷施2次,每次间隔5-7天,在上午9点前,下午4点后,将叶片的正反面仔细反复喷施:在苦瓜开花结果后,在可能连续天晴3-5天的情况下,在上午9点前,下午4点后,避开露水及烈日,将苦瓜叶片及小瓜正反面仔细喷施,每隔3-5天喷一次,直至采摘。
3.根据权利要求1所述,一种富硒锌苦瓜的无糖蜜饯方法:
将备用苦瓜洗净杂质,纵向切成两半,去瓤、去籽,两端切成5毫米左右厚的薄片,用清水冲一遍,将瓜坯放入0.5%氯化钙溶液中浸6-8小时,再用清水漂洗,再放入0.008%醋酸铜和0.2%碳酸钠护液中,90℃温度下加热2分钟(瓜与溶液比例为1∶2),缓慢搅拌,以苦瓜坯煮至半生不熟组织较透明为宜,清水冷却,再沥干水分,放入配好的0.5%海藻酸钠水溶液中,浸渍10-15小时,用甜菊甙配制甜度适量的40%的糖溶液,并加入0.5%柠檬酸和亚硫酸钠,浸渍20小时,将瓜坯从糖液中捞出,在50℃-60℃低温下真空煮糖,然后从糖液中分离瓜坯,沥干糖液送烘干机内,用80℃-85℃烘烤5-6小时,当蜜饯呈半透明状,不粘手时即可定量装入食品塑料袋中,用真空包装机封口,成品检验、入库,即为富硒锌无糖蜜饯苦瓜。
