Abstract
本发明提供一种液态三氯蔗糖组合物及其制备方法,本发明提供的液态三氯蔗糖组合物以质量分数计,各组分的原料用量如下:三氯蔗糖15~40%,保鲜剂0.01~0.1%,弱酸性化合物0.01~0.1%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物包括碳酸。本发明提供的液态三氯蔗糖组合物中选用了碳酸来为液态三氯蔗糖组合物提供弱酸性环境,相比现有技术,能够将液态三氯蔗糖组合物中所需的保鲜剂/防腐剂量降低至现有技术中的1/10左右。
Description
技术领域
本发明属于食品添加剂领域,具体涉及一种液态三氯蔗糖组合物及其制备方法。
背景技术
三氯蔗糖是一种零卡路里高倍甜味剂,其甜味约为蔗糖的600倍,但是不易被人体吸收。自从阿斯巴甜被怀疑具有潜在的致癌性后,三氯蔗糖的使用越发广泛。虽然三氯蔗糖添加在食品或其它产品中,在室温仓储状态下可以保持稳定,但是固体三氯蔗糖单独在高温下,稳定性较差,随着时间延长会发生脱色和分解。因此,如何保持三氯蔗糖的长期稳定性,延长其货架寿命显得十分重要。
现有的液体三氯蔗糖/三氯蔗糖溶液均需要添加较多量的防腐剂才能实现较长的储存期限,虽然添加量在法律法规允许的范围内,亦为大众所不喜;因此,开发一种在低添加量的防腐剂/保鲜剂下仍然能够长期储存的液态三氯蔗糖组合物就有其现实意义。
发明内容
本发明的目的在于克服现有技术中液体三氯蔗糖/三氯蔗糖溶液均需要添加较多量的防腐剂才能实现较长的储存期限的缺陷,而提供了一种在低添加量的防腐剂/保鲜剂下仍然能够长期储存的液态三氯蔗糖组合物。
本发明提供了一种液态三氯蔗糖组合物,其特征在于以质量分数计,各组分的原料用量如下:三氯蔗糖15~40%,保鲜剂0.01~0.15%,弱酸性化合物0.01~0.2%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物包括碳酸。
优选的,以质量分数计,各组分的原料用量如下:三氯蔗糖20~35%,保鲜剂0.01~0.05%,弱酸性化合物0.01~0.1%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物包括碳酸。
优选的,以质量分数计,各组分的原料用量如下:三氯蔗糖20~30%,保鲜剂0.01~0.05%,弱酸性化合物0.05~0.1%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物为碳酸。
优选的,所述弱酸性化合物还包括抗坏血酸。
优选的,所述液态三氯蔗糖组合物还包括风味调节剂,所述风味调节剂的含量为0.01~0.1%。
优选的,所述液态三氯蔗糖组合物的pH值为4.5~5.5。
本发明的第二方面提供了一种液态三氯蔗糖组合物的制备方法,包括如下步骤:
(1)将苯甲酸溶于适量去离子水中,得到悬浊液;
(2)将去离子水抽入反应釜中,加入计量份的三氯蔗糖,搅拌下升温至40~50℃;待溶清后,降至室温;
(3)搅拌下加入苯甲酸悬浊液,加入完毕后继续搅拌至苯甲酸溶解,向溶液中通入CO2至含量符合要求后过滤至GMP车间灌装釜,检测合格后灌装。
当液态三氯蔗糖组合物包括抗坏血酸时,制备方法包括如下步骤:
(1)将苯甲酸溶于适量去离子水中,得到苯甲酸悬浊液;
(2)将抗坏血酸溶于适量去离子水中,得到抗坏血酸水溶液;
(3)将去离子水抽入反应釜中,加入计量份的三氯蔗糖,搅拌下升温至40~50℃;待溶清后,降至室温;
(4)搅拌下加入苯甲酸悬浊液及抗坏血酸水溶液,加入完毕后继续搅拌至苯甲酸溶解,向溶液中通入CO2至含量符合要求后过滤至GMP车间灌装釜,检测合格后灌装。
本发明的有益效果是:本发明提供的液态三氯蔗糖组合物中选用了碳酸来为液态三氯蔗糖组合物提供弱酸性环境,相比现有技术,能够将液态三氯蔗糖组合物中所需的保鲜剂/防腐剂量降低至现有技术中的1/10左右。
具体实施方式
以下通过具体实施例来说明本发明的技术方案,但本发明的保护范围不限于此。
实施例1
一种液态三氯蔗糖组合物的制备方法,包括如下步骤:
(1)将0.1kg苯甲酸加入20L去离子水中,搅拌下得到苯甲酸悬浊液;
(2)将1kg抗坏血酸溶于10L去离子水中,得到抗坏血酸水溶液;
(3)将768L去离子水抽入反应釜中,加入200kg三氯蔗糖,搅拌下升温至40~50℃;待溶清后,降至室温;
(4)搅拌下加入苯甲酸悬浊液和抗坏血酸水溶液,加入完毕后搅拌至苯甲酸完全溶解后,向溶液中通入CO2至饱和后过滤至GMP车间灌装釜,检测合格后灌装。
实施例2
一种液态三氯蔗糖组合物的制备方法,包括如下步骤:
(1)将0.2kg苯甲酸加入90L去离子水中,得到苯甲酸悬浊液;
(2)将去离子水抽入反应釜中,加入300kg三氯蔗糖,搅拌下升温至40~50℃;待溶清后,降至室温;
(3)搅拌下加入苯甲酸悬浊液,加入完毕后继续搅拌至苯甲酸完全溶解,向溶液中通入CO2至含量为0.7g/L后过滤至GMP车间灌装釜,检测合格后灌装。
实施例3
以三氯蔗糖25%、山梨酸钾0.2%、乳酸0.12%、水74.68%的液态三氯蔗糖组合物(均以质量计)为对比例,进行稳定性实验。
将实施例1、2和对比例制得的液态三氯蔗糖组合物在40℃,相对湿度70%的条件下存放,按GB4789.2/3-2010的标准方法,每周检测一次液态三氯蔗糖组合物中的大肠杆菌浓度、酵母浓度和细菌浓度。结果发现,实施例2和对比例制得的液态三氯蔗糖组合物均自第九周开始大肠杆菌浓度开始显著上升;而实施例1制得的液态三氯蔗糖组合物则在第十一周开始大肠杆菌浓度才开始显著上升。
实施例3的结果表明,在较低浓度的保鲜剂/防腐剂下,本发明的技术方案取得了与现有技术相当乃至于更佳的保藏时间。

1.一种液态三氯蔗糖组合物,其特征在于以质量分数计,各组分的原料用量如下:三氯蔗糖15~40%,保鲜剂0.01~0.15%,弱酸性化合物0.01~0.2%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物包括碳酸。
2.如权利要求1所述的液态三氯蔗糖组合物,其特征在于以质量分数计,各组分的原料用量如下:三氯蔗糖20~35%,保鲜剂0.01~0.05%,弱酸性化合物0.01~0.1%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物包括碳酸。
3.如权利要求2所述的液态三氯蔗糖组合物,其特征在于以质量分数计,各组分的原料用量如下:三氯蔗糖20~30%,保鲜剂0.01~0.05%,弱酸性化合物0.05~0.1%,余量为水,其中防腐剂为苯甲酸,弱酸性化合物为碳酸。
4.如权利要求2所述的液态三氯蔗糖组合物,其特征在于所述弱酸性化合物还包括抗坏血酸。
5.如权利要求2所述的液态三氯蔗糖组合物,其特征在于,所述液态三氯蔗糖组合物还包括风味调节剂,所述风味调节剂的含量为0.01~0.1%。
6.如权利要求1~5任一项所述的液态三氯蔗糖组合物,其特征在于,所述液态三氯蔗糖组合物的pH值为5.5~4.5。
7.一种制备如权利要求1~3任一项所述的液态三氯蔗糖组合物的方法,其特征在于包括如下步骤:
(1)将苯甲酸溶于适量去离子水中,得到苯甲酸悬浊液;
(2)将去离子水抽入反应釜中,加入计量份的三氯蔗糖,搅拌下升温至40~50℃;待溶清后,降至室温;
(3)搅拌下加入苯甲酸悬浊液,加入完毕后继续搅拌至苯甲酸溶解,向溶液中通入CO2至含量符合要求后过滤至GMP车间灌装釜,检测合格后灌装。
8.一种制备如权利要求4所述的液态三氯蔗糖组合物的方法,其特征在于包括如下步骤:
(1)将苯甲酸溶于适量去离子水中,得到苯甲酸悬浊液;
(2)将抗坏血酸溶于适量去离子水中,得到抗坏血酸水溶液;
(3)将去离子水抽入反应釜中,加入计量份的三氯蔗糖,搅拌下升温至40~50℃;待溶清后,降至室温;
(4)搅拌下加入苯甲酸悬浊液及抗坏血酸水溶液,加入完毕后继续搅拌至苯甲酸溶解,向溶液中通入CO2至含量符合要求后过滤至GMP车间灌装釜,检测合格后灌装。
