Abstract
本发明涉及一种含α‑亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉及其制备方法,该营养粉由α‑亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素、蛋白粉、麦芽糖组成,其制备方法包括制备乳剂、冷冻干燥等步骤,所得的营养粉风味口感良好,并能够使人们更好的控制营养成分的摄入量,同时还提高了产品中α‑亚麻酸的稳定性。

技术领域
本发明涉及医药保健领域,具体涉及一种含α-亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉及其制备方法。
背景技术
α-亚麻酸属n-3系列多不饱和脂肪酸,是人体必需脂肪酸之一,人体自身不能合成,必须靠外界补充。α-亚麻酸是所有n-3多不饱和脂肪酸的前体,在人体内经生物转化合成为二十碳五烯酸(EPA),进一步经β氧化作用转化为二十二碳六烯酸(DHA),而EPA是体内三烯前列腺素的前体物质,DHA是大脑、视网膜等神经系统磷脂的主要成分。所以α-亚麻酸具有与EPA和DHA相类似的抗氧化、抗动脉粥样硬化、预防心脑血管疾病及减肥、降血脂、改善神经功能的作用。但是α-亚麻酸也具有不饱和脂肪酸所共有的在储存过程中容易氧化的缺点,研究者发现,维生素E和茶多酚是良好的抗氧化剂,可以防止或减慢α-亚麻酸氧化变质的过程,而添加适量维生素E不仅可以达到抗氧化的目的,同时也能弥补多数人的维生素E缺乏。
卵磷脂又名蛋黄素、胆碱磷脂、卵脂,广泛存在于动、植物体内,以蛋黄、大豆内含量较多,具有改善机体神经功能、提高大脑活动、促进脂肪代谢、预防心血管疾病等方面的作用。此外,卵磷脂可以在药物、保健品辅料中作为增溶剂、乳化剂、油脂类的抗氧化剂剂脂质体、脂肪乳剂、注射用大豆磷脂的原料。
可溶性膳食纤维既能溶解于水,又能吸水膨胀,并能被大肠中微生物降解,包括葡聚糖、果胶、树胶、藻胶、豆胶、琼脂和羟甲基纤维素等,具有降低血脂与胆固醇,预防心血管疾病;降低血糖,减少糖尿病发生;预防肿瘤发生及其进展等作用。
中国专利CN102640934A公开了一种制备含α-亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉的方法,其中以蛋黄作为卵磷脂的来源,通过逐步搅拌、混匀,最终得到的混合溶液灭菌后喷雾干燥得到产品。但是由于α-亚麻酸、卵磷脂、维生素E属脂溶性化合物,而可溶性膳食纤维素属水溶性化合物,因此,在制备过程中,α-亚麻酸、卵磷脂、维生素E的溶液能否与可溶性膳食纤维溶液较好的混合得不到保证,从而影响到产品的均一性;同时,没有辅料的情况下得到的产品,人们需要更加注意营养粉的服用量,稍有不慎就可能出现过量的情况,也就是说,人们不能很好的控制α-亚麻酸、卵磷脂、维生素E的摄入量;此外,由于产品定位为营养粉,应该保证在冲调时能够产生足够的香味使人们能够接受甚至喜欢,虽然卵磷脂具有一定的清香味,但是还不足以达到我们所期望的程度。
发明内容
为解决上述技术问题,本发明提供了一种含α-亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉及其制备方法和用途。
具体的,本发明采用如下的技术方案实现本发明的目的:
一种含α-亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉,其组成按重量比例为:
α-亚麻酸18%-48%,
卵磷脂4%~12%,
维生素E 4%~12%,
可溶性膳食纤维素8%-24%,
蛋白粉10%~25%,
麦芽糖7%~20%。
优选的,所述蛋白粉为乳清蛋白粉、大豆分离蛋白粉、酪蛋白粉、豌豆蛋白粉中的一种;
进一步优选地,所述蛋白粉为乳清蛋白粉;
所述营养粉的制备方法包括如下步骤:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以8000~16000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,80~160MPa下均质2~6次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-40~-65℃预冻5~8h,抽真空,使真空度为0.1~0.2mbar,于-30~-60℃升华干燥10~30h;升温至-10~-20℃,继续干燥4~10h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
优选的,所述步骤3)中,高速剪切机的搅拌速度为11000r/min;
优选地,所述步骤4)中,将所得初乳转移至高压均质机中,120MPa下均质3次,得到液体乳剂;
优选的,所述步骤5)中,预冻的条件为-45℃预冻6h;
优选的,所述步骤5)中,升华干燥的条件为-40℃升华干燥18h;
优选的,所述步骤5)中,升华干燥完毕后,升温至-13℃继续干燥8h。
本发明的有益效果在于:
1.本发明利用了卵磷脂、维生素E的抗氧化活性,作为营养粉中的抗氧化剂,同时起到补充卵磷脂和维生素E的作用;
2.本发明利用了卵磷脂的药剂学性质,与α-亚麻酸、维生素E形成微乳,达到稳定α-亚麻酸的目的;
3.本发明使用蛋白粉作为稀释剂,使产品中α-亚麻酸、卵磷脂、维生素E均匀分散的同时,使产品上述三者的含量降低,人们可以更好的控制摄入量;
4.本发明使用麦芽糖作为矫味剂和冷冻干燥的支架剂,改善了产品的口感的同时,能够保证冷冻干燥工艺的顺利进行;
5.本发明利用冷冻干燥技术制备乳剂,低温、低压和稳定的生产条件更有利于α-亚麻酸等有效成分的稳定,而得到的营养粉疏松多孔,更有利于冲调。

实施例1
处方量1kg;α-亚麻酸360g,卵磷脂70g,维生素E70g,可溶性膳食纤维素100g,乳清蛋白粉240g,麦芽糖160g。
制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以11000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,120MPa下均质3次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、乳清蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-45℃预冻6h,抽真空,使真空度为0.2mbar,于-40℃升华干燥18h;升温至-13℃,继续干燥7h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
实施例2

5)冷冻干燥:取麦芽糖、大豆分离蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-40℃预冻5h,抽真空,使真空度为0.1mbar,于-30℃升华干燥12h;升温至-20℃,继续干燥4h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
实施例3
处方量1kg;α-亚麻酸320g,卵磷脂120g,维生素E80g,可溶性膳食纤维素240g,酪蛋白粉100g,麦芽糖140g。
制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以16000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,160MPa下均质6次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、酪蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-65℃预冻8h,抽真空,使真空度为0.2mbar,于-60℃升华干燥30h;升温至-10℃,继续干燥10h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
实施例4
处方量1kg;α-亚麻酸480g,卵磷脂40g,维生素E40g,可溶性膳食纤维素120g,豌豆蛋白粉240g,麦芽糖80g。
制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以10000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,120MPa下均质3次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、豌豆蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-45℃预冻6h,抽真空,使真空度为0.15mbar,于-45℃升华干燥15h;升温至-16℃,继续干燥6h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
实施例5
处方量1kg;α-亚麻酸180g,卵磷脂50g,维生素E50g,可溶性膳食纤维素240g,乳清蛋白粉280g,麦芽糖200g。
制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以12000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,110MPa下均质3次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、乳清蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-50℃预冻5h,抽真空,使真空度为0.15mbar,于-45℃升华干燥15h;升温至-15℃,继续干燥7h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
实施例6
处方量1kg;α-亚麻酸320g,卵磷脂120g,维生素E120g,可溶性膳食纤维素120g,大豆分离蛋白粉180g,麦芽糖140g。
制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以12000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,100MPa下均质3次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、大豆分离蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-40℃预冻7h,抽真空,使真空度为0.2mbar,于-45℃升华干燥22h;升温至-13℃,继续干燥8h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。

处方量1kg;α-亚麻酸240g,卵磷脂60g,维生素E60g,可溶性膳食纤维素200g,乳清蛋白粉240g,麦芽糖180g。
制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以12000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;

制备方法:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌使溶解后滤过,滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以12000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,1500MPa下均质4次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、豌豆蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-55℃预冻7h,抽真空,使真空度为0.15mbar,于-50℃升华干燥13h;升温至-13℃,继续干燥8h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。

参考中国专利CN102640934A“制备含α-亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉的方法”说明书中实施例的方法,按如下步骤制备:
A.制备蛋黄水溶液:
称取40KG无裂纹的鲜鸡蛋,洗去鸡蛋外的污物,打蛋,得10KG蛋黄,将蛋黄置于20L搅拌罐(1)中,搅拌,得10KG蛋黄溶液;
B.制备α-亚麻酸乙脂、维生素E溶液:
称取α-亚麻酸乙酯产品1KG;维生素E 10G,加入搅拌罐(2)中,常温下搅拌均匀,得α-亚麻酸乙酯、维生素E溶液。
C.制备可溶性膳食纤维素水溶液:
称取菊粉1.5KG,称取去离子水6KG,将水加入到10L的加热罐中,将温度设定到80℃,搅拌加热,当罐中水的温度到80℃时加入所称取的菊粉,搅拌至全部溶解,溶液澄清,停止加热冷却至室温,得可溶性膳食纤维素水溶液;
D.制备含α-亚麻酸乙酯、维生素E、可溶性膳食纤维素的蛋黄水溶液.:
将搅拌罐(2)中的溶液倒入搅拌罐(1)中,搅拌10分钟至均匀;将已冷却的可溶性膳食纤维素水溶液输入到搅拌罐(1),搅拌均匀,得含α-亚麻酸乙酯、维生素E、可溶性膳食纤维素的蛋黄水溶液.
E.制备含α-亚麻酸乙酯、卵磷脂、维生素E、可溶性膳食纤维素的营养粉:
将蒸发量为50KG/H的离心喷雾干燥设备的入口温度调节为170℃,出口温度调节为70℃,用泵将所制备的含α-亚麻酸乙酯、维生素E、可溶性膳食纤维素的蛋黄水溶液经胶体磨、巴氏杀菌后,用计量泵将溶液输入塔体,流量以保证稳定的出口温度为准;收集含α-亚麻酸乙酯、卵磷脂、维生素E、可溶性膳食纤维素的营养粉。
试验例:不同制备方法的营养粉表征的比较
初步比较试验例与实施例1、实施例8所制备的营养粉的性状、冲调行为,结果见表1。

由上表的结果可以看出,本发明所制备的营养粉在粉剂的性状、冲调行为等均优于对比例。
Claims (8)
1.一种含α-亚麻酸、卵磷脂、维生素E、可溶性膳食纤维素的营养粉,其组成按重量比例为:
α-亚麻酸18%-48%,
卵磷脂4%~12%,
维生素E 4%~12%,
可溶性膳食纤维素8%-24%,
蛋白粉10%~25%,
麦芽糖7%~20%;
所述的营养粉,其制备方法包括如下步骤:
1)制备水相:取可溶性膳食纤维,加入到纯水中,搅拌溶解后滤过,向滤液中加入卵磷脂,搅拌使分散并溶解,作为水相,60℃保温备用;
2)制备油相:取维生素E加入到α-亚麻酸中,搅拌使充分混匀,作为油相,60℃保温备用;
3)制备初乳:将水相转移至高速剪切机中,以8000~16000r/min搅拌,同时缓慢加入油相,加完后继续剪切5min,得到初乳;
4)制备乳剂:将所得初乳转移至高压均质机中,80~160MPa下均质2~6次,得到液体乳剂;
5)冷冻干燥:取麦芽糖、蛋白粉,加入到所得液体乳剂中,搅拌使溶解后,在-40~ -65℃预冻5~8h,抽真空,使真空度为0.1~0.2mbar,于-30 ~ -60℃升华干燥10~30h;升温至-10 ~-20℃,继续干燥4~10h,得冻干乳剂;
6)制备成品:所得冻干乳剂经粉碎,过筛后,分装即得成品。
2.如权利要求1所述的营养粉,其特征在于,所述蛋白粉为乳清蛋白粉、大豆分离蛋白粉、酪蛋白粉、豌豆蛋白粉中的一种。
3.如权利要求1所述的营养粉,其特征在于,所述蛋白粉为乳清蛋白粉。
4.如权利要求1所述的营养粉,其特征在于,所述步骤3)中,高速剪切机的搅拌速度为11000r/min。
5. 如权利要求1所述的营养粉,其特征在于,所述步骤4)中,将所得初乳转移至高压均质机中,120 MPa下均质3次,得到液体乳剂。
6.如权利要求1所述的营养粉,其特征在于,所述步骤5)中,预冻的条件为-45℃预冻6h。
7.如权利要求1所述的营养粉,其特征在于,所述步骤5)中,升华干燥的条件为-40℃干燥18h。
8.如权利要求1所述的营养粉,其特征在于,所述步骤5)中,升华干燥后,升温至-13℃继续干燥7h。
