技术背景
乳腺癌是女性最常见的恶性肿瘤之一,在我国乳腺癌发病率占女性恶性肿瘤的7%~10%,仅次于宫颈癌,近几年呈逐年上升趋势,严重危害女性身心健康。
化疗作为乳腺癌病人一个重要的治疗手段,具有不可避免的副作用,比如引起病人恶心、呕吐、腹泻、味觉改变、食欲减退、厌食甚至影响营养物质的摄入,导致病人营养不良。营养不良又会导致乳腺癌病人对进一步化疗治疗的耐受力下降。在病人化疗期间,营养不良不仅会影响病人自身的生理和心理状态,而且还会影响后期治疗效果以及病人的生活质量,甚至缩短生存期。早期发现并针对营养不良情况给予适当的治疗十分必要。改善化疗病人的营养状况,不仅有助于机体的恢复,提高免疫功能,而且还能提高对化疗的耐受性、改善治疗效果和生存质量,延长生存期。因此,如何给予营养支持,提高病人自身抵抗力,成为特殊医学用途食品配方设计工作的一个重要课题。
在美国、欧盟、日本等发达国家,特殊医学用途食品都有相应的规定和开发应用;而我国的特殊医学用途配方食品尚处于起步阶段,亟待开发研究。而此类食品市场潜力巨大,经济效益高,因此开发此类食品,具有重大的经济效益和社会意义。

本发明豌豆肽的制备方法为:将含水量25wt.%的豌豆蛋白进行挤压,挤压后,将挤出物冷却、干燥、粉碎,再用中性蛋白酶进行酶解反应。
其中:挤压时的温度为60℃,螺杆转速为165r/min,模孔孔径为12mm。
酶解反应温度为38℃,酶解反应的pH值为7,酶解反应中豌豆蛋白浓度为8.1g/mL,中性蛋白酶的用量为豌豆蛋白用量的12%。
酶解反应后,豌豆肽的DPPH清除率、.OH清除率、O2 .-清除率分别为95%、88%、45%。
本发明所述的乳腺癌营养食品的制备方法如下:以乳腺癌营养食品质量100克计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、叶黄素、染料木素、番茄红素、姜黄素、谷氨酰胺、苹果香精营养成分的原料灭菌后,平均分成5份,形成功能袋;
脂肪营养成分的原料灭菌后,平均分成5份,形成能量袋。
其中:灭菌功率为400-500W,灭菌时间为100-120s。
本发明所述的乳腺癌营养食品的食用方法如下:
目标人群的年龄为18-64岁,不包括孕妇和哺乳期妇女;
用量为:0.4袋/(kg·d),总量不超过25袋;
按照以下两种方法之一食用:
(1)用100-350mL的开水降温至40-60℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀后,直接饮用或经管饲摄入;
(2)将功能袋中的营养物质添加到不含有食盐的日常饮食中食用,日常饮食中含有的脂肪与能量袋中的脂肪含量一致。
本发明产品的销售方式为直接销售给消费者,不通过医院、超市或药店等场所或途径,减少中间环节,降低费用,实现低价薄利销售的特点,消费者可以更经济、更实惠的食用,满足消费者长期食用的要求。

本发明一种乳腺癌营养食品的效果取决于配方组分的各自作用和综合协同作用。
本发明,多途径、多元度综合协同应用于病人饮食,发挥作用,即提高免疫同时清除引起癌细胞生成、增殖的自由基。此外,还根据乳腺癌发病机制和治疗机理,在配方中添加了特定的物质,如染料木素、叶黄素、番茄红素、姜黄素,并界定维生素和矿物元素的型式、含量和比例,比如考虑钙、锌、硒元素的关系、含量维生素A和维生素E的原料选自胡萝卜素和γ-生育酚型式,以及维生素B6、维生素D、硒、钙在配方中比例。此外,还限定了动物蛋白和植物蛋白的比例,在保证氨基酸比例和优质蛋白前提下,最大限度提高植物蛋白比例。严格限定动物油脂和植物油脂的比例以及来源,如油脂以核桃油和鱼油为主,在保证特定比例下,为了降低成本,增加其他来源植物油脂。脂肪以核桃油为主,是因为核桃油能降低体内IGF-l(胰岛素样生长因子1)激素的含量,这种激素与乳腺癌之间存在着关联。
本发明中,豌豆蛋白或豌豆肽具有显著高效的清除各种自由基的功效,DPPH清除率、.OH清除率、O2 .-清除率分别为95%、88%、45%,还具有抗炎症、免疫调节、抑制肾素和ACE酶活性的作用,特别是具有防治癌症引起的与氧化应激有关的并发症作用,该豌豆蛋白或豌豆肽具有选择性清除引起乳腺癌的氧化应激物质。同时,豌豆商业品种尚无转基因品种,致敏性低,无饲喂不耐受性。

制备方法如下:
将豌豆蛋白、豌豆肽、乳清蛋白、豌豆膳食纤维、豌豆抗性淀粉、低聚木糖、赤藓糖醇、羟丙基淀粉、棕榈醋酸视黄酯、维生素D2、D-α-醋酸生育酚琥珀酸钙、γ-生育酚、维生素K1、硝酸硫胺素、核黄素5’-磷酸钠、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、乳酸锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、富硒酵母、叶黄素、染料木素、番茄红素、姜黄素、谷氨酰胺、苹果香精,于425W的灭菌器中灭菌120s,灭菌后,平均分成5份,形成功能袋。
将核桃油、大豆油、紫苏油、海洋鱼油于425W的灭菌器中灭菌120s,灭菌后,平均分成5份,形成能量袋。

1. 一种乳腺癌营养食品,其特征在于每百克营养食品中营养成分如下:蛋白54g-66g、脂肪4.54g-7g、碳水化合物20g-35g、维生素A 400μg-930μg、维生素D 3μg-20μg、维生素E3mg-18mg、维生素K1 20μg-50μg、维生素B1 300μg-650μg、维生素B2 300μg-650μg、维生素B6 300μg-650μg、维生素B12 1μg-10μg、烟酸840μg-950μg、叶酸100μg-240μg、泛酸950μg-1050μg、维生素C 15mg-35mg、生物素10μg-16μg、钠56mg-64mg、钾65mg-75mg、铜100μg-120μg、镁46mg-60mg、铁3mg-7mg、锌1.7mg-2.8mg、锰100μg-141μg、钙85mg-100mg、磷160mg-170mg、碘28μg-34μg、硒40μg-100μg、叶黄素7mg-8.3mg、染料木素20mg-35mg、番茄红素4mg-15mg、姜黄素60mg-150mg、谷氨酰胺1mg-4mg、苹果香精300mg -1g。
2.根据权利要求1所述的乳腺癌营养食品,其特征在于:
蛋白的原料选自豌豆蛋白与乳清蛋白,或豌豆肽与乳清蛋白;
脂肪的原料选自海洋鱼油与核桃油、大豆油、菜籽油、玉米籽油、红花油、紫苏油中的一种或多种;
碳水化合物的原料选自低聚木糖、低聚半乳糖、赤藓糖醇、豌豆膳食纤维、豌豆抗性淀粉、麦芽糊精、羟丙基淀粉、多聚果糖中的一种或多种。
3.根据权利要求1所述的乳腺癌营养食品,其特征在于:
维生素A的原料选自醋酸视黄酯、棕榈酸视黄酯中的一种或多种;
维生素D的原料选自维生素D2或维生素D3中的一种或两种;
维生素E的原料选自D-α-生育酚、D-α-醋酸生育酚、D-α-琥珀酸生育酚、dl -α-醋酸生育酚、dl -α-生育酚、维生素E琥珀酸钙或γ-生育酚中的一种或多种;
维生素B1的原料选自盐酸硫胺素、硝酸硫胺素中的一种或两种;
维生素B2的原料选自核黄素或核黄素5’-磷酸钠中的一种或两种;
维生素B6的原料选自盐酸吡哆醇;
维生素B12的原料选自氰钴胺;
烟酸的原料选自烟酸、烟酰胺中的一种或两种;
泛酸的原料选自D-泛酸钙;
维生素C的原料选自L-抗坏血酸、L-抗坏血酸钠、L-抗坏血酸钙或抗坏血酸棕榈酸酯中的一种或多种;
生物素的原料选自D-生物素。
4.根据权利要求1所述的乳腺癌营养食品,其特征在于:
钠的原料选自氯化钠;
钾的原料选自磷酸氢二钾、磷酸二氢钾、氯化钾、柠檬酸钾中的一种或多种;
铜的原料选自硫酸铜、葡萄糖酸铜中的一种或两种;
镁的原料选自碳酸镁、硫酸镁、氧化镁、氯化镁或L-苏糖酸镁中的一种或多种;
铁的原料选自葡萄糖酸亚铁、富马酸亚铁、硫酸亚铁、乳酸亚铁或琥珀酸亚铁中的一种或多种;
锌的原料选自硫酸锌、柠檬酸锌、柠檬酸锌(三水)、葡萄糖酸锌、氧化锌或乳酸锌中的一种或多种;
锰的原料选自硫酸锰或葡萄糖酸锰中的一种或两种;
钙的原料选自碳酸钙、醋酸钙、氯化钙、柠檬酸钙、葡萄糖酸钙、乳酸钙、磷酸氢钙、磷酸二氢钙、磷酸三钙(磷酸钙)、硫酸钙、L-乳酸钙或甘油磷酸钙中的一种或多种;
磷的原料选自磷酸二氢钾;
碘的原料选自碘酸钾;
硒的原料选自亚硒酸钠、富硒酵母或L-硒-甲基硒代半胱氨酸中的一种或多种。
5.根据权利要求2所述的乳腺癌营养食品,其特征在于:豌豆肽的制备方法为:将含水量25wt.%的豌豆蛋白进行挤压,挤压后,将挤出物冷却、干燥、粉碎,再用中性蛋白酶进行酶解反应。
6.根据权利要求5所述的乳腺癌营养食品,其特征在于:酶解反应温度为38℃,酶解反应的pH值为7,酶解反应中豌豆蛋白浓度为8.1g/mL,中性蛋白酶的用量为豌豆蛋白用量的12%;酶解反应后,豌豆肽的DPPH清除率、.OH清除率、O2 .-清除率分别为95%、88%、45%。
7.一种权利要求1所述的乳腺癌营养食品的制备方法,其特征在于:以乳腺癌营养食品质量100克计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、叶黄素、染料木素、番茄红素、姜黄素、谷氨酰胺、苹果香精营养成分的原料灭菌后,平均分成5份,形成功能袋;
脂肪营养成分的原料灭菌后,平均分成5份,形成能量袋。
8.根据权利要求7所述的乳腺癌营养食品的制备方法,其特征在于:灭菌功率为400-500W,灭菌时间为100-120s。
9.一种权利要求1所述的乳腺癌营养食品的食用方法,其特征在于:
目标人群的年龄为18-64岁,不包括孕妇和哺乳期妇女;
用量为:0.4袋/(kg·d),总量不超过25袋;
按照以下两种方法之一食用:
(1)用100-350mL的开水降温至40-60℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀后,直接饮用或经管饲摄入;
(2)将功能袋中的营养物质添加到不含有食盐的日常饮食中食用,日常饮食中含有的脂肪与能量袋中的脂肪含量一致。
10.一种权利要求1所述的乳腺癌营养食品的销售方式,其特征在于:销售方式为不通过医院、超市或药店,直接销售给消费者。
