本发明涉及保健食品技术领域,具体涉及一种富硒蛹虫草面条及其制备方法。
背景技术
在怀孕期间孕妇由于子宫扩张和相关性腺激素紊乱,尤其是“下丘脑-垂体-性腺轴”相关激素紊乱包括促黄体生成素释放激素、促卵泡成熟素、促黄体生成素、雌激素、孕激素等,会导致孕妇机体的水、盐、蛋白质、糖、脂肪的代谢紊乱,使得孕妇体重增加,产后身材臃肿,常常会造成产后妈妈容易出现自卑、畏惧、急躁等异常心理,影响产后恢复的效率。因此,许多新妈妈在产后急于恢复身材而盲目减肥,导致严重影响健康的现象比比皆是。目前常见产后减肥塑形的方式有节食、运动及药物减肥。但是,产妇机体处于特殊的生理时期,其生理生化代谢与其他时期不同,因此不能盲目使用常规的减肥方法。产后节食会加重产妇身体虚弱,且导致产妇机体缺乏营养,无法为新生儿提供营养充足的乳汁,还会减慢产妇产后恢复的速度,甚至会引发各种产后并发症;产后运动会加剧子宫损伤,导致子宫康复放慢甚至引起出血,严重时还会引起手术断面或外阴切口再次遭受损伤;采用药物减肥容易降低产妇食欲,导致内分泌失调,增加肝、肾脏负担并造成肠胃功能紊乱,更重要的是带来不可忽视的毒副作用,可通过产妇乳汁对新生儿的健康造成影响。因此,如何科学而有效安全地帮助产后妈妈快速恢复减脂塑形,是众多产妇共同关注的问题。
面条是中国传统饮食中的一种,传统面条是以小麦面粉为主要原料加工制成的,市面上的面条存在着品种单一,营养单调,口味较少等缺点,难以达到人们对营养和健康饮食的需求,因此,人们开始投入到研发具有营养保健价值的面条制备当中,以满足人们对生活质量越来越高的需求。目前已经出现不少与减脂有关的面条制备相关的中国专利申请,如中国专利《一种荷叶降脂保健面及其制备方法》(专利申请号:CN201410152036.1)、中国专利《一种葛根保健面条及其制备方法》(专利申请号:CN201410144694.6)、中国专利《一种营养保健型复合面条》(专利申请号:CN03106549.X)、中国专利《一种普洱茶生面条的生产方法》(专利申请号:CN200810233539.6)、中国专利《一种山楂保健面条及其制备方法》(专利申请号:CN201410152156.1),这些专利制备的面条都具有一定的降脂效果,能够帮助塑造体形,但是现有的具有降脂功效的面条制备相关的发明所涉及的原料成分配合方式简单,且功能范围笼统,虽具有一定的减脂塑形效果,但不能科学地配合产后机体特殊的生理生化规律,不能精准地调控产后机体代谢,无法达到安全有效帮助产妇产后恢复体形的效果。
发明内容
为了解决上述问题,本发明提供了一种富硒蛹虫草面条及其制备方法,添加了富硒蛹虫草粉、荷叶总生物碱、桔梗皂苷复配作为功效成分制作面条,使制得的面条能够配合产妇特殊的内分泌代谢规律,科学地调控产妇机体的脂质代谢作用,防治产后体内脂肪堆积,温和有效地帮助孕妇产后降脂塑形,同时,精准地提供产妇机体所需的全面营养,有效平衡产妇机体的营养结构,促进产妇产后身体快速恢复。

一种富硒蛹虫草面条,由以下重量份组成:富硒蛹虫草粉5-10份、藕粉5-10份、核桃粉5-8份、小米粉30-35份、大豆粉20-30份、当归12-15份、川芎10-12份、益母草20-30份、桃仁10-12份、白芍10-12份、炙甘草6-9份、熟地12-15份、黄芪12-15份、荷叶总生物碱0.5-1份、桔梗皂苷0.5-1份、红糖2-3份、食盐1-2份、水30-35份。
优选地,一种富硒蛹虫草面条,由以下重量份组成:富硒蛹虫草粉7.5份、藕粉7.5份、核桃粉6.5份、小米粉32.5份、大豆粉25份、当归13.5份、川芎11份、益母草25份、桃仁11份、白芍11份、炙甘草7.5份、熟地13.5份、黄芪13.5份、荷叶总生物碱0.75份、桔梗皂苷0.75份、红糖2.5份、食盐1.5份、水33.5份。
优选地,所述富硒蛹虫草的制备方法为:a.取蛹虫草斜面菌种在24℃活化24h后,转接至麸皮颗粒培养基中培养,接种量为0.3cm2,在24℃下培养至培养基长满蛹虫草;b.取20g麦芽加水溶解,用微火煮沸20min,搅拌溶解后,加入溶解的0.5g硫酸镁、1.5g磷酸二氢钾、2g蛋白胨、4.5g羧甲基纤维素、6mg亚硒酸钠,搅拌均匀,调节pH至6.8,加水至1000ml,在0.11MPa下灭菌30min,得到富硒液体培养基;c.将麸皮颗粒培养基上长满的蛹虫草转接至液体发酵培养基中,接入量为1cm2,在24℃,180r/min条件下摇床培养25天,取出培养液,经3000r/min离心10min,取下层纯菌丝体于80℃中烘干6h,粉碎过80-120目筛,得到富硒蛹虫草粉。
优选地,所述荷叶总生物碱的制备方法为:采集新鲜荷叶,用含0.1%氯化钠,pH为3.0的磷酸水溶液常温浸泡3min,淋洗沥干后于70℃鼓风烘干至含水量8%以下,干燥后粉碎至40-60目,取荷叶粉末,加入料液比为1:20的75%乙醇溶液,调节pH至5,在60℃,400W下超声提取60min,过滤取滤液用旋转蒸发仪蒸干,加入1%盐酸溶液,超声使之完全溶解,过滤取滤液,用2%氨水溶液调节pH至10,过滤取滤液,用正丁醇萃取,将萃取液用0.45um滤膜过滤,减压蒸干,得到荷叶总生物碱。
优选地,所述桔梗皂苷的制备方法为:桔梗总皂苷粗品提取:取桔梗根5kg,干燥粉碎,用水提取3次,.第一次加入8倍量水提取90min,第二次加入8倍量水提取60min,第三次加入8倍量水提取60min,合并3次提取液,过滤,浓缩至10L然后经3000r/min离心15min,取上清液过径高比为1:5的AB-8型大孔树脂柱,吸附30min后,分别用5BV的去离子水和70%乙醇冲洗,收集乙醇洗脱液,回收乙醇后,浓缩干燥,得到桔梗皂苷。
本发明还提供一种富硒蛹虫草面条的制备方法,包括如下步骤:
(1)分别将当归、川芎、益母草、桃仁、白芍、炙甘草、熟地、黄芪粉碎过40目筛,按重量份将各粉末混合均匀,加入10倍量煎煮3次,每次2h,过滤,合并3次煎液,用0.2μm微孔滤膜过滤,得到中药提取液;
(2)按重量份将荷叶总生物碱、桔梗皂苷、食盐、红糖混合,加水溶解,得到混合液;
(3)按重量份将富硒蛹虫草粉、藕粉、核桃粉、小米粉、大豆粉混合过筛,加入步骤(1)的中药提取液和步骤(2)的混合液,搅拌均匀后,放入和面机中以79-100r/min的转速和面12-18min,得到面团;
(4)将步骤(3)和好的面团放入熟化机中以5-10r/min的转速熟化15-25min,再经锟压,切条,制成粗细2mm的面条;
(5)将步骤(4)制好的面条放入烘房中烘干至面条含水量14%以下,待面条冷却至15-25℃时,按长度为180-260mm切割,然后将面条密封包装,得到本发明的富硒蛹虫草面条。
本发明所述各主要功效成分作用机理如下:
蛹虫草不仅含有能提高人体免疫机能的生物活性物质,如虫草多糖和虫草酸,还含有30多种人体所需的微量元素,其中P的含量是冬虫夏草的3.5倍,Zn、Cu、Fe的含量是28种补益药平均值的1.8、2.1和8.8倍,蛹虫草具有抗菌性,能够提高孕妇的免疫功能,还能降低体内胆固醇和甘油三酯含量。
荷叶具有清热解暑,升发脾阳,可平稳血压,防治高血压、高血脂等疾病的功效,其所含荷叶总生物碱能密布聚集在人体肠壁上,形成一层脂肪隔离膜,阻止脂肪吸收,防止脂肪堆积,能够有效打通人体各类代谢通路,清除自由基,帮助调节脏腑功能。
桔梗皂苷能平衡机体对食物脂肪的吸收,调节胰脂肪酶活性,控制胃肠道的脂肪摄入量,从而具有降低胆固醇含量和抗肥胖作用。
黄芪补气生血、桃仁活血祛瘀共为君药,当归活血而滞去,养血而新血生,熟地补血益精,共为臣药,佐以白术补气健脾,使补血而不呆滞脾胃,益母草入任脉,祛瘀缩宫,引血下行,川芎血中气药,白芍收敛阴养血,再加甘草调和诸药,将上述药物复配,能够温和地收缩产后子宫,促进孕妇产后身体的恢复。
莲藕含有丰富的淀粉、维生素和矿物质,可健脾益胃,润燥养阴,行血化瘀,清热生乳,能帮助孕妇及早清除腹内积存的淤血,增进食欲,促进消化。
红糖含铁量比白糖多1倍,含钙量比白糖多2倍,并含有胡萝卜素、维生素B、烟酸及微量元素锰和锌等,能帮助孕妇产后子宫收缩,促进恶露排出,并有止血的作用。

本发明提供的一种富硒蛹虫草面条及其制备方法,针对产妇产后机体内分泌代谢规律,弥补了面食制作技术相关现有技术中原料成分配合单一,缺乏针对性的缺陷,添加了富硒蛹虫草粉、荷叶总生物碱、桔梗皂苷复配作为功效成分精准地添加至面条中,使制得的面条能够通过调节细胞代谢速率与调控酶活性双向协同平衡产妇机体的脂质代谢作用,同时提供充足的蛋白质、维生素和矿物质,完善产妇的营养结构,使产妇能够在维持身体营养供应充足的同时减少脂肪和胆固醇的吸收,达到温和安全的降脂塑形的效果。另外,本发明还针对产妇产后的体质特点,在面条中精准地添加莲藕和红糖复配,并加入黄芪、桃仁、当归、熟地、白术、益母草、川芎、白芍、甘草等中草药复配达到君臣佐使的效果,使制得的面条不仅具有清甜口感,增进产妇食欲,还能够帮助产妇产后子宫恢复,具有排毒养颜,止血补血的显著作用,达到产后塑形与产后康复科学并行的效果。

实施例1
一种富硒蛹虫草面条,由以下重量份组成:富硒蛹虫草粉5份、藕粉10份、核桃粉5份、小米粉35份、大豆粉20份、当归15份、川芎10份、益母草30份、桃仁10份、白芍12份、炙甘草6份、熟地15份、黄芪12份、荷叶总生物碱1份、桔梗皂苷0.5份、红糖3份、食盐1份、水35份。
所述富硒蛹虫草的制备方法为:a.取蛹虫草斜面菌种在24℃活化24h后,转接至麸皮颗粒培养基中培养,接种量为0.3cm2,在24℃下培养至培养基长满蛹虫草;b.取20g麦芽加水溶解,用微火煮沸20min,搅拌溶解后,加入溶解的0.5g硫酸镁、1.5g磷酸二氢钾、2g蛋白胨、4.5g羧甲基纤维素、6mg亚硒酸钠,搅拌均匀,调节pH至6.8,加水至1000ml,在0.11MPa下灭菌30min,得到富硒液体培养基;c.将麸皮颗粒培养基上长满的蛹虫草转接至液体发酵培养基中,接入量为1cm2,在24℃,180r/min条件下摇床培养25天,取出培养液,经3000r/min离心10min,取下层纯菌丝体于80℃中烘干6h,粉碎过80-120目筛,得到富硒蛹虫草粉。
所述荷叶总生物碱的制备方法为:采集新鲜荷叶,用含0.1%氯化钠,pH为3.0的磷酸水溶液常温浸泡3min,淋洗沥干后于70℃鼓风烘干至含水量8%以下,干燥后粉碎至40-60目,取荷叶粉末,加入料液比为1:20的75%乙醇溶液,调节pH至5,在60℃,400W下超声提取60min,过滤取滤液用旋转蒸发仪蒸干,加入1%盐酸溶液,超声使之完全溶解,过滤取滤液,用2%氨水溶液调节pH至10,过滤取滤液,用正丁醇萃取,将萃取液用0.45um滤膜过滤,减压蒸干,得到荷叶总生物碱。
所述桔梗皂苷的制备方法为:桔梗总皂苷粗品提取:取桔梗根5kg,干燥粉碎,用水提取3次,.第一次加入8倍量水提取90min,第二次加入8倍量水提取60min,第三次加入8倍量水提取60min,合并3次提取液,过滤,浓缩至10L然后经3000r/min离心15min,取上清液过径高比为1:5的AB-8型大孔树脂柱,吸附30min后,分别用5BV的去离子水和70%乙醇冲洗,收集乙醇洗脱液,回收乙醇后,浓缩干燥,得到桔梗皂苷。
上述一种富硒蛹虫草面条的制备方法,包括以下步骤:
(1)分别将当归、川芎、益母草、桃仁、白芍、炙甘草、熟地、黄芪粉碎过40目筛,按重量份将各粉末混合均匀,加入10倍量煎煮3次,每次2h,过滤,合并3次煎液,用0.2μm微孔滤膜过滤,得到中药提取液;
(2)按重量份将荷叶总生物碱、桔梗皂苷、食盐、红糖混合,加水溶解,得到混合液;
(3)按重量份将富硒蛹虫草粉、藕粉、核桃粉、小米粉、大豆粉混合过筛,加入步骤(1)的中药提取液和步骤(2)的混合液,搅拌均匀后,放入和面机中以79-100r/min的转速和面12-18min,得到面团;
(4)将步骤(3)和好的面团放入熟化机中以5-10r/min的转速熟化15-25min,再经锟压,切条,制成粗细2mm的面条;
(5)将步骤(4)制好的面条放入烘房中烘干至面条含水量14%以下,待面条冷却至15-25℃时,按长度为180-260mm切割,然后将面条密封包装,得到本发明的富硒蛹虫草面条。
实施例2
一种富硒蛹虫草面条,由以下重量份组成:富硒蛹虫草粉10份、藕粉5份、核桃粉8份、小米粉30份、大豆粉30份、当归12份、川芎12份、益母草20份、桃仁12份、白芍10份、炙甘草9份、熟地12份、黄芪15份、荷叶总生物碱0.5份、桔梗皂苷1份、红糖2份、食盐2份、水30份。

试验例1
取本发明实施例1-3和对比例1-3制备的面条进行营养成分含量的测定,实验结果如下表1所示:

由上表可知,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加富硒蛹虫草粉,可将面条中蛋白质、硒元素、铁元素和锌元素的含量分别提高98.9%、131.1%、78.4%和92.7%;通过实施例1与对比例2的对比可知,在本发明制备的面条中添加荷叶总生物碱,可将面条中蛋白质、硒元素、铁元素和锌元素的含量分别提高60.2%、18.2%、16.4%和47.7%;通过实施例1与对比例3的对比可知,在本发明制备的面条中添加桔梗皂苷,可将面条中蛋白质、硒元素、铁元素和锌元素的含量分别提高41.0%、20.9%、10.9%和39.8%。
综上可知,在本发明制备的面条中加入富硒蛹虫草粉、荷叶总生物碱和桔梗皂苷进行复配,使制得的面条能够为产妇提供充足的蛋白质、维生素等营养素,并精准地为产妇供应全面的微量元素,其中硒元素的补充还能够提高产妇机体对营养物质的吸收利用率,达到帮助产妇体质快速恢复的效果。
试验例2
选择孕期2-4d的小鼠,体重20-24g的母鼠进行实验在孕鼠妊娠期供应高脂饲料(高脂饲料配方:胆固醇1%、蛋黄粉10%、猪油10%、基础饲料79%),自由取水,在相同条件下饲养至生产,选择60只生产后体重为26-30g的产后小鼠,随机分成6组,每组10只,从孕鼠产下仔鼠当天开始,每组母鼠每天灌胃本发明实施例1-3和对比例1-3制备的面条煮熟面糊25g/kg,共4周,各组的其他培养条件相同。实验结束后,分别测定产后小鼠血清总胆固醇(TC)、甘油三酯(TC)、和平均体重。测定结果如下表2所示:

如上表所示,通过实施例1与对比例1的对比可知,在本发明制备的面条中添加富硒蛹虫草粉,可将产后小鼠的血清总胆固醇和甘油三酯含量降低14.7%和19.8%,并将产后小鼠体重降低24.3%;通过实施例1与对比例2的对比可知,在本发明制备的面条中添加荷叶总生物碱,可将产后小鼠的血清总胆固醇和甘油三酯含量降低9.4%和10.2%,并将产后小鼠体重降低22.5%;通过实施例1与对比例3的对比可知,在本发明制备的面条中添加桔梗皂苷,可将产后小鼠的血清总胆固醇和甘油三酯含量降低11.9%和18.5%,并将产后小鼠体重降低21.4%。
综上所述,在本发明制备的面条中添加富硒蛹虫草粉、荷叶总生物碱、桔梗皂苷进行复配,使制得的面条能有效降低血清总胆固醇和甘油三酯的含量,具有调节机体脂质代谢的作用,有效帮助产后体质恢复和产后降脂塑形。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (6)
1.一种富硒蛹虫草面条,其特征在于,由以下重量份组成:富硒蛹虫草粉5-10份、藕粉5-10份、核桃粉5-8份、小米粉30-35份、大豆粉20-30份、当归12-15份、川芎10-12份、益母草20-30份、桃仁10-12份、白芍10-12份、炙甘草6-9份、熟地12-15份、黄芪12-15份、荷叶总生物碱0.5-1份、桔梗皂苷0.5-1份、红糖2-3份、食盐1-2份、水30-35份。
2.根据权利要求1所述的一种富硒蛹虫草面条,其特征在于,由以下重量份组成:富硒蛹虫草粉7.5份、藕粉7.5份、核桃粉6.5份、小米粉32.5份、大豆粉25份、当归13.5份、川芎11份、益母草25份、桃仁11份、白芍11份、炙甘草7.5份、熟地13.5份、黄芪13.5份、荷叶总生物碱0.75份、桔梗皂苷0.75份、红糖2.5份、食盐1.5份、水33.5份。
3.根据权利要求1或2所述的一种富硒蛹虫草面条,其特征在于,所述富硒蛹虫草的制备方法为:
a.取蛹虫草斜面菌种在24℃活化24h后,转接至麸皮颗粒培养基中培养,接种量为0.3cm2,在24℃下培养至培养基长满蛹虫草;
b.取20g麦芽加水溶解,用微火煮沸20min,搅拌溶解后,加入溶解的0.5g硫酸镁、1.5g磷酸二氢钾、2g蛋白胨、4.5g羧甲基纤维素、6mg亚硒酸钠,搅拌均匀,调节pH至6.8,加水至1000ml,在0.11MPa下灭菌30min,得到富硒液体培养基;
c.将麸皮颗粒培养基上长满的蛹虫草转接至液体发酵培养基中,接入量为1cm2,在24℃,180r/min条件下摇床培养25天,取出培养液,经3000r/min离心10min,取下层纯菌丝体于80℃中烘干6h,粉碎过80-120目筛,得到富硒蛹虫草粉。
4.根据权利要求1或2所述的一种富硒蛹虫草面条,其特征在于,所述荷叶总生物碱的制备方法为:采集新鲜荷叶,用含0.1%氯化钠,pH为3.0的磷酸水溶液常温浸泡3min,淋洗沥干后于70℃鼓风烘干至含水量8%以下,干燥后粉碎至40-60目,取荷叶粉末,加入料液比为1:20的75%乙醇溶液,调节pH至5,在60℃,400W下超声提取60min,过滤取滤液用旋转蒸发仪蒸干,加入1%盐酸溶液,超声使之完全溶解,过滤取滤液,用2%氨水溶液调节pH至10,过滤取滤液,用正丁醇萃取,将萃取液用0.45um滤膜过滤,减压蒸干,得到荷叶总生物碱。
5.根据权利要求1或2所述的一种富硒蛹虫草面条,其特征在于,所述桔梗皂苷的制备方法为:桔梗总皂苷粗品提取:取桔梗根5kg,干燥粉碎,用水提取3次,.第一次加入8倍量水提取90min,第二次加入8倍量水提取60min,第三次加入8倍量水提取60min,合并3次提取液,过滤,浓缩至10L然后经3000r/min离心15min,取上清液过径高比为1:5的AB-8型大孔树脂柱,吸附30min后,分别用5BV的去离子水和70%乙醇冲洗,收集乙醇洗脱液,回收乙醇后,浓缩干燥,得到桔梗皂苷。
6.一种制备如权利要求1-5任一项所述的一种富硒蛹虫草面条的方法,其特征在于,包括以下步骤:
(1)分别将当归、川芎、益母草、桃仁、白芍、炙甘草、熟地、黄芪粉碎过40目筛,按重量份将各粉末混合均匀,加入10倍量煎煮3次,每次2h,过滤,合并3次煎液,用0.2μm微孔滤膜过滤,得到中药提取液;
(2)按重量份将荷叶总生物碱、桔梗皂苷、食盐、红糖混合,加水溶解,得到混合液;
(3)按重量份将富硒蛹虫草粉、藕粉、核桃粉、小米粉、大豆粉混合过筛,加入步骤(1)的中药提取液和步骤(2)的混合液,搅拌均匀后,放入和面机中以79-100r/min的转速和面12-18min,得到面团;
(4)将步骤(3)和好的面团放入熟化机中以5-10r/min的转速熟化15-25min,再经锟压,切条,制成粗细2mm的面条;
(5)将步骤(4)制好的面条放入烘房中烘干至面条含水量14%以下,待面条冷却至15-25℃时,按长度为180-260mm切割,然后将面条密封包装,得到本发明的富硒蛹虫草面条。
