本发明公开了一种油茶的加工工艺,本发明既达到有效清除油茶原油本身存在的和生产过程中产生的有害成分以及油茶的不宜气味,又达到精制后能使油茶籽油所特有的各种天然有益营养成分得以最大化的保留,且在加工过程中不会产生任何有害物质。

本发明涉及油茶加工领域。
背景技术
茶油是从山茶科油茶树种子中获得的,不含黄曲霉毒素、芥酸、棉酚等人体有害物质,富含天然VA、VD、VE、VK、胡萝卜素,以及茶多酚、角鲨烯等多种活性成分,具有增强血管弹性和韧性,延缓动脉粥样硬化,增加肠胃吸收功能,促进内分泌腺体激素分泌,防止神经功能下降,提高人体免疫力。近年来,随着膳食结构的改善,人们保健意识的增强,茶油以其丰富的营养和功能得到消费者的青睐,发展迅速。
发明内容
本发明的目的在于提供一种油茶的加工工艺,采用低温冷榨工艺,在去除有害成分的同时最大保留有效成分,并提高出油率。
为实现上述目的,本发明采用如下的技术方案:
一种油茶的加工工艺,包括以下步骤:
(1)原料处理:选取成熟油茶籽,清除杂质,晾晒4-12小时,控制含水量在10-15%;送入剥壳机剥壳,然后粉碎,粉碎至80-200目;
(2)蒸制:将粉碎物蒸制,蒸汽压力为0.1-0.2MPa、温度为105-110℃,蒸炒时间为50-60分钟;
(3)冷压榨取油:将蒸制后的粉碎物做成饼,随即送入榨油机压榨得原油;
(4)高精过滤:原油在室温下使用滤布过滤得初级茶油;
(5)水化脱胶:控制初级茶油的温度为30-40℃,向初级茶油中加入温度60-70℃,浓度6-8%的盐水,搅拌15-18min,静置2-4小时分层,去除底层杂质和水;
(6)脱酸:将脱胶处理后的初级茶油控制温度在40-50℃,加入浓度为10-12%的氢氧化钠溶液,搅拌15-20min,再加入温度60-70℃,浓度12-15%的盐水,静置4-8小时分层,去除底层杂质和水;
(7)脱色:将脱酸处理后的初级茶油控制温度在80-90℃,加入初级茶油重量1-3%的活性白土,在真空条件下搅拌15-20min,使油色呈淡黄色,然后冷却至50-60℃,过滤除去脱色剂;
(8)脱臭:将脱色处理后的初级茶油在温度140-150℃,真空度200-260Pa下,蒸馏40-60min;
(9)脱蜡:将脱臭处理后的初级茶油冷却至4-5℃,析出晶体蜡,过滤后得成品茶油。
优选的,步骤(1)油茶籽剥壳后的含壳率在4-6%。
优选的,步骤(6)脱酸后的茶油中游离脂肪酸的含量小于0.5%。
本发明的有意效果:本发明既达到有效清除油茶原油本身存在的和生产过程中产生的有害成分以及油茶的不宜气味,又达到精制后能使油茶籽油所特有的各种天然有益营养成分得以最大化的保留,且在加工过程中不会产生任何有害物质。
具体实施方式
以下通过具体实施例对本发明技术方案作进一步描述。
实施例1
(1)原料处理:选取成熟油茶籽,清除杂质,晾晒4-12小时,控制含水量在10-15%;送入剥壳机剥壳,油茶籽剥壳后的含壳率在4%,然后粉碎,粉碎至140目;
(2)蒸制:将粉碎物蒸制,蒸汽压力为0.1-0.2MPa、温度为105℃,蒸炒时间为50-60分钟;
(3)冷压榨取油:将蒸制后的粉碎物做成饼,随即送入榨油机压榨得原油;
(4)高精过滤:原油在室温下使用滤布过滤得初级茶油;
(5)水化脱胶:控制初级茶油的温度为30℃,向初级茶油中加入温度70℃,浓度8%的盐水,搅拌15min,静置2-4小时分层,去除底层杂质和水;
(6)脱酸:将脱胶处理后的初级茶油控制温度在40℃,加入浓度为12%的氢氧化钠溶液,搅拌15min,再加入温度70℃,浓度12%的盐水,静置4-8小时分层,去除底层杂质和水;脱酸后的茶油中游离脂肪酸的含量小于0.5%;
(7)脱色:将脱酸处理后的初级茶油控制温度在90℃,加入初级茶油重量3%的活性白土,在真空条件下搅拌15min,使油色呈淡黄色,然后冷却至50-60℃,过滤除去脱色剂;
(8)脱臭:将脱色处理后的初级茶油在温度150℃,真空度260Pa下,蒸馏40-60min;
(9)脱蜡:将脱臭处理后的初级茶油冷却至4-5℃,析出晶体蜡,过滤后得成品茶油。

Claims (3)

1.一种油茶的加工工艺,其特征在于,包括以下步骤:
(1)原料处理:选取成熟油茶籽,清除杂质,晾晒4-12小时,控制含水量在10-15%;送入剥壳机剥壳,然后粉碎,粉碎至80-200目;
(2)蒸制:将粉碎物蒸制,蒸汽压力为0.1-0.2MPa、温度为105-110℃,蒸炒时间为50-60分钟;
(3)冷压榨取油:将蒸制后的粉碎物做成饼,随即送入榨油机压榨得原油;
(4)高精过滤:原油在室温下使用滤布过滤得初级茶油;
