本发明涉及一种调配蛋粉的生产方法,特别涉及一种高蛋白质、低脂肪、低胆固醇、低热量、富钙调配蛋粉的生产方法。
背景技术
钙是人体内含量最多的一种无机盐。正常人体内钙的含量为1200~1400克,约占人体重量的1.5%~2.0%,其中99%存在于骨骼和牙齿之中。另外,1%的钙大多数呈离子状态存在于软组织、细胞外液和血液中,与骨钙保持着动态平衡。机体内的钙,一方面构成骨骼和牙齿,另一方面则可参与各种生理功能和代谢过程,影响各个器官组织的活动。目前大量的研究资料表明,成人每日钙的标准推荐量为800毫克,钙除了是骨骼发育的基本原料,直接影响身高外,还在体内具有其他重要的生理功能。这些功能对维护机体的健康,保证正常生长发育的顺利进行具有重要作用。钙能促进体内某些酶的活动,调节酶的活性作用;参与神经、肌肉的活动和神经递质的释放;调节激素的分泌。血液的凝固、细胞粘附、肌肉的收缩活动也都需要钙。钙还具调节心律、降低心血管的通透性、控制炎症和水肿、维持酸碱平衡等作用。
2004年国务院新闻办公室公布的《中国居民营养与健康状况调查》的结果显示,我国高血压、高血糖、高血脂的患病人数在迅速上升,成人高血压患病率为18.8%,估计全国患病人数达1.6亿,全国糖尿病患病人数2000多万,另有2000多万空腹血糖偏高。医学上将胰岛素抵抗称为病理基础的多代谢症候群,将包括肥胖、高血糖、高血脂症、高血尿酸、脂肪肝、糖耐量低减等统称为“代谢综合症”,日益增长的数字使富钙食品成为营养学研究的热点。
胆固醇是动物体内最重要的固醇,大量存在于脑、神经组织、皮脂和胆汁中,脂肪是生物体的重要储能物质,胆固醇和脂肪虽然在人体中各有其重要作用,但如果摄入量过多则会引起一系列的副反应,胆固醇代谢失调能引起动脉粥样硬化、高血压和胆石症,脂肪储存过多引起肥胖、冠心病。
随着人们生活水平的提高,对身体保健及预防疾病的意识也随之增强,但现有的保健品往往功能单一,比如富钙、或者是富维生素A的保健食品,同时实现多功能的保健品较少,鸡蛋是最普通的日常食品,通过食用鸡蛋来补充微量元素钙,经济、方便、有效,一种高蛋白质、低脂肪、低胆固醇、低热量、富钙调配蛋粉,满足人们对营养保健的要求,具有巨大的经济效益和社会效益。

本发明的目的是克服现有技术的不足,提供一种高蛋白质、低脂肪、低胆固醇、低热量、富钙调配蛋粉的生产方法。
本发明采用的技术方案为:
一种高蛋白质、低脂肪、低胆固醇、低热量、富钙调配蛋粉的生产方法,包括如下步骤:
(1):获取富钙鸡蛋
配制营养组合物,各组分及按照重量份数配比为:乳酸菌取0.5-1.5份、蛋氨酸取1-2份、硫酸锌取1-2.5份、葡萄糖取1-4份、维生素B6取0.5-1.5份、维生素K取0.5-1.5份、维生素C取0.5-1.5份、脂肪取1-2.5份、黄粉虫粉取1-2份、山楂粉取1-5份、乳酸钙取15-25份;
按照重量配比取蛋鸡全价料50份,营养组合物0.5-1份,混合均匀后,制得饲料A,用饲料A饲喂125日龄后的蛋鸡,并持续产蛋期的全过程。
按照本发明方法喂食蛋鸡的过程中,鸡的精神、食欲不受影响,产蛋率、蛋重与同龄普通鸡无差异。用饲料A喂食15天后直至产蛋期的全过程,生产的鸡蛋与普通鸡蛋的各物质平均含量区别如下表所示:

(2):蛋粉加工
蛋粉加工分为以下4个步骤:
1)蛋液制备:包括选蛋、清洗消毒、脱壳、过滤、分离;将富钙蛋加工为蛋清液与蛋黄液;
2)蛋清液加工:包括
a).巴氏灭菌
b).发酵脱糖:温度:30℃,pH值为7.5,发酵时间为3h,蛋清液脱糖率≧90%;
c).升温灭活
d).喷雾干燥:料液温度25~30℃,喷雾干燥机进风温度:150~155℃,出风温度:75~80℃,将蛋白液加工为蛋白粉。
制备的蛋清粉具有如下特点:总热量降低、蛋白质含量增加,粉体洁白、疏松、增加了流动性。
3)蛋黄液加工
a).巴氏灭菌
b).酶解处理:脂肪酶(100000u/g)的添加量为500u/g,pH值7.0,水解温度为:45~50℃,水解时间为3h;
c).升温灭酶:反应结束,料液升温至90℃使酶失活。降温;
d).喷雾干燥:料液温度25~30℃,喷雾干燥机进风温度:150~155℃,出风温度:75~80℃,将蛋黄液加工为蛋黄粉;
制备的蛋黄粉具有如下特点:降低了总热量、脂肪、胆固醇含量,体态疏松、不结块。
4).混配加工
在有强制搅拌装置的V型混合机中,将制备的蛋清粉、蛋黄粉按照1:1的比例进行混配。

(1):获取富钙鸡蛋
配制营养组合物,各组分及按照重量份数配比为:乳酸菌取0.5份、蛋氨酸取1份、硫酸锌取2份、葡萄糖取3份、维生素B6取1份、维生素K取1份、维生素C取1份、脂肪取1份、黄粉虫粉取1份、山楂粉取3份、乳酸钙取20份;
按照重量配比取蛋鸡全价料50份,营养组合物0.8份,混合均匀后,制得饲料A,用饲料A饲喂125日龄后的蛋鸡,并持续产蛋期的全过程。
按照本发明方法喂食蛋鸡的过程中,鸡的精神、食欲不受影响,产蛋率、蛋重与同龄普通鸡无差异。用饲料A喂食15天后直至产蛋期的全过程,生产的鸡蛋与普通鸡蛋的各物质平均含量区别如下表所示:

(2):蛋粉加工
蛋粉加工分为以下4个步骤:
1)蛋液制备:包括选蛋、清洗消毒、脱壳、过滤、分离;将富钙蛋加工为蛋清液与蛋黄液;
2)蛋清液加工:包括
a).巴氏灭菌
b).发酵脱糖:温度:30℃,pH值为7.5,发酵时间为3h,蛋清液脱糖率≧90%;
c).升温灭活
d).喷雾干燥:料液温度25~30℃,喷雾干燥机进风温度:150~155℃,出风温度:75~80℃,将蛋白液加工为蛋白粉。
制备的蛋清粉具有如下特点:总热量降低、蛋白质含量增加,粉体洁白、疏松、增加了流动性。
3)蛋黄液加工
a).巴氏灭菌
b).酶解处理:脂肪酶(100000u/g)的添加量为500u/g,pH值7.0,水解温度为:45~50℃,水解时间为3h;
c).升温灭酶:反应结束,料液升温至90℃使酶失活。降温;
d).喷雾干燥:料液温度25~30℃,喷雾干燥机进风温度:150~155℃,出风温度:75~80℃,将蛋黄液加工为蛋黄粉;
制备的蛋黄粉具有如下特点:降低了总热量、脂肪、胆固醇含量,体态疏松、不结块。
4).混配加工
在有强制搅拌装置的V型混合机中,将制备的蛋清粉、蛋黄粉按照1:1的比例进行混配。
该调配蛋粉与普通蛋粉对比(每百克含营养素)
Claims (1)
1.一种高蛋白质、低脂肪、低胆固醇、低热量、富钙调配蛋粉的生产方法,其特征在于:包括如下步骤:
(1):获取富钙鸡蛋
配制营养组合物,各组分及按照重量份数配比为:乳酸菌取0.5-1.5份、蛋氨酸取1-2份、硫酸锌取1-2.5份、葡萄糖取1-4份、维生素B6取0.5-1.5份、维生素K取0.5-1.5份、维生素C取0.5-1.5份、脂肪取1-2.5份、黄粉虫粉取1-2份、山楂粉取1-5份、乳酸钙取15-25份;
按照重量配比取蛋鸡全价料50份,营养组合物0.5-1份,混合均匀后,制得饲料A,用饲料A饲喂125日龄后的蛋鸡,并持续产蛋期的全过程。
按照本发明方法喂食蛋鸡的过程中,鸡的精神、食欲不受影响,产蛋率、蛋重与同龄普通鸡无差异。用饲料A喂食15天后直至产蛋期的全过程,
(2):蛋粉加工
蛋粉加工分为以下4个步骤:
