本发明属于食品加工制造技术领域,尤其是一种黑果腺肋花楸复合压片糖果及其制备方法。
背景技术
近年来,生活节奏加快,电脑、智能手机等视频终端的大量普及,视疲劳的发病率呈逐渐上升的趋势,轻度的视疲劳往往得不到人们的重视,导致视疲劳症状加重,长期反复出现视疲劳可能会引发多种眼部疾病,如干眼症、屈光不正等。高科技产业领域相关从业者研究显示57%的高校学生自测存在视疲劳相关症状,全世界90%的电脑使用者有眼睛干涩、重影、头疼等视疲劳症状。所以开发缓解视疲劳的功能性食品对人体健康有重要意义,缓解视疲劳的糖果也应运而生。
黑果腺肋花楸为浆果,是植物届花色苷含量最高的植物,果实经榨汁后酚类化合物的含量在3440mg/100gFW-7849mg/100gFW之间。黑果腺肋花楸中的花青素种类主要为矢车菊素-3-O-半乳糖苷、天竺葵素-3,5-葡萄糖苷等。
花青素,属于黄酮类物质,是广泛存在于植物界中的一种天然水溶性色素。已知植物界中花青素的种类有20种,常见的有天竺葵色素、矢车菊色素、飞燕草色素、芍药色素、牵牛花色素和锦葵色素等6种。近十年来,随着对花青素越来越深入地研究,其生理活性和功能以及其作用机制逐步成为众多学者研究的热点,又因为人们的健康意识日益增强,花青素的食用、药用价值得到了广泛关注和认可,包括其抗氧化、抗炎作用,抑菌作用,抗衰老、抗癌作用以及对肝脏,对心脑血管和视力的保护作用等生理活性。目前有关花青素保护视力的报道越来越多,研究发现,花青素可以启动视网膜酶,帮助机体激活和提高视紫红质的再生能力,花青素具有保护视力的作用,这与其拥有强抗氧化能力有着密切关系,它能加快微血管循环减轻眼睛受自由基的攻击。
β-胡萝卜素是类胡萝卜素之一,也是一种橘黄色脂溶性化合物,它是自然界中最普遍存在也是最稳定的天然色素。许多天然食物中例如绿色蔬菜、甘薯、胡萝卜、木瓜、芒果等,皆存有丰富的β-胡萝卜素。β-胡萝卜素的分子结构相当于2个分子的维生素A,进入机体后,在肝脏及小肠粘膜内经过酶的作用,其中50%变成维生素A,有明目的作用,可治疗夜盲症;β-胡萝卜素还是一种抗氧化剂,具有解毒作用,在抗癌、预防心血管疾病、白内障及抗氧化上有显著的功能,并防止老化和衰老引起的多种退化性疾病。
叶黄素是一种广泛存在于蔬菜、花卉、水果等植物中的天然物质,属于"类胡萝卜类"族物质。叶黄素是人眼视网膜黄斑区域的主要色素,能够保护眼睛不受光线损害,延缓眼睛的老化及防止病变,提高黄斑色素密度,保护黄斑,促进黄斑发育,预防黄斑变性及视网膜色素变性;叶黄素还具有抗氧化作用,有助于预防机体衰老引发的心血管硬化、冠心病和肿瘤疾病。
随着人民生活水平的不断提高和人们对糖果的科学认识,以及新功能、新口味、复合型等糖果新产品的涌现,糖果的市场需求将进一步扩大,所以开发新口味的糖果是必须的。近年来,随着社会的发展进步,越来越多的人开始购买抗氧化、护眼的产品,开发这样的食品也应运而生。
通过检索,发现如下几篇与本发明申请相关的专利公开文献:
1、一种葡萄籽提取物叶黄素酯压片糖果及制备方法(CN106912668A),本发明公开了一种葡萄籽提取物叶黄素酯压片糖果及其制作方法,该糖果的原料包括按重量计,葡萄籽提取物10-30份、叶黄素酯0.5-0.8份、甜味剂20-50份、酸味剂0.1-0.3份、脱模剂2-8份。本发明具有保护眼睛,抗氧化,改善肤质功能等功效,其配料选用无糖糖原,整个配方无防腐剂、无香精、无合成色素。采用包埋处理的叶黄素酯,不仅增强了叶黄素酯的稳定性,避免在加工处理中对叶黄素酯的破坏及损失,还能进一步增强了叶黄素酯的吸收度和生物利用率。本发明工艺简化,节省人力物力,而且能最大限度保留活性物质,使得糖果发挥其最大保健功效。
2、一种具有改善视力的桑葚压片糖(CN104938753A),本发明涉及一种具有改善视力的桑葚压片糖,由桑葚冻干粉35-60%;枸杞冻干粉10-33%;玉米浆料9-15%;麦芽糊精5-15%;硬脂酸镁1.0-2.0%;三氯蔗糖0.1-0.15%;玉米黄0.1-0.5%;β-胡萝卜素0.01-0.05%;叶黄素0.01-0.015%的质量百分比的原料经混匀、压片制成,其采用的桑葚冻干粉中富含原花青素,枸杞冻干粉中富含枸杞多糖,与玉米黄、β-胡萝卜素和叶黄素按一定比例搭配,具有协同作用,促进眼睛对营养物质的均衡吸收,对改善青少年的视力有效果。同时,桑葚冻干粉和枸杞冻干粉富含天然维生素和黄酮类物质,抗氧化能力强,具有良好的清除体内自由基和护眼作用,适合于青少年及普通人群食用。
3、一种含有紫色山药的蓝莓压片糖及其制备方法(CN104186886A),本发明公开了一种含有紫色山药的蓝莓压片糖及其制备方法。其蓝莓压片糖组分为:野生蓝莓冻干粉20-30%、白砂糖20-35%、葡萄糖30-35%、紫色山药冻干粉5-7%、玉米淀粉3-6%、麦芽糊精6-8%、胡萝卜粉0.2-2.0%、硬脂酸镁0.8-1.0%、叶黄素0.015-0.10%。将各组分投入搅拌容器中拌匀,喷入物料重量5-10%且浓度为30-50%的酒精,制备软材,经造粒、沸腾干燥和整粒后压片。野生蓝莓压片糖富含原花青素、类黄酮、β-胡萝卜素和叶黄素,具有良好抗氧化能力及保护视力功效,同时具有方便携带、方便食用及容易实现产业化等优点。
通过对比,第一篇专利公开文献主成分为葡萄籽提取物和叶黄素酯,采用超声包埋的方法,本发明为湿法制粒压片法,使用设备少,操作更加简单、方便。第二篇专利公开文献主成分为桑葚冻干粉和枸杞冻干粉,添加玉米黄色素,本发明添加的主成分为黑果腺肋花楸提取物,其中的花青素含量更高,并且不加入其他色素。第三篇专利公开文献所用主成分为植物冻干粉并且添加蔗糖,本发明使用的主成分为黑果腺肋花楸提取物,所含花青素含量比蓝莓冻干粉和紫山药冻干粉多,营养价值更高,而且,本发明选择使用甜味剂代替蔗糖,符合国际上食品向低糖、低热量、保健食品的发展趋势。本发明的主要成分为黑果腺肋花楸提取物,其所含花青素含量高、种类丰富,制成压片糖,赋予压片糖花青素的色泽,加以果蔬粉,具有果蔬的特殊味道,而且在生产过程中不添加任何色素,从营养和视觉上都紧紧抓住消费者。
故通过对比,本发明专利申请与上述专利公开文献存在本质不同。
发明内容
本发明的目的在于克服现有技术的不足之处,提供一种黑果腺肋花楸复合压片糖果及其制备方法,该糖果能够满足现代消费人群的多重需求,该压片糖果富含花青素与维生素A原类物质,该制备方法操作方便、简单,可以工业化生产。

⑴粉碎:将各种固体物料粉碎后过80目筛,备用;
⑵称量备料:按配方称取粉碎后各种物料;
⑶制软材:将除润滑剂、粘合剂以外的原辅料混合均匀,物料平铺在平盘上,用喷壶往物料表面喷洒粘合剂,直至达到握之成团、轻捏即散的状态,得软材;
⑷制粒:将⑶制得的软材过20目筛网后,放于烘箱30~70℃烘1~5h,烘干的物料整理成粒,得颗粒;
⑸压片:将润滑剂加入步骤⑷中制好的颗粒,混合均匀后进行压片,压出的糖果片应形态完整、表面光滑、呈紫色且均匀一致,组织坚实不松散,即得黑果腺肋花楸复合压片糖果。
本发明取得的优点和积极效果是:
1、本发明以富含花青素的黑果腺肋花楸提取物为原料开发一种无糖复合压片糖果,该黑果腺肋花楸复合压片糖果将黑果腺肋花楸提取物中的花青素作为主要特色成分,加入具有护眼效果的维生素A原类物质,再辅以不同的果蔬粉,并且不添加任何色素和蔗糖,压片糖呈现紫色,有天然的果蔬味,口感酸甜还略带有淡淡的花青素苦涩味,具有抗氧化、缓解视疲劳和保护视力的作用,可满足现代消费人群的需求,是一款集健康营养和美观为一体的新口味压片糖果,扩大花青素的开发利用的同时解决糖果生产过程中存在的相应问题,具有广阔的市场发展前景。
2、本发明糖果的主要成分为黑果腺肋花楸提取物,其所含花青素含量高、种类丰富,制成压片糖,赋予压片糖花青素的色泽,加以果蔬粉,具有果蔬的特殊味道,而且在生产过程中不添加任何色素,从营养和视觉上都紧紧抓住消费者。
3、本发明的黑果腺肋花楸复合压片糖中花青素含量高,制作过程中损失小,充分保留了其活性成分。
4、本发明所用黑果腺肋花楸提取物的花青素含量为25%,具有保护大脑和神经系统的独特优势,有抗氧化、抗炎、抗肿瘤、防治心血管疾病、降血糖、抗血小板等多种作用,因此被称为“第七类营养素”,可以作为保健食品的原料使用。
5、本发明同时提供了上述压片糖果的制备方法,该配方结合黑果腺肋花楸提取物中的花青素和维生素A原类物质,配合果蔬粉、矫味剂等,用功能性甜味剂代替蔗糖,既保证糖果的优良口味,又具有缓解视疲劳、改善视力的作用,还能预防龋齿、保护牙齿。本发明不仅能扩大黑果腺肋花楸的利用,而且为人们提供了一种便携的功能性食品。
5、本发明压片糖果的制备方法操作方便、简单,制作过程使用设备少,易于工业化生产。

⑴粉碎:各种固体物料粉碎后过80目筛,备用;
⑵按配方称取粉碎后各种物料;
⑶制软材:将除硬脂酸镁、乙醇以外的原辅料混合均匀,物料平铺在平盘上,用喷壶往物料表面喷洒80%的乙醇溶液,直至达到握之成团、轻捏即散的状态,得软材;
⑷制粒:将⑶制得的软材过20目筛网后,放于烘箱55℃烘干2h,烘干的物料整理成粒,得颗粒;
⑸压片:将硬脂酸镁加入步骤⑷中制好的颗粒,混合均匀后进行压片,压出的糖果片应形态完整,表面光滑,呈紫色且均匀一致,组织坚实不松散,即得黑果腺肋花楸复合压片糖果。

⑸压片:将滑石粉加入步骤⑷中制好的颗粒,混合均匀后进行压片,压出的糖果片应形态完整,表面光滑,呈紫色且均匀一致,组织坚实不松散,即得黑果腺肋花楸复合压片糖果。

一种黑果腺肋花楸复合压片糖果,其组成成分及重量份数如下:

⑸压片:将硬脂酸镁加入步骤⑷中制好的颗粒,混合均匀后进行压片,压出的糖果片应形态完整,表面光滑,呈紫色且均匀一致,组织坚实不松散,即得黑果腺肋花楸复合压片糖果。

1.一种黑果腺肋花楸复合压片糖果,其特征在于:其组成成分及重量份数如下:
2.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述维生素A原提取物为β-胡萝卜素、叶黄素中的1种或2种的混合物。
3.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述甜味剂为甘露醇、异麦芽酮糖、木糖醇、结晶果糖、阿斯巴甜、安赛蜜、三氯蔗糖中的1种或2种或2种以上的混合物。
4.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述酸味剂为柠檬酸、苹果酸、酒石酸或乳酸。
5.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述矫味剂为薄荷香精、β-环状糊精中的1种或2种的混合物。
6.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述填充剂为微晶纤维素、可压性淀粉、麦芽糊精、淀粉中的1种或2种或2种以上的混合物。
7.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述润滑剂为硬脂酸镁、微粉硅胶、滑石粉或聚乙二醇。
8.根据权利要求1所述的黑果腺肋花楸复合压片糖果,其特征在于:所述粘合剂为乙醇、处理水、羟丙基纤维素或淀粉浆;或者,所述果蔬粉为胡萝卜粉、番茄汁粉、玉米粉、山楂汁粉、柠檬粉、青金桔粉、香瓜汁粉或哈密瓜汁粉。
9.根据权利要求1至8任一项所述的黑果腺肋花楸复合压片糖果,其特征在于:所述黑果腺肋花楸提取物的质量百分含量为25%。
10.一种如权利要求1至9任一项所述的黑果腺肋花楸复合压片糖果的制备方法,其特征在于:步骤如下:
