一种鱼肉冷藏保鲜剂,属于食品保鲜技术领域。本发明由以下重量份的物质组成:天麻提取液10‑15份,总黄酮60‑90份,氯化钠10‑18份,乙醇3‑7份,甘油5‑8份,蔗糖3‑5份,抗冻蛋白AFPs8‑12份,水800‑1000份。本发明以纯天然的总黄酮作为保鲜剂,对各类水产品、畜牧肉类食品进行低温保鲜时可以避免因冰晶物的形成而导致的细胞壁的破损从而达到保鲜作用的目的;同时,经保鲜剂处理后的海洋鱼类表面能形成一层均匀的薄膜,无毒可食用,能有效延长储藏期限。

技术领域
本发明涉及一种鱼肉冷藏保鲜剂,属于食品保鲜技术领域。
背景技术
鱼类含有丰富的完全蛋白质。鱼肉含有大量的蛋白质,如黄鱼含17.6%、带鱼含18.1%、鲐鱼含21.4%、鲢鱼含18.6%、鲤鱼含17.3%、鲫鱼含13%。脂肪含量较低,且多为不饱和脂肪酸。鱼肉的脂肪含量一般比较低,大多数只有1%~4%,如黄鱼含0.8%、带鱼含3.8%、鲐鱼含4%、鲢鱼含4.3%、鲤鱼含5%鲫鱼含1.1%鳙鱼(胖头鱼)只含0.9%、墨斗鱼只含0.7%。无机盐、维生素含量较高。海水鱼和淡水鱼都含有丰富的磺,还含有磷、钙、铁等无机盐。鱼肉还含有大量的维生素A、维生素D、维生素B1、尼克酸。这些都是人体需要的营养素。
目前海洋鱼类有以下几条加工保藏销售渠道:少量采用保活船运输到目的地进行销售;部分采用冰鲜保藏,即在泡沫箱里,一层碎冰、一层鱼进行保鲜密封整箱包装,一般这种方式的保鲜鱼主要进入超市和菜场,这样的保鲜冬季路途运输3-4天鲜度还可以,如果将泡沫箱放进冷库进行0-4℃冷藏,13-14天后的鲜度指标仍然可以达到一级,但超过此期限质量难以保证;起捕的鱼运送到加工厂采用镀冰衣之后加工成条冻产品,入冷库冻藏,择机出售;极少量加工成干品出售,干制品一般含盐量高,但已缺乏鲜鱼肌肉本身的鲜嫩质感,不符合现代饮食消费天然、绿色、健康的需求。上述的加工保藏均不能够保证较长时间保证鲜鱼的鲜度、风味和质感。

本发明的目的是提供一种鱼肉冷藏保鲜剂。

本发明由以下重量份的物质组成:天麻提取液10-15份,总黄酮60-90份,氯化钠10-18份,乙醇3-7份,甘油5-8份,蔗糖3-5份,抗冻蛋白AFPs8-12份,水800-1000份。
本发明的有益效果是:
本发明以纯天然的总黄酮作为保鲜剂,对各类水产品、畜牧肉类食品进行低温保鲜时可以避免因冰晶物的形成而导致的细胞壁的破损从而达到保鲜作用的目的;同时,经保鲜剂处理后的海洋鱼类表面能形成一层均匀的薄膜,无毒可食用,能有效延长储藏期限。
