一种海鱼保鲜剂,属于食品保鲜技术领域。本发明海鱼保鲜剂由以下重量份的物质组成:含羞草总黄酮提取物30-40份、密茱萸总黄酮提取物35-45份、橘子总黄酮提取物15-35份、壳聚糖0.6-1.2份、茶多酚0.3-0.5份、甘油1-2份、花椒提取物12-15份、花椒叶提取物4-8份、竹醋液100-120份。本发明以纯天然的总黄酮作为保鲜剂,不含抗生素和常规杀菌剂,组分安全环保,具有广谱抗菌效果,有效地抑制了水产品在低温保存过程中脂肪的氧化酸败,具有保鲜、防腐的功效;同时,经保鲜剂处理后的海洋鱼类表面能形成一层均匀的薄膜,无毒可食用,能有效延长储藏期限。

本发明涉及一种海鱼保鲜剂,属于食品保鲜技术领域。 背景技术
鱼类含有丰富的完全蛋白质。鱼肉含有大量的蛋白质,如黄鱼含17.6%、带鱼含18.1%、鲐鱼含21.4%、鲢鱼含18.6%、鲤鱼含17.3%、鲫鱼含13%。脂肪含量较低,且多为不饱和脂肪酸。鱼肉的脂肪含量一般比较低,大多数只有1%~4%,如黄鱼含0.8%、带鱼含3.8%、鲐鱼含4%、鲢鱼含4.3%、鲤鱼含5%鲫鱼含1.1%鳙鱼(胖头鱼)只含0.9%、墨斗鱼只含0.7%。无机盐、维生素含量较高。海水鱼和淡水鱼都含有丰富的磺,还含有磷、钙、铁等无机盐。鱼肉还含有大量的维生素A、维生素D、维生素B1、尼克酸。这些都是人体需要的营养素。
目前海洋鱼类有以下几条加工保藏销售渠道:少量采用保活船运输到目的地进行销售;部分采用冰鲜保藏,即在泡沫箱里,一层碎冰、一层鱼进行保鲜密封整箱包装,一般这种方式的保鲜鱼主要进入超市和菜场,这样的保鲜冬季路途运输3-4 天鲜度还可以,如果将泡沫箱放进冷库进行0-4℃冷藏,13-14 天后的鲜度指标仍然可以达到一级,但超过此期限质量难以保证;起捕的鱼运送到加工厂采用镀冰衣之后加工成条冻产品,入冷库冻藏,择机出售;极少量加工成干品出售,干制品一般含盐量高,但已缺乏鲜鱼肌肉本身的鲜嫩质感,不符合现代饮食消费天然、绿色、健康的需求。上述的加工保藏均不能够保证较长时间保证鲜鱼的鲜度、风味和质感。

本发明的目的是提供一种海鱼保鲜剂。

本发明海鱼保鲜剂由以下重量份的物质组成:含羞草总黄酮提取物30-40份、密茱萸总黄酮提取物35-45份、橘子总黄酮提取物15-35份、壳聚糖0.6-1.2份、茶多酚0.3-0.5份、甘油1-2份、花椒提取物12-15份、花椒叶提取物4-8份、竹醋液100-120份。
本发明的有益效果是:
本发明以纯天然的总黄酮作为保鲜剂,不含抗生素和常规杀菌剂,组分安全环保,具有广谱抗菌效果,有效地抑制了水产品在低温保存过程中脂肪的氧化酸败,具有保鲜、防腐的功效;同时,经保鲜剂处理后的海洋鱼类表面能形成一层均匀的薄膜,无毒可食用,能有效延长储藏期限。
