Abstract
本发明公开了一种果蔬保鲜剂,按重量百分比,包括:0.7‑1.4%的四氢嘧啶、0.7‑1.4%的羟基四氢嘧啶、1‑3%的稳定剂、0.2‑1%的氯化钠、0.5‑1.7%的表面活性剂、0.1‑0.4%的防腐剂以及0.5‑4%的乙醇,其余为水。发明的保鲜剂保鲜效果好、保鲜时间长,能够有效控制细菌生长;成本低,原料易得;无毒害、易降解,绿色环保;易清洗;制作工艺简单,条件温和;果蔬保鲜的适用范围广。
Description
技术领域
本发明涉及保鲜剂,尤其涉及一种用于果蔬的保鲜剂。
背景技术
随着国民经济的增长,人们的生活水平逐渐提高,对生活质量要求也逐步提高,从健康角度出发,对不同季节、不同区域的果蔬需求量增大,但是果蔬的细胞和组织继续进行呼吸和蒸腾作用,很容易产生皱缩、失重、萎蔫、变质等现象。因此,果蔬远距离运输、或存放时的保鲜成了急需解决的问题。
现有的果蔬保鲜技术包括低温、气调、低气压、塑料保鲜膜及化学保鲜贮藏法等,但低温、气调、低气压的保鲜方法成本高,不易推广;塑料保鲜膜可以防止水分流失,但是保鲜作用不均匀,难以保证效果,易腐烂,且制作工艺复杂,成本高,原料来源窄,有些甚至有毒害作用;化学保鲜中的成分对人体有毒害,且食用时不易清洗。
发明内容
发明目的:本发明提供了一种果蔬保鲜剂,该保鲜剂保鲜效果好、时间长,解决了果蔬长时间搁置或运输易腐烂的问题,同时解决了现有的保鲜剂成本高、不易降解、不易清洗的问题。
技术方案:本发明的果蔬保鲜剂,按重量百分比,包括:0.7-1.4%的四氢嘧啶、0.7-1.4%的羟基四氢嘧啶、1-3%的稳定剂、0.2-1%的氯化钠、0.5-1.7%的表面活性剂、0.1-0.4%的防腐剂以及0.5-4%的乙醇,其余为水。
本发明的一种实施方式的果蔬保鲜剂,按重量百分比,包括:0.9%的四氢嘧啶、0.9%的羟基四氢嘧啶、1.5%的酒石酸钠、1%的氯化钠、0.7%的表面活性剂、0.15%的防腐剂以及3.5%的乙醇,其余为水。
本发明的一种实施方式的果蔬保鲜剂,按重量百分比,包括:1.3%的四氢嘧啶、1%的羟基四氢嘧啶、2%的酒石酸钠、0.7%的氯化钠、1.5%的表面活性剂、0.2%的防腐剂以及3%的乙醇,其余为水。
本发明的一种实施方式的果蔬保鲜剂,按重量百分比,包括:1.1%的四氢嘧啶、0.7%的羟基四氢嘧啶、1%的酒石酸钠、0.4%的氯化钠、1%的表面活性剂、0.3%的防腐剂以及2%的乙醇,其余为水。
上述果蔬保鲜剂中,所述稳定剂为酒石酸钠。
上述果蔬保鲜剂中,所述表面活性剂为蔗糖酯,蔗糖酯作为无毒高效表面活性剂的同时,还可以起到保鲜的作用。
上述果蔬保鲜剂中,所述防腐剂为脱氢醋酸钠、山梨酸钠和柠檬酸中一种或几种。
有益效果:1、发明的保鲜剂保鲜效果好、保鲜时间长,有效控制细菌生长;2、成本低,原料易得;3、无毒害、易降解,绿色环保;4、易清洗;5、制作工艺简单,条件温和;6、果蔬保鲜的适用范围广。
具体实施方式
实施例1
将0.9g四氢嘧啶、0.9g羟基四氢嘧啶、1.5g酒石酸钠、1g氯化钠、0.7g蔗糖酯、0.15g脱氢醋酸钠以及3.5g乙醇加入91.4g水中,搅拌混匀,得果蔬保鲜剂。
取该实施例制得的保鲜剂15ml,在容器中兑水1500ml稀释,备用。
挑选新鲜采摘的、大小均匀的葡萄和黄瓜各20个,去除破损的果实,将果蔬在容器中浸泡1.5min,取出晾干水分,封装10-25天,观察果蔬变化,结果如表1所示。
实施例2
将1.3g四氢嘧啶、1g羟基四氢嘧啶、2g酒石酸钠、0.7g氯化钠、1.5g蔗糖酯、0.2g山梨酸钠以及3g乙醇加入90.3g水中,搅拌混匀,得果蔬保鲜剂。
取该实施例制得的保鲜剂15ml,在容器中兑水3000ml稀释,备用。
挑选新鲜采摘的、大小均匀的猕猴桃20个,去除破损的果实,将果蔬在容器中浸泡3min,取出晾干水分,封装10-25天,观察果蔬变化,结果如表1所示。
实施例3
将1.1g四氢嘧啶、0.7g羟基四氢嘧啶、1g酒石酸钠、0.4g氯化钠、1g蔗糖酯、0.3g柠檬酸以及2g乙醇加入93.5g水中,搅拌混匀,得果蔬保鲜剂。
取该实施例制得的保鲜剂15ml,在容器中兑水2000ml稀释,备用。
挑选新鲜采摘的、大小均匀的番茄20个,去除破损的果实,将果蔬在容器中浸泡2min,取出晾干水分,封装10-25天,观察果蔬变化,结果如表1所示。
实施例4
将0.7g四氢嘧啶、1.4g羟基四氢嘧啶、3g酒石酸钠、0.2g氯化钠、1.7g蔗糖酯、0.4g脱氢醋酸钠以及0.7g乙醇加入91.9g水中,搅拌混匀,得果蔬保鲜剂。
取该实施例制得的保鲜剂15ml,在容器中兑水3000ml稀释,备用。
挑选新鲜采摘的、大小均匀的荔枝和龙眼20个,去除破损的果实,将果蔬在容器中浸泡1.5-3min,取出晾干水分,封装10-25天,观察果蔬变化,结果如表1所示。

其中,0代表正常,果蔬表面无腐烂;1代表轻度腐烂,腐烂面积未达到果蔬表面积的1/3;2代表中度腐烂,腐烂面积已达到果蔬表面积的1/3以上但尚未达到2/3;3代表重度腐烂,腐烂面积已达到或超过果蔬表面积的2/3。
Claims (7)
1.一种果蔬保鲜剂,其特征在于,按重量百分比,包括:0.7-1.4%的四氢嘧啶、0.7-1.4%的羟基四氢嘧啶、1-3%的稳定剂、0.2-1%的氯化钠、0.5-1.7%的表面活性剂、0.1-0.4%的防腐剂以及0.5-4%的乙醇,其余为水。
2.根据权利要求1所述的果蔬保鲜剂,其特征在于,按重量百分比,包括:0.9%的四氢嘧啶、0.9%的羟基四氢嘧啶、1.5%的酒石酸钠、1%的氯化钠、0.7%的表面活性剂、0.15%的防腐剂以及3.5%的乙醇,其余为水。
3.根据权利要求1所述的果蔬保鲜剂,其特征在于,按重量百分比,包括:1.3%的四氢嘧啶、1%的羟基四氢嘧啶、2%的酒石酸钠、0.7%的氯化钠、1.5%的表面活性剂、0.2%的防腐剂以及3%的乙醇,其余为水。
4.根据权利要求1所述的果蔬保鲜剂,其特征在于,按重量百分比,包括:1.1%的四氢嘧啶、0.7%的羟基四氢嘧啶、1%的酒石酸钠、0.4%的氯化钠、1%的表面活性剂、0.3%的防腐剂以及2%的乙醇,其余为水。
5.根据权利要求1-4任一所述的果蔬保鲜剂,其特征在于:所述稳定剂为酒石酸钠。
6.根据权利要求1-4任一所述的果蔬保鲜剂,其特征在于:所述表面活性剂为蔗糖酯。
7.根据权利要求1-4任一所述的果蔬保鲜剂,其特征在于:所述防腐剂为脱氢醋酸钠、山梨酸钠和柠檬酸中一种或几种。
