Abstract
本发明公开了一种补血方糖及其制备方法,涉及食品加工领域,该补血方糖以补血益气的药食同源组合物和铁营养强化剂配合使用,同时添加抗氧化剂促进铁的吸收,加入糖醇和红糖制成小块方糖,使人们在日常生活中使用方糖的同时既能补充人体对铁的需求,又能减少糖的摄入量。本发明提供的补血方糖能有效调节虚寒体质、促进气血流通等功效,适合于大多数人群饮用。相比传统方糖既能保证方糖原有的风味,也能促进铁吸收、减少糖的摄入。
Description
技术领域
本发明涉及食品加工制造领域,具体涉及一种补血方糖及其制备方法。
背景技术
贫血(anemia)是一种常见的临床症状,即人体外周血红细胞的容量低于正常范围的最下限。因为红细胞容量测定的复杂程度和操作的繁琐耗时,临床上通常使用血红蛋白(Hb)的浓度作为判断是否贫血的指标。
据世界卫生组织统计:全球约有30亿人不同程度贫血,每年因患贫血引致各类疾病而死亡的人数上千万,中国患贫血的人口概率高于西方国家。贫血会造成面色苍白,伴有头昏、乏力、心悸、气急等症状,尤其是女性贫血将直接造成新生儿体格及智力发育受到严重影响,产生厌食、挑食、对各种感染抵抗力减退等。
现代医学认为铁代谢指标与缺铁性贫血发病机理有密切的关系,特别是对血清、铁、铁蛋白、转铁蛋白及总铁结合力等指标的研究,认为在缺铁性贫血患儿病愈的过程中可以使血清铁、铁蛋白升高而使血清转铁蛋白、总铁结合力降低,而西医铁剂治疗也可以发生类似的变化。
经临床试验证明铁剂是治疗缺铁性贫血的特效药,其种类很多,一般以口服无机盐是最经济、方便和有效的方法。传统的补铁方法虽然是有效的,但长期的实践也证明,这种较大剂量长疗程补铁存在一些不易克服的缺点:可致小儿腹泻、食欲减退等副作用,因此患儿常常因为胃肠道副作用不能耐受而终止治疗。长期应用铁剂治疗,可以导致铁生物利用率低、胃肠道反应重等缺点,使其在临床上的应用受到一定的限制。
方糖作为糖制品是人们日常生活必不可少的,针对广大消费者对补血的需求和对健康的渴望,将药食同源原料和铁营养强化剂相结合,制成简单方便的小块方糖,既可以满足人们日常对于甜味的要求,又可以在不经意间补充人体对铁的需求,而目前市面上并未有具有补血作用的方糖出现。
发明内容
针对现有技术中存在的缺陷,本发明的目的在于提供一种补血方糖,与传统方糖相比,其可以更有效地促进机体对铁的吸收,在改善贫血症状、促进吸收、减少糖的摄入量方面有较佳效果;本发明的另一目的是提供一种补血方糖的制备方法,其工艺简单,生产成本低,宜于实现大规模、工业化生产。
为达到以上目的,本发明采取的技术方案是:
一种补血方糖,按质量百分比计,所述补血方糖包括药食同源组合物30%~40%,花生衣5%~15%,抗氧化剂0.5%~3%,柠檬酸铁0.1%~0.6%,红糖20%~40%,糖醇20%~40%;
所述药食同源组合物由重量配比为1.0~2.5:0~1.5:0~1.5:0~1.5:0~1.5红枣、生姜、龙眼、枸杞和黑芝麻组成。
在上述技术方案的基础上,所述抗氧化剂包括抗坏血酸、生育酚、维生素A、叶黄素或β-胡萝卜素中的至少一种,所述抗氧化剂和柠檬酸铁的质量比为5:1。
在上述技术方案的基础上,所述的糖醇包括赤藓糖醇、乳糖醇、益寿糖、木糖醇、山梨醇、甘露醇或麦芽糖醇中的至少一种。
在上述技术方案的基础上,所述药食同源组合物中各组分均为粉末状,各组分的粒径均小于100μm。
在上述技术方案的基础上,所述补血方糖包括药食同源组合物30%~38%,花生衣10%~15%,抗氧化剂1%,柠檬酸铁0.2%,红糖25%~30%,糖醇25%~30%。
在上述技术方案的基础上,所述补血方糖包括药食同源组合物36%,花生衣12.8%,抗氧化剂1%,柠檬酸铁0.2%,红糖25%,糖醇25%。
本发明还提供一种上述的补血方糖的制备方法,该方法包括以下步骤:
S1、将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉和花生衣粉分别进行气流粉碎;
S2、将微粉化的上述六种原料与糖醇和红糖在流化床混合均匀;
S3、将柠檬酸铁溶于水后作为润湿剂加入,随后进行沸腾干燥后加入适量抗氧化剂;
S4、将干燥好的物料压制成标准大小的方糖。
在上述技术方案的基础上,所述步骤S1中,控制气流粉碎后各组分的粒径小于100μm。
在上述技术方案的基础上,所述步骤S4中,压制成的标准方糖的形状为边长9-12mm的立方体。
在上述技术方案的基础上,所述步骤S3中,制备湿润剂时使用的水是纯化水。
与现有技术相比,本发明的优点在于:
(1)本发明中的补血方糖,集合天然生姜、大枣、花生衣,并加入乳酸亚铁营养强化剂,再加红糖和糖醇经特殊工艺制成,有效提升了其原料本身的药理作用,不仅方便消费者的随身携带,更是提供一种即食、冲饮多种选择的食用方式。
(2)本发明中的补血方糖生产方法将生姜、大枣、花生衣进行微粉化处理后有效提升了其原料本身的药理作用,且将其营养物质牢牢的锁定在小方块塘片之中,使其更易吸收,同时控制其抗氧化剂与柠檬酸铁的比例为5:1,使其对血红细胞含量有更好的增强作用。
(3)本发明中的补血方糖制备方法工艺简单、操作方便、重现性好,适宜于放大生产。
具体实施方式
以下结合实施例对本发明作进一步详细说明。
实施例1
一种补血方糖,配方由以下成分组成:
制备方法如下:
将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉、花生衣粉分别进行气流粉碎,控制粒径小于100μm,将微粉化的六个原料按用量与糖醇和红糖在流化床混合均匀。将柠檬酸铁溶于水后作为润湿剂进行沸腾干燥后加入适量抗氧化剂。用方糖机在常规的压力下压成10mm×10mm×10mm的片重为4g左右硬度为0.32MPa的方形糖块,每块方糖含铁8mg。
实施例2
一种补血方糖,配方由以下成分组成:
制备方法如下:
将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉、花生衣粉分别进行气流粉碎,控制粒径小于100μm,将微粉化的六个原料按用量与糖醇和红糖在流化床混合均匀。将柠檬酸铁溶于水后作为润湿剂进行沸腾干燥后加入适量抗氧化剂。用方糖机在常规的压力下压成9mm×9mm×9mm的片重为2.88g左右硬度为0.32MPa的方形糖块,每块方糖含铁5.6mg。
实施例3
一种补血方糖,配方由以下成分组成:
制备方法如下:
将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉、花生衣粉分别进行气流粉碎,控制粒径小于100μm,将微粉化的六个原料按用量与糖醇和红糖在流化床混合均匀。将柠檬酸铁溶于水后作为润湿剂进行沸腾干燥后加入适量抗氧化剂。用方糖机在常规的压力下压成11mm×11mm×11mm的片重为4.84g左右硬度为0.32MPa的方形糖块,每块方糖含铁9.6mg。
实施例4
一种补血方糖,配方由以下成分组成:
制备方法如下:
将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉、花生衣粉分别进行气流粉碎,控制粒径小于100μm,将微粉化的六个原料按用量与糖醇和红糖在流化床混合均匀。将柠檬酸铁溶于水后作为润湿剂进行沸腾干燥后加入适量抗氧化剂。用方糖机在常规的压力下压成12mm×12mm×12mm的片重为6.8g左右硬度为0.32MPa的方形糖块,每块方糖含铁12.6mg。
实施例5
一种补血方糖,配方由以下成分组成:
制备方法如下:
将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉、花生衣粉分别进行气流粉碎,控制粒径小于100μm,将微粉化的六个原料按用量与糖醇和红糖在流化床混合均匀。将柠檬酸铁溶于水后作为润湿剂进行沸腾干燥后加入适量抗氧化剂。用方糖机在常规的压力下压成10mm×10mm×10mm的片重为4g左右硬度为0.32MPa的方形糖块,每块方糖含铁8mg。
试验例1
对本发明的产品进行了检验,其结果如下:

从表1可以看出,从崩解时限、澄明度和甜度上看,本发明补血方糖与常规方糖差异较小,可作为常规方糖的有效替代品食用。
试验例2
血糖含量测定试验
取20只SD正常大鼠,连续30天分别给予实施例1-4中本发明补血方糖和普通方糖,随后测定空腹血糖含量。断尾收集血样,取新鲜血液收集于离心管中,于3000r/min离心l0min,分离血清,采用葡萄糖氧化酶法(GOD)测定血糖含量。测定结果如下表:

从表2可以看出,长期服用普通方糖后,空腹血糖值显著高于实施例方糖组,表明补血方糖可长期服用亦不会对血糖含量造成影响。
试验例3
取实施例1的样品,测定其血红蛋白含量,具体方法如下:
将80只SD大鼠置于实验室环境适应5d后,20只给予正常大鼠基础饲料和正常饮用水,作为空白对照组,其余60只给予低铁饲料及饮用去离子水,20d后采尾血检测血红蛋白(Hb),将Hb低于100g·L-1的大鼠作为营养性贫血模型动物。取贫血大鼠60只,随机分成模型组(20只)、对照组(20只)和试验组(20只)。实验期间各组动物继续喂饲低铁饲料和饮用去离子水(灌胃给予10mL·kg-1去离子水),试验组给予本发明实施例1的方糖,每天2片(相当于人体每日推荐量),而对照组另给予普通方糖4g/块,每天2片,连续30d,测定血红蛋白(Hb)的含量。采用氰化高铁法测定血红蛋白含量,用10μl定量毛细管取大鼠尾血,放入盛有2.5ml高铁氰化钾试剂的塑料管中,充分振荡,使血完全溶出,避光放置15min后,用血红蛋白仪测定,同时测定血红蛋白标准和基准物质。大鼠尾血血红蛋白检测结果见下表:

从表3可以看出,实验后补血方糖组的血红蛋白值显著高于实验前,且高于对照组和模型组,表明补血方糖可显著提升大鼠的血红蛋白值。
本发明不局限于上述实施方式,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以做出若干改进和润饰,这些改进和润饰也视为本发明的保护范围之内。本说明书中未作详细描述的内容属于本领域专业技术人员公知的现有技术。
Claims (10)
1.一种补血方糖,其特征在于:按质量百分比计,所述补血方糖包括药食同源组合物30%~40%,花生衣5%~15%,抗氧化剂0.5%~3%,柠檬酸铁0.1%~0.6%,红糖20%~40%,糖醇20%~40%;
所述药食同源组合物由重量配比为1.0~2.5:0~1.5:0~1.5:0~1.5:0~1.5红枣、生姜、龙眼、枸杞和黑芝麻组成。
2.如权利要求1所述的补血方糖,其特征在于:所述抗氧化剂包括抗坏血酸、生育酚、维生素A、叶黄素或β-胡萝卜素中的至少一种,所述抗氧化剂和柠檬酸铁的质量比为5:1。
3.如权利要求1所述的补血方糖,其特征在于:所述的糖醇包括赤藓糖醇、乳糖醇、益寿糖、木糖醇、山梨醇、甘露醇或麦芽糖醇中的至少一种。
4.如权利要求1所述的补血方糖,其特征在于:所述药食同源组合物中各组分均为粉末状,各组分的粒径均小于100μm。
5.如权利要求1所述的补血方糖,其特征在于:所述补血方糖包括药食同源组合物30%~38%,花生衣10%~15%,抗氧化剂1%,柠檬酸铁0.2%,红糖25%~30%,糖醇25%~30%。
6.如权利要求1所述的补血方糖,其特征在于:所述补血方糖包括药食同源组合物36%,花生衣12.8%,抗氧化剂1%,柠檬酸铁0.2%,红糖25%,糖醇25%。
7.一种如权利要求1中所述的补血方糖的制备方法,其特征在于,该方法包括以下步骤:
S1、将红枣粉、生姜粉、龙眼粉、枸杞粉、黑芝麻粉和花生衣粉分别进行气流粉碎;
S2、将微粉化的上述六种原料与糖醇和红糖在流化床混合均匀;
S3、将柠檬酸铁溶于水后作为润湿剂加入,随后进行沸腾干燥后加入适量抗氧化剂;
S4、将干燥好的物料压制成标准大小的方糖。
8.如权利要求7所述的补血方糖的制备方法,其特征在于:所述步骤S1中,控制气流粉碎后各组分的粒径小于100μm。
9.如权利要求7所述的补血方糖的制备方法,其特征在于:所述步骤S4中,压制成的标准方糖的形状为边长9-12mm的立方体。
10.如权利要求7所述的补血方糖的制备方法,其特征在于:所述步骤S3中,制备湿润剂时使用的水是纯化水。
