本发明属于食品加工领域。
背景技术
竹笋,在中国自古被当作“菜中珍品”,竹笋含有丰富的蛋白质、氨基酸、脂肪、糖类、钙、磷、铁、胡萝卜素、维生素B1、B2、C。多种维生素和胡萝卜素含量比大白菜含量高一倍多;而且竹笋的蛋白质比较优越,人体必需的赖氨酸、色氨酸、苏氨酸、苯丙氨酸,以及在蛋白质代谢过程中占有重要地位的谷氨酸和有维持蛋白质构型作用的胱氨酸,都有一定的含量,为优良的保健蔬菜。
授权公告号为CN104095032B的专利文件,公开了一种干竹笋片的加工方法,具体步骤依次如下:清洗、切片、护色、烘干、包装和灭菌。该方法中护色步骤为,将竹笋切片后立刻投入护色液中,竹笋片完全浸没后需要立即捞起。因为切片机切出来的竹笋片相互紧贴,不能很好地与护色液充分接触,所以现有技术中是通过人工将竹笋片分散后浸入护色液中,然后立即捞出。存在人员劳动强度大的问题。
发明内容
本发明的目的在于提供一种竹笋切片装置,以解决现有技术人员劳动强度大的问题。
为了达到上述目的,本发明的基础方案提供一种竹笋切片装置,包括推动装置和切片浸泡装置,推动装置包括机架、气缸和送料板,气缸固定在机架上,送料板滑动连接在机架上,送料板固定连接在气缸的输出端,切片浸泡装置包括驱动切刀的转动的电机、用于将竹笋切片的切刀、插片板、用于插取竹笋片的插针、拉回弹簧、浸泡槽、阻止浸泡槽上移的限位块、用于使针板展开的展开磁铁和感应切刀位置的感应开关,电机固定连接在机架上,切刀为导磁体,切刀位于浸泡槽的上方,插片板铰接在切刀上,插针固定连接在插片板上,浸泡槽滑动连接在机架上,机架上设有电磁铁,浸泡槽底部设有与电磁铁极性相同的上升磁铁;限位块为导磁体,限位块安装在机架上,限位块位于浸泡槽上方,拉回弹簧一端固定连接在限位块上,限位弹簧另一端固定连接在固定在机架上,展开磁铁固定在机架上,展开磁铁与限位块能相互吸引,感应开关位于浸泡槽的上方,感应开关与电磁铁的线圈电连接,感应开关位于浸泡槽远离送料板一侧,切刀转动时,切刀经过限位块与展开磁铁之间。
本基础方案的原理在于:将竹笋条固定在送料板上,利用气缸推动送料板,从而推动竹笋向切刀移动,电机驱动切刀转动将竹笋切成片状。切刀对竹笋切片时,插针插入片状的竹笋中,切刀转动时,片状竹笋随切刀一起运动。当切片转动至限位块和展开磁铁之间时,因为切刀是导磁体,切刀使展开磁铁与限位块之间的磁感线变化,从而使展开磁铁对限位块的吸引力减弱,进而限位块被拉回弹簧拉回,不再抵挡浸泡槽,浸泡槽在电磁铁的作用下上升,将片状竹笋浸泡在浸泡液中。
切刀继续移动,插片板在展开磁铁的作用下展开,将片状竹笋与切刀分离,使竹笋片与浸泡液充分接触。切刀继续转动,位置感应开关感应到切刀时,使电磁铁的线圈断电,浸泡槽下移,将竹笋从浸泡液中取出。浸泡槽下移后限位块在展开磁铁的作用下复位,再次对浸泡槽起阻挡作用。
本基础方案的有益效果在于:1.本装置在浸泡时,插片板展开,使片状竹笋充分与浸泡液接触。避免了人工分散竹笋片,解决现有技术人员劳动强度大的问题。
2.本装置通过切刀的转动,控制浸泡槽的升降,即竹笋的浸泡时间可以通过调整电机的转速来调节,从能使竹笋在经过短暂浸泡之后,立即取出,满足了工艺要求。另一方面相对于不能上升的浸泡槽,在浸泡槽中浸泡液较少的情况下,上升的浸泡槽能够使切刀上的竹笋片浸泡到浸泡液。
3.本装置连续完成了切片和浸泡两个工序,节约了工序与工序之间的转换时间。
优化方案一:所述浸泡槽底部设有竖直的导向杆,机架上设有导向孔,导向杆滑动连接在导向孔中。导向杆和导向孔的设置使浸泡槽运行稳定,防止浸泡槽运行时脱离架,造成设备损毁。
优化方案二:还包括复位扭簧,复位扭簧安装在插片板与切刀的铰接处。复位扭簧的设置能够使插片板展开后复位,为下一次切片动作做准备。
优化方案三:所述切刀由钢制成。钢的价格便宜,隔磁性能好。
优化方案四:所述浸泡槽为ABS合金制成。ABS合金材料强度好韧性高,能够适应浸泡槽上下运动造成的冲击力。

具体实施方式
下面通过具体实施方式对本发明作进一步详细的说明:
说明书附图中的附图标记包括:送料板1、限位块2、浸泡槽3、感应开关4、展开磁铁5、切刀6、插片板7、机架8、上升磁铁9、电磁铁10、插针11。
实施例:本方案中的竹笋切片装置,如图1所示,包括推动装置和切片浸泡装置,送料气泵的输出端连接在气缸的进气端,气缸固定在机架8上,送料板1上一体成型有燕尾槽,机架8上一体成型有燕尾条,燕尾条安装在燕尾槽中,送料板1螺纹连接在气缸的输出端。电机通过地脚螺栓固定连接在机架8上。切刀6呈板状,切刀6为钢制成,切刀6键连接在电机的输出轴上,切刀6与电机的连接处位于浸泡槽3的上方。如图2所示,插片板7呈条状,插片板7由导磁体制成。插片板7销轴铰接在切刀6远离刀刃一端,复位扭簧安装在插片板7与切刀6的铰接处。插针11固定连接在插片板7上,插针11针尖平行于切刀6刀面,朝向切刀6刀刃。浸泡槽3底部螺纹连接有导向柱,机架8上一体成型有导向孔,导向柱出入导向孔中滑动连接在机架8上。
如图1和图2所示,机架8上螺纹连接有电磁铁10,浸泡槽3为ABS合金制成,浸泡槽3底部螺纹连接有与电磁铁10极性相同的上升磁铁9,电磁铁10与上升磁铁9相对设置。限位块2用钢制成,机架8上螺纹连接有支撑限位块2的滑动板,限位块2位于浸泡槽3上方。拉回弹簧一端焊接在限位块2上,限位弹簧另一端焊接在固定在机架8上。展开磁铁10螺纹连接在机架8上,展开磁铁10与限位块2能相互吸引。
感应开关4为位置开关,感应开关4螺纹固定在机架8上连接的感应开关4支撑架上,感应开关4位于浸泡槽3的上方,感应开关4与电磁铁10的线圈电连接控制电磁铁10的磁性。感应开关4位于浸泡槽3远离送料板1一侧,送料板1呈杯状。切刀6转动时,经过限位块2与展开磁铁5之间。
使用本装置制作干竹笋片的步骤为:
(1)挑选新鲜竹笋剥去箨叶,放入滚洗机内,用清水滚动清洗,除去泥土和杂质;
(2)在浸泡槽3中装入护色液,所述护色液的成分和质量百分比为:茶多酚5%、异抗坏血酸4%、肌醇六磷酸2%和丁基羟基茴香醚2%,余量为纯净水;
(3)将清洗好的竹笋插入送料板1的杯口中,启动气缸,推动送料板1,从而推动竹笋向切刀6移动,电机驱动切刀6转动将竹笋切成片状。切刀6对竹笋切片时,插针11插入片状的竹笋中,切刀6转动时,片状竹笋随切刀6一起运动。当切片转动至限位块2和展开磁铁5之间时,因为切刀6是导磁体,切刀6使展开磁铁5与限位块2之间的磁感线变化,从而使展开磁铁5对限位块2的吸引力减弱,进而限位块2被拉回弹簧拉回,不再抵挡浸泡槽3,浸泡槽3在电磁铁10的作用下上升,将片状竹笋浸泡在浸泡液中。
切刀6继续移动,插片板7在展开磁铁5的吸力作用下展开,将片状竹笋与切刀6分离,使竹笋片与浸泡液充分接触。切刀6继续转动,位置感应开关4感应到切刀6时,使电磁铁10的线圈断电,浸泡槽3下移,将竹笋从浸泡液中取出。浸泡槽3下移后限位块2在展开磁铁5的作用下复位,再次对浸泡槽3起阻挡作用。切刀6上的竹笋片碰到机架8上设置的挡块落入收集箱中。如此重复完成所有竹笋的切片和浸泡工序。
(4)将竹笋片放入烘干机第一次烘干,烘干温度为70℃,时间为17分钟,第一次烘干完成后,立即将竹笋片均匀薄摊在干净的平地上摊晾,使竹笋片尽快散发热蒸汽、冷却,摊晾时间为60分钟;将竹笋片再置于烘干机中第二次烘干,烘干温度为55℃,时间为15分钟,第二次烘干完成后,立即将竹笋片均匀薄摊在干净的平地上摊晾,使竹笋片尽快散发热蒸汽、冷却,摊晾时间为50分钟;将竹笋片置于烘干机中第三次烘干,烘干温度为45℃,时间为10分钟,第三次烘干完成后,立即将竹笋片均匀薄摊在干净的平地上摊晾,使竹笋片尽快散发热蒸汽、冷却,摊晾时间为40分钟,得到含水量为10%以下的竹笋片;以上所述的竹笋片烘干过程采用热风循环烘干,所述的热风循环烘干为竹笋片在烘干机内由链条带动进行8次循环烘干;
(5)将干竹笋片放入包装机中进行真空包装;
(6)将包装后的竹笋片放入钴-60辐照装置用8kGy剂量的γ射线对竹笋片进行照射。

1.竹笋切片装置,其特征在于,包括推动装置和切片浸泡装置,推动装置包括机架、气缸和送料板,气缸固定在机架上,送料板滑动连接在机架上,送料板固定连接在气缸的输出端,切片浸泡装置包括用于将竹笋切片的切刀、驱动切刀的转动的电机、插片板、用于插取竹笋片的插针、拉回弹簧、浸泡槽、阻止浸泡槽上移的限位块、用于使针板展开的展开磁铁和感应切刀位置的感应开关,电机固定连接在机架上,切刀为导磁体,切刀位于浸泡槽的上方,插片板铰接在切刀上,插针固定连接在插片板上,浸泡槽滑动连接在机架上,机架上设有电磁铁,浸泡槽底部设有与电磁铁极性相同的上升磁铁;限位块为导磁体,限位块安装在机架上,限位块位于浸泡槽上方,拉回弹簧一端固定连接在机架上,拉回弹簧另一端固定连接在限位块上,展开磁铁固定在机架上,展开磁铁与限位块能相互吸引,感应开关位于浸泡槽的上方,感应开关与电磁铁的线圈电连接,感应开关位于浸泡槽远离送料板一侧,切刀转动时,切刀经过限位块与展开磁铁之间。
2.根据权利要求1所述的竹笋切片装置,其特征在于:所述浸泡槽底部设有竖直的导向杆,机架上设有导向孔,导向杆滑动连接在导向孔中。
3.根据权利要求2所述的竹笋切片装置,其特征在于:还包括复位扭簧,复位扭簧安装在插片板与切刀的铰接处。
