一种紫山药甜荞营养挂面的加工方法,其特征在于,经原料预处理、胶磨糊化、调和、熟化、压片与切条、包装的加工工艺,采用以下加工步骤:
A紫山药预处理:挑选优质新鲜的紫山药,洗净去皮后,辅以芸豆、纳豆,称取5kg的紫山药、3kg的芸豆和2kg的纳豆,混合均匀后,破碎处理,加入适量的清水进行打浆,制得紫山药原浆;
B甜荞预处理:挑选新鲜优质的甜荞、小麦、白果仁,洗净去杂,取10kg的甜荞、5kg的小麦、2kg的白果仁混合均匀,低温干燥后,破壁粉碎,制得甜荞混合粉;
C辅料预处理:取适量玉竹、女贞叶、野芝麻叶和金银花,清水洗净,破碎处理,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.35%的纤维素酶、0.05%的半纤维素酶,搅拌均匀后加热至35℃,联合水解40分钟,过滤,制得辅料水解物;

一种紫山药甜荞营养挂面的加工方法,其特征在于:经原料预处理、胶磨糊化、调和、熟化、压片与切条、包装的加工工艺,所述的加工方法采用以下步骤:
A紫山药预处理:挑选优质新鲜的紫山药,辅以阳荷、紫薯,洗净去皮后,称取8kg的紫山药、4kg的阳荷和1kg的紫薯,混合均匀后,破碎处理,加入适量的清水进行打浆,制得紫山药原浆;
B甜荞预处理:挑选新鲜优质的甜荞、莲子芯、杏仁,洗净去杂,取10kg的甜荞、2kg的莲子芯、1kg的杏仁混合均匀,低温干燥后,破壁粉碎,制得甜荞混合粉;
C辅料预处理:取适量腐婢叶、女贞叶、嫩荷叶和百合,清水洗净,破碎处理,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.5%的纤维素酶、0.1%的半纤维素酶,搅拌均匀后加热至32℃,联合水解35分钟,过滤,制得辅料水解物;
D胶磨糊化:取40重量份的紫山药原浆、50重量份的甜荞混合粉和10重量份的辅料水解物,混合均匀,制得混合原料,采用分段过胶体磨,向混合原料中加入适量清水,先用齿间隙1 mm的粗磨研磨,再用齿间隙0.05mm的乳化研磨,进行超细乳化处理后,加温到75℃,不断搅拌,进行糊化,时间为10分钟,制得原料乳化液;
E调和:先将适量食用盐、碳酸钠、魔芋胶和黄原胶混合均匀,加入温度为88℃的热水进行搅拌,制得面条改良剂溶液;然后向原料乳化液中加入面条改良剂溶液,搅拌均匀后再加适量清水,于120r/min 转速下和面15min,制得均匀松散的面胚;
F熟化:面胚送入熟化机中,于室温下熟化10min,制得熟化面胚;
G压片与切条:将熟化的面胚通过双辊压延,形成面片,再通过双辊压逐步压延,然后用轧条机将面片切成宽1毫米、厚0.2毫米的面条,上架晾干;
H包装:将干面条用干净白纸袋分装,即可上市。

Claims (1)
1.一种紫山药甜荞营养挂面的加工方法,其特征在于,经原料预处理、胶磨糊化、调和、熟化、压片与切条、包装的加工工艺,采用以下加工步骤:
A紫山药预处理:挑选优质新鲜的紫山药,洗净去皮后,辅以芸豆、纳豆,称取5kg的紫山药、3kg的芸豆和2kg的纳豆,混合均匀后,破碎处理,加入适量的清水进行打浆,制得紫山药原浆;
B甜荞预处理:挑选新鲜优质的甜荞、小麦、白果仁,洗净去杂,取10kg的甜荞、5kg的小麦、2kg的白果仁混合均匀,低温干燥后,破壁粉碎,制得甜荞混合粉;
C辅料预处理:取适量玉竹、女贞叶、野芝麻叶和金银花,清水洗净,破碎处理,置打浆机中搅打成烂糜,入不锈钢容器中,加入烂糜重量0.35%的纤维素酶、0.05%的半纤维素酶,搅拌均匀后加热至35℃,联合水解40分钟,过滤,制得辅料水解物;
D胶磨糊化:取35重量份的紫山药原浆、55重量份的甜荞混合粉和10重量份的辅料水解物,混合均匀,制得混合原料,采用分段过胶体磨,向混合原料中加入适量清水,先用齿间隙1.5mm的粗磨研磨,再用齿间隙0.02mm的乳化研磨,进行超细乳化处理后,加温到68℃,不断搅拌,进行糊化,时间为15分钟,制得原料乳化液;
E调和:先将适量食用盐、碳酸钠、魔芋胶和黄原胶混合均匀,加入温度为100℃的热水进行搅拌,制得面条改良剂溶液;然后向原料乳化液中加入面条改良剂溶液,搅拌均匀后再加适量清水,于180r/min 转速下和面15min,制得均匀松散的面胚;
F熟化:面胚送入熟化机中,于室温下熟化10min,制得熟化面胚;
G压片与切条:将熟化的面胚通过双辊压延,形成面片,再通过双辊压逐步压延,然后用轧条机将面片切成宽2毫米、厚0.5毫米的面条,上架晾干;
H包装:将干面条用干净白纸袋分装。
