本发明涉及一种乳酸菌饮品配方的改进,具体涉及一种草莓味乳酸菌饮品的改进。
背景技术
含乳饮料是指以鲜乳或乳制品为原料,经发酵或未经发酵加工制成的制品。含乳饮料分为配制型含乳饮料和发酵型含乳饮料。配制型含乳饮料是以乳或乳制品为原料,加入水、白砂糖、甜味剂、酸味剂、果汁、茶、咖啡、植物提取液等的一种或几种调制而成的饮料。
配制型含乳饮料:蛋白质含量不低于1.0%的称为乳饮料。
发酵型含乳饮料:发酵型含乳饮料中蛋白质含量不低于1.0%的称为乳酸菌乳饮料,蛋白质含量不低于0.7%的称为乳酸菌饮料。
中性乳饮料:中性乳饮料主要以水、牛乳为基本原料,加入其他风味辅料,如咖啡、可可、果汁等,再加以调色、调香制成的饮用牛乳。其中蛋白质含量不低于1.0%的称为乳饮料。
酸性乳饮料:酸性乳饮料包括发酵型酸乳饮料和调配型酸乳饮料。
目前的乳酸菌饮料口味比较单一,难以满足多数客户的需求。
发明内容
本发明的目的在于针对现有技术的缺陷和不足,提供一种草莓味乳酸菌饮品,它通过加入草莓汁、柠檬酸、双歧因子(低聚果糖)、酸度调节剂和复合稳定剂等制成的液态饮料,它一方面加入了草莓汁、糖和酸度调节剂等,使产品具有草莓的芳香,同时其主要原料为发酵酸牛奶,使产品既有酸奶独特的风味又有草莓很好的口感,且营养价值大大提高,满足了消费者对口感和健康的需求。
为实现上述目的,草莓味乳酸菌饮品的制作采用以下重量配比:草莓汁170-230ml、发酵酸牛奶300-450 ml、饮用水100-150 ml、柠檬酸60-80 ml、白砂糖8-10g、食品添加剂8-10g、双歧因子5-8g、益生菌5-8g、香草1-1.5g。
所述的食品添加剂包含羟甲基纤维素钠、羟丙基二定分磷酸酯、黄原胶、柠檬酸、乳酸、L-苹果酸、柠檬酸钠、安赛蜜、甜蜜素、三氯蔗糖、食用香精。
所述的益生菌包含嗜热链球菌、保加利亚乳杆菌。
所述的发酵酸牛奶为保加利亚乳杆菌∶噬热链球菌比利为1∶1,接种发酵、风味良好的液体酸奶。
所述的香草是会散发出独特香味的植物。通常用于调味,有时也为称药草,是世界各国传统医学的重要成分,提供大部分可用于治疗疾病的药材。

本具体实施方式采用的技术方案是:草莓味乳酸菌饮品的配方采用以下重量配比:草莓汁170-230ml、发酵酸牛奶300ml、饮用水100 ml、柠檬酸60ml、白砂糖8g、食品添加剂8g、双歧因子5g、益生菌5g、香草1g。

草莓味乳酸菌饮品的配方采用以下重量配比:草莓汁200ml、发酵酸牛奶380 ml、饮用水130 ml、柠檬酸70 ml、白砂糖7g、食品添加剂70g、双歧因子6g、益生菌6g、香草1.2g。
实施例3
草莓味乳酸菌饮品的配方采用以下重量配比:草莓汁230ml、发酵酸牛奶450 ml、饮用水150 ml、柠檬酸80 ml、白砂糖10g、食品添加剂10g、双歧因子8g、益生菌8g、香草1.5g。
所述的食品添加剂包含羟甲基纤维素钠、羟丙基二定分磷酸酯、黄原胶、柠檬酸、乳酸、L-苹果酸、柠檬酸钠、安赛蜜、甜蜜素、三氯蔗糖、食用香精。
所述的益生菌包含嗜热链球菌、保加利亚乳杆菌。
所述的发酵酸牛奶为保加利亚乳杆菌∶噬热链球菌比利为1∶1的液体酸奶。
所述的香草是会散发出独特香味的植物。通常用于调味,有时也为称药草,是世界各国传统医学的重要成分,提供大部分可用于治疗疾病的药材。
所述的双歧因子是在检测分析婴儿肠道菌群时发现,母乳喂养的婴儿肠道双歧杆菌约占厌氧菌的99%,而人工喂养婴儿的肠道双歧杆菌仅占厌氧菌的90%左右,研究结果表明,在人乳汁中含有一种叫N—乙酰—D葡萄糖的物质,且在人的初乳中含量最多,该物质能够促进双歧杆菌繁殖增生,是故便将这类能促进自身双歧杆菌增生的物质称为双歧因子。

2.根据权利要求1所述的草莓味乳酸菌饮品的配方,其特征在于:草莓味乳酸菌饮品的配方采用以下重量配比:草莓汁170ml、发酵酸牛奶300ml、饮用水100 ml、柠檬酸60ml、白砂糖8g、食品添加剂8g、双歧因子5g、益生菌5g、香草1g。
3.根据权利要求1所述的草莓味乳酸菌饮品的配方,其特征在于:草莓味乳酸菌饮品的配方采用以下重量配比:草莓汁200ml、发酵酸牛奶380 ml、饮用水130 ml、柠檬酸70 ml、白砂糖9g、食品添加剂70g、双歧因子6g、益生菌6g、香草1.2g。
4.根据权利要求1所述的草莓味乳酸菌饮品的配方,其特征在于:草莓味乳酸菌饮品的配方采用以下重量配比:草莓汁230ml、发酵酸牛奶450 ml、饮用水150 ml、柠檬酸80 ml、白砂糖10g、食品添加剂10g、双歧因子8g、益生菌8g、香草1.5g。
