本发明属于食品加工技术领域,具体涉及一种红米植物饮料及其制备方法。
背景技术
红米起源于中国,距今大约有1千多年的历史,是在大米中液体深层发酵精致而成的一种红色霉菌。它外皮呈紫红色,内心红色,米质较好,营养价值也较高,微有酸味,味淡,是南方常见的一种粮食作物。
红米中富含的微量元素锌、铜、铁、硒、钼、钙锰等含量比普通稻(白)米高0.5-3倍;红米还含有黄酮类化合物、生物碱、植物甾醇以及胡萝卜素等药物成份。现代医学证明,红米具有升高血浆高密度脂肪蛋白胆固醇(HD)L和提高机体抗氧化能力的作用;有防治有氧自由基引起的疾病之功效;具有抑制癌细胞、抗肿瘤及免疫赋活作用;对老年补钙、儿童增高、长智有益,具有强筋壮骨、补血养颜之功效。研究表明,这些微量元素和营养物质主要富集在色素中。
苦瓜:性味:寒,苦。清热解暑,明目解毒。可食用部分81%,每100g中含能量79KJ,水分93.48g,蛋白质1g,脂肪0.1g,膳食纤维1.4g,碳水化合物3.5g、灰分0.6g、胡萝卜素100μg、视黄醇17μg,硫胺素0.03mg,核黄素0.03mg、尼克酸0.4mg;维生素C 56mg、维生素E0.85mg;钾256mg,钠2.5mg,钙14mg,镁18mg、铁0.7mg,锰0.16mg、锌0.36mg,铜0.06mg,磷35mg、硒0.36μg。尚含有降低血糖作用的苦瓜甙等。
本发明的目的是将红米与苦瓜作为原料制成植物饮料,且目前尚未报道相关的文献报道。

本发明的目的是提供了一种红米植物饮料及其制备方法,该植物饮料由红米、苦瓜、蜂蜜及甜味剂制备制备而成,其制得的植物饮料,香味浓厚独特,口感纯正、淡苦回甜、清凉舒爽,其营养非常丰富,具有多种保健功能。
具体地,本发明提供了一种红米植物饮料,按重量份计,由红米20-50份、苦瓜30-60份、蜂蜜3-8份制备而成;
优选地:一种红米植物饮料,按重量份计,由红米30-40份、苦瓜40-50份、蜂蜜4-6份制备而成;
更优选地:一种红米植物饮料,按重量份计,由红米35份、苦瓜45份、蜂蜜5份制备而成;
本发明还提供了一种红米植物饮料的制备方法,包括以下步骤:
(1)取配方量的红米,加10-16倍量的水,煎煮20-40min,用过滤式离心机进行离心过滤,转速为800-1000r/min,收集滤液,备用。
(2)取配方量的苦瓜切细,加10-16倍量的水煎煮30-50min,过滤,滤液,备用
(3)称取饮料总量2-4%的甜味剂,用80-85℃热水溶解,加入步骤(2)萃取液,定容,充氮,70-75℃灌装,121℃灭菌20min,即得到本发明所述的植物饮料。
上述所述的甜味剂为白砂糖、安赛蜜、葡萄糖、蔗糖中的至少一种。
上述步骤(1)取配方量的红米,加13倍量的水,煎煮30min,用过滤式离心机进行离心过滤,转速为800r/min,收集滤液,备用。

本发明的有益效果为:
本发明以红米与苦瓜作为主要原料制备植物饮料,其二者均富含对人家非常有益的微量元素及营养成分,具有良好的保健功效,且二者组方制备植物饮料滋味相互作用,其香味浓厚独特,口感纯正、淡苦回甜、清凉舒爽,且加入蜂蜜,其植物饮料稳定性更高,而且具有较好的醒酒功效。

实施例3:红米植物饮料的制备:
配方:红米35g、苦瓜45g、蜂蜜5g;
制备方法:
(1)取配方量的红米,加13倍量的水,煎煮30min,用过滤式离心机进行离心过滤,转速为900r/min,收集滤液,备用。
(2)取配方量的苦瓜切细,加13倍量的水煎煮40min,过滤,滤液,备用
(3)称取饮料总量3%的甜味剂,用80-85℃热水溶解,加入步骤(2)萃取液,定容,充氮,70-75℃灌装,121℃灭菌20min,即得到本发明所述的植物饮料。
实施例4:红米植物饮料的制备:
配方:红米40g、苦瓜50g、蜂蜜6g;
(1)取配方量的红米,加10-16倍量的水,煎煮40min,用过滤式离心机进行离心过滤,转速为1000r/min,收集滤液,备用。
(2)取配方量的苦瓜切细,加16倍量的水煎煮50min,过滤,滤液,备用
(3)称取饮料总量4%的甜味剂,用80-85℃热水溶解,加入步骤(2)萃取液,定容,充氮,75℃灌装,121℃灭菌20min,即得到本发明所述的植物饮料。
实施例5:红米植物饮料的制备:
配方:红米50g、苦瓜60g、蜂蜜8g;
(1)取配方量的红米,加16倍量的水,煎煮40min,用过滤式离心机进行离心过滤,转速为1000r/min,收集滤液,备用。
(2)取配方量的苦瓜切细,加16倍量的水煎煮50min,过滤,滤液,备用
(3)称取饮料总量2-4%的甜味剂,用85℃热水溶解,加入步骤(2)萃取液,定容,充氮,75℃灌装,121℃灭菌20min,即得到本发明所述的植物饮料。
Claims (8)
1.一种红米植物饮料,其特征在于:按重量份计,由红米20-50份、苦瓜30-60份、蜂蜜3-8份制备而成。
2.根据权利要求1所述的一种红米植物饮料,其特征在于:按重量份计,由红米30-40份、苦瓜40-50份、蜂蜜4-6份制备而成。
3.根据权利要求2或3所述的红米植物饮料,其特征在于:按重量份计,由红米35份、苦瓜45份、蜂蜜5份制备而成。
4.一种红米植物饮料的制备方法,其特征在于:包括以下步骤:
(1)取配方量的红米,加10-16倍量的水,煎煮20-40min,用过滤式离心机进行离心过滤,转速为800-1000r/min,收集滤液,备用。
(2)取配方量的苦瓜切细,加10-16倍量的水煎煮30-50min,过滤,滤液,备用
(3)称取饮料总量2-4%的甜味剂,用80-85℃热水溶解,加入步骤(2)萃取液,定容,充氮,70-75℃灌装,121℃灭菌20min,即得到本发明所述的植物饮料。
5.根据权利要求1-3任一所述的红米植物饮料,其特征在于:所述的甜味剂为白砂糖、安赛蜜、葡萄糖、蔗糖中的至少一种。
6.根据权利要求4所述的红米植物饮料的制备方法,其特征在于:步骤(1)取配方量的红米,加13倍量的水,煎煮30min,用过滤式离心机进行离心过滤,转速为800r/min,收集滤液,备用。
7.根据权利要求4所述的红米植物饮料的制备方法,其特征在于:步骤(2)取配方量的苦瓜切细,加13倍量的水煎煮40min,过滤,滤液,备用。
8.根据权利要求4所述的红米植物饮料的制备方法,其特征在于:步骤(3)称取饮料总量3%的甜味剂,用83℃热水溶解,加入步骤(2)萃取液,定容,充氮,73℃灌装,121℃灭菌20min,即得到本发明所述的植物饮料。
