一种母乳化营养油的调配及微胶囊制备方法,以OPO结构脂质、大豆油、高油酸葵花籽油和玉米油为原料,按照质量百分比:OPO结构脂质为22.6%~30.4%,大豆油为2.4~4.2%,高油酸葵花籽油为48.6%~64.2%,玉米油为9.4%~16.8%比例调配,得到母乳化营养油。以单甘脂,柠檬酸脂肪酸甘油酯,酪蛋白酸钠和辛烯基琥珀酸淀粉钠为乳化剂,乳糖,乳清蛋白和脱脂奶粉为壁材。利用微胶囊技术,经过乳化,高速混合,均质,喷雾干燥等工艺,过筛后即得到母乳化营养油微胶囊粉末,本发明参照中国母乳脂肪酸组成甘油三酯结构,配制出接近中国母乳脂肪酸组成的营养油;微胶囊的粉末可应用于各类婴幼儿奶粉的生产。

本发明涉及乳品技术加工领域,涉及一种母乳化营养油的制备方法。
背景技术
婴幼儿是具有特殊营养需求的一类群体。一方面,新出生的婴幼儿由于自身代谢系统尚未完善,营养的摄入要求全面均衡,具有与成人不同的特点;另一方面,婴幼儿处于一生中生长和智力发育最为迅速的时期,并且在这一关键时期营养素摄入的数量和质量将对其未来形成重大影响,关键营养素的缺乏与不足,将造成终生无法挽回的伤害。
母乳中的脂肪是新生婴儿能量的主要来源,对机体的结构和生理功能等方面有重要影响。母乳中约含有2%—6%的脂肪,而母乳脂肪中98%以上是甘油三酯,以脂肪球的形式存在于母乳中。母乳基本能满足婴儿6个月内的营养需要,而6月龄后,营养需要量增加,单纯的母乳喂养不能满足婴儿的营养需要,可采用母乳与婴儿配方奶粉的混合喂养 。近年来我国每年新生儿的数量高达2000万,而母乳不足的婴儿所占比例超过20%,因此婴儿配方奶粉的研究与发展具有重要的现实意义。
根据国家发改委公众营养与发展中心的一项调查显示,目前我国生产的婴儿配方奶粉已经解决了植物油源种类比较单一的问题,但同时又出现了甘油三酯结构与母乳脂肪结构存在差异的问题,现今婴儿中出现的便秘和钙流失等现象被认为与此相关。因此,目前婴儿配方奶粉母乳化的方向应该由宏观的模拟母乳中脂肪含量转向微观的从脂肪酸水平上来调整甘油三脂结构,使其更加接近母乳脂肪结构。
通过研究脂肪酸的位置分布,母乳中的饱和脂肪酸则大部分分布在Sn~2位置上。母乳中棕榈酸占总脂肪酸的19%,其中70%以上位于sn~2位置上,而且母乳C8:0~C16:0脂肪酸随着碳链加长,其在sn~2位上的百分含量基本都呈增加趋势。母乳脂肪在婴儿体内首先是通过胃脂肪酶水解,然后由胰脂酶水解为游离脂肪酸和2~甘油一酯,水解下来的游离脂肪酸在小肠消化吸收,2~甘油一酯经淋巴系统被吸收进入血液循环。研究表明,棕榈酸以2~甘油一酯形式存在,容易在小肠中被消化和吸收,提高了脂肪酸和钙离子的吸收率,如婴儿对于Sn~2位富含棕榈酸的猪油吸收率是随机酯交换后的1.2~1.4倍。
OPO结构脂质(1,3~二油酸~2~棕榈酸甘油三酯,简称OPO)是一种营养强化剂。OPO是以植物油为主要原料,在脂肪酶催化酯交换下,脂肪酸在丙三醇分子上的位置重新排列而得。它作为一种基本脂肪配料,模仿母乳的构成和母乳脂肪的特性,从而能最佳地帮助钙和能量的吸收。
发明内容
本发明的目的是提供一种母乳化营养油的调配及微胶囊制备方法。
本发明是通过以下技术实现的。
本发明所述的一种母乳化营养油的调配及微胶囊制备方法,工艺步骤如下。
(1)母乳化营养油调配:以OPO结构脂质、大豆油、高油酸葵花籽油和玉米油为原料,按照占营养油原料的质量百分比:OPO结构脂质为22.6%~30.4%,大豆油为2.4~4.2%,高油酸葵花籽油为48.6%~64.2%,玉米油为9.4%~16.8%进行调配,即得到母乳化营养油。
(2)以乳糖、乳清蛋白、脱脂奶粉作为壁材,其中质量比为16.0~20.0:3.0~7.0:0.5~1.5;以酪蛋白酸钠和辛烯基琥珀酸淀粉钠为水相乳化剂,其质量比为1:1~1:2;以单甘脂和柠檬酸钠作为油相乳化剂,其质量比为1:1~1:2。
(3)按乳化液质量百分比计算:按固形物20.0~40.0%、水60.0~80.0%调配;所述固形物按质量百分比计算:壁材为57.5~67.5%,营养油为30~40%,水相乳化剂2.0~3.0%,油相乳化剂0.5~1.0%。
(4)在65 ℃下搅拌20min,使乳化液充分混合。调节pH7.5,再用胶体磨高压均质得到稳定的乳化液,均质压力30MPa。
(5)喷雾干燥:将均质后稳定的乳化液进行喷雾干燥得到复合营养油微胶囊,进风温度190℃,出风温度100℃。
优选地,以OPO结构脂质、大豆油、高油酸葵花籽油和玉米油为原料,按照占营养油质量百分比,OPO结构脂质为25.7%,大豆油为3.0%,高油酸葵花籽油为58.7%,玉米油为12.6%进行调配。
所以本发明以植物油和OPO结构酯为原料,从母乳的脂肪酸组成与脂肪酸结构等方面入手,调配出更加母乳化的营养油,通过微胶囊技术制作成微胶囊粉末,应用于配方奶粉中,以满足婴儿的营养需求。
本发明的有益效果:(1)本发明参照中国母乳脂肪酸组成甘油三酯结构,选取不同比例的植物油和OPO结构脂质,配制出接近中国母乳脂肪酸组成的营养油;(2)本发明以乳糖,乳清蛋白和脱脂奶粉为壁材制备出母乳化营养油微胶囊,满足婴幼儿的营养需求。
具体实施方式
本发明将通过以下实施例作进一步说明。
实施例 1。
称取OPO 25.7 g,大豆油3.0g,高油酸葵花籽油58.7 g和玉米油12.6 g,调配成母乳化营养油,备用。称取壁材(乳糖,乳清蛋白和脱脂奶粉18:5:1)63.75 g,水相乳化剂酪蛋白酸钠和辛基酸琥珀酸钠各1 g,加入蒸馏水400 mL中,在60℃恒温水浴加热,用电动搅拌机搅拌均匀,得到水相溶液备用。称取母乳化营养油35 g,加入油相乳化剂单甘脂和柠檬酸脂肪酸甘油酯各0.25 g,60℃水浴加热15 min,得到油相溶液。
将油相缓慢倒入水相,65 ℃水浴条件下电动搅拌机搅拌30 min,调节PH7.5,过胶体磨,均质,均质压力为30 MPa,最后将均质后的乳化液进行喷雾干燥,喷雾干燥条件为进风温度190℃,出风温度100℃,得到母乳化营养油微胶囊粉末。
实施例 2。
称取OPO 24.8 g,大豆油3.4g,高油酸葵花籽油52.7 g和玉米油19.1 g,调配成母乳化营养油,备用。称取壁材(乳糖,乳清蛋白和脱脂奶粉19:6:1)63.75 g,水相乳化剂酪蛋白酸钠1g,辛基酸琥珀酸钠2g,加入蒸馏水400 mL中,在60℃恒温水浴加热,用电动搅拌机搅拌均匀,得到水相溶液备用。称取母乳化营养油32.5g,加入油相乳化剂单甘脂0.25g,柠檬酸脂肪酸甘油酯0.5g,60℃水浴加热15 min,得到油相溶液。
将油相缓慢倒入水相,65 ℃水浴条件下电动搅拌机搅拌30 min,调节PH7.5,过胶体磨,均质,均质压力为30 MPa,最后将均质后的乳化液进行喷雾干燥,喷雾干燥条件为进风温度190℃,出风温度100℃,得到母乳化营养油微胶囊粉末。

(1)母乳化营养油调配:以OPO结构脂质、大豆油、高油酸葵花籽油和玉米油为原料,按照占营养油原料的质量百分比:OPO结构脂质为22.6%~30.4%,大豆油为2.4~4.2%,高油酸葵花籽油为48.6%~64.2%,玉米油为9.4%~16.8%进行调配,即得到母乳化营养油;
(2)以乳糖、乳清蛋白、脱脂奶粉作为壁材,其中质量比为16.0~20.0:3.0~7.0:0.5~1.5;以酪蛋白酸钠和辛烯基琥珀酸淀粉钠为水相乳化剂,其质量比为1:1~1:2;以单甘脂和柠檬酸钠作为油相乳化剂,其质量比为1:1~1:2;
(3)按乳化液质量百分比计算:按固形物20.0~40.0%、水60.0~80.0%调配;所述固形物按质量百分比计算:壁材为57.5~67.5%,营养油为30~40%,水相乳化剂2.0~3.0%,油相乳化剂0.5~1.0%;
(4)在65 ℃下搅拌20min,使乳化液充分混合,调节pH7.5,再用胶体磨高压均质得到稳定的乳化液,均质压力30MPa;
(5)喷雾干燥:将均质后稳定的乳化液进行喷雾干燥得到复合营养油微胶囊,进风温度190℃,出风温度100℃。
2.根据权利要求1所述的一种母乳化营养油微胶囊粉末的制备方法,其特征是以OPO结构脂质、大豆油、高油酸葵花籽油和玉米油为原料,按照占营养油质量百分比,OPO结构脂质为25.7%,大豆油为3.0%,高油酸葵花籽油为58.7%,玉米油为12.6%进行调配。
