Claims (4)
1.一种山麻菜海带酱菜的制备方法,其特征在于:该山麻菜海带酱菜按照重量比由以下成分构成,木瓜60-80份,海带50-60份,野生山麻菜10-30份,姜20-50份,冰糖30-60份,大蒜10-30份,香辛料30-50份,葱20-40份,辣椒30-50份,生抽20-40份,食用盐10-30份;先用热水将野生山麻菜泡一会儿,然后搓洗2到3遍,搓洗的山麻菜水变得淡绿色,用干净的斗笠捞起山麻菜,然后拧干山麻菜里的水分,通风无菌放置;按照重量比例称取木瓜、胡罗卜、葱、姜、蒜、辣椒,用清水冲洗3-4遍到干净,再按照比例称取山麻菜随后在阳光、无菌、通风的环境下晒干;将晒干的木瓜和海带原料切成一条条相对均匀的菜丝;将其他晒干的原料碾碎并且混合搅匀;将搅碎的材料按比例加入香辛料、冰糖、食用盐在锅中温火炒,然后加入生抽搅拌均匀,然后将木瓜和海带菜丝倒入酱汁搅拌1—2分钟使其均匀,将酱菜盛起装好保鲜1-3摄氏度冷藏放置。
2.根据权利要求1所述的一种山麻菜海带酱菜,其特征在于制备方法原料最佳重量份为:木瓜70份,海带50份,野生山麻菜20份,姜40份,冰糖50份,食用盐20份,葱30份,香辛料40份,蒜25份,生抽25份,辣椒40份。
3.根据权利要求1所述的一种山麻菜海带酱菜,其特征在于:木瓜和海带菜丝倒入酱汁搅拌最佳时间为1分钟。
4.根据权利要求1所述的一种山麻菜海带酱菜,其特征在于:山麻菜海带酱菜最后盛起真空装好后保鲜最佳温度是2摄氏度冷藏放置。
