本发明涉及一种酱菜,属于食品领域,具体地说是以野生山麻菜、海带及木瓜为基本原料制备的一种酱菜。
背景技术
酱菜中含有乳酸菌等有益健康的物质,又具有特殊香味,是一年四季深受人们喜爱的菜肴。酱菜在发酵过程中会产生乳酸菌,对儿童、中老年人有助消化、调节肠胃功能的好作用,也是一种很好的开胃菜。现阶段市场里销售酱菜的主要品种有:甜酱甘露、甜酱姜芽、甜酱什锦菜、甜酱瓜、白糖蒜、西黄酱、酱红海带、酱乳黄瓜、酱瓜、酱花生米、酱粉、酱八宝菜、酱甘露、红薯泥、酱荆芥、酱韭花、酱莴笋、酱辣椒、西瓜豆酱、甜面酱、香辣牛肉酱等真空软包装系列酱菜。丰富多样的酱菜种类带给人们更多选择不同口味的机会,丰富了人们的生活,更大提高了生活水平和质量。市场上的酱菜确实有很多种类,分别采用各式各样的方法制作而成;然而大多数食材配制,商家为了延长其保质期都在原料里添加有食品添加剂,有时候食品添加剂会超标,对人体健康有很大威胁,严重的情况甚至使人患病,出现食品安全危机,影响食品市场稳定发展,此类情况尤其对老人和小孩等身体免疫比较差的群体来说影响是非常巨大。
发明内容
本发明提供一种酱菜,解决市场现有酱菜含有食品添加剂超标的现状。
本发明通过以下制作方案来解决上述问题:
一种山麻菜海带酱菜,该酱菜按照重量比由以下成分构成,木瓜60-80份,海带50-60份,野生山麻菜10-30份,姜20-50份,冰糖30-60份,大蒜10-30份,香辛料30-50份,葱20-40份,辣椒30-50份,生抽20-40份,食用盐10-30份;
先用热水将野生山麻菜泡一会儿,然后搓洗2到3遍,搓洗的山麻菜水变得淡绿色,用干净的斗笠捞起山麻菜,然后拧干山麻菜里的水分,通风无菌放置;
按照重量比例称取木瓜、胡罗卜、葱、姜、蒜、辣椒,用清水冲洗3-4遍到干净,再按照比例称取山麻菜随后在阳光、无菌、通风的环境下晒干;
将晒干的木瓜和海带原料切成一条条相对均匀的菜丝;将其他晒干的原料碾碎并且混合搅匀;
将搅碎的材料按比例加入香辛料、冰糖、食用盐在锅中温火炒,然后加入生抽搅拌均匀,然后将木瓜和海带菜丝倒入酱汁搅拌1—2分钟使其均匀,将酱菜盛起装好保鲜2摄氏度冷藏放置。
制备方法原料最佳重量份为:木瓜70份,海带50份,野生山麻菜20份,姜40份,冰糖50份,食用盐20份,葱30份,香辛料40份,蒜25份,生抽25份,辣椒40份。
酱汁搅拌最佳时间为1分钟。

本发明第一具体实施例,一种山麻菜海带酱菜,该辣酱按照重量比由以下成分构成木瓜70份,海带50份,野生山麻菜20份,姜40份,冰糖50份,食用盐20份,葱30份,香辛料40份,蒜25份,生抽25份,辣椒40份。
先用热水将野生山麻菜泡3分钟,然后搓洗3遍,搓洗的山麻菜水变得淡绿色,用干净的斗笠捞起山麻菜,然后拧干山麻菜里的水分,通风无菌放置;
按照重量比例称取木瓜、胡罗卜、葱、姜、蒜、辣椒,用清水冲洗3遍到干净,再按照比例称取山麻菜随后在阳光、无菌、通风的环境下晒干;
