甜粘青玉米,根据中国农科院检验其成份,比普通玉米蛋白质含量高1.23倍,脂肪含量高1.23倍,其生命元素硒含量高8.5倍。17种氨基酸的含量均高于普通玉米。具有高赖、高硒、高蛋白的三高特点。又具有预防癌症、降血压、降血脂、益肺养生、靓丽肌肤、补血乌发的功效。其商品性状又具有色泽鲜艳:金色、黄色、白色、乳白色、花粒、红粒、紫粒、黑粒,籽粒晶莹,口感鲜美等特性,是人们日常生活中最喜食的食品之一。但却又因其在离开秸杆8-12小时内不采取保鲜手段,有快速失去其鲜、嫩、糯的特性,使90%左右的甜粘青玉米失去了在其甜、粘、嫩、糯,口感最好、营养最充足时,给人们食用的机会。因此,本该象水稻、小麦一样可以成为主食之一的甜粘青玉米就有了无限的挖掘潜力。
我国大部分地区都可以种植玉米。能种植普通玉米的地方就能种植甜粘青玉米。甜粘青玉米又因生长周期比普通玉米短,加上科学技术的日新月异,很多地方都有1年内种植两季的条件。当这1年内可增产1倍的科技方式全面普及,甜粘青玉米能否真正做到增产同增收成正比的课题就摆在面前。因此对甜粘青玉米新产品的开发和使用不可避免地进入了新的阶段。
这之前,速冻保鲜等甜粘青玉米的加工技术已为这一事业做出了巨大贡献。但又因多方原因,满足不了甜粘青玉米的生长产出速度,希望甜粘青玉米罐头产品的诞生和全面开发能同速冻保鲜等加工项目共同承担起现代农业,让农民一年种植栽培两季甜粘青玉米增产与增收成正比的双丰收重任。
本发明的目的在于提供一种生产加工、储存、运输、销售过程中不须速冻、保鲜、冷藏等条件限制,又能保证甜粘青玉米产品营养不流失,食用时甜粘香糯嫩,口感鲜美。可象水果、蔬菜、肉、蛋、鱼罐头一样加工、储存、运输、销售和具有携带方便,打开即食的纯甜、粘青玉米罐头和以甜粘青玉米为主其它农产品药食同源新资源为辅料的玉米营养组合罐头,玉米营养保健罐头。
以上罐头产品可以各品种甜粘组合加工,各颜色混合加工,也可以多颜色一起加工,更可以单一颜色、单一品种加工。
因东、西、南、北、中各地消费者饮食习惯不同,各种罐头有无任何其它口味的原料纯玉米罐头。甜口、咸口、酸口、辣口和酒味玉米罐头及麻辣等各种玉米罐头。
让各种玉米罐头成为各种人喜欢的食品同时,使所有的甜粘青玉米都能在口感最好、营养最充足时成为人们的美食。使甜粘青玉米1年两季种植栽培项目因甜粘青玉米的市场繁荣而真正达到种植者产量、经济效益同时翻番。
本发明的技术方案:
甜粘青玉米罐头是由极早熟65天、早熟75天、中熟85-90天、晚熟100-120天多品种;金色、黄色、白色、乳白色、红色、紫色、黑色、花粒等多颜色玉米粒,用现在生产罐头工艺方法加工而成。
加工的玉米罐头又分不加任何蔬菜、水果、肉、蛋、人参、枸杞等的纯玉米原料罐头。这种罐头和其它有辅料的罐头一样,可各品种、各颜色于一罐,也可几个品种、几个颜色一罐,更可单一品种或单一颜色一罐。可以不加任何口感辅料,按罐生产工艺加工,保证其营养和甜、粘、嫩、糯本色的纯玉米原料罐头,也可加工成甜味、蜂蜜味、咸味、酒味、辣味、酸味、麻辣味等单口味、组合味的纯玉米原料罐头。
这种罐头不仅具备开罐即食、营养丰富、鲜美可口特点,更是家庭、饭店、酒店、学校、企事业食堂等再创造新米饭菜肴的最好玉米原料。主食方面,可以掺加到大米饭、小米饭、高粮米饭、面条、馄饨、麻辣烫等一切愿意加的主食之中。菜肴方面,随时可做松仁玉米、松花蛋、鹌鹑蛋玉米、花生玉米、凉盘玉米、海哲玉米等色香味俱佳的各种与玉米组合有益健康的营养菜肴和自己喜爱的味道。

本发明的技术方案的实施是:
将达到青食标准的甜粘青玉米,按生产标准及时采收。青食标准为籽粒饱满,浆气十足,颗粒晶莹,营养充足,颗粒定浆前和这一标准稍前1-2天的玉米,已具备营养充足,甜、粘、嫩香、糯特性,专门上生产适合老、弱、病、儿童、孕妇、哺乳妇女等顾客;采收青食标准后1-3天的稍定浆未老化前的更饱满玉米,满足体力支出大的青壮年顾客。更适合做牛肉等肉做辅料的玉米罐头。最后老化的玉米也可以熟化后做成罐头。
当决定生产的产品后,即按生产产品的质量标准采收玉米。采收的玉米无论是原生态加工,还是剥皮去缨加工,一定放在阴凉、避光、无风的车间,并在4-8小时内进行熟化。熟化方法最好用蒸锅,水煮会使玉米营养成份流失。将熟化后的玉米剥粒,去杂质,分等级后备用。
按生产计划将各品种、各颜色的玉米备好的同时,将准备生产“玉米营养组合罐头”、“玉米营养保健罐头”的所有辅料,洗净熟化按生产实际用量比和质量技术标准准备好备用。(因甜粘青玉米生长周期和品种不同,生长周期极早熟65天,早熟75天,中熟85-90天,晚熟100-120天,颜色和颗粒直径不同,采收标准不同,产品的感观指标与内在质量要求不同,具体生产执行的技术和质量标准在生产企业生产实施时另行公开)。
本发明的有益效果是:
甜粘青玉米罐头从生产加工、储存、运输、销售不须特定的保鲜措施,省电节约能源。生产加工和其水果、肉、蔬菜、鱼罐头加工一样,在常温、通风、干燥、避光条件下即可生产、储存、运输、销售。消费者食用时不需要蒸煮,都可以开罐即食。玉米罐头生产工艺简单,可以使以往90%左右失去速冻保鲜机会的甜粘青玉米保留其甜、粘、鲜、嫩、糯和众多营养成份,一年四季提供人们品尝食用。原料广,成本低,解决温饱的同时,达到色香味俱佳的高营养食品。产品多样,附加值高。原料罐还可自创多种多样玉米主食、菜肴。
特别是“玉米营养组合罐头”、“玉米营养保健罐头”,在提供鲜美可口玉米罐头的同时,因辅料的精良特性,还可在营养全面的前提下,消除体内垃圾,防止细胞老化,补气、补血、健脑、养心安神、增强记忆力,特别是玉米五豆罐头中的黄豆因含异黄酮、钼、硒等抗癌成份,而且几乎对所有癌症都有抵制作用,达到营养又保健作用。

本发明的“纯玉米原料罐头”是由甜粘青玉米金色、黄色、白色、乳白色、红色、紫色、花粒、黑色玉米粒,食糖、水组成。其所述的组份重量百分比为:各色玉米55-99.9%,食糖、水0.1-45%,首先备足需用量的玉米粒、食糖水,将玉米粒、食糖水均到一起,按现有的生产罐头工艺方法生产罐头。(实施例所述的食糖可是白砂糖、红糖、冰糖。其它口味玉米原料罐头咸、酸、辣、酒、蜂蜜、单味、组合味、麻辣、酸甜等,其组份重量百分比与实施例一相同或接近例如玉米61-99.9%,白酒0.1-49%等。制作方法均按现有的生产的罐头工艺方法,不再一一举例)。
实施例二:
本发明的“玉米营养组合罐头”之一,是由金色、黄色玉米粒、杏仁、核桃仁、桃仁、莲子仁、南瓜仁组成;其所述的组份重量百分比为:玉米粒51-99.5%,杏仁0.1-15%,核桃仁0.1-9%,桃仁0.1-5%,莲子仁0.1-5%,南瓜仁0.1-15%。首先备足需用量的玉米粒、杏仁、核桃仁、桃仁、莲子仁、南瓜仁。食糖水、食品添加剂适量,将备用量的玉米及杏仁等均匀在一起后,按现有的生产罐头工艺方法生产罐头。
实施例三:
本发明的“玉米芦荟营养组合罐头”是由金色、红色玉米粒、芦荟肉块组成;其所述的组份重量百分比为:玉米粒61-99.9%,芦荟块、白砂糖水0.1-39%。首先备足需用量的玉米粒、芦荟肉块、白砂糖水,将备用玉米粒、芦荟肉块、白砂糖水均好,按现有的生产罐头工艺方法生产罐头。
实施例四:
本发明涉及的“玉米营养组合罐头”是由乳白、白色、花粒玉米粒、牛肉组成。其所述组份重量百分比为:玉米粒61-99.9%,牛肉0.1-39%。备足需用量的玉米粒与牛肉块;将玉米粒与牛肉均好,食盐、茴香、花椒等食品添加剂适量,按现有生产肉罐头工艺方法生产罐头.(本发明涉及的肉罐头中没提及的猪肉、羊肉、驴肉、鸡肉、鸭肉、兔肉、鹿肉等肉类均按此类方法,这里不再举例)。
实施例五:
本发明涉及的“玉米营养组合罐头”是由紫色、金色、黑色玉米粒、鹌鹑蛋组成;其所述的组份重量比为:玉米粒51-99%,鹌鹑蛋1-49%。备足需用量的玉米粒、鹌鹑蛋、食盐、水、食品添加剂适量,将备用的玉米粒、鹌鹑蛋、食盐、水、食品添加剂均好,按现有的生产罐头工艺方法生产罐头。(实施例中未举的鸡蛋、鸭蛋及其它各种蛋类,可用同样方式生产罐头)。
实施例六:
本发明涉及的“玉米营养组合罐头”是由白色、乳白色玉米粒、黄豆、黑豆、绿豆、豌豆、红豆、白砂糖水(也可以用酒、食盐、醋、食品添加剂)组成;其所述的组份重量百分比为玉米粒67-99.5%,黄豆0.1-9%,黑豆0.1-9%,绿豆0.1-9%,豌豆0.1-5%,红豆0.1-5%。首先备足需用量的玉米粒、黄豆、黑豆、绿豆、豌豆、红豆备用。将备用的玉米粒、黄豆、黑豆、绿豆、豌豆、红豆与白砂糖均匀组合好,按现有的生产罐头工艺方法生产罐头。
实施例七:
本发明涉及的“玉米营养组合罐头”是由紫色、红色玉米粒、黄桃、维生素C、白砂糖组成;其所述的组份重量百分比为:玉米粒51-79%,黄桃、白砂糖水21-49%,柠檬酸、维生素C等食品添加剂适量。先备足需用量的玉米粒、黄桃、白砂糖水、食品添加剂配组好后,按现有生产罐头的生产工艺方法生产罐头。(其它山楂、桔子等各种水果生产方法基本相同,不再一一举例)。
实施例八:
本发明涉及的“玉米营养组合罐头”是由金色、花粒玉米粒、黄瓜香鱼、食盐、花椒、茴香、姜组成;其所述的组份重量百分比为:玉米粒61-99.9%,黄瓜香鱼0.1-39%,食盐、花椒、茴香、姜适量。先备足需用量的玉米粒、黄瓜香鱼及各种辅料,将玉米粒、黄瓜香鱼、食盐、花椒、茴香、姜配比组合好,按现有生产罐头的生产工艺方法生产罐头。
实施例九:
本发明涉及的“玉米营养保健罐头”是由金色玉米粒、人参、枸杞、白砂糖水组成,其所述的组份重量百分比为:玉米粒61-99.8%,人参0.1-18%,枸杞0.1-21%,白砂糖水适量。先备足需用量的玉米粒、人参、枸杞、白砂糖水后,即配合均匀,按现有生产罐头的生产工艺方法生产罐头。(注:人参、枸杞是生料。其暂时没提及的药食同源新资源和中药饮片如与玉米组合的“玉米营养保健罐头”时,其配比、制作方法基本相同,可按此罐头生产工艺加工。特殊工艺另行公布)。
Claims (5)
1.甜粘青玉米罐头包括玉米各品种、各颜色的“纯玉米原料罐头”与水果类、干果类、蔬菜、豆类、芦荟、肉类、蛋类等动植物组成的“玉米营养组合罐头”和与药食同源新资源及中药组成的“玉米营养保健罐头”及其它玉米罐头制品。其特征在于:“纯玉米原料罐头”有多种口味,甜味、酸味、蜂蜜味、酒味、咸味、酱味、辣味、无味等单味玉米罐头和酸甜、麻辣等组合口味。
2.如权利要求1所述:“纯玉米原料罐头”其特征在于所说的“纯玉米原料罐头”包括如下成份:玉米、食糖、蜂蜜、食盐、食醋、白酒、啤酒、葡萄酒、红椒、川椒、麻椒、食用油。其所述组份的重量百分比为:玉米55-99.9%,单味和组合味的各味料为0.1-45%。
3.如权利要求1所述:“玉米营养组合罐头”其特征在于所说的“玉米营养组合罐头”包括如下成份:白砂糖、水、玉米、杏仁、桃仁、核桃仁、莲子仁、南瓜籽仁,其所述组份的重量百分比为:玉米51-99.5%,杏仁等0.5-49%,玉米与其它肉类、蛋类、食用菌类、水果、蔬菜等动植物多份组成的“玉米营养组合罐头”其组份的重量百分比在玉米49-99.5%,61-99.9%内 (食品添加剂适量) 。
4.如权利要求1所述:“玉米营养保健罐头”其特征在于所述的玉米与其中一位组份重量百分比为:玉米65-99.9%,人参0.1-35%,枸杞0.1-35%,五味子0.1-35%,当归0.1-35%,川贝0.1-35%,玉米与人参、枸杞组成“玉米营养保健罐头”其所述重量百分比为:甜粘玉米粒61-99.8%,人参0.1-18%,枸杞0.1-21%。其它未列的药食同源新资源与中药在与“玉米营养保健罐头”组合的组份重量百分比单味与玉米组合:玉米65-99.9%,其它0.1-35%,多位与玉米组合:玉米61-99.5%,人参等0.5-39% (食品添加剂适量) 。
5.如权利要求1、2、3、4所述的其它罐头制品和“纯玉米原料罐头”、“玉米营养组合罐头”、“玉米营养保健罐头”中的各种味料:花椒、大料、桂皮、茴香、姜、蒜、食糖、蜂蜜、食盐、食醋、白酒、葡萄酒等各种适合东、西、南、北、中顾客已成型的五香、酱香、麻辣、八珍、酒味等罐头成方及单味的甜、酸、咸、酒、香及任意组合符合食品标准的玉米罐头制品。
