Abstract
本发明公开了一种含大豆肽的电解质运动饮料,其特征在于由下述重量份的成分组成:1‑10份大豆肽,1‑10份甜味剂,1‑5份酸味剂,0.1‑1份香精,0.1‑1份盐,0.1‑1份牛磺酸,0.1‑1份肌醇,0.1‑0.5份维生素和1‑300份水。本发明提供的这种运动饮料在原有电解质功能饮料的基础上引入了大豆肽,能够兼具大豆肽和电解质两者的功效,尤其对于运动后人群的消除疲劳、体力恢复、促进机体体液均衡分布,蛋白质补充和促进肌肉伤口愈合效果显著,且具备较好的口感。

技术领域
本发明涉及一种含大豆肽的电解质运动饮料。
背景技术
研究表明当人体剧烈运动时会消耗大量水分和能量,使得机体处于虚弱状态,严重者还会因失水或缺乏无机盐而引起循环系统负担加重和神经系统、肌肉功能失调等症状。由于运动过程中大量能量的消耗导致乳酸堆积所致机体重点运动部位的酸痛,同时也因为运动造成了肌肉纤维和结缔组织损伤(身体接触性的运动会造成更多的肌肉损伤,并诱发炎症)加重了剧烈运动后的机体酸楚。普通人多会表现为肌肉酸痛、倦怠、体力不支等,运动员在短时间大量运动超过负荷也会出现倦怠乏力现象,如果需要再次投入到激烈的竞赛中就需要迅速的恢复体力。
虽然剧烈运动后体力的恢复可以通过充足的睡眠与休息,或进行一些适当的针对运动部位的恢复性训练(如拉伸和反向的拉伸)来实现,但较为直接和有效的方式依旧是食物的摄取,例如水分、电解质、碱性食品(如水果蔬菜)、碳水化合物和蛋白质。其中蛋白质的摄取及其在人体内的转化效率对于损伤肌肉组织的修复及能量的补充和体力的恢复起着至关重要的作用。
已知我们的人体有三个氨基酸的能量来源:1)饮食中的蛋白质。2)身体内的自由氨基酸(血浆内)。3)肌肉。不幸的是,饮食的蛋白质只占其中的一小部份,即使你吃很多蛋白质还是一样。所以增加日常饮食中的蛋白质,可以减缓肌肉组织的流失,但无法完全停止流失。体内的自由氨基酸也是很好的氨基酸来源,但是它只占氨基酸代谢的1%,在身体缺乏能量的最初阶段就被用掉了。蛋白质分解代谢的最大能量来源就是肌肉,当身体缺乏能量时,肌肉就会被分解。一般认为当身体能量缺乏的越严重,就越会消耗体内的组织来提供能量。当人剧烈运动造成虚脱、体能严重下降甚至肌肉损伤后会产生磷酸酶肌酸(CPK)来帮助肌肉的修复,而实验检测出运动后的人体CPK值(活性)越高,则说明肌肉损伤越大。
运动饮料是近些年广受年轻运动人群欢迎的食品。目前市场上的运动饮料主要是各类汽水与含有维生素、电解质和矿物元素等的软饮料,的确在一定程度上可以快速补充水分和运动流失的无机盐,对机体能量的供给和运动后机体体力的恢复,机体体液的平衡调节有一定益处。尤其是含有电解质的运动饮料,电解质除能起到调节渗透压的作用,不同电解质还有不同作用,如:镁离子能促进糖原分解,加速能量代谢,防止肌肉酸痛、痉挛;镁和钙参与三磷酸腺苷等高能磷酸化物的产生,是肌肉运动所必需的;钠和钾离子是体液中主要电解质,对机体体液均衡分布起着重要的作用,他们彼此均衡,共同控制人体的水平衡。在正常人体内,钠离子占细胞外阳离子总量的92%,钾离子占细胞内液阳离子总量的98%,维持细胞功能和结构完整。
然而正如前面所述,人体在剧烈运动后常规的运动饮料中的营养元素,尤其是蛋白质的含量不足以及时有效的补充人体内流失的部分,并不适合运动后的体内蛋白质摄入需求,难以达到调节平衡的作用。
已知技术中大豆肽是将大豆蛋白通过酶解或酸水解的方法制备的小分子肽类物质,主要由3~6个氨基酸构成,分子量1000以下。大豆中蛋白质含量丰富,并且具有平衡的氨基酸模式,是一类公认的植物优质蛋白质,众多的科学研究发现,将大豆蛋白转化为大豆肽,使大豆肽出现了大豆蛋白所不具备的多种特殊性。
大豆肽在理化特性方面具有分子量小、水溶性好、热稳定性好、酸稳定性好、直接吸收性和安全性诸多优点。同时大豆肽经大量的动物试验和人体实验已经证实,具有一系列的生理功能:主要为
(1)改善小肠组织结构和吸收功能
(2)增强机体的免疫力
(3)降血压
(4)血脂调节作用
(5)促进脂肪代谢
(6)抗氧化
(7)抗运动疲劳
(8)修复肌肉组织
然而大豆肽作为电解质运动饮料的原料成分用于运动后消除疲劳、体力恢复,尤其是加速损伤肌肉组织复原的功效还未被有效的发掘和运用。并且如何协调包含大豆肽与牛磺酸成分的运动饮料的口感也是目前饮料生产厂家亟待解决的问题。
发明内容
本发明目的是:提供一种辅助机体调节的含大豆肽的电解质运动饮料,其能够兼具大豆肽和电解质两者的功效,尤其对于运动后人群的消除疲劳、体力恢复、促进机体体液均衡分布,蛋白质补充和促进肌肉伤口愈合效果显著,且具备较好的口感。
本发明的技术方案是:一种含大豆肽的电解质运动饮料,其特征在于由下述重量份的成分组成:1-10份大豆肽,1-10份甜味剂,1-5份酸味剂,0.1-1份香精,0.1-1份盐,0.1-2份电解质,0.1-0.5份维生素和1-300份水。
进一步优选的,本发明由下述重量份的成分组成:5-10份大豆肽,5-10份甜味剂,2-5份酸味剂,0.4-1份香精,0.1-0.6份盐,0.1-1份电解质,0.1-0.4份维生素和50-300份水。
进一步优选的,本发明由下述重量份的成分组成:8-10份大豆肽,8-10份甜味剂,3-5份酸味剂,0.5-1份香精,0.2-0.5份盐,0.1-0.5份电解质,0.1-0.2份维生素和200-300份水。
进一步优选的,所述维生素选自B族维生素、C族维生素、A族维生素、D族维生素和E族维生素中的一种或者几种按任意比例的混合物。
更进一步的,所述B族维生素是指维生素B1、B2、B5、B6和B12。
进一步优选的,本发明中所述甜味剂选自蔗糖、果糖、淀粉糖、糖醇以及寡果糖、异麦芽酮糖、山梨糖醇、甘露糖醇、麦芽糖醇、木糖醇、糖精、糖精钠、环己基氨基磺酸钠、天门冬氨酰苯丙氨酸甲酯、乙酰磺胺酸钾、3氯蔗糖、甜菊糖、甘草、甘草酸2钠、甘草酸3钠、甘草酸3钾中的一种或几种按任意比例的混合物。
进一步优选的,本发明中所述复合酸味剂选自苹果酸、柠檬酸、乳酸和磷酸之一,或者其中几种按任意比例的混合物。
进一步优选的,本发明中所述香精选自水果香精、植物提取物香精、谷物香精中的一种或几种按任意比例的混合物。所述水果香精可以是公知的柠檬香精、甜橙香精、苹果香精、水梨香精中的一种或几种的混合物。
更进一步优选的,本发明中所述植物提取物香精选自葡萄籽提取物香精、银杏叶提取物香精、绿茶提取物香精、藤黄果提取物香精、淫羊藿提取物香精、人参提取物香精、芦荟提取物香精、红景天提取物香精、桑葚提取物香精、黄芪提取物香精、枸杞提取物香精和沙棘提取物香精中的一种或几种按任意比例的混合物;而谷物香精选自小米香精、玉米香精、燕麦香精、薏米香精、高粱香精、绿豆香精、红豆香精和芝麻香精中的一种或几种按任意比例的混合物。
本发明中所述电解质选自氯化钠、柠檬酸钠、柠檬酸钾、硫酸铜、氧化镁、焦磷酸铁、柠檬酸锌、硫酸锰、碳酸钙、磷酸氢二钾、磷酸二氢钾、亚硒酸钠、碘化钾、氯化钙和碳酸镁中的一种或者几种按任意比例的混合物。
本发明主要成分的作用如下:
大豆肽在运动中的作用
增加肌肉和肌肉力量及时补充较多的大豆肽,提供运动所需的能量。目的是补充肌肉增长所需的蛋白和组织修复所需的蛋白,运动引起肌糖原的消耗,肌肉又加大对血糖摄取,因此引起血糖下降,若不及时补充,工作肌肉会乏力。而大脑90%以上的供能来自血糖,血糖下降会使大脑对运动的调节能力减少,产生疲劳感。大豆肽还可有效增强机体对肌肉组织的合成和代谢作用,促使运动员达到增肌肉、长力量的目的。
改善机体组成增加大豆肽的摄入可有效提高谷胱甘肽水平和改善机体组成。
促进训练后恢复即使补充大豆肽可有效提高蛋白质合成速度。
在耐心训练是会导致骨骼肌组织氨基酸代谢旺盛,因补充大豆肽有利于提高运动耐力。
运动中会造成肌肉纤维损伤,要补充一些大豆肽或氨基酸来修复肌肉组织。
健美运动饮料:补充较多的氨基酸,提供少量的能量,区别于肌肉增长型运动饮料的地方在于要添加少量的碳水化合物,这类运动员要摄入高蛋白食物,为了减少肾脏的负担,要减少电解质的添加。
维生素对机体的作用:
1、运动员瘦体重大,维持增加的肌肉、骨骼组织的代谢,有关维生素的需要量要加大;
2、运动队肠胃功能和肠道能量供给(如谷氨酰胺)的影响,使维生素的吸收率降低;
3、运动时机体的新陈代谢加强,加快了维生素的周转;
4、运动还可以使一些维生素及其代谢产物经过汗液和尿液丢失增加;
5、运动中要求快速的代谢反应,如能量生成,在一定时间内需要处理更多的底物。为此,机体对训练的适应性反应,会合成更多与运动有关的功能分子(如酶和辅酶),有关维生素的组织水平也增加;
6、运动引起的组织超微结构损伤和外伤的预防及修复过程,也需要更多维生素的参与。例如:
维生素VB1,参与组织中糖代谢,在能量代谢过程中加速糖原和磷酸肌酸分解,利于肌肉运动。
维生素VB2,对于耐力运动对VB2需求量也很大,及时补充能提高骨骼肌有氧代谢能力,加强肌肉收缩,提高耐久能力。
维生素VB5,在生物氧化过程中起着递氢体的作用,能增加无氧能力并能抑制脂肪酸代谢,从而促进糖的利用,适用于登山,飞行,潜水运动员。
维生素VB6,当饮食中蛋白质含量增加时,VB6也要相应增加,肌糖原分解、乳酸和氨基酸的生糖作用都与B6有关。
维生素B12,运动可以加快血红细胞新陈代谢,也可以诱发氧化应激,肌肉体积的增加也伴随着核算代谢加强。
维生素VC,运动时增加VC摄入量可以促进在组织水平氧气的释放,有助于机体吸收更多铁,VC还原性很强,参与肌酸与蛋白代谢,运动员过度训练时,血液中VC水平和白血胞吞噬功能下降,VC对可以提高耐力、消除疲劳和促进伤口愈合。
电解质
电解质除能起到调节渗透压的作用,不同电解质还有不同作用,如:镁能促进糖原分解,加速能量代谢,防止肌肉酸痛、痉挛;镁和钙参与三磷酸腺苷等高能磷酸化物的产生,是肌肉运动所必需的;钠和钾是体液中主要电解质,对机体体液均衡分布起着重要的作用,他们彼此均衡,共同控制人体的水平衡。在正常人体内,钠离子占细胞外阳离子总量的92%,钾离子占细胞内液阳离子总量的98%,维持细胞功能和结构完整。
细胞外液占人体重量的20-21%,细胞内液约占人体重的40%。
钠与运动
钠具有刺激下丘脑以维持渴的机制,并具有保持体液,避免体液丢失的作用。在运动中,运动员通过汗液丢失的钠比其他元素更多,4L汗液可带走2g~8g氯化钠。在长时间的运动中,汗液中钠的大量丢失,会造成体内钠平衡的失调,体内钠的缺乏将会引起肌肉痉挛性疼痛、无力、烦躁、头晕等症状,当体内的钠亏空严重时,神经末梢的机械压力就会发生改变,神经末梢周围电解质的浓度也发生相应的改变,运动神经末梢的兴奋性会选择性地增加,从而导致热痉挛。钠的丢失所引起的热痉挛是机体参与运动的全部肌肉的痉挛,要想使热痉挛得到缓解和消失,必须补充足够的液体和钠。
钾、镁与运动
高温运动时,汗液中钾排出的量明显增多。运动员在29-30℃气温和40-48%RH条件下,体钾丢失量可达6g/d,运动是血钾水平较安静时高。这是因为肌细胞中的钾经膜转运到细胞间液中进入静脉,使静脉中血钾浓度升高的结果。中等强度运动静脉中钾升高约0.5mmol/L,较大强度运动升1-2mmol/L,大强度长时间运动可升高到9-10mmol/L.血钾浓度过高或过低都能引起骨骼肌和心肌功能变化。实验表明,运动员在训练后,由于排尿时排钾量的增多,出现低血钾,而血钾的缺乏会导致肌肉无力或麻痹,因此,钾离子平衡对运动能力的保持很重要。
运动员在大强度训练或减体重情况下特别是高温环境下运动时镁的丢失较多。长时间运动过程中工作肌群中含镁量升高与血浆镁浓度降低有密切的关系。急性运动时血浆镁浓度降低除了因出汗增多,使汗镁排出量增加之外,还与镁在体内重新分布有关。从事运动训练的个体补充镁能降低安静状态下的心率,或增加耐力时间。
本发明的优点是:
1)本发明提供的这种运动饮料在原有电解质功能饮料的基础上引入了大豆肽,能够兼具大豆肽和电解质两者的功效,除了常规电解质功能饮料具备的消除疲劳、体力恢复、调节体液平衡、增强肌肉代谢能力和提高耐力的功效以外,饮用后还有助于促进肌肉细胞生长,补充缺失的肌肉蛋白。尤其是其中的大豆肽能够及时修复运动过程中损伤的骨骼肌细胞,维持骨骼肌细胞结构和功能的完整性;同时增加睾酮的分泌,促进蛋白质合成。人体试验证实,大豆肽能够降低中长跑运动员运动后PRE的等级,更加有助于减轻运动后疲劳和体力恢复。
2)本发明中的大豆肽极易吸收,适宜于各个年龄层的运动人群服用,通过甜味剂、酸味剂、盐等多种原料比例的协调,制备出的饮料具有较佳的口感,还具有生津开胃、促进食欲的功能,提高运动人群的兴奋程度,相比常规的运动饮料更易被人体接受。
3)通过大豆肽可以提高超氧化物歧化酶、谷胱甘肽过氧化物酶的活性,抑制脂质过氧化,清楚羟自由基,有利于减少组织氧化,保护机体。
具体实施方式
实施例:本发明的这种含大豆肽的电解质运动饮料,其具体实施例见下表:
本发明的临床试验如下:
1、试验人群
普通运动人群(排球)共计36人
1)年龄:18~21岁(平均19.8±3.4岁)
2)身高:166~185cm(平均173.2±6.0cm)
3)体重:55~75kg(平均65.0±11.0kg)
4)BMI(身体质量指数):19.6~25.2%(平均21.8±0.9%)
2、试验原理
当人剧烈运动造成虚脱、体能严重下降甚至肌肉损伤后会产生磷酸酶肌酸(CPK)来帮助肌肉的修复,检测得到人体CPK值(活性)越高,则说明肌肉损伤越大,体能恢复效果越差。通过对运动后服用不同实验饮料的人群CPK在不同时间段的检测结果来判断其体能恢复情况。
3、试验形式
分为四组(每组9人)完成同等强度的体能消耗(连续跑步100分钟):
a、对照组,运动后不饮水;
b、运动后服用普通软饮料总计500ml
c、运动后服用普通大豆蛋白类保健品总计300ml
d、运动后服用本发明运动饮料(实施例2)总计500ml。
分别在运动后30分钟、16小时两个点对上述四组人群进行磷酸酶肌酸(CPK)检测,检测得到的不同实验群磷酸酶肌酸(CPK)的变化量见下面的实验结果。
4、实验结果
a对照组30分钟时CPK达到25U/l,16小时后增加至135U/l峰值;
b组30分钟时CPK达到18U/l,16小时后增加至48U/l;
c组30分钟时CPK达到10U/l,16小时后增加至55U/l;
d组30分钟时CPK达到11U/l,16小时后仅增加至16U/l;
下表为各实验组CPK相较于初始值(30分钟)增幅比例对照:
上述实验结果说明,服用本发明运动饮料后,磷酸酶肌酸(CPK)的产生值和增幅比例最低,其对于运动过程中损伤的骨骼肌细胞的修复效果最好,能够降低中长跑运动员运动后PRE的等级,减轻运动后疲劳和体力恢复效果也最佳。
以实施例2为例,本发明运动饮料的营养成分含量检测值如下表所示:

2.根据权利要求1所述的含大豆肽的电解质运动饮料,其特征在于由下述重量份的成分组成:5-10份大豆肽,5-10份甜味剂,2-5份酸味剂,0.4-1份香精,0.1-0.6份盐,0.1-1份电解质,0.1-0.4份维生素和50-300份水。
3.根据权利要求1所述的含大豆肽的电解质运动饮料,其特征在于由下述重量份的成分组成:8-10份大豆肽,8-10份甜味剂,3-5份酸味剂,0.5-1份香精,0.2-0.5份盐,0.1-0.5份电解质,0.1-0.2份维生素和200-300份水。
4.根据权利要求1或2或3所述的含大豆肽的电解质运动饮料,其特征在于所述维生素选自B族维生素、C族维生素、A族维生素、D族维生素和E族维生素中的一种或者几种按任意比例的混合物。
5.根据权利要求4所述的含大豆肽的电解质运动饮料,其特征在于所述B族维生素是指维生素B1、B2、B5、B6和B12。
6.根据权利要求1所述的含大豆肽的电解质运动饮料,其特征在于所述甜味剂选自蔗糖、果糖、淀粉糖、糖醇以及寡果糖、异麦芽酮糖、山梨糖醇、甘露糖醇、麦芽糖醇、木糖醇、糖精、糖精钠、环己基氨基磺酸钠、天门冬氨酰苯丙氨酸甲酯、乙酰磺胺酸钾、3氯蔗糖、甜菊糖、甘草、甘草酸2钠、甘草酸3钠、甘草酸3钾中的一种或几种按任意比例的混合物。

9.根据权利要求8所述的含大豆肽的电解质运动饮料,其特征在于所述植物提取物香精选自葡萄籽提取物香精、银杏叶提取物香精、绿茶提取物香精、藤黄果提取物香精、淫羊藿提取物香精、人参提取物香精、芦荟提取物香精、红景天提取物香精、桑葚提取物香精、黄芪提取物香精、枸杞提取物香精和沙棘提取物香精中的一种或几种按任意比例的混合物;而谷物香精选自小米香精、玉米香精、燕麦香精、薏米香精、高粱香精、绿豆香精、红豆香精和芝麻香精中的一种或几种按任意比例的混合物。
10.根据权利要求1所述的含大豆肽的电解质运动饮料,其特征在于所述电解质选自氯化钠、柠檬酸钠、柠檬酸钾、硫酸铜、氧化镁、焦磷酸铁、柠檬酸锌、硫酸锰、碳酸钙、磷酸氢二钾、磷酸二氢钾、亚硒酸钠、碘化钾、氯化钙和碳酸镁中的一种或者几种按任意比例的混合物。
