Abstract
本发明公开了一种白肉灵芝运动饮料及其制备方法,该运动饮料包含以下重量百分数的组分:4~14%白肉灵芝提取液、4~16%甜味剂、0.05~0.15%酸味剂、0.01~0.12%稳定剂、0.0000006~0.0000012%维生素B12、0.0003~0.0008%维生素B6、0.00006~0.0003%维生素C,余量为水。其中,所述稳定剂选自羧甲基纤维素钠、明胶和黄原胶中任意一种或两种以上;所述酸味剂选自柠檬酸钠和/或苹果酸;所述甜味剂选自葡萄糖和/或果糖。本发明的白肉灵芝运动饮料具有抗疲劳功能,能够满足人们运动后尽快消除疲劳的要求。
Description
技术领域
本发明涉及一种运动饮料,具体涉及一种白肉灵芝运动饮料及其制备方法。
背景技术
功能饮料是指通过调整饮料中天然营养素的成分和含量比例,以适应某些特殊人群营养需要的饮品,适宜于特定人群饮用,具有调节机体功能作用,不以治疗疾病为目的。
白肉灵芝是藏灵芝的一种,根据藏医学经典《晶珠本草》记载藏灵芝为补益强身之药,其性温,味苦;主治缺氧性高原病、气血不足、神经衰弱、心悸头晕、养心安神、止咳平喘、冠心病、肝炎、高血压及多种原因引起的白细胞减少症,具有抗缺氧、补气安神、止咳平喘、延年益寿的功效。白肉灵芝中富含丰富的粗蛋白、粗纤维、多糖、三萜灵芝酸A、总氨基酸等物质,并且白肉灵芝中的镁、铁、钙含等元素量也极其丰富。由于白肉灵芝目前的种植难度相对其他的灵芝要求较低,且其具有独特的风味和丰富的营养价值,具有良好的开发价值和基础,但是据目前来说,白肉灵芝的开发程度还比较低。
随着人们对运动锻炼的热情不断高涨,参与户外活动的不断增多,对运动性疲劳机制了解的不断深入,消除运动性疲劳的手段和措施也日益丰富和多样化,故而人们对于运动性疲劳的快速消除的需求也在不断的上升。
发明内容
本发明的目的是提供一种白肉灵芝运动饮料及其制备方法,该白肉灵芝运动饮料具有抗疲劳功能,能够满足人们运动后尽快消除疲劳的要求。
为了达到上述目的,本发明提供了一种白肉灵芝运动饮料,该运动饮料包含以下重量百分数的组分:4~14%白肉灵芝提取液、4~16%甜味剂、0.05~0.15%酸味剂、0.01~0.12%稳定剂、0.0000006~0.0000012%维生素B12、0.0003~0.0008%维生素B6、0.00006~0.0003%维生素C,余量为水。其中,所述稳定剂选自羧甲基纤维素钠、明胶和黄原胶中任意一种或两种以上;所述酸味剂选自柠檬酸钠和/或苹果酸;所述甜味剂选自葡萄糖和/或果糖。
优选地,所述白肉灵芝提取液为,将白肉灵芝干粉与水按质量体积比10g:1mL在100℃的条件下提取并经过过滤和浓缩得到的提取液。
本发明的另一目的是提供所述的白肉灵芝运动饮料的制备方法,该方法包含:将白肉灵芝干粉与水按质量体积比10g:1mL在100℃的条件下提取,过滤,浓缩,得到白肉灵芝提取液;将白肉灵芝提取液、葡萄糖/或果糖、柠檬酸钠/或苹果酸、羧甲基纤维素钠/或明胶/或黄原胶、维生素B12、维生素B6、维生素C和水混合:用均质机进行混合,均质;均质结束后包装、封口,杀菌,得到白肉灵芝运动饮料。
优选地,所述白肉灵芝干粉的制备,为:将白肉灵芝清洗,烘干,使其含水量降低至1%以下,粉碎,过40目筛,得到白肉灵芝干粉。
优选地,所述烘干的温度为50℃,时间为24h。
优选地,所述白肉灵芝干粉与水按质量体积比10g:1mL在100℃的条件下提取60min,过滤,浓缩至原体积的1/10,得到白肉灵芝提取液。
优选地,所述均质的时间为5min。
优选地,所述杀菌的条件为:120℃,灭菌10s。
本发明的白肉灵芝运动饮料及其制备方法,具有以下优点:
(1)本发明的白肉灵芝运动饮料,以白肉灵芝提取液为主要原料,具有抗疲劳功能,该饮料具有独特的风味与良好的口感,主要原料来源于食品,安全性高,能够满足人们运动后尽快消除疲劳的要求,具有较高的实际意义和商业价值;
(2)本发明的白肉灵芝运动饮料,生产工艺比较简单,白肉灵芝原料资源相对于其他种类的灵芝较为价低易得,生产成本低,适合大量的开发生产;
(3)本发明的白肉灵芝运动饮料,将白肉灵芝开发成有益于身体健康的运动性饮料,极大地提高了白肉灵芝的资源开发;
(4)本发明的白肉灵芝运动饮料,在保证抗疲劳功能性的同时,可以兼具优良的口感,具有白肉灵芝特有的风味,不添加任何色素和运动违禁物质,主要的原料来源于食品,兼具了安全性和功能性,引用方便,冷热均可,状态稳定,四季都可饮用,方便携带。

具体实施方式
下面将对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1
一种白肉灵芝运动饮料的制备方法,包括以下步骤:
(1)原料处理:采用5~6月采摘的无霉变、无病虫害、无杂质的白肉灵芝,洗净,于50℃条件下烘干24h,使其含水量降低至1%以下,粉碎,过40目筛,得到白肉灵芝干粉;
(2)按照白肉灵芝干粉与纯净水的质量体积比为10g:1mL的比例,在100℃的条件下水提白肉灵芝60min,过滤,将滤液浓缩至原体积的1/10;
(3)原料混合:将饮料原液按照比列混合,饮料原液包含以下重量百分数的组分:4%白肉灵芝提取液、4%葡萄糖、0.05%柠檬酸钠、0.01%羧甲基纤维素钠、0.0000006%维生素B12、0.0003%维生素B6、0.00006%维生素C,余量为纯净水;
(4)混合:用均质机进行混合,均质5min;
(5)包装:按每瓶300mL进行包装、封口;
(6)杀菌:在120℃条件下,灭菌10s,得到白肉灵芝运动饮料。
实施例2
一种白肉灵芝运动饮料,与实施例1的基本相同,区别在于:饮料原液包含以下重量百分数的组分:14%白肉灵芝提取液、16%葡萄糖、0.15%柠檬酸钠、0.12%明胶、0.0000012%维生素B12、0.0008%维生素B6、0.0003%维生素C,余量为纯净水。
实施例3
一种白肉灵芝运动饮料,与实施例1的基本相同,区别在于:饮料原液包含以下重量百分数的组分:8%白肉灵芝提取液、10%葡萄糖、0.07%柠檬酸钠、0.03%黄原胶、0.0000007%维生素B12、0.0004%维生素B6、0.00008%维生素C,余量为纯净水。
实施例4
一种白肉灵芝运动饮料,与实施例1的基本相同,区别在于:饮料原液包含以下重量百分数的组分:10%白肉灵芝提取液、12%葡萄糖、0.09%柠檬酸钠、0.06%羧甲基纤维素钠、0.000001%维生素B12、0.0006%维生素B6、0.0001%维生素C,余量为纯净水。
实施例5
一种白肉灵芝运动饮料,与实施例1的基本相同,区别在于:饮料原液包含以下重量百分数的组分:11%白肉灵芝提取液、11%葡萄糖、0.1%柠檬酸钠、0.05%黄原胶、0.0000008%维生素B12、0.0005%维生素B6、0.00015%维生素C,余量为纯净水。
实施例6
一种白肉灵芝运动饮料,与实施例1的基本相同,区别在于:饮料原液包含以下重量百分数的组分:10%白肉灵芝提取液、12%果糖、0.09%苹果酸、0.06%明胶、0.000001%维生素B12、0.0006%维生素B6、0.0001%维生素C,余量为纯净水。
实验例1本发明实施例1的白肉灵芝提取液对运动性疲劳小鼠的影响
1、实验材料
实验动物:采用4~6周龄健康的雄性昆明小鼠32只,体重在22~25g左右,在室温下适应性喂养1周,随机分为4组,分别为control组、EC(运动空白)组、EC+low(运动低剂量)组和EC+high(运动高剂量),每组8只。
实验试剂:尿素氮测试盒(二乙酰肟比色法)、全血乳酸测定试剂盒(比色法)、肝/肌糖原测定试剂盒、总超氧化物岐酶试剂盒(WST-1法)、过氧化氢酶测定试剂盒(紫外法)、丙二醛测定试剂盒(TBA法)。
实验仪器:水浴锅、旋转蒸发仪、均质机、真空冻干机。
2、实验方法
动物模型设计如下:
四组小鼠每天进行灌胃处理,Control组和EC组喂水;EC+low组喂白肉灵芝的提取液,剂量为0.18g/kg;EC+high组喂较高浓度的白肉灵芝的提取液,剂量为1.03g/kg连续处理30天,Control组小鼠静止不运动,EC组、EC+low组和EC+high组在灌胃处理30min进行20min的游泳训练。同时记录小鼠的进食量、饮水量以及体重变化。末次给药后将5%小鼠体重的重物系于小鼠的身上,放于水池中进行力竭游泳实验。若小鼠沉入水中8s头部不能浮出水面,则判断为力竭,记录小鼠入水至力竭的时间,之后将小鼠处死,取组织,进行相关的生化指标测定。
判断标准:根据《保健食品检验与评价技术规范》(2003版)规定,负重游泳结果为阳性,且血乳酸、血清、肝糖原/肌糖原三项生化指标任意两项为阳性,则可判定该受试样品具有缓解体力疲劳功能。
样本的采集和指标测定:一般观察记录小鼠体重、进食量和饮水量,观察实验动物的毛泽、精神状况。对小鼠的力竭游泳时间进行记录,牺牲小鼠后,取血液、肝脏和肌肉组织对小鼠体内肝糖原、肌糖原、血清尿素氮、乳酸等相关生化指标进行测定。采用统计软件SPSS进行数据方差分析,试验所得数据结果采用SPSS软件进行,T-test'One-WayAN0VA分析,Tukey多重检验用来确定数据间的显著性差异。
3、实验结果
(1)白肉灵芝的提取液对小鼠体重、进食量和饮水量的影响
在实验过程中对小鼠的体重、进食量和饮水量进行了检测。在整个实验过程中小鼠体重、进食量和饮水量没有明显差异,而且也未见毒副反应,表明本发明实施例1的白肉灵芝提取液的摄入不会对小鼠的健康造成影响。
(2)各组小鼠运动能力的变化
由表1可以看出,EC+low和EC+high组小鼠的力竭游泳时间明显高于EC组和Control组,表明本发明实施例1的白肉灵芝提取液的摄入能够显著地提高小鼠的力竭游泳时间,有效的改善小鼠的运动能力。

(3)各组小鼠肝糖原、血乳酸和血清尿素氮的变化
在图1中,由图1中A可以看出,在承受相同的运动量后,EC+low和EC+high组的小鼠体内的肝糖原储备量与EC组相比明显高于EC组(*:pV0.05vsEC;**:pV0.01vsEC);由图1中B可以看出,与EC组相比,EC+high组的小鼠体内血乳酸含量显著降低(**:pV0.01vsEC);EC+low组也有下降趋势,但不显著,不具有统计学意义;由图1中C可以看出,与EC组相比,EC+high组小鼠血清中的尿素氮明显降低(*:pV0.05vsEC)。
以上结果可以说明白肉灵芝提取液的摄取能够有效的增加小鼠体内肝糖原的积累并且减少体内代写产物的产生。
(4)各种小鼠体内抗氧化酶活性的变化
实验中测定了小鼠体内抗氧化酶的活性,抗氧化酶活性越高,其清除自由基的能力越强,抗疲劳的功效则越显著。由表2可知,与EC组相比,EC+high组小鼠肝中超氧化物歧化酶的活性明显提高(*:pV0.05vsEC;**:pV0.01vs EC),而肌肉中丙二醛的含量有明显的降低,表明实施例1的白肉灵芝提取液的摄取可提高小鼠体内抗氧化酶的活性,增强清除自由基的能力。

(5)各组小鼠血液中血红蛋白含量
由表3可以看出,EC+high组小鼠体内的血红蛋白含量明显高于其对照组(*:pV0.05vsEC;**:pV0.01vsEC),表明本发明实施例1的白肉灵芝提取液的高量摄取可以有效得提高小鼠体内血红蛋白的含量,从而增强小鼠血液的携氧能力。

由以上实验结果可知,本发明实施例1的白肉灵芝提取液可以提高小鼠体内肝糖原的储备量,减少小鼠运动后代谢产物的生成,增强肝脏中抗氧化酶活性,提高血液中血红蛋白的含量。因此,本发明实施例1的白肉灵芝提取液的摄取可以有效提高小鼠的抗运动疲劳能力,具有缓解体力疲劳的作用。
实验例2白肉灵芝运动饮料的稳定性分析
感官评定是最直观有效的对饮料颜色稳定性研究的方法,本实验通过感官评价的方法对饮料色泽、状态及稳定性进行验证,结果如下表4所示。

注:变异系数指的是杀菌处理前、杀菌处理后、4℃放置7d、37℃放置7d和37℃放置3个月5个处理之间的感官得分变化情况,变异系数越小,各处理之间的汤色变化越小。
由于白肉灵芝提取液常温下不稳定,白肉灵芝提取液的添加量也影响了运动饮料的稳定性,将所有实施例均做了稳定性评价,得分均>70分,在此选取最优实施例5和白肉灵芝提取液添加量最高的实施例4做展示,由表5可知,二者汤色稳定均表现良好。
实验例3白肉灵芝运动饮料的感官评价
对实施例1-6的白肉灵芝运动饮料进行感官评价,由20人组成一组按照表5评分标准对该饮料进行色泽、口感、风味和状态方面进行评分,分数分配权重为色泽10分、口感40分、风味30分、状态20分,满分为100分,结果见表6。

1.一种白肉灵芝运动饮料,其特征在于,该运动饮料包含以下重量百分数的组分:4~14%白肉灵芝提取液、4~16%甜味剂、0.05~0.15%酸味剂、0.01~0.12%稳定剂、0.0000006~0.0000012%维生素B12、0.0003~0.0008%维生素B6、0.00006~0.0003%维生素C,余量为水;
所述稳定剂选自羧甲基纤维素钠、明胶和黄原胶中任意一种或两种以上;
所述酸味剂选自柠檬酸钠和/或苹果酸;
所述甜味剂选自葡萄糖和/或果糖。
2.根据权利要求1所述的白肉灵芝运动饮料,其特征在于,所述白肉灵芝提取液为,将白肉灵芝干粉与水按质量体积比10g:1mL在100℃的条件下提取并经过过滤和浓缩得到的提取液。
3.如权利要求1或2所述的白肉灵芝运动饮料的制备方法,其特征在于,该方法包含:
将白肉灵芝干粉与水按质量体积比10g:1mL在100℃的条件下提取,过滤,浓缩,得到白肉灵芝提取液;
将白肉灵芝提取液、甜味剂、酸味剂、稳定剂、维生素B12、维生素B6、维生素C和水混合:用均质机进行混合,均质;
均质结束后包装、封口,杀菌,得到白肉灵芝运动饮料。
4.根据权利要求3所述的制备方法,其特征在于,所述白肉灵芝干粉的制备,为:
将白肉灵芝清洗,烘干,使其含水量降低至1%以下,粉碎,过40目筛,得到白肉灵芝干粉。
5.根据权利要求4所述的制备方法,其特征在于,所述烘干的温度为50℃,时间为24h。
6.根据权利要求3所述的制备方法,其特征在于,所述白肉灵芝干粉与水按质量体积比10g:1mL在100℃的条件下提取60min,过滤,浓缩至原体积的1/10,得到白肉灵芝提取液。
7.根据权利要求3所述的制备方法,其特征在于,所述均质的时间为5min。
8.根据权利要求3所述的制备方法,其特征在于,所述杀菌的条件为:120℃,灭菌10s。
