技术领域
本发明涉及糖果技术领域,具体而言是一种含水苏糖的中药糖果及其制备方法。
背景技术
目前,糖果种类丰富多样,绝大多数糖果都是含糖量高,长期吃用会引起龋齿、胰岛素分泌失调,碳水化合物和脂肪代谢紊乱等症状。我们调研发现,具有保健功能的糖果非常少。
水苏糖是一种低聚糖,甜度为蔗糖的22%,有良好的热稳定性,不与食品或添加剂发生化学反应,其功能作用包括:(1)增殖双歧杆菌,调节肠内菌群。(2)调节肠道PH值,促进人体对钙、铁等离子吸收。(3)预防龋齿。(4)改善排便功能,预防便秘。(5)具有清肠道,排毒效果(6)抗氧化、延缓衰老(7)辅助降血压、降血脂。在国内市场上几乎未发现含有水苏糖的糖果。以下为一些国内市场上糖果的品种和配方:
1、阿尔卑斯顺滑缤纷果园水果牛奶硬糖,配料表:白砂糖、葡萄糖浆、氢化植物油、草莓/柠檬/甜橙/葡萄果汁、稀奶油、食品添加剂、麦芽糊精、食用精油、食用盐。
2、徐福记酥心糖,配料表:炒花生仁、葡萄糖浆、白砂糖、精炼植物油、花生蛋白粉、复合麦片、发酵饼干、椰蓉、食用香精、食用盐。
3、冠生园大白兔奶糖,配料表:液体麦芽糖、白砂糖、全脂乳粉、奶油。
4、不二家棒棒糖,配料表:配料表:白砂糖、麦芽糖饴、食品添加剂(柠檬酸、焦糖色、β-胡萝卜素、叶绿素铜钠盐、红花黄、紫胶红)、食用香精、绿茶提取物。
5、UHA悠哈特浓牛奶糖果,配料表:白砂糖、液体麦芽糖、乳清粉。
6、宏源陈皮糖,配料表:白砂糖、葡萄糖浆、柠檬酸、陈皮粉。
7、都市牧场爽口含片,配料表:山梨糖醇、苹果酸、硬脂酸镁、三氯蔗糖,薄荷脑、维生素C。
8、好彩头小样酸q糖,配料表:葡萄糖浆、白砂糖、食品添加剂。
9、上好佳水果硬糖,配料表:白砂糖、淀粉糖浆、食用香精等。
10、Aixi无糖薄荷糖,配料表:山梨糖醇、木糖醇、麦芽糖醇、抗结剂、食品添加剂。
从以上糖果产品及公开配料中均未发现含有水苏糖成分的内容。林旭彬的专利《一种水苏糖茶氨酸调制奶粉及其制备方法》中,水苏糖可以加入奶粉中运用;高鹏、杨建武的专利《一种含水苏糖的生物农药的生产方法及其应用》,水苏糖可以运用到生物农药中等,均未见其加入糖果运用中。
发明内容
本发明克服了现有技术中的缺点,提供了一种含水苏糖的中药糖果及其制备方法,制得糖果能给肠胃不好,消化不良的人提供保健效果,促进肠道健康,保护肠道微生态平衡。
为了解决上述技术问题,本发明是通过以下技术方案实现的:
一种含水苏糖的中药糖果,原料配方质量百分比为:水苏糖10%-40%,β-环糊精10%-40%,金银花0-5%,茯苓0-5%,菊花0-5%,麦芽0-5%,食用盐0-5%,食用香精0-5%,夏枯草0-5%,甘草0-5%,淡竹叶0-5%,山楂0-5%,菊苣0-5%,白扁豆0-5%,炼乳10%-40%,白砂糖10%-40%,氨基酸维生素添加剂1%。
进一步,所述氨基酸维生素添加剂包含:赖氨酸0-200mg/100g,缬氨酸0-200mg/100g,苏氨酸0-200mg/100g,酪氨酸0-200mg/100g,亮氨酸0-200mg/100g,维生素B1 0-1000mg/100g,维生素B5 0-1000mg/100g,维生素B6 0-1000mg/100g,维生素B13 0-1000mg/100g,维生素C 0-1000mg/100g,维生素E 0-1000mg/100g。
一种含水苏糖的中药糖果的制备方法,包括以下步骤:
(1)将各中药原料按质量百分比混合放于提取罐中加水以1:10-1:15的比例
煎熬20-40分钟,在600-700目过滤网过滤分离,得到药食同源中药提取液;
(2)将白砂糖和水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加水一起进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂、β-环糊精、食用香精、食用盐、炼乳进行搅拌、脱泡,最后浇注成型。
与现有技术相比,本发明的有益效果是:

其制备步骤如下:
(1)中药处理
将以上中药用万能粉碎机粉碎后,按照原料百分比混合,投入不锈钢提取罐中,加进混合中药重量14倍的去离子水,向罐底回形管中通入蒸气,使水沸腾并保持30分钟,然后冷却到室温,把滤液和滤渣置于700目过滤网过滤,弃去泥浆状物,得到药食同源中药提取液;
(2)糖果制备
将质量百分比为10%白砂糖和20%水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加适量水一起置于真空薄膜熬糖锅内进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂(包含赖氨酸100mg/100g,缬氨酸50mg/100g,苏氨酸50mg/100g,酪氨酸100mg/100g,亮氨酸100mg/100g,维生素B1 200mg/100g,维生素E 100mg/100g,维生素B6 75mg/100g,维生素B5 75mg/100g)、β-环糊精、香精、食用盐、炼乳进行快档搅拌,待形成稠厚、稳定的泡沫组织后,改为慢档搅拌脱泡,最后通过糖排机冷却输送带,拉伸成均一、一定规格的长方块,浇注成型包装。

其制备步骤如下:
(1)中药处理

将质量百分比为15%白砂糖和30%水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加适量水一起置于真空薄膜熬糖锅内进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂(包含赖氨酸105mg/100g,缬氨酸50mg/100g,苏氨酸50mg/100g,酪氨酸120mg/100g,亮氨酸100mg/100g,维生素B1 200mg/100g,维生素E 100mg/100g,维生素B6 75mg/100g,维生素B5 75mg/100g)、β-环糊精、香精、食用盐、炼乳进行快档搅拌,待形成稠厚、稳定的泡沫组织后,改为慢档搅拌脱泡,最后通过糖排机冷却输送带,拉伸成均一、一定规格的长方块,浇注成型包装。

2.根据权利要求1所述一种含水苏糖的中药糖果,其特征在于,所述氨基酸维生素添加剂包含:赖氨酸0-200mg/100g,缬氨酸0-200mg/100g,苏氨酸0-200mg/100g,酪氨酸0-200mg/100g,亮氨酸0-200mg/100g,维生素B1 0-1000mg/100g,维生素B5 0-1000mg/100g,维生素B6 0-1000mg/100g,维生素B13 0-1000mg/100g,维生素C 0-1000mg/100g,维生素E0-1000mg/100g。
3.根据权利要求1所述一种含水苏糖的中药糖果的制备方法,其特征在于,包括以下步骤:
(1)将各中药原料按质量百分比混合放于提取罐中加水以1:10-1:15的比例煎熬20-40分钟,在600-700目过滤网过滤分离,得到药食同源中药提取液;
(2)将白砂糖和水苏糖加入步骤(1)所制得的中药提取液中,调节甜度,混合均匀,添加水一起进行熬糖,熬糖时间为60-180分钟,待溶液呈膏状,向其加入氨基酸维生素添加剂、β-环糊精、食用香精、食用盐、炼乳进行搅拌、脱泡,最后浇注成型。
