本发明属于豆类芽苗蔬菜生产领域,具体涉及一种富含γ-GABA发芽藤豆的生产方法。
背景技术
藤豆,食用豆类的一种,豆科扁豆属,该品种具有野生性,抗逆性强;属藤本、豆科作物,生命力顽强,且营养丰富。藤豆含有的丰富蛋白质,十八种氨基酸种类齐全,配比均衡,其中必需氨基酸的含量高达50%以上,是营养价值比大豆蛋白更高的优质蛋白质资源。另外,藤豆还含有对人体有益的钾、钠、钙、镁、铁、锰、锌、铜、磷、硒等数十种无机元素。
藤豆的药用和保健功能显著,特别是对高胆固醇症,具有调节血清胆固醇水平的功能,对心脑血管也有很好的保健功效。藤豆蛋白能够明显增强小鼠的细胞免疫和体液免疫功能;藤豆多糖对小鼠免疫系统的影响,其多糖能明显增强小鼠B淋巴细胞和T淋巴细胞的增殖,促进其巨噬细胞的吞噬能力和溶血素抗体的生成。大豆蛋白经酶解制成多肽后,不仅水溶性大大提高,加工性能改善,而且具有易吸收、抗原性低等特点,可以降低胆固醇,具有大豆蛋白本身所不具备的营养特性和生物功能。藤豆多肽具有降低血清胆固醇的作用,并具有一定的抗氧化作用。
发芽藤豆是芽苗菜的一种。芽苗菜营养丰富,并具有特殊的医疗保健功能。芽苗菜在生产的过程中进行着一系列的物质转化。例如,在水解酶的作用下,将高分子的贮藏物质转化为可溶性、人体易吸收的简单物质,因而芽苗菜口感更好,更易消化吸收。营养学家指出,人类每天所需约30克植物蛋白摄入量,而来自发芽过程中的植物蛋白,仅需15克就可以满足人体每天正常需要。另外,芽苗菜还具有原料(如种子)中所不具备的营养成分,如黄豆发芽后胡萝卜素含来增加了2倍多,核黄素增加了3倍多,维生素B12可增加10倍;种子种不含维生素C,而芽苗菜中却含有大量的维生素C,豆芽中含量为20~30mg/100g;藤豆中含有γ-GABA,而藤豆发芽后γ-GABA的含量是发芽前的3.3倍。
γ-GABA(gamma-amino butyric acid,伽马-氨基丁酸),一种非蛋白类、四碳氨基酸,γ-GABA是中枢神经系统中最重要的抑制性神经递质,介导40%以上的抑制性神经传导,该递质异常会诱发多种神经系统疾病,如癫痫、失眠等。另外,γ-GABA可以提高葡萄糖磷酸酯酶的活性,提高脑细胞活力,加速脑组织的新陈代谢和脑细胞功能的恢复。医学上,γ-GABA对脑血管障碍引起的症状,如偏瘫、记忆障碍、儿童智力发育迟缓及精神幼稚症等有很好的疗效。γ-GABA是脑内重要的抑制性递质,对哺乳动物心血管活动有着重要的调节作用。γ-GABA还具有降血压作用、镇静神经、抗焦虑、抗压力等作用。
发明内容
本发明的目的在于针对现有技术不足,提供了一种富含γ-GABA发芽藤豆的生产方法。本发明的方法使得生产发芽藤豆的周期短,生产出来的发芽藤豆富含有γ-GABA,含量高达1780.60ug/g。
为实现上述目的,本发明采用如下技术方案:
一种富含γ-GABA发芽藤豆的生产方法,具体包括以下步骤:
(1)挑选籽粒饱满的藤豆,用自来水清洗干净,置于65℃的水中,进行温烫消毒;2min后,从水中取出,用水在25℃条件下浸泡6h,使藤豆充分吸水;
(2)随后取出藤豆用清水冲洗2~3遍,然后将藤豆放置于藤豆的发芽装置中,控制温度25-28℃,湿度75-80%RH;
(3)经过12~24h后,种子萌芽,将发芽藤豆放入培养基中,并置于培养箱中25℃下无光照培养3天,整个培养期间每天喷水一次或两次。
所述藤豆选自“藤豆01”品种。
步骤(3)中所述培养基为经过蒸汽消毒的灵芝菌渣,该培养基质具有能够为发芽藤豆提供生长过程中所需要的养分,同时,灵芝菌渣中含有丰富的多糖,可以发芽藤豆提供原料。
本发明的有益效果在于:
(1)本发明利用灵芝菌渣作为培养基质为发芽藤豆在生长过程中提供养分,生产出富含γ-GABA的发芽藤豆,γ-GABA含量高达1780.60ug/g,其含量值是利用水作为培养基质生产发芽藤豆γ-GABA含量的2.73倍;
(2)本发明充分利用了灵芝菌渣,可以变废为宝,实现资源节约再利用,原料绿色环保,操作简便,设备简单,生产速度快,可实现工业化连续生产富含γ-GABA发芽藤豆。

一种富含γ-GABA发芽藤豆的生产方法,具体包括以下步骤:
(1)挑选籽粒饱满的“藤豆01”,用自来水清洗干净,置于65℃的水中,进行温烫消毒;2min后,从水中取出,用水在25℃条件下浸泡6h,使藤豆充分吸水;

实施例2
一种富含γ-GABA发芽藤豆的生产方法,具体包括以下步骤:
(1)挑选籽粒饱满的“藤豆01”,用自来水清洗干净,置于65℃的水中,进行温烫消毒;2min后,从水中取出,用水在25℃条件下浸泡6h,使藤豆充分吸水;
(2)随后取出藤豆用清水冲洗3遍,然后将藤豆放置于藤豆的发芽装置中,控制温度28℃,湿度80%RH;
(3)经过24h后,种子萌芽,将发芽藤豆放入培养基中,并置于培养箱中25℃下无光照培养3天,整个培养期间每天喷水两次。
以生产灵芝的菌渣作为步骤(3)发芽藤豆的培养基质,将灵芝菌渣进行蒸汽消毒30min,消毒好灵芝菌渣放置于发芽藤豆培养专用装置的培养盘中,3cm厚。
实施例3
一种富含γ-GABA发芽藤豆的生产方法,具体包括以下步骤:

(3)经过18h后,种子萌芽,将发芽藤豆放入培养基中,并置于培养箱中25℃下无光照培养3天,整个培养期间每天喷水一次或两次。
以生产灵芝的菌渣作为步骤(3)发芽藤豆的培养基质,将灵芝菌渣进行蒸汽消毒30min,消毒好灵芝菌渣放置于发芽藤豆培养专用装置的培养盘中,3cm厚。
γ-GABA的含量测定
一、不同藤豆品种的γ-GABA的含量
本发明选用的藤豆品种是“藤豆01”,是吉林省引进的藤豆良种(杨志坚,李松玉,等.藤豆在福建省生态适应性栽培及营养成分分析[J].福建农业科技,2014,(第8期))。如图1所示,藤豆01的γ-GABA的含量为569.35ug/g,是γ-GABA低含量种质藤豆04(52.72 ug/g)的10.80倍,藤豆04是湖南省引进的藤豆良种(杨志坚,李松玉,等.藤豆在福建省生态适应性栽培及营养成分分析[J].福建农业科技,2014,(第8期))。本发明选用藤豆01,经过消毒、催芽控温控湿及利用灵芝菌渣作为培养基质,培养出富含γ-GABA的发芽藤豆。
二、不同培养基质培养的藤豆的γ-GABA含量
如图2所示,利用筛选出的藤豆01在不同的培养基质、0-5天中检测不同培养基质每天γ-GABA的含量,研究发现在灵芝菌渣中γ-GABA含量均高于用河沙和水作为培养基质的γ-GABA含量。同时,在不同的培养基质中培养到第三天时γ-GABA含量均达到最高,用灵芝菌渣、河沙、水作为培养基在第三天时,γ-GABA含量分别为:1780.60ug/g、744.86 ug/g、651.96 ug/g。用灵芝菌渣作为培养基质γ-GABA含量达到最高,为1780.60ug/g,是用水作为培养基质(651.96 ug/g)的2.73倍。
以上所述仅为本发明的较佳实施例,凡依本发明申请专利范围所做的均等变化与修饰,皆应属本发明的涵盖范围。
Claims (3)
1.一种富含γ-GABA发芽藤豆的生产方法,其特征在于:具体包括以下步骤:
(1)挑选籽粒饱满的藤豆,用自来水清洗干净,置于65℃的水中,进行温烫消毒;2min后,从水中取出,用水在25℃条件下浸泡6h,使藤豆充分吸水;
(2)随后取出藤豆用清水冲洗2~3遍,然后将藤豆放置于藤豆的发芽装置中,控制温度:25-28℃,湿度:75-80%RH;
(3)经过12~24h后,种子萌芽,将发芽藤豆放入培养基中,并置于培养箱中25℃下无光照培养3天,整个培养期间每天喷水一次或两次。
2.根据权利要求1所述的富含γ-GABA发芽藤豆的生产方法,其特征在于:所述藤豆选自“藤豆01”品种。
3.根据权利要求1所述的富含γ-GABA发芽藤豆的生产方法,其特征在于:步骤(3)中所述培养基为经过蒸汽消毒的灵芝菌渣。
